I love food. Food is fun. Playing with ingredients, getting someone interested and excited about what goes on their plate feels massively rewarding. Creating recipes and menus for clients is by far a favorite part of my job. Check out the recipe for these below:⠀ ​⠀ Ingredients (~12 cookies)⠀ 2 1/4 cup flour⠀ 1 tsp salt⠀ 1 tsp baking soda⠀ 2 tsp cornstarch⠀ 3/4 cup vegan margarine (from a tub, not the sticks)⠀ 1/4 cup nondairy milk (like almond or soy)⠀ 1 cup brown sugar⠀ 1/4 cup sugar⠀ 2 tsp vanilla extract⠀ 1 1/2 cup mini vegan chocolate chips⠀ ​⠀ Directions:⠀ Preheat the oven to 350°F.⠀ Line two baking sheets with parchment paper. In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch.⠀ In a larger mixing bowl, add the margarine, milk, sugars, and vanilla. Beat with an electric mixer. For breakfast I had this beauty 😍 Smoothie bowls are a great way to have breakfast on the run. All you need is 1 banana, 1 cup of strawberries, 1 tablespoon chia seeds, 1/2 cup almond milk, 1/3 cup coconut chunks (I bought these from @woolworths_sa ) and 3 blocks of ice. Just blend all the ingredients and decorate to your liking. Vegan Miso Ramen - Rich and creamy After having an amazing Vegan Ramen over the weekend @sydneyveganmarket I decided to make my own for the family tonight. Think this really ticked the boxes and will be in my favourites list since I've been told it was even better than what we had at the markets 👌😊 Recipe inspired by http://www.seriouseats.com Although may seem like alot of work and long, it's actually really worth it. I had these for dinner last night with spaghetti and Tesco’s red pepper and onion stir in sauce, theres no pic of my food because I was starving by the time work finished yesterday! They where so good, the texture was really realistic if you’ve tried the no bull burgers then they taste just like those, have a very meaty taste, I cooked them in the oven for 16 minutes but you can also fry them for 5-8 minutes! ☕ Bolitas express ☕ ⠀ ⠀ ¿Necesitan algo que los despierte como una cachetada de energía en la mañana o cuando las fuerzas decaen?🤯 ⠀ No busquen más, estas bolitas son una bomba energizante que los va a dejar listos para todo🤸‍♀️ ⠀⠀ ⠀ 2 t de maní 2 t de pasas 2 cucharadas de café molido 2 cucharadas de cacao sin azúcar (opcional, pero altamente recomendable) ⠀ ⠀ Molemos el maní por un minuto hasta lograr una pasta bien pegote o hasta casi que se haga mantequilla. Lavamos las pasas unas 3 veces en agua caliente para sacarles el aceite (sí, todas las pasas traen aceite como conservante, una pena, si tienen datos de pasas sin aceite déjenlos en comentarios). Agregamos las pasas, café y cacao a la mezcla, procesamos. Si la mezcla está muy seca, agregamos agua, una cucharada por vez hasta que se comience a pegarse. Si la mezcla está muy húmeda, agregamos harina de avena, una cucharada por vez hasta que la mezcla comience a formar bolitas. Ponemos en una tabla, hacemos un ladrillo y dividimos. A simple bean chilli by @nourishingalex 🥑 . Serves 2-3⁣ Ingredients: ⁣ - 1 small onion, diced⁣⁣⁣ - 400g can chopped tomatoes⁣⁣⁣ - 1 vegetable stock⁣⁣⁣ cube - 3tsp garlic powder/granules - 1tsp smoked paprika ⁣ - 1 1/2 tsp ground cumin ⁣ - 1/2tsp mild chilli powder⁣⁣⁣ - 1tsp dried oregano ⁣ - 1tbsp maple syrup⁣⁣⁣ - 1/2 390g tin red kidney beans, drained & rinsed⁣⁣⁣ - 1 tin black beans, drained & rinsed⁣⁣⁣ - salt & pepper, to taste⁣⁣⁣ ⁣⁣⁣ 1. Sauté the onion on a medium heat setting in a pan of water/oil until translucent for about 6mins.⁣⁣⁣ ⁣⁣⁣ 2. Pour in the chopped tomatoes, then using your chopped tomatoes tin, fill it with water halfway, then pour the water in the pan, then add in your vegetable stock cube. ⁣ ⁣⁣⁣ 3. Add in all the spices, dried oregano, maple syrup, beans, salt & pepper. Bring it to boil, then once it starts to bubble, turn down the heat to low and simmer for 30 mins until the sauce has reduced and thickened. ⁣ ⁣ 4. Serve with rice, quinoa, potatoes, salad or veggies and guacamole. ⁣ ⁣

