Lemon shortbread caramel cups 🍋 •• Perfect buttery shortbread base, with a creamy rich almond butter caramel filling, topped with whipped lemon coconut cream. PERFECT flavour and texture combo🙌🏽🙃 •• SHORTBREAD BASE -1/3 cup ground oats -1/3 cup almond flour -3 Tbsp coconut flour -2 Tbsp melted coconut oil -1 Tbsp maple syrup/ coconut nectar -1/2 tsp salt •• ALMOND CARAMEL -3 Tbsp almond butter -3 Tbsp coconut cream -2 Tbsp maple/ date nectar -1 Tbsp coconut oil melted -1/2 tsp salt -1/2 tsp vanilla •• LEMON WHIPPED CREAM -1/3 cup full fat coconut cream -4 drops lemon essential oil -optional sweetener to taste (I didn’t use any) 🍋 🧁🍋 🧁 •• INSTRUCTIONS 1. Combine all shortbread ingredients and flatten into cupcake tin with oil to keep from sticking. Place in freezer to set 2. Whisk caramel ingredients till smooth and pour into crusts. Freeze to set. 3. Using egg beaters, whip the coconut cream, lemon essential oil, and sweetener if using. Spoon on top of set caramel. 4. Store in fridge for up to 5 days of freezer for 2 weeks. Put a ✅ if you’re making the sugar free version or a 🤤 if you prefer a sweeter option. . 💫True story: these smelled so good that I forgot to wait to snap a good pic and helped myself to a bite immediately. Thus, we have a picture of a half eaten donut 😬🙈 . 🤷‍♀️I’m Italian and was raised to not trust people who don’t eat their own recipes or products, so I’m just trying to stick to a code of ethics here. If anyone’s wondering though, they were so delicious that I finished them off in 2 seconds after this picture. . 👩‍🍳🥣Now the important stuff: Makes 2-3 donuts (200 calories for the whole recipe!) 🍩Ingredients: * 1/4 c or 38g Gluten Free muffin, cake, pancake or waffle mix (can use gluten free baking flour for sugar free option) * 1 egg replacer (I used @bobsredmill) * 10g @hiitnutrition Jet Black Cocoa (the secret weapon!!) * 5g brown rice protein (do not use pea protein) * 1/4 c unsweetened vanilla Plant Milk * I added more sweetner (@lakanto monk classic or golden are great) definitely add this if doing the sugar free version! * 1 tsp Vanilla * Optional: chocolate chips or sprinkles for extra yum! . Mix dry ingredients and then add plant milk. Stir until you see the batter thicken. I always taste the batter to make sure it’s as sweet as I want before baking them. With yesterday’s heartbreaking news, all I want to do is hug my kids tighter and keep them close. One thing that keeps them in the kitchen with me is baking one of our favorite treats: #glutenfree #refinedsugarfree #dairyfree #chocolatechipcookies I love knowing they are truly enjoying a treat that is also healthy. Give this one a try and let me know what your family thinks. Ingredients · 1 egg · 3 tbsp maple syrup · 1/4 cup coconut oil melted · 1/3 cup cashew butter · 1 tsp vanilla extract · 1 tbsp unsweetened almond milk · 1 1/2 cup almond flour (I use Bob's Red Mill finely ground almond flour.) · 1/4 tsp baking soda · 1/2 tsp cinnamon · 3/4 cup chocolate chips (I use semi-sweet morsels. I prefer darker, but the kids like sweeter!) · 1/4 tsp sea salt (I like to use Pink Himalayan salt.) Instructions 1. Preheat oven to 325 degrees F. 2. Whisk egg in a large bowl. Add in maple syrup, melted coconut oil, cashew butter, vanilla, and almond milk. Whisk again. 3. Add in: almond flour, baking soda, cinnamon, most of the sea salt (save some to add to top of cookies) 4. Add in chocolate chips. 5. Place parchment paper over a baking sheet and use a spoon and/or spatula to drop batter, dividing it into a dozen cookies. Sprinkle remaining salt on top. 6. Place in the oven for about 12 minutes on the center rack. Then turn the oven on broil and cook 1- 1 1/2 additional minutes. **Keep a close eye on it because they can burn quickly! ENJOY AND SHARE!!!

