There is another recipe under this dish Everybody likes potato and we have so many potatoes to chose from : fingerling, russet, yukon gold, sweet potatoes ( beauregard, garnet ), Idaho, butter cream, round red and white ,long white, etc.. So, i picked the purple because of a nutty taste and also the color.I was thinking first boiling them and add all the rest of the ingredients raw products. I went to the market and picked , purple potatoes, scallions, yellow sweet bell pepper,organic fresh sage, fresh lemon,cherry tomatoes, alfalfa-green lentil, snow pea sprouts and wanted to use raw cheese i found the raw sheep cheese, and for the vinaigrette to make i had already organic olive oil, organic balsamic vinegar, Celtic sea salt, pepper. I went home and made this salad : Purple Potato Salad With sweet Yellow bell Pepper, Cherry Tomato, Raw Sheep Cheese And Balsamic Vinaigrette Ingredients: serves 2 2 medium sizes of purple potatoes, pealed 10 pieces of cherry tomatoes 1 tbs of fresh organic chopped sage Juice of half of lemon Salt, pepper 3 tbs of balsamic vinegar, 3 tbs of olive oil 1 small yellow bell pepper, cut in half and seeded Some sprouts as , snow pea, green lentils, alfalfa 2 tbs of shaped raw sheep cheese In a boiling hot water cook the cubed purple potatoes for 20 to 25 minutes , season with salt ,pepper,, olive oil,lemon juice, set aside.In a mixing bowl add olive oil, salt, pepper, balsamic vinegar and set aside.Mix the tomato,with fresh sage a little bit of olive oil, salt,pepper. In a plating dish, display the purple potatoes around, add the sprouts, stuffed yellow bell pepper with cherry tomatoes, raw sheep cheese, snow pea sprout and drizzle with the balsamic vinaigrette.

Easy Focaccia💚🌱 Focaccia is big hit at our house, it goes well on its own or as a side dish. You choose. The very Italian focaccia recipe takes more time than the recipe I am sharing (sorry again Italians😅), but this one has its shine as well. It is soft inside and crispy outside with a burst of flavors. I hope you love it as much as we do. 🥰 So let's go to the recipe: 1/2 cup (120 ml) extra-virgin olive oil 2 garlic cloves, finely minced 1 tablespoon chopped fresh thyme or 1 teaspoon dried 1 tablespoon chopped fresh rosemary or 1 teaspoon dried 1 cup (235 ml) warm water 2 1/4 teaspoons active dry yeast (1 packet) 1/4 teaspoon sugar 2 1/2 cups (315 grams) all-purpose flour, it can also be self-raising flour 1/2 teaspoon fine sea salt Infuse the olive oil with garlic finely chopped and fresh herbs. If it's possible, use fresh herbs, it makes all the difference. Mix yeast with warm water and sugar and let it sit for around 7 min, or until you see the yeast is becoming almost like foam. Add 1 cup of the flour and a 1/4 cup of the infused garlic-olive oil. Stir until the flour has moistened. Let sit for another 5 minutes. Stir in the remaining 1 1/2 cups of flour and the salt. When the dough comes together, knead 10 to 15 min until smooth. Transfer the dough to a large oiled bowl, cover with a warm, damp towel and let rise for 1 hour - It’s best to let the dough rise in a warmer area of your kitchen, I usually warm the oven a bit and let it rise in there.  