So today we made these bacon and vege muffins to bring to playgroup tomorrow. They are a great way to get a lot of veg into your kids, plus they are gluten and dairy free! As you can see, Hallie was pretty happy with them!⁣ 😆 ⁣ 130g cooked quinoa⁣ 3 spring onions⁣ 2 grated carrots⁣ 3 eggs ⁣ 100g bacon or ham⁣ Pinch of salt and pepper⁣ ⁣ I did these in the thermo but you could just as easily chop up whatever veges you want and mix all ingredients in a bowl. ⁣ ⁣ Fill up 12 muffin tray and cook for 20mins at 180 degrees until golden. ⁣ ⁣ What’s your favourite way to get vege into the kids? ⁣🌱🍅🥕🥦🥬

Walnut and Banana Loaf 🍌 But how do you bake without using eggs you ask? 🥚 It’s much simpler than you think! A mashed banana is all you need to replace an egg in a recipe!You can also use apple sauce, chia seeds or flax meal. For example 1 ‘Flax egg’ = 1 tbsp flax meal + 2 tbsp water, mix and let sit for few minutes then add to your recipe ✨ That’s why creating this Walnut and Banana Loaf was so simple, I just needed mashed bananas! King oyster mushroom “scallops” with kale and red cabbage salad For this recipe (I use the word “recipe” lightly in this case because its so friggin easy guys!!) I used 5 king oyster mushrooms which was more than enough for two people. I sliced the mushroom into one inch discs and put the tops of the mushrooms in the fridge to use for another time. I then grabbed a large bowel and filled it with hot water from the kettle and put a couple of table spoons of vegeta stock in it. Then I popped the mushrooms scallops in side and let the sone for an hour. **tip** you can try put some inari sheets in the water to give it that beautiful ocean flavour. Once the mushrooms have soaked up all that stock flavour, I heated a pan with oil and seared the mushroom scallops for about 4 minutes on each side. Don’t forget to salt these babies too 😋 Kale and red cabbage salad To prepare the salad I thinly sliced the red cabbage and simply massaged the kale. This salad was surprisingly delicious! I didn’t have much in the pantry to make a dressing so I just used good old balsamic and olive oil. **tip** massage the kale with your hands for a couple of minutes. This helps to wilt the kale without have to cook it. I decided to serve the scallops on a generous smear of my own pesto which I will post a recipe for soon if anyones interested ;) then I squeezed a bit of lemon juice on top for freshness. This dish is really impressive with such little effort! I think next time I want to try them with linguini pasta instead of salad for a sneaky cheat meal lol 😝 #plantbasedrecipes #kingoystermushroom #kalerecipes

In biodynamic gardening water is represented in the plants that are grown for their leaves. Nettles are already appearing here in the garden. Fresh young nettle shoots make a very nice, nourishing and “blood cleansing” detox tea, packed with vitamins, minerals and chlorophyll. Perfect for a cold winter morning. Pick a handful (using gloves to avoid being stung), put in a tea cup with a thick slice of lemon. Add boiling water and infuse for 5-10 minutes. Steamed and finely chopped they also make delicious soup (use the water as stock).