No-bake Dark Chocolate Sea Salt Oat Cups HEY, YOU NEED TO MAKE THESE! 🙋🏻‍♀️ I had these as a snack before my workout today and I decided in that moment I just couldn’t wait until tomorrow to share with you because I know you will fall in love with them!☺️ You guys know I’m a big fan of oats and chocolate, and an even bigger fan of simple, healthy, no-bake recipes! Well this has all of that combined, and it is absolutely delicious (you need to save this recipe!) oh and you probably already have all of these ingredients in your kitchen! . Made with prebiotic oats, organic cacao powder, avocado, and chia/flax blend, they will have you feeling full and satisfied! Vegan| Gluten-Free | Refined Sugar Free| Oil Free | Yield: ~6-8 Note* recipe is vegan and refined sugar free without the use of dark chocolate! . Ingredients: -1/2 cup @bobsredmill organic rolled oats -1/8 cup avocado -1 tbsp organic coconut sugar -1 chia/flax egg -2 tbsp @navitasorganics organic cacao powder -1/4 cup unsweetened vanilla soy milk (or your milk of choice). -2 tbsp organic dark chocolate (optional) -pinch of sea salt . 1. Process the rolled oats until you achieve a fine oat flour, set aside. 2. Prepare chia flax egg- combine 1 tbsp @wholefoods brand ground chia-flax with 3 tbsp water, stir and set aside for 15 minutes. 3. Mix all ingredients (except the dark chocolate) in a medium sized bowl until a smooth batter forms. 4. Using a cookie scoop, evenly divide the batter and place in lined muffin tin ~1/4” thick and use a spoon to smooth and flatten them. 5. Drizzle with melted dark chocolate and add sea salt! Vegan chocolate banana breakfast cookies. I mean you could call them zucchini flax cookies, but I’m all about those keywords 🍌🍫 😉. These cookies are so easy and so delicious for any time of day. . Yield: a lot. Like 25 cookies or so! INGREDIENTS: 3 cups spelt flour 2 tsp baking soda 1/2 tsp sea salt 1 cup rolled oats 1/2 cup #dairyfree chocolate chips 2 tbsp chia seeds, optional 1/4 cup raw pumpkin seeds, optional 1 and 1/3 cup mashed banana 1/4 cup ground flax + 1/2 cup hot water 1/4 cup avocado/ coconut oil, liquid form 1/4 cup unsweetened applesauce - or 1/4 cup more oil 1/3 cup finely grated- and squeezed in paper towel - zucchini 1/2 cup pure maple syrup 1 tsp vanilla extract . METHOD: Preheat oven to 375F Line cookie sheet with parchment Mix flaxseed and water and let sit for 5 mins to thicken In one bowl, mix all wet ingredients— vanilla, applesauce, oil, syrup, bananas, thickened flax mixture, zucchini In another bowl, combine flour, baking , soda and salt. Mix wet into the dry until just combined, and then stir in oats, seeds, and chocolate chips Dollop sticky batter onto pan with a large spoon. Space cookies out by at least 2 inches. You’ll probably be doing a few batches. Bake for 12 minutes, or until golden on the bottom. Cool on a bake rack and serve up as a healthy start, or a healthy snack. Lemon myrtle and almond cake | • Low GI, wholemeal, tasty and healthier for you than commercial cakes. • Swapping your cake recipes from refined sugars and flours to wholemeal low GI options is very easy, and so much better for your family. • I have a cake addict in my family, so I am constantly trying to find new ways to make delicious baked goods that hit the spot, but don’t increase the risk of diabetes and cardiovascular disease! • Next time you are baking, swap white flour for wholemeal or spelt. The appearance is different, however it works really well in baking once you are used to it. • Swap your refined sugars for things like coconut sugar, honey, agave, molasses, bananas, dates and other sweet fruits. • Try to use organic and free range eggs. They are so much higher in nutritional value and are ethically produced. • Recipe - 2 cups of wholemeal flour - 1 teaspoon of bicarbonate soda (rising agent) - 1 teaspoon of nutmeg - 3 organic eggs - 1 cup of milk of choice - 1/2 cup of coconut sugar - 1 jar of lemon myrtle syrup (I was lucky enough to get mine in the country, handmade with nothing but lemon myrtle, water and raw cane sugar) - 3 tablespoons of almond essence - Flaked almonds • Method - preheat oven to 180 degrees - combine all ingredients well - line a baking dish - pour the batter into the dish - sprinkle flaked almonds over the top and cinnamon - bake for 40ish minutes. Ripe banana, egg and protein powder make up these low-fat and low-carb super pancakes. They’re great for breakfast, brunch, dinner or a post-workout snack! I love them at any time! 😊💛🧡❤️ . . Save for later😄👌 Ingredients: * 2 cups plant milk #kokodairyfree * 1 cup GF flour * 1 egg * 3 tbsp cocoa powder * ½ ripe banana mashed * 1 scoop vegan protein