How hard can it be to be vegan and sustainable in the magical blue city of Chefchaouen in Morocco? ✨ • Look what we have found in the old city square! This cute café is @hamsachaouen and it has a terrace with a breathtaking view over the blue village and serves good vegan options. Best falafels we had in a long time! 😋🧆 • Plus, they care a lot about the environment and zero waste: all their drinks are served with paper straws , very rare to see in Morocco! 🥤🚫😍 • This was hands down our favourite spot to eat and chill in Chefchaouen. Friday lunch! So tasty! Ginger, garlic, sesame seeds, coconut oil marinade. I cut up two Next Level meat brand burgers and marinaded them in a bowl, in the fridge for a few hours. Later, I fried them to a nice crispy, golden brown. Roast veg and couscous bowl (vegan) 🍲🌱 _ This a super wholesome meal packed full of essential nutrients and high in protein. Perfect for athletes looking for high-quality nutrients for the optimal recovery or just anyone looking for a healthy and tasty meal. This “bowl” tastes amazing, honestly my favourite meal right now and relatively easy to prepare, especially if you’re cooking large portions and meal prepping. Macro-nutrient content and calories per portion can be seen in the last slide of this post aswell as ingridient list. This was a VERY big bowl of food. For anyone looking for a smaller meal, simply adjust to your needs 😊 _ Recipe: _ _ 1. Roast all the root veg (butternut, sweet potato and carrots) for 40 mins @ 200°C. After 40 mins, add the rest of the veg (onion, peppers, courgettes, garlic) +½Tbsp oil and cook for 1 hour, turning veg every 30 mins. Set aside when done. _ 2. Drain and rinse your chickpeas. Best to dry them with a tea towel to get them as dry as possible, this will help them roast well and get crispy. Add chickpeas to a roasting tray with ½ Tbspoil and a large pinch of salt. Roast @ 200°C for 20-30 mins, turning halfway through. Set aside when done and add 1 tsp of paprika and ¼ tsp red chilli flakes and mix well. _ 3. Cook couscous as per the instructions on the box and rest for 5 mins. After 5 mins loosen with a fork and stir well. When done, set aside. _ 4. Once veg, couscous and chickpeas are ready, you can construct your bowl. Add the veg, couscous, roast chickpeas, hummus, pesto, rocket and nutritional yeast to your bowl and mix well. Add salt and pepper to taste and ENJOY 💚

VERY VERY Chocolaty Overnight Oats ❤️🥥🍫🌹🍓❤️ So I literally mixed a bit of everything I had in a pot with some coconut milk and soaked overnight but wow did it taste food! I wouldn’t say this is a recipe but I’ll detail what I used anyway 😂 I didn’t measure anything! With the powders I usually use about 1-2 tsps. Pumpkin, zucchini and green bean curry with coconut rice 🍚 one of the those feel good meals, it’s our family winter classic but it’s come around earlier this year. Majority of the time I’ll make it with eggplant too. Here are the ingredients! 1/2 pumpkin diced in to 3cm squares 1 cup of green beans cut up 1 whole zucchini diced in for 3cms 1 onion chopped finely 1/2 cup coconut cream 1 tbsp garlic paste 1 tsp authentic curry powder 1 tsp ginger 1 tsp cumin 1 tsp salt 1 tsp pepper Start by sautéing onion and garlic in oil for 3-5 minutes until onion is soft and caramelised. Then add your green beans, pumpkin and zucchini to fry off for a few minutes, then add your coconut cream and all the remaining ingredients, mix and let it simmer for 15 minutes. Serve on a bed or coconut rice 🌱

