I had this yummy salmon salad for lunch today. 🤤🤤. my family had left over quinoa from our dinner last night and i knew right then and there that i was gunna be making myself a salmon salad. i made this salmon in only 15 minutes, and that gave me the perfect amount of time to prepare the rest of my salad. i seriously finished throwing everything in my bowl and the timer went off for my baked salmon to be done👏. En ocasión de el #diamundialdelasalud quiero compartir con vosotros una receta saludable y completa, un plato único a base de quinoa, legumbre y especias, muy sencillo y rápido de preparar. INGREDIENTES PARA 2 2 cucharadas de aceite de oliva virgen extra 1 zanahorias 1 cebolla mediana 120g de quinoa cruda 160g 1 taza de garbanzos cocidos 1 cucharadita de cúrcuma ½ cucharadita de comino Pimienta negra sal al gusto PREPARACIÓN En una sartén grande, echaremos el aceite y cuando esté caliente, añadiremos la cebolla picada en juliana, y la dejaremos, removiendo de vez en cuando hasta que esté transparente, Mientras tanto picaremos igual la zanahoria y la añadiremos a la sartén. Iremos removiendo hasta que la zanahoria empiece a estar tierna. Si se pega, podemos echar unas gotitas de agua, hasta que esté hecha. Añadiremos las especias, removeremos bien y añadiremos la quinoa cocida y los garbanzos también cocidos, añadiendo sal al gusto y removiendo bien mientras todo se integra y se acaba de cocer. Dinner! We grownups were having veggie quinoa soup for dinner but since E had leftover quinoa for lunch and I was a bit afraid of the cleanup if I gave her soup I tried jazzing it up by using the soup solids as a pasta sauce of sorts. I won’t ever go back to anything else and I HOPE YOU DO TOO 💕Let’s get started: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Please Note 📝 FEEL FREE TO MAKE THIS WITH COUSCOUS , BULGUR , OR ANY healthy grain of choice ! In a pot add 2 Cups of water a pinch of salt and once the water comes to simmer/boil add your rinsed quinoa. Reduce the heat to LOW and simmer it with a lid on that has a dent for air to escape until fully cooked and fluffy. Let it cool COMPLETELY (I even make mine the night before) . Once cooled add : 1/3 Cup FINELY chopped fresh parsley, 1-2 Squeezed lemons 🍋 up to your taste , 1-2 Tablespoons of Olive Oil , Salt to taste , finely chopped radicchio , cucumbers , tomatoes and stir it all up !! Greek Quinoa with Hearts of Palm 💙 ⠀ 1 cup quinoa 2 cups filtered water 14 oz hearts of palm, drained, rinsed, and cut into slices 1/2 cup diced red onion 1 large ripe tomato chopped 1/2 cup chopped kalamata olives 2 garlic cloves minced 2 tbsp fresh oregano chopped 1/4 cup olive oil 2 tbsp red wine vinegar Sea salt ⠀ **all organic ingredients if possible ⠀ In a medium pot, combine and quinoa and water. Cover and bring to a boil, then lower the heat and simmer for 15 min. Remove pot from heat and let sit covered for 5 min. Remove the lid and let quinoa cool to room temperature. ⠀ In a large bowl, combine all the ingredients and then stir in quinoa and serve.

💡Como la Quinoa es uno de mis granos preferidos, ayer les preparé esto, porque estuve aprendiendo sobre los beneficios de los distintos tipos de Quinoa y como prepararla en sus diferentes versiones ✨. Tenemos diferentes versiones de ella: 1. Grano entero: La mejor receta a mi gusto para prepararla y que quede más crujiente es: lavas la quinoa (para quitar la capa de saponinas de las semillas que dan amargor) y la preparas en una olla con la proporción 1 taza de quinoa por 1 taza de agua. Le puedes agregar verduras cortadas, tomates deshidratados, o lo que quieras! Puedes comerla fría o caliente. 2. Inflada o Quinoa pop : Esta es como preparar cabritas de maíz, que quedan pelotitas crujientes y puedes comerlas como cereal en el desayuno, agregar a frutas y ensaladas. Al incorporar aire en la elaboración, una taza de quinoa inflada sacia mucho pero a la vez es ligera y nutritiva. 3. Harina: Se debe consumir con cocción, tiene un poco menos de fibra que el grano entero pero mantiene muchas proteínas vegetales y es una opción ideal para celiacos. 