Quick and easy #lahmajoun using tortillas and ground meat. All you need is store bought tortillas and some ground beef or lamb. Plus some 🍅 🥫 🧅 🧄🌿🌶, olive oil and cumin. I also add a little water to the mixture to thin it out, turmeric powder and black pepper. Purée everything except the meat in the food processor, spread it on tortilla, put it in the oven and in less than 5 minutes you can enjoy it. I took the classic New Orleans muffuletta sandwich and turned it into a Muffuletta Salad for lunch today. I’ll probably eat one everyday for the rest of the week because it was sooooo good. L E N T I L 🍝 B O L O G N E S E . I swear once you try lentil bolognese you will never make it any other way again! It’s so hearty and this version I made tonight was even more delicious with the addition of @nushfoods chive cream cheese. Now before you say that’s too weird adding cream cheese to a bolognese sauce just trust me, or better still, trust @nushfoods as this is their amazing recipe that I followed and it seriously took the bolognese up several notches! As they explained, adding creaminess to a regular sauce is actually a traditional way of creating a super silky sauce full of flavour🧡 . Here is the recipe for this delicious bolognese - be sure to save it, get yourself some @nushfoods chive cream cheese and enjoy🥰 . Ingredients: . 🍝1 chopped white onion 🍝1 clove garlic crushed 🍝2 chopped celery stalks 🍝1 chopped carrot (or finely grated as I often do) 🍝1 tin chopped tomatoes 🍝1 tbsp tomato purée 🍝1 400g tin lentils, drained & rinsed 🍝1 @kallo veg stock cube 🍝1/2 tub @nushfoods chive cream cheese 🍝pinch salt, pepper, Italian herb seasonings . Instructions: . ▫️In a pan with a drizzle of olive oil, gently fry the onion, garlic, celery & carrot until soft ▫️Add the stock cube, stir and cook for another couple of minutes ▫️Add in the chopped tomatoes, tomato purée, 100ml water, herbs and lentils ▫️Bring this to a boil and then simmer for 20 mins ▫️Now stir in the cream cheese and simmer for a final 10 minutes ▫️Serve with your favourite pasta and enjoy😋 . SHEET PAN PIZZA! Use homemade or store bought dough and spread it out on a sheet pan sprayed with non stick spray.....Top with sauce and cheese ( as much as you like), my kids like their pizza saucy and cheesy.... brush the crust with olive oil and sprinkle with Italian seasoning, Parmesan cheese and garlic powder. Bake at 400 degrees for about 20 mins or until the crust is golden brown and crisp. * use whatever toppings you like. You can even top half with one thing and the other with something else. Roast in a tray with 5 cloves of garlic on a medium heat. Turning a couple of times until they are soft. In a Nutribullet add rocket salad, Parmesan cheese and fresh or dried basil. Boil a pasta of your choice, drain and add the aubergine and cheese mix, I also added 3 large tbsp of homemade tomato sauce. Use any store press or fresh tomato sauce you have. Serve - this is a cheap, easy, quick and a really yummy din dins 🙌

How I do dinner bowls (hint: always easy!). Please take inspiration from this, but get creative on your own.💪 . 👉I put greens, other veggies and herbs (from my garden, when available!) in my food processor, whole or very coarsely chopped 👉I hit pulse repeatedly until everything is finely chopped, like a slaw 👉I put it in a bowl and add whatever other goodness I have on hand - always a source of protein* and always a healthy fat** 👉I sprinkle/splash on my favorite toppings*** . In this bowl, my veggies included mixed greens from my garden, red pepper, parsnip, celery, carrot, broccoli, brussels sprouts. My protein was plain poached salmon, and I also added some leftover coconut lentil stew. I topped with my favorite toppings (see below). . * My main sources of protein: eggs from my hens, nutritional yeast, legumes, salmon, nonfat, plain Greek yogurt ** My main sources of fat: nuts, seeds, avocado. I don't use a lot of oil because there are healthier choices. Sweet potato burger with a yellow bell pepper bun. Ingredients: 1 yellow bell pepper(or pepper of your choice), 1/4 cup lettuce, 1/4 of spinach, ALDI’s sweet potato burger, slice mozzarella, guacamole. To create my burger bun from my bell pepper, I chopped the top off my pepper and then took out the seeds from the middle. Once I had done that I then cut my pepper in half and microwaved it for 2 minutes. I then took it out of the microwave and let it cool. So easy and flavorful. ⁣ .⁣ I used my refried beans in quesadillas, but you can use it as a dip with chips, eat it with rice or make burritos.⁣ .⁣ Refried Beans⁣ .⁣ 1/2 large onion, finely diced⁣ 1 poblano pepper, finely diced ⁣ 1/4 bunch cilantro, minced⁣ 2 garlic cloves, pressed⁣ 1 1/2 tsp chili powder⁣ 1 tsp cumin⁣ 1/2 tsp paprika⁣ 1/4 tsp dried oregano⁣ 2-15.5 oz cans pink beans, drained and rinsed⁣ 1/2 c stock⁣ 1 lime, whole zested and 1/2 juiced ⁣ .⁣ Heat a skillet over medium heat with olive oil.⁣ When oil is shimmering, add onions and pepper.⁣ Cook for three minutes and add cilantro and garlic.⁣ Push veggies to the side, add spices and toast until fragrant, about a minute. Combine with vegetables.⁣ Add beans and stir. Cook for two minutes. ⁣ Add stock, scraping up any bits stuck to the bottom of the pan. ⁣ Turn heat off, but leave skillet on burner. ⁣ Carefully mash, to desired consistency, with a potato masher. ⁣ Add lime zest and juice and stir.