Vegan Peanut Butter Mousse Ingredients: -6 oz silken tofu firm, drained -1 small banana -1/2 cup creamy peanut butter -3 tbsp maple syrup -1/3 to 1/2 cup aquafaba from one 15 oz can of chickpeas -1 tsp lemon juice or lime juice US Cups - Grams Instructions: Add silken tofu, banana, peanut butter, and maple syrup to a blender or food processor and blend until completely smooth and creamy. Put the container into the refrigerator. To whip up the aquafaba, simply drain the chickpea water into a large and clean mixing bowl (see step-by-step photos in the blog post above). You will need 1/3 to 1/2 cup (100 ml) of chickpea water. Don't use more and discard the rest or freeze it for later use. Whip up the aquafaba with an electric hand mixer or stand mixer. Add the lemon juice (or lime juice) after about 8 minutes and whip until you have stiff peaks. It takes about 10 minutes in total. If you can invert the mixing bowl, you can stop mixing. If not, keep going for a few more minutes. Gently fold the aquafaba into the peanut butter mixture by using a spatula. Then spoon the mousse into 2 large or 4 small clean jars and put them into the refrigerator to set, preferably overnight. You can also freeze the mousse for about one hour! Your will enjoy it more than you can think, and your heart will want more❤🌱 Infused with earthy flavour of porcini mushrooms, freshness of fennel, the goodness of peas, and the creaminess of almonds...this is next level💯 Share with someone who is wanting to eat plant-based but not sure where to start, you will be their hero and they will appreciate your generosity 🙏 ✅Ingredients ▪️½cup dried porcini mushrooms* ▪️½cup peas ▪️3tbsp chopped onion ▪️3tsp chopped fennel ▪️1clove garlic ▪️2tbsp vegan parmesan ▪️3tbsp almond meal ▪️1½tsp cornflour ▪️1tbsp olive oil ▪️¼cup veg stock ▪️1½cups water ✅Method ▪️Soak good quality dried porcini mushrooms in 1½cup water for about 20min. ▪️In the meantime, heat up oil in non-stick pan. ▪️Add peas, onion, fennel, and garlic and cook on medium-to high heat until golden brown (Keep stirring to avoid burning) ▪️Let the mixture cool a little, transfer it to a nutri-bullet/blender with ¼cup veg stock, and almond meal. ▪️Blend until smooth. Transfer to a medium sauce pan on low heat. ▪️Drain the porcini mushrooms and roughly chop them up. Thought I’d give these Paleo choc chip muffins a try a friend suggested from Gluten Free Palate website. These are delish! 😋⁣ ⁣ 2 cups fine almond flour⁣ 1/4 tsp salt⁣ 1/2 tsp baking soda⁣ 1/4 cup melted coconut oil, cooled⁣ 1/4 cup raw honey of maple syrup (more if you like it sweeter)⁣ 3 eggs⁣ 1 tsp GF vanilla extract⁣ 1/2 cup GF, dairy free choc chips⁣ ⁣ Method⁣ 2. Preheat oven to 180°C. Line a cupcake pan with 12 paper liners. ⁣ 3. In a large mixing bowl, whisk almond flour, salt, and baking soda.⁣ 4. Add coconut oil, honey, eggs, and vanilla extract and mix until well combined.⁣ 5. Stir in the chocolate chips.⁣ 6. Spoon batter evenly into your paper liners.⁣ 7. Bake for 18-20 minutes or until the center is set.⁣ 8. Remove from the oven and let cool for 5-10 minutes before serving.⁣ 9. Store in an airtight container at room temperature.⁣ ⁣ I might try coconut flour next time to see how they work out, then would be great for school lunch box too 🧡

