Meal-Prep Honey Sesame Chicken with Broccolini 🍸 recipe & 📷@purewow DONT FORGET FOLLOW @yummyrecipes_ideas @yummyrecipes_ideas INGREDIENTS 1 pound skin-on chicken thighs Kosher salt and freshly ground black pepper ⅓ cup chicken broth 3 tablespoons soy sauce 3 tablespoons honey 1 tablespoon sesame oil 1 tablespoon grated fresh ginger 2 garlic cloves, minced 1 tablespoon vegetable oil 2 bunches broccolini, ends trimmed 1 tablespoon sesame oil Kosher salt and freshly ground black pepper 1 recipe Cauliflower Rice 2 tablespoons sesame seeds 1 bunch scallions, thinly sliced on the bias INSTRUCTIONS 1. MAKE THE CHICKEN: Preheat the oven to 425°F. Season the chicken with salt and pepper. In a medium bowl, whisk together the chicken broth, soy sauce, honey, sesame oil, ginger and garlic. 2. In a large oven-safe skillet, heat the oil over medium heat. Add the chicken to the skillet, skin side down, and sear until evenly browned, about 5 minutes. Flip the chicken skin side up. 3. Pour the broth mixture into the skillet and bring to a simmer over medium-high heat for 2 minutes. Transfer the skillet to the oven and cook until the sauce has thickened and the chicken is fully cooked, 15 to 17 minutes. 4. PREPARE THE SIDES: In a large bowl, toss together the broccolini and sesame oil; season with salt and pepper. Arrange in a single layer on a baking sheet. 5. While the chicken finishes cooking, roast the broccolini until it is tender, 8 to 10 minutes. 6. To assemble the meal-prep containers (or to serve), divide the cauliflower rice and broccolini among four containers (or plates). Add the chicken andgarnish with sesame seeds and scallions. 7. An oldie but a goodie. This dish was inspired by a trip to Paris. Jet lagged, we turned up to a cafe for lunch, and the table over from us had this awesome looking salad. After a few trips back I finally managed to order the right dish. Roast potato rounds, roast baby carrots, roast chick peas, green leaves of choice, feta/other cheese (haloumi would be a good one), tomatoes, pine nuts and a piece of grilled chicken. Goes with just about any dressing but I’ve used a lemon+yogurt dressing with parsley and pepper on this one. Lightly grease a 9x13 baking dish with cooking spray. Arrange chicken breasts in baking dish and rub in the minced garlic over each chicken breast. Season chicken on both sides with salt, pepper, garlic powder, oregano, and Italian seasoning. Place a pat of butter over each chicken breast. Place a sheet of parchment paper over the chicken breasts. Tuck the edges so that it's snug around the chicken. Bake for 30 to 33 minutes, or until chicken's internal temperature reaches 165F. beer cheese chicken enchiladas 🍸 recipe & 📷@yestoyolks DONT FORGET FOLLOW @yummyrecipes_ideas @yummyrecipes_ideas INGREDIENTS 1 tablespoon olive oil 1 lb chicken breasts, cubed 1 teaspoon chili powder 1 teaspoon ground cumin ½ teaspoon ground coriander ½ teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon smoked paprika 1 bell pepper, seeded and diced 1 jalapeno pepper, seeded and minced 1 cup corn Salt and pepper, to taste ½ of an 8-oz can enchilada sauce 8 flour tortillas 1 cup shredded cheddar cheese, for topping enchiladas 1 tablespoon butter 1 tablespoon flour 6 oz beer 6 oz whole milk The remaining ½ can of enchilada sauce 2 cups shredded cheddar or jack cheese (or a combo of the two) Salt and pepper, to taste 1 cup cherry tomatoes, halved 4 scallions, chopped ¼ cup torn cilantro leaves 1 avocado, thinly sliced Lime wedges Crushed tortilla chips INSTRUCTIONS Preheat the oven to 400°F and grease a 9 x 13 baking dish with butter or nonstick cooking spray. Add in the jalapeno, bell pepper, corn, and enchilada sauce and bring the mixture to a simmer. Cook for a few minutes or until the enchilada sauce thickens and reduces. Set the filling aside to cool. Pour roughly 1 cup of the beer-cheese sauce into the bottom of the greased baking dish. FIll the tortillas with the chicken mixture, using 3-4 tablespoons of the mixture in each tortilla. Roll up the tortilla and place seam side down in the pan. Once all the tortillas are filled and in the pan, pour the remaining beer-cheese sauce over top and smooth out the top. Sprinkle the top of the enchiladas with the 1 cup of cheddar cheese. Bake for 20-25 minutes or until bubbly, melty, and golden brown in spots. Top each serving of enchiladas as you prefer. I like chopped cherry tomatoes, scallions, cilantro, avocado slices, lime wedges, and a sprinkling of crushed tortilla chips. You wanted the recipe for what I’ve been eating for dinner this week, here it is! It’s super simple, and SO GOOD 🤤 ⠀ Sweet potato toast with sautéed kale + eggs ⠀ Ingredients: ⠀ • 1 medium sweet potato • 1 cup kale • 2 eggs • 1 teaspoon butter • 1/2 teaspoon chopped garlic ⠀ Instructions: ⠀ • for sweet potato toast: preheat over to 350° F, slice 1 medium sweet potato into approximately 8 1/4 inch thick slices, arrange slices on baking sheet and bake for 20 minutes turning after 10 minutes, store in airtight container in refrigerator and when ready to eat place 4 slices in toaster until crisp. • for kale: melt 1 teaspoon butter in frying pain, add 1/2 teaspoon chopped garlic, add 1 cup of kale and sauté. • for eggs: cook 2 eggs as preferred • top sweet potato toast slices with kale + eggs, and enjoy! • optional: I put Trader Joe’s everything but the bagel seasoning on my eggs! ⠀ Tag me ( @alyssa.grieco ) in a story or post if you give this recipe a try and let me know how you like it!