⁣ .⁣ To make quesadillas, add a little olive oil to a pan and toast a tortilla. Stuffed bell peppers are on the regular over here at the Wroe house. It’s an easy way to get a serving of veggies and to use up whatever ingredients might be lying around. Plus it’s always fun to eat your bowl! Here’s what was in this batch: *bell pepper halves, sprayed with oil and baked about 15-20min at 400 to soften a bit *cannellini beans *sautéed spinach *quinoa *canned tomatoes *pesto *feta cheese —>stir ingredients together, fill bell pepper halves and bake again for 15-20min These also freeze really well! I made another batch today bc I had extra ground beef from my spaghetti sauce so I mixed the same items but beef instead of beans and spicy tomato sauce instead of pesto. Puff Pastry Salmon (Salmon Wellington) 🍽 Full recipe below, send it to a friend who’d love this!⁣ Follow @melsbodysquad Repost @delicioushealthyvideos By: Tasty Ingredients (for 2 servings) 2 tablespoons butter 2 cloves garlic, chopped ½ medium onion, chopped 5 oz fresh spinach (140 g) 1 teaspoon salt, for spinach 1 teaspoon pepper, for spinach ⅓ cup breadcrumb (40 g) 4 oz cream cheese (110 g) ¼ cup shredded parmesan cheese (30 g) 2 tablespoons fresh dill, chopped 1 sheet puff pastry, softened to room temperature 1 salmon fillet 1 teaspoon salt, for salmon 1 teaspoon pepper, for salmon 1 egg, beaten Preparation Preheat oven to 425°F (220°C). In a pan over medium heat, melt butter. Add the garlic and onions, cooking until translucent. Add the spinach, salt, and pepper, cooking until spinach is wilted. Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside. On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper. Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides. Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. ~ COCONUT CHICKPEA CURRY ~ It’s time for my utterly delightful nutrient packed fusion curry which uses all ingredients you’re likely to have in your cupboards/freezer. Use whatever veg you have (frozen works a treat!) and you can substitute the chickpeas for any type of beans you like. I decided to combine chickpeas and white beans which were delicious. Serve with rice, flatbread or as a soup/stew with crusty bread. It’s super cheap, delicious, and completely bursting with vitamins and minerals. We couldn’t get enough 🙊 I hope you try it! Recipe is below and in my highlights. Enjoy 😘 🍃 Serves 5. You will need: 1 tbsp oil 1 onion, finely chopped 1 tbsp garlic, minced/finely chopped 1 bell pepper, chopped in to chunks 1 large handful spinach, chopped 400g tin of chickpeas, drained 400g tin of any beans, drained (replace with another tin of chickpeas if preferred) 400ml coconut milk 200g tinned chopped tomatoes 1-2 tsp brown sugar (to taste) 2 tbsp fresh coriander, chopped 2 tbsp fresh parsley, chopped Spritz of lemon juice 🍃 Spices: 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika (not smoked) 3/4 tsp hot madras curry powder 1/2 tsp black pepper Chilli powder, to taste Salt, to taste 🍃 1. Fry onion in oil till translucent and add garlic. Fry for 1 min. 2. Add bell pepper and fry for a couple of minutes. If using frozen, fry until the pieces defrost in the pan. 3. Add spices and stir fry for 1-2 mins till fragrant. Careful not to burn them. 4. Add chickpeas and mix through for a minute till fully coated in spices before adding tomatoes. Mix again. 5. Add coconut milk and stir until any solids have fully dissolved and the curry becomes creamy. Bring to a boil, reduce heat to low, cover and cook for 10 mins to allow all flavours to infuse and for the peppers to become soft. 6. Remove lid, add sugar and mix. Add white beans now if using. Mix well. 7. Add spinach, coriander and parsley and mix for a few mins on low heat till the leaves wilt and cook fully down in to the sauce, and until the beans heat through. Don’t mix too vigorously as the beans will become mushy. 8. Taste and adjust final seasoning. Spritz in lemon juice and serve hot.

You can use the same recipe for any beans or pulses so, if you fancy a curry, here’s how to do it in 15mins! . 🍛Black eyed beans curry 🍛 . What’s in it? (Serves 4) ▫️2 tins black eyed beans (or any beans or pulses) ▫️1tbsp @mr_organic rapeseed oil ▫️1/2 chopped medium white onion ▫️1/4 tspn cumin seeds ▫️1/4 tspn mustard seeds ▫️3 cloves ▫️5 small curry leaves ▫️1 cinamomo stick broken into small pieces - about 1 tspn ▫️1/2tspn turmeric powder ▫️1/2 tspn cumin & coriander powder (dhaana-jeeru) ▫️1/2 tspn garam masala ▫️1/2 tspn red chill powder (not for kids) ▫️1/2 tspn cinnamon powder ▫️1/2 tspn salt ▫️200ml water ▫️1/2 tin chopped tomatoes @mr_organic ▫️1tspn brown sugar or jaggery if you have ▫️garnish with coriander & half an avocado . . A GOOD LUNCH. Basically yoghurt on toast.. sourdough, toasted and left to harden and rubbed with raw garlic, the more the merrier for me, but go as light or heavy as you like. The hard toast acts like a grater. A spread of butter (optional) spoons of Greek yoghurt. Then whatever you fancy really, spices, herbs, veg. Today I used.. . . Chopped red onion, parsley, buffalo hot sauce on one. . . Fresh thyme and truffle oil on the other, though good olive oil would be lovely too. Both seasoned well. Lemon zest would also be great as an extra seasoning. . . Down the hatch al fresco. Jobs a goodun.
