Looking for microbiome-friendly meal ideas? ⁣ ⁣ Embrace the rainbow! 🌈⁣ ⁣ The more (naturally) colourful your food is, the better. Pigmentation in our fruit and vegetables signifies an abundance of antioxidants. ⁣ ⁣ When constructing your meals, think about it this way: ⁣ ⁣ ✅ Opt for a strong leafy green base! Mix and match between kale, spinach, collard greens, rocket, romaine lettuce and the like! If the raw bite is a bit too much for your sensitive stomach, steam or stew them! This will retain the nutrients whilst still smoothing the roughage. ⁣ ⁣ Here, we have steamed kale with a silken tofu-miso-nutritional yeast sauce. ⁣ ⁣ ✅ Add some shades of red: think tomatoes, red peppers, chillis. Red vegetables like these get their hue and nutrition boost from lycopene and anthocyanin. Lycopene is an antioxidant that has been shown to reduce risk of heart disease, offer protection for the eyes and actually fight infections. ⁣ ⁣ Here, we have chopped cherry tomatoes and roasted red peppers. Roasting peppers and leaving them to cool makes for a super salad, simply add some garlic and parsley to complement their natural oils! ⁣ ⁣ ✅ Finally, too with some protein. Spaghetti with mushroom & red pepper rosé sauce by @thezestylime Follow us @vegspirationfeed for Daily vegan recipes 1-2 tbsp vegan butter (or olive oil) 3 large cloves garlic 250g container mushrooms (approx. 3 cups sliced) 1 bird’s eye chilli or hot red chilli 2 red bell peppers 1/4- 1/3 cup vegan white wine 1/4 tsp each dried rosemary, thyme, parsley, and sage 2 tbsp tomato paste 2 cups unsweetened soy milk 2 tsp mushroom ketchup (can substitute with tamari/soy sauce) 2 tsp apple cider vinegar (can substitute with rice or white vinegar) 3 cups baby spinach 1/2 cup shredded vegan mozzarella 1/2 tsp salt black pepper spaghetti noodles or other pasta of choice 🍝 1. to prep, mince garlic, slice/dice chilli pepper, and slice mushrooms and bell peppers. 2. sauté garlic in butter/oil in a large pan on medium heat for a few minutes, then add mushrooms and cook until they start to soften. 3. add chilli, red pepper, white wine, and herbs and stir fry for a minute or two before adding tomato paste, plant milk, vinegar, and mushroom ketchup. 4. increase heat to medium high until sauce is at a rolling boil and let sauce simmer until red peppers and mushrooms are softened to your liking. 5. add spinach, vegan cheese, and salt and pepper to taste and reduce heat to medium. 6. once cheese has melted and spinach is wilted, add cooked pasta and toss to completely coat the noodles. 7. serve with a sprinkle of vegan parmesan and some fresh herbs. Potato cakes 🥬 ⠀ Instead of spinach and cream cheese you can get creative what to use as filling: *tomato sauce + vegan cheese *mushrooms *curried lentils *mashed pumpkin etc ⠀ INGREDIENTS: Dough •3 medium size potatoes •pinch of salt •2 tbsp olive oil •1 tbsp fresh or dry parsley •2 cups of flour (more if needed) ⠀ Filling: •about 3 cups of fresh spinach (or half the amount of frozen spinach) •2 cloves of garlic •1 tsp salt, 1tsp pepper, 1 tsp oregano •3 tbsp vegan cream cheese ⠀ More: •1 tbsp olive oil for cooking the cakes ⠀ METHOD: 1. Cook the potatoes in salted water until soft. Mash them with a fork, add salt, olive oil, parsley and flour and need non sticky dough 2. For filling add olive oil to a pan, fry garlic for 30seconds, add spinach, season it and cook covered for 3 mins. When cooled add the cream cheese and mix together 3. Roll out the dough on a flour dusted surface to about 1 cm thick. Cut out round shapes, put about 1 tsp of filling per cake and pinch close with another patty 4. Add 1 tsp of olive oil to a pan and wipe it with a paper towel, add the cakes, cover and cook covered on very low flame for about 5mins. Flip and cook for another 5mins. 5. 🥗 Garlicky Kale Salad with Roasted Chickpeas! 🥗 Delicious and nutritious! And easy! And affordable! ANDDDDDD you get over half of your daily dozen!? Oh yeah, and the macros are solid 👌🏻 I could keep going, but I’ll let you get to cooking👇🏻 / / 1️⃣ Okay, first preheat the oven to 400F. Now boil some water. We gotta cook some grains. I recommend bulgur or quinoa—I used bulgur (I also recommend adding Orrington Farms Vegan Broth Base to your cooking water). Cook according to package instructions. Set aside. / / 2️⃣ Now grab some kale (can't really substitute this one--its a key player in kale salad). Rinse and remove stems. Add to a large bowl with some red wine vinegar, olive oil (optional), black pepper, and salt (optional). Set aside. / / 3️⃣ Next, slice up some sweet potato into 1-inch discs. Toss in olive oil and salt (optional). Bake for about 20 min or until piercable with a fork. / / 4️⃣ Now thinly slice some red onion. Add to medium-hot pan and sauté stirring frequently and adding water as needed. Cook until soft. About 10-20 min. / / 