Add the dough to a small sheet pan or baking dish and add dimples to the top of the dough and top with the remaining garlic-herb oil. Let the bread rise for another 20 minutes, and then bake until golden brown. I added some of #violife parmeggiano on top just after I took the focaccia out of the oven. It gives it an extra special taste. This recipe is an adaptation from the blog Inspired Taste. I've done it twice and will be doing it forever. You can add different ingredients to the top, such as sliced tomatoes, olives, onions... Last time I added cherry tomatoes on top and it was a-mazing! Go on, explore the possibilities! Udon Noodles in Peanut Sauce I feel like a lot of my recipes are born out of desperation to put together something quickly because I am a serial procrastinator! I thought about what to do for lunch with the least amount of prep, for four hours and then came up with this. I literally threw everything together. The only appropriate veggie I had was this bokchoy. I pan roasted it for five minutes. I will post a recipe of the sauce soon as I didn't measure anything. I made it by scraping out the last of my peanut butter stash. The brand I have is @bionaorganic and they do not use additives/emulsifiers which is great! So I had this unspreadable textured bit left at the bottom. No chance of wasting that! If you would like to give it a go on your own, below are the ingredients of the sauce. I mixed them on low heat on the stove. Apple spice layer cake. I made this delightful cake last year for @aussieapples , in my first trimester of pregnancy (when all i could eat was avocado toast). Luckily for me, i had trusted taste testers who happy ate 3 rounds of cake in as many days. My dear sister said this was/is her fav cake of mine- and given its her bday in a few weeks, this recipe will be making an reappearence very soon. I can't wait to try it, sans pregnancy hormones 😂🤢. Apple spice layer cake 🍏🍎🍏🍎. . Ingredients • 300g (2 1/3 cups + 1 tsp) plain flour • 65g (3/4 cup) almond meal • 3 tsp baking powder • 3/4 tsp baking soda • 1/3 tsp salt • 2 tsp ground cinnamon • 1 tsp vanilla extract • 1 1/2 tsp ground ginger • 1/2 tsp ground nutmeg • 2 cups milk of choice • 1 Tbsp (15mL) apple cider vinegar • 230g (1 1/2 cups) brown sugar • 1/3 cup coconut yoghurt • 3/4 cup rice bran oil • 2 Royal Gala apples, diced Method 1. Preheat oven to 190 degrees C, and grease and line 2 x 6 inch round cake tins. 2. Make butter milk by adding vinegar to milk, and set aside for 5 mins. 3. In a large mixing bowl, sift in flour, baking powder, baking soda and spices (except vanilla). Add almond meal and salt to the bowl, and mix until uniform. Set aside. 4. Add remaining wet ingredients to the butter milk (sugar, yoghurt, vanilla and oil). Whisk together, then pour into the dry mix bowl. Mix until just combined, then add apples and fold through. 5. Evenly spilt cake batter between the two cake tins, then bake for 60-65 mins, covering with aluminium foil at the 45 min mark. 6. Allow cakes to cool for 10 mins, before carefully turning onto a wire rack to cool completely. Before layering the cake, cakes must be completely cooled (don't cut before they are so). 7. To assemble your layer cake, cut your cakes in half so that you have 4 even cake layers. Place the first layer on your desired cake stand/plate, then add a thick layer of cream. Add the second layer and repeat, until all your cake layers are stacked on. 8. Finish by covering the whole cake with a thin layer of cream. Enjoy as is, or with a cup of tea.