Keto Walnut-Cashew Porridge Ingredients * 1/4 cup (35g) raw cashews * 1/4 cup (27g) walnuts * 1 cup (240ml) unsweetened almond milk * 1 teaspoon vanilla * 2 tablespoons chia seeds * 1 medium apple, chopped * 1 teaspoon cinnamon Directions Soak the cashews and walnuts in cool water for at least 4 hours or overnight, then drain and rinse. Place the soaked nuts in a food processor and grind to a slightly chunky texture, then transfer to a small pot. Add almond milk and vanilla and place over low heat. Stir for about 5 minutes to soften and thicken the mixture. Stir in chia seeds and cook for another minute. Remove from heat. 🥡 As a rule, I try and avoid fake meats in my diet however these homemade vegan sausage slices at a food stall in Thailand were delicious. . Crushed Potatoes with Creamy Guacamole by @happyskinkitchen 🥑 A delicious savoury snack and starter idea! Get the recipe: . To make it: Boil some baby/new potatoes until they are soft. Drain them and place them on a baking tray covered with some parchment paper. With a fork crush the potatoes down, drizzle then with some olive oil, salt and pepper and bake them in the oven at 200 degrees Celsius for 25 minutes until crispy. To make the quacamole simply mash 1 avocado with a squeeze of lemon, 1 chopped spring onion, salt and pepper. Top each potato with a dollop of the quacamole and enjoy! 😄

VEGETABLE QUINOTTO AKA quinoa risotto... . Quinoa is a great alternative to rice. It technically isn't a cereal grain, but a pseudo-cereal. In other words, it is basically a seed, which is prepared and eaten similarly to a grain. It has a slightly nutty flavour when eatten on its own. Quinoa is high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. 1 cup of quinoa contains 8g of protein. It is also high in fibre (5g per cup), magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E as well as several antioxidants. Ingredients 1 tbsp EVOO 3 garlic cloves, crushed 1 brown onion, finely chopped 1 tsp chilli flakes 1 tsp thyme 1 tsp parsely 1 small broccoli head, cut in to florets 6 button muchrooms, sliced 1 large zucchini, chopped 1 red capsicum 400g crushed tomatoes 1/2 -3/4 cup vegetable stock 2 cups quinoa, partially cooked Fresh parsley & black olives to serve Method 1. Heath oil in a pan over a medium heat. Add onion; cook for 2 mins, then garlic, chilli, thyme and parsley. 2. Add all the vegetables to the pan and sautee for 2-3 minutes. 3. Mix in crushed tomatoes, vegetable stock and season with salt and pepper. 3. Add in the quinoa (I partially cook mine prior to adding) and stir well to combine. 4. Cover with a lid or foil and simmer on a low heat until the liquid has almost absorbed. 5. Serve with fresh parsley and chopped black olives. Add this to your meal prep list or cook some extra to allow for left overs. This dish can be eaten hot or cold! #foodforthoughtnutrition #foodmoodlifestyle

This is what you get when your tired as f*ck and using up what you have on hand. I’m going to call it Broccoli chick’un skillet. * * Here’s what I did. I boiled some macaroni, about 5 mins and added some fresh broccoli to the water and cooked until done. Let it cook and the water reduce, them I added some vegan I can’t believe it’s not butter and some @followyourheart Parmesan shreds. While the pasta cooked I baked a Boca chick’un patty according to package and then diced that sucker up. Plus I sprinkled that shit with garlic powder, salt & pepper and @franks red hot. * * It hit the spot and was cheap to make. You’re welcome 😊

Vegan pumpkin scones.. whipped up for the kids breakfast, because it’s Friday and I need to shop but we had pumpkin, flour, coconut oil and sugar.. and 20 minutes and then yum. 🌿Hot Sauce Winged Beans🌶️辣酱四角豆 Also known as four-angled bean or dragon bean. This is one of my favourite dish!🥰 - Ingredients🧂: Winged beans, tomato; diced, bunashimeji mushrooms, vegetable oil, sugar, spicy fermented bean sauce (Doubanjiang), vegetarian sambal paste / chilli paste, soy sauce and salt to taste. Trim the tips of the beans and cut into bite size lengths. I normally cut them at an angle. Heat up the pan, add in oil, follow by tomato and winged beans, stir fry for 1-2 minutes. Follow by adding chilli paste, spicy bean sauce, sugar, soy sauce, water and salt to taste, mix well. Cover the lid and let it simmer until the winged beans have turned darker green and cooked through. Stir well and remove from heat. Transfer to a plate and serve with a bowl of hot steamed rice.🍚🍚Enjoy!