4. Germinada: La gracia de germinarla, es que la dejas en su peak nutritivo. Tiene más antioxidantes, vitaminas, fibras, proteínas, enzimas y ácidos nucleicos, refuerza sist. inmune y mejora digestión. ¿Cómo se hace? Te recomiendo partir en la noche. Por ejemplo, con 1/2 taza de quinoa, la lavas y en un bowl de cristal o tarro, la rellenas de agua y la dejas reposar 6-8 hrs tapada con un paño, en un lugar fresco y oscuro durante la noche. Luego botas esa agua, la enjuagas de nuevo, botas el agua y lo tapas dejándolo en un lugar templado sin luz. Debes lavarlo cada 6 hrs, dejando las semillas húmedas antes de taparlas de nuevo. Lo repites un par de veces durante el día y en 1-2 días cuando veas que salen los primeros brotes, ya está germinada. La deben pasar al refrigerador y consumirla en un max. de 3 días ✔️. Cook on low heat with 2 cups of water and salt for about 12-15 minutes until all the water is completely absorbed.Fluff with a fork after it cools. Other ingredients - lettuce, grape tomatoes cut in half, red onion - diced fine Shrimp: 400 grams peeled shrimps 3 Tbsp olive oil 1 tsp chilli powder 1 tsp paprika 1/2 tsp italian herbs 1 clove garlic minced Salt to taste Heat oil in a non stick pan and toss in shrimp mixed with all the above ingredients and cook on medium to high heat for 4-6 minutes tossing frequently until slightly charred and shrimps are cooked through. Quinoa with Shiitakes & Snow Peas Makes: 4 servings Ingredients: *1 cup uncooked quinoa, rinsed *1 tbsp toasted sesame oil, divided *2 cloves garlic, thinly sliced *4oz shiitake mushrooms, stems discarded, caps thinly sliced, about 2 cups *4oz snow peas, thinly sliced on an angle *kosher salt & freshly ground black pepper, to taste *1 tbsp low-sodium soy sauce *1 scallion, white & green parts, sliced Directions: 1. Place quinoa & two cups water in a small saucepan. Bring to a boil over high heat. Stir once, then cover & reduce heat to low. Continue to cook until the water is absorbed & the quinoa is tender, about 20 minutes. Remove from the heat & let stand five minutes; uncover & fluff with a fork. 2. Meanwhile, heat one teaspoon of sesame oil in a medium-size nonstick skillet over medium-high heat. Add garlic & cook until fragrant, about one minute. What can I do with quinoa, tomato and dry mushrooms? For example this STUFFED EGGPLANT 🍅🍆🍃👌🏻 I did an delicious experiment so who is coming for lunch? 😉 so easy and so yummy! As always here 🙌🏻 try it! 1 eggplant olive oil, spices 1 cup of quinoa 2 tomatoes handful of dry mushrooms (or fresh ones) 1/2 onion optional cheese, herbs Cut the eggplant in half, sprinkle with oil and salt, bake it around 30min/200C. After this time scoop out the center, leaving half centimeters inside the skin so that it holds its shape when baked again. Boil quinoa. On the frying pan add onion, tomatoes, mushrooms (when dry, soak them in water around 15 min) and spices. Chop eggplant that has been scooped out of the inside. When quinoa is ready, mix with everything, add spices. Put inside baked eggplant, add cheese if you like and bake again for 15 min. 😍 I ate with tahini sauce and fresh salad. Couldn’t sleep. Dreaming of walking through Costco aisle-by-aisle. It felt like such a luxury just picking out what we wanted. But the next minute I felt rushed and suddenly had a mask on. Here’s a little inspiration for your dinner tonight- delicious Mexican Quinoa Patties! Recipe by @diet_tamasha below🔽 Mexican quinoa patties 1 sweet potato / regular potato, boiled and grated 1/2C cooked Pink Harvest Farms Quinoa 1/2 C boiled rajma, mashed 1 chia egg (1T Pink Harvest Farms chia seeds mixed with 3T water. Let it sit for 10 mins till its like a thick gel). 2T Tomato puree (or 1 fresh tomato blended without skin) 1t Paprika (or red chilly powder) 2t Chipotle spice mix (or any mexican seasoning like taco seasoning) Salt and Pepper, to taste 1T Olive oil 1 squeeze Sriracha (or ketchup) 1 onion finely chopped and sautéed with 4-5 chopped garlic cloves 1 green chilly, chopped (optional) Method - 1. Cook the quinoa according to instructions on packet. 2. Meanwhile, cook the onion and garlic on a non stick pan with some oil until onion is translucent 3. Once cooked, add all ingredients to a bowl and mix well. Taste and adjust the salt if required. 4. Lightly oil your hands and form the mix into as many patties based on the size of your buns. Put them on a plate. 5. Take a non stick pan and add 2 tablespoons of oil. Heat on medium, once the oil is hot, add the patties and cook on medium heat until browned. Flip them one by one and cook the other side. You can choose to shallow fry the patties in more oil if you want a fried option. 