💥💚Blueberry Chia Pudding💚💥 INGREDIENTS 2 tablespoons chia seeds 1 teaspoon ground flax seeds 2.1 oz (60g) fresh blueberries 1/2 teaspoon maple syrup (or another liquid sweetener) approx 4.1 fl oz (120ml) of unsweetened non-dairy milk (I used oat milk) TOPPING coconut flakes a few fresh blueberries fresh red currant INSTRUCTIONS Add blueberries and non-dairy milk into a blender and blend on high until smooth. Set aside. In a small mason jar (or a small glass) add chia seeds, ground flax seeds, maple syrup, and blended mixture. Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better). Add coconut flakes, blueberries, and red currant on top of the chia pudding. Enjoy Vegan Blueberry Chia Pudding! 🌱Baked Vegan Donut 🍩 🌱 My son is having a big sweet tooth (just like me 🤫) and I thought of giving donuts a try at home and it turned out to be worth it. These baked donuts turned out really well. Light, fluffy and super scrumptious. You could try any topping or glaze of your choice. Ingredients:- *1 and 1/2 cups (190g) All Purpose Flour *3/4 cup (150g) White Sugar * 2 tsp Baking Powder * 1/4 tsp Salt * 1/2 tsp Cinnamon * 1/4 tsp Nutmeg * 3/4 cup (180ml) Plantbased milk * 1 tsp Vanilla Extract * 2 Tbsp Virgin Coconut oil * 5 Tbsp Vegan Butter (Melted) Method:- 1. Preheat the oven to 350°F (180°C). Prepare two donut trays by spraying with non-stick spray. 2. Sift the flour into a mixing bowl and add the sugar, baking powder, salt, cinnamon and nutmeg and mix together 3. Add the milk, vanilla, oil and melted vegan butter and whisk in, removing lumps and making it homogeneous. 4. Place the donut batter into a piping bag and pipe it into the donut partitions evenly or use a spoon (but it can get messy). 5. Bake for 15 minutes until lightly browned on top. 6. Remove from the oven and let cool for a few minutes before transferring the donuts to a wire cooling rack.Allow to cool completely before doing the topping. 7. For the basic donut, make a sugar cinnamon dip and after applying melted butter on the donuts, dip them in the sugar cinnamon powder. 8. For the Oreo topping, take crushed Oreo in a plate and dip the butter coated donut in it. 9. For the almond and peanut butter topping . It’s Friday again! The weeks are flying by at a crazy rate, I’m struggling to keep up! . . Making these again today Raw salted caramel Brownie Millionaire Bars. . . Gluten free, no bake, refined sugar free and Vegan of course. They are the ultimate gooey, fudgy, Chocolatey, guilt free treat and I have shared the recipe below. . . BASE 5 pitted medjool dates. 1/4 cup each of ground flax, cacao nibs and cacao powder. 1/2 each of coconut shreds, pecans and almonds. 2tbs rice syrup/coconut nectar. Good pinch of sea salt. . . CARAMEL 24 pitted dates. 1/4 cup rice syrup/coconut nectar. 1/2 cup almond butter. 1/4 cup coconut cream. 2tbs boiling water. . CHOCOLATE LAYER 150g dark chocolate . . METHOD Blitz all base ingredients in a food processor until it holds together when pinched. Press into a lined tin approx 20x20 or even 15x15. Place In the freezer while you make caramel. In a high speed blender or food processor blitz all the caramel ingredients until smooth. Spread onto base and place in the freezer until set a little say 39 minutes. Melt the chocolate in a metal bowl over a pan of gentle simmering water until melted. Allow to cool a little then spread over caramel. Freezer for about 2-3 hours. Cut into squares of your desired sized using a very hot knife. Store in an airtight container in the fridge. . . 3 ingredient vegan quick fix! Believe it or not but this amazing dish can be made with few ingredients, it's nutritious, low on calories, protein rich and simple to make. 🙌🙌🙌🙌 🙌🙌🙌🙌🙌🙌🙌🙌🙌 --zucchini pasta (boil for 2 min) -- texturized soja (soak in water while you cook pasta) -- add tomatoe sauce --add spices and onion if you like( here added turmeric, black pepper, cinnamon and red onion) Fry onion in the pan, add soaked soja, add spices and tomatoe sauce and let it cook together. Tips, don't add salt, your tomatoe sauce is probably salty enough! Minimizing salt intake is part of a healthy diet. Also choose your tomatoe sauce by looking at the back of the package, the goal is to have it with least sugar and salt and least calories. We consume alot of calories without knowing about it, simple changes to our meal prep can reduce calorie intake without even noticing the difference. Such as choosing the lighter sauce, or adding less oil when cooking. Frying in a non stick pan without any oil at all. Changing your milk to a dairy free one that is usually lower in calories and also overall better for your body. Going against the grain! . Quinoa is one of the most protein rich foods with almost twice as much fiber as many other grains! It's loaded with heart-smart potassium and magnesium and is naturally gluten free it’s one of the few plant foods that contain sufficient amounts of all nine essential amino acids. Quinoa can help normalize blood pressure and triglyceride levels, it's a great food for diabetes and weight loss. Basically adding quinoa to your meal is going to give you more bang for your buck . The perfect way to cook quinoa so it’s light and fluffy is to wash well, cover with just a small amount of boiling water so it’s just covering the surface of the quinoa, adding a little pinch of garlic granules, turmeric, cayenne pepper and pink salt. Bring to the boil with a tight lid on, cook for one minute on high heat, then turn off, leaving the pan on the stove, don’t remove lid (keep steam in) after 10 mins remove lid, stir with a fork and you’ll be left with fluffy yummy quinoa . In this pic I’ve oven roasted some butternut, red peppers, baby carrots onion and garlic and added them to the quinoa once it’s cooked and cooled. PESTO SAUCE Pesto is one of those things that I always just purchase from the supermarkets because it’s easier but I can assure you this sauce is worth making if you are planning on having it with pasta like we’ve done, you can beat those fresh flavours INGREDIENTS . . 🌸2 cups basil, firmly packed 🌸1/4 cups pine nuts 🌸1/4 cups cashews 🌸1/4 cup nutritional yeast 🌸1 tbs garlic mince 🌸1 tbs lemon juice 🌸1/4 cup oil 🌸1/4 cup water 🌸Salt & pepper . . 💕In your food processor mix together all ingredients except oil and water, you’ll need to scrape sides down and blitz . . 💕Then slowly pour in oil and water whilst the motor is running . . 💕Store in a container for a few days in fridge, if it lasts that long - otherwise mix in with cooked pasta like we are doing tonight . . 💕If you’re not vegetarian, add a can of tuna to the pesto and pasta, you won’t regret it!!

Thought I’d give these Paleo choc chip muffins a try a friend suggested from Gluten Free Palate website. These are delish! 😋⁣ ⁣ 2 cups fine almond flour⁣ 1/4 tsp salt⁣ 1/2 tsp baking soda⁣ 1/4 cup melted coconut oil, cooled⁣ 1/4 cup raw honey of maple syrup (more if you like it sweeter)⁣ 3 eggs⁣ 1 tsp GF vanilla extract⁣ 1/2 cup GF, dairy free choc chips⁣ ⁣ Method⁣ 2. Preheat oven to 180°C. Line a cupcake pan with 12 paper liners. ⁣ 3. In a large mixing bowl, whisk almond flour, salt, and baking soda.⁣ 4. Add coconut oil, honey, eggs, and vanilla extract and mix until well combined.⁣ 5. Stir in the chocolate chips.⁣ 6. Spoon batter evenly into your paper liners.⁣ 7. Bake for 18-20 minutes or until the center is set.⁣ 8. Remove from the oven and let cool for 5-10 minutes before serving.⁣ 9. Store in an airtight container at room temperature.⁣ ⁣ I might try coconut flour next time to see how they work out, then would be great for school lunch box too 🧡

RAW DATE SLICE 🥜🍫 When I was making these slices I thought they were going to be a huge fail and taste terrible.. but oh my goodness these are like heaven in a slice!! 🤤🤤🤤 ⠀⠀⠀ Recipe is below 👇🏼 ⠀⠀⠀ Base: 1 cup cashews 1 cup almonds 1/2 cup coconut milk 1/3 cup maple syrup 1/4 cup coconut oil Middle layer: 1 cup of medjool dates 1/2 cup peanut butter 3/4 cup coconut milk 1/4 cup coconut oil Pinch of salt 1 cup of peanuts Choc layer: 1/3 cup maple syrup 1/2 cup cacao powder 1/4 cup coconut oil Method: Base: Blend all ingredients and pour into a lined baking tray. Leave to set in fridge while you make the second layer. Middle layer: Blend all ingredients APART from the peanuts. Pour mixture into baking tray over the first layer. Sprinkle the peanuts on top and put back in freezer. Choc layer: Blend all ingredients together and pour over the first two layers of slice. Set in freezer for a couple of hours. Slice & serve!! ✨