Dinner made simple with Balsamic Sheet pan chicken from @doriegreenspan. I used halved and quartered chicken breasts, purple potatoes, extra mushrooms and added frozen artichoke hearts at the end. Delicious, easy, and healthy! I found this recipe on one of my favorite recipe sites @twopeasandpod. Thanks all for the dinner ideas! · 1 1/2 pounds small potatoes scrubbed and halved if large · 1/2 pound white mushrooms wiped clean, trimmed and cut in half if large · 1 large shallot or medium onion cut into 8 wedges, rinsed and patted dry · 4 garlic cloves unpeeled · 8 sprigs fresh rosemary · 8 sprigs fresh thyme · Fine sea salt and freshly ground pepper · 6 tablespoons extra-virgin olive oil · 5 tablespoons balsamic vinegar · 4 whole chicken legs or bone-in chicken thighs patted dry 1. Preheat oven to 450 degrees F. Line the baking sheet with foil. 2. Toss the veggies and seasonings in a large bowl with 3 tablespoons of oil and 3 tablespoons of balsamic. Mix well and spread out on baking sheet. 3. Put the chicken in the bowl with remaining 3 tablespoons oil and 2 tablespoons balsamic, 1/2 teaspoon salt and pepper. Mix well to coat the chicken and then place around the veggies on the pan. 4. Tonight’s 5 minute dinner 🙌🏼 arguably a lunch but I got home late after the gym and didn’t fancy much so this was perfect! To celebrate potatoes, this week we are putting them to use when making our delicious potato samosas, a COOKSMART kid favorite! Use as a tasty snack or have a few for a yummy lunch! INGREDIENTS pastry – frozen 1 package 4 Potatoes 1 cup Green peas 4 Green Onions ¼ cup cilantro 4 cloves garlic ½ tsp chili powder 1 tsp cumin 1 tsp garam masala ¾ tsp salt or to taste DIRECTIONS Cut potatoes into chunks, and cover with water in medium pot. Boil until soft when poked with a fork. Drain potatoes completely, and mash roughly. Finely chop up cilantro, green onions, and garlic. Mix chopped ingredients and all seasonings together and cool. Cut each pastry sheet into 4. Place a spoonful of filling in the middle of each square. Wet the edges of the pastry and fold over to make a triangle. Seal edges with a fork. 🙋‍♀️ MEAL PREP INSPO! We've all been there, cooking the same meals on repeat and out of ideas in the kitchen. Sometimes I scroll though my own insta feed and then come across something delicious I've made in the past. I need a place to keep all my recipes together! I don't use alot of recipes when it comes to dinners, I just throw things together. But, to make a dish taste really good there are a few key things I always add. It's so easy to up the flavour in your meals, here's a little cheat sheet with some fresh ideas instead of the typical salt and pepper 🧂 Use one or 2 from each category for a perfect flavour balance. Something salty: Himalayan salt, sea salt, tamari, miso, kelp flakes Something sour: Lemon, lime, grapefruit, apple cider vinegar, rice vinegar, sauerkraut Something crunchy: Nuts, seeds, roasted chickpeas, raw apple or pear slices Something sweet: maple syrup, honey, coconut sugar, pineapple, mango Something bitter: greens, citrus zest, cranberries, cocoa powder Herbs/spices: ginger, turmeric, oregano, rosemary, cumin, mint, dill etc.. so many to choose from! Add a few of these things together and you'll have a flavour packed meal! Here's an example with my dinner tn. Citrus chicken: tamari, lemon/lime juice, a bit of maple syrup, citrus zest, garlic, ginger and chopped cashews. What do you like to combine for delicious flavors?