5️⃣ Okay, now we need our chickpeas. So grab a can of these. Drain and rinse. Now season with whatever you like. I used a curry spice blend, but smoked paprika is another good option—Bake for about 20-30 min or until crispy. / / 6️⃣ While everything is cooking, prepare the dressing. Add the juice of one lemon, one head of garlic minced, 1 tbsp of maple syrup, and 3 tbsp of tahini to a bowl. Whisk adding water as needed. (You can also roast the garlic ahead of time—Just cut off the top of the garlic, drizzle with olive oil, wrap in foil, and bake at 400F for about 30 min) / / 7️⃣ Now add grains, sweet potato, onions, and chickpeas to bowl with kale. Toss to combine. Drizzle with dressing. Enjoy. / / Y’all this is such a satisfying dish. Whoever said eating healthy plant-based meals was boring obviously didn’t try this kale salad 🤷🏻‍♀️

Heraus kam eine unschlagbare sauer scharf Marinade und eine Tofu Kreation, die geschmacklich nicht hätte besser sein können. (Eigenlob stinkt) Lange Rede, kurzer Sinn… hier kommt das heutige Mittagessen: . ZUTATEN: * Basmati * 100g Cashews, in der Pfanne geröstet TOFU MARINADE * 400g TOFU * 4 EL Sesamöl * 3 Knoblauchzehen, geraspelt * 3 cm Ingwer, geraspelt * 2 EL Süss Sauer Soße * 2 TL Maisstärke GEMÜSE * 1 rote Zwiebel, gehackt * 2 rote Paprika, in Streifen * 1 Broccoli, in Röschen (im Wasserbad gedünstet) SAUER SCHARF SOSSE * 100g Sriracha Soße * 4 EL Soja Soße * 1 EL Ahornsirup * 1 EL Worcester Soße * 400ml Brühe * 1 EL Maisstärke TOPPING Sprossen (optional), Koriander gehackt, geröstete Cashews . ZUEREITUNG 1️⃣Trockne den Tofu gründlich in einem Küchentuch. Zerfleddere ihn mit den Fingern in ca. 2x1cm große Stücke 2️⃣Vermenge den Tofu mit den restlichen Marinade Zutaten und lasse alles 30 Min ziehen 3️⃣Vermenge nun alle Zutaten für die Sauer scharf Sosse (Rühre die Maisstärke mithilfe eines Schneebesens ein, bis keine Klumpen mehr vorhanden sind) 4️⃣Erhitze Sesamöl in einem Wok und brate den marinierten Tofu scharf an. This vegan hot chocolate is great for warming on cold days. It is rich, creamy date sweetened. I usually made it with homemade coconut milk or cashew milk but you can use your favorite plant-based milk. Relying on another throwback today because my food the past couple of weeks really has been pretty basic (which is fine but just not very exciting to post! 😄). I made this Red Bean Goulash with leftover mashed potato one night when I was teaching a yoga class and didn’t have much time on my hands because it’s completely normal to plan a quick and easy tea and end up cooking goulash, right? 😂 . Well thanks to the recipe being from my ‘15 Minute Vegan’ cookbook this was actually really simple to make and I had leftovers for lunch the next day which is always something my future self will thank me for. I topped it with parsley and some unsweetened soya yoghurt to make it feel that little bit fancy too! 😉 . How many of you are drinking celery juice? Celery juice is good for your entire immune system. 😉💬⁣ .⁣ I love 😍 drinking celery juice. I'd drink it all the time BUT it's cost prohibitive if you're going to drink the quantities @medicalmedium suggests you drink. But we need to eat/drink foods that boost our immune system especially now amid covid-19 pandemic immune boosters are important! .⁣ I do the celery juicing on a seasonal basis, when there's an abundance and the cost has dropped to $.99 a bunch and I'll drink 3 glasses a day for 10 days to 2 weeks.⁣ Prices are currently $1.99/bunch. (1) bunch = solid glass of celery juice. ⁣ . If you're thinking of trying it but don't want to spend the money think of it this way...If you trade your daily cup of coffee for the celery drink or swap out the social distancing cookies and chips you bought you won't spend any more money and you'll be better for it. ⁣ .⁣ 📌 TIP: If possible and finances allow try to batch your celery juice. I tot I should share with you my insta friends, especially my vegan friends how to effectively preserve vegetables during this time of quarantine and lockdown. for vegans, this here is our meat, energiser, immunity, name it..I cdnt take all the pictures, but these will represent every other veg. Firstly for green leafy vegetables, and most all veggies, it's a good idea to blanch them first, den immediately stop d cooking process by dipping into ice cold water b4 u package.for the pulses, u can prefeeeze on a tray b4 packing, so dey don't stick together, for the leafy ones, squeeze out the water, after blanching, then cut up or slice as u want b4 packing, for yams and green plantains, cut up and parboil, for sweet potatoes, I love grilled, so I grill and pack. For ripe plantains, do not parboil, just slice up and pack, just like in the pictures.trust me, dey All last for months as fresh as ever in d freezer.so, you can eat ur veggies and have them as well.
