I know......its a terrible picture! But I never claimed to be a photographer, so that's ok!!! I was rushed because it was family painting night!!!! More to come on that later! . . I only had a few minutes to make a quick dinner, so salad it was! Don't be fooled though! It might be very basic, but rather delicious. . . I caramelized some red onion, added in some chopped kale, pinch of salt, juice from one lemon and some EVOO. Cooked until it was wilted and still tender. Topped it with some cucumber, grape tomatoes and avocado. Honestly took about 5 minutes and it was delicious! With a little more time I would have added some tofu and roasted some nuts! Next time. . .

I was craving this tonight. It’s the variation of the warm quinoa grain bowl and is a quinoa and arugula salad instead. I love the flavors, textures and colors of this dish. It’s packed with nutrients, greens and protein and is satisfying enough to be a complete meal. Start with a base of baby arugula then top with your favorite quinoa (this is homemade quinoa with kale, garlic and olive oil), hummus (again, pick your fave, homemade your way or store-bought is ok!), cucumbers, grape tomatoes, kalamata olives and a drizzle of lemon-tahini dressing (once again, pick your fave or quickly mix up your own with fresh squeezed lemon and a little garlic powder and sea salt to taste and thin with water to desired consistency). Moroccan lentils for the win! Dried goods are ever so popular right now. They are super inexpensive, high in protein, and have a long shelf life. During this quarantine, I've upped my legumes. I'm slowly transitioning to a more whole food, plant based diet. Now might be best time... Meat is at an all time high, and even harder to get our hands on in the grocery store. Finding a way to get quality protein in, and at an affordable price, I turned to legumes. 🍛These Moroccan lentils are very easy to make! Sauté a small onion in a little avocado oil. When translucent add a handful of diced cherry tomatoes, 3 cloves of minced garlic, and a handful of minced cilantro. When fragrant, add 3 C of veggie broth, 1 C of dried lentils, 1 tbsp cumin, 2 tsp ground ginger, 1 tsp cinnamon, 2 tsp paprika, and a big squirt of sirracha! Mix and simmer covered for 4 to 5 minutes. Remove from heat, and let sit covered for another couple minutes. . I got excited when I saw a giant bag of zucchini at Costco last week. This week I realized there was no way I was going to use them all up in time unless I made zoodles. So, I switched the menu from regular pad thai to zoodle pad thai! I chopped up a bunch of veggies and tossed them with raw zoodles in a bowl. Then I made the same sauce that I would made for regular pad thai, and poured that, a bunch of chopped cashews, and tons of herbs in with the veggies! It was a fun variation on regular pad thai, and I'm really excited to make this more often-- especially once it gets super warm outside!

(English & Español) Roasted in the oven, chickpeas transform into a crispy, salty and savory snack. You can also toss them with salads or sprinkle over soup in place of croutons! They are simply irresistible ❤️ Tips: 1. Dry them as much as possible. I rinse them with filtered water and let them air dry. 2. Don’t skimp on the olive oil. Less olive oil = Less crispy chickpeas. 3. Play with the spices: I love using spicy chili powder, paprika or curry powder. And salt of course. 4. Roast at 400F for 20-30min. Stirring the chickpeas every 10min. 5. Eat while they are still warm and crispy. . . . That is valid; but I encourage you to create a routine that is still going to make you feel good at the end of your day, whilst being at home all day. And to me, that means setting myself up with solid meals, versus lots of snacks sprinkled throughout the day...⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Eat healthy, eat enough, and focus on the fundamentals in your life that will help improve your health, happiness, etc.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ #dEATs: I've been LOVING using the @sietefoods taco seasoning as a dry rub when I cook chicken (Bake @400 F for a total of 40 mins)! Spring flowers and avocado brownies are kinda my thing 🌼🥑💕 these little gems are vegan, gluten free, oil free, and refined sugar free 🙌 I promise you can’t taste the avocado!