🌱KOFTAS🌱 A Friday night treat for my tea. I made plant based koftas. I served with a garlic naan, garlic cashew mayo, pickled beetroot, roasted cauliflower, red onion and spinach. I also topped with pickled aubergine. It took around 40mins to prep and cook. The naan- could easily be missed out if you were gluten-free and maybe sub with rice. It was a great dish with plenty nutritional value. I used @meatlessfarm mince and it was amazing 😁 I've used it in lots of recipes before and it worked well in this dish it really absorbed the spices and formed and cooked well without drying out 😋. A very versatile dish and super tasty 🌱💪. INSTANT POT HONEY TERIYAKI CHICKEN 🍸 recipe & 📷@lecremedelacrumb Follow @easyrecipes_ideas Follow @easyrecipes_ideas Ingredients 4 boneless skinless chicken breasts (or 6 chicken thighs) see note 1 1 cup soy sauce (I use low sodium) 1/2 cup water 2/3 cup honey 2 teaspoons minced garlic 1/2 cup rice vinegar 1/2 teaspoon ground ginger 1/4-1/2 teaspoon crushed red pepper flakes use 1/2 teaspoon for a more noticeable touch of heat 3 tablespoons corn starch + 3 tablespoons cold water 2 teaspoons sesame seeds diced green onions, for topping steamed white rice or fried rice, for serving Instructions Place chicken in pressure cooker. Whisk together soy sauce, water, honey, garlic, rice vinegar, ground ginger, and crushed red pepper flakes. Pour over chicken. Place lid on pressure cooker, turn vent to seal. Press "pressure cook" and set timer to 35 minutes for frozen chicken, 30 minutes for thawed. When pressure cooker "beeps" to signal end of cooking time, allow a natural release (aka don't do anything) until the float valve sinks. Remove lid, transfer chicken to a bowl and shred with two forks. Use a slotted spoon to remove any pieces of fat in the pressure cooker leftover from the chicken Set pressure cooker to "soup" setting. Once liquid comes to a boil, stir together corn starch and water and whisk into the sauce until thickened. Stir in sesame seeds. Turn off pressure cooker, transfer shredded chicken back to the pressure cooker and stir to coat in the sauce. AUTHENTIC ITALIAN MEATBALLS AND SUNDAY SAUCE 🍸 recipe & 📷@sipandfeast DONT FORGET FOLLOW @yummyrecipes_ideas @yummyrecipes_ideas Ingredients For The Sauce 4 28 ounce cans San Marzano plum tomatoes 1 6 ounce can tomato paste 1/2 cup olive oil 1 medium onion 1 tsp kosher salt 1/2 tsp black pepper 1/2 tsp sugar For The Meatballs 1 pound ground chuck 1 pound ground pork 1 1/2 cups unseasoned breadcrumbs 3/4 cup grated parmigiano reggiano 1/2 cup fresh parsley 2-3 large eggs 3 cloves garlic 2 tsp kosher salt 1/2 tsp black pepper Instructions Dice 1 onion. In a large bowl hand crush the tomatoes. Alternatively, pulse the tomatoes in a blender for 2-3 seconds. Coat the bottom of a large heavy pot with a 1/2 cup of olive oil and saute the onions on medium-low heat until translucent (about 5 minutes). Add the tomato paste to the onions and cook for 5 minutes, spreading the paste around with a wooden spoon. Add in all the hand crushed tomatoes, 1 tsp of kosher salt, 1/2 tsp black pepper and 1/2 tsp of sugar. Stir the sauce until incorporated and cook on a low simmer with the lid left slightly ajar. Stir the sauce every so often to avoid sticking. Add the beef and ground pork to a large mixing bowl and season with 2 tsp kosher salt and a 1/2 tsp black pepper. In a small bowl beat 2 eggs and set aside. To the meat, add the breadcrumbs, grated cheese, parsley and garlic paste. Pour the eggs in and mix everything together. If the mixture is too dry, add one more egg to the mix. With wet hands roll approximately 2" size meatballs. The meatballs can be baked on a sheet pan with wire rack at 375f for 25-30 minutes or until brown in the middle of oven. Place the browned meatballs in the sauce and cook for a minimum of 1 hour on low heat to allow the meatballs to absorb the flavor of and braise in the sauce. When the meatballs are finished, serve with choice of pasta, grated cheese and Italian bread.