6. Assemble a burger or eat them as it is, they’re yum! 7. Kinoa ve badem ununu, tuzu, karabiberi, naneyi ve kabak çekirdeğini bir kapta harmanlayın. ✔️Ardından zeytinyağını ve keten tohumlu karışımı ekleyip yoğurmaya başlayın. Kıvam alabilmesi için önce 1 tatlı kaşığı su ekleyin, ardından son 1 kaşık suyu da ekleyip iyice yoğurun. Katı kıvamlı bir hamur elde edeceksiniz. ✔️Hamuru yağlı kağıt üzerinde çok ince olmayacak şekilde bir tabaka halinde açın. ✔️Fırını alt üst ısıtmalı 175 dereceye ayarlayın. ✔️Yağlı kağıt üzerine serdiğiniz kraker tabakasını fırına verin. ✔️Ortalama 15-18 dakika arasında üzeri kızarana kadar pişirin (Dakikası fırına göre farklılık göstereceğinden kontrol etmenizde fayda olacaktır). ✔️Piştikten sonra fırından çıkarın ve soğumasını bekleyin. ✔️Soğuduktan sonra büyük bir bıçak yardımıyla küçük parçalar haline getirip tüketebilirsiniz. These patties are a great way to include quinoa in your junk day meal. You can sub potato with sweet potato also. They are good to go in the kebab platter also . Cz we were in the mood of some Italian risotto. Absence of arborio rice had me use quinoa (tricolour- i use @worldofrostaa) and some brown rice. Prep time: 20 min Cook time: 40 minutes Serves: 3 Ingredients 125gms Quinoa 100gms brown rice 1tbsp cream 1 tbsp butter (optional) 1 tbsp olive oil 1/2 red bell pepper chopped 1/2 green bell pepper chopped 4 cloves garlic minced 250gms mushroom sliced 1 cup broccoli cut in small florets 1/2 cup cauliflower cut in florets 400 ml vegetable stock (i use the stock cube from @nestle.maggi) Salt and pepper Cheese for garnish METHOD soak the rice and quinoa in hot water for 10-12 minutes. Drain thereafter and keep a cup of the water. In a pan heat heat oil and saite mushrooms, bell peppers, garlic, broccoli, cauliflower. Saute till the water from the mushrooms dries up and vegetables are cooked tender. Add salt and pepper to taste and keep it aside. In the same pan add the rice and quinoa mix and the 1 cup water. Keep the heat low to medium. And add 100ml a time of the vegetable stock to cook the quinoa rice mix. Let it cook. Ensure to keep the mixture loose. Once u attain the consistency. Add oregano, 1 tbsp cream and 1 tbsp butter (optional) and give it a good mix. Remove from heat and add the sauted vegetables. Quinoa porridge and milk tea 🥰 I cooked a big batch of quinoa this week and I've been using it in a bunch of different ways. As a substitute for rice with yummy Thai food (@chris_kamhoms has been cooking up a storm 🥰), mixed in with stir fried veggies for one pot meals, and of course this quinoa porridge ❤️ Just mix some precooked quinoa with your favourite milk, add a spoonful of almond butter, a banana and a tiny sprinkle of sea salt. I also tried it with black sesame powder when I ran out of almond butter. So tasty ❤️

Grilled Chicken Quinoa! 🍗 For this quick meal, I combined baked chicken breasts and left over tri-colour quinoa! Sautéed onion, garlic, chilli on medium heat; added chopped chicken & quinoa; poured some water for everything to combine seamlessly. KVINOJINA SKLEDA Z JAJČEVCI IN POŠIRANIM JAJCEM - 100g suhe kvinoje + 200ml vode - 1 jajčevec - 20g olivnega olja - sol - 1 jajce - zelena solata Kvinojo skuhaj v dvojni količini rahlo osoljene vode. Pečico segrej na 200°C. Jajčevec nareži na kolobarje in jih položi na pekač. Začini jih s soljo in olivnim oljem in peci v ogreti pečici okoli 20-30 minut do željene zapečenosti. V manjšo kozico nalij vodo in jo segrejemo do vretja. Posebej, v manjšo skodelico razbij sveže jajce. Kozico odstrani z ognja, da voda neha vreti in vanjo previdno vlij jajce. Pusti poširati 3-4 minute, nato jo previdno odstrani iz vode. Na krožnik položi 2 velika lista zelene solate, dodaj pečene rezine jajčevca in kuhano kvinojo. Na vrh položi poširano jajce. QUINOA BOWL WITH EGGPLANTS AND POACHED EGG - 100g quiona + 200ml water - 1 eggplant - 20g olive oil - salt - 1 egg - lettuce Cook quinoa in a double amount of salted water. Heat oven to 200°C. Slice eggplant and place them on a baking tray. Season with salt and olive oil. Bake for 20 - 30 minutes.Bring a small pot of water to a boil, the turn off the heat. Crack the egg in a small bowl. Pour the egg gently into the middle of a pan and set a timer for 3 minutes. Once the egg is done, use a slotted spoon to remove the poached egg. Place 2 lettuce leafs on a plate, add baked eggplants, cooked quinoa and top with poached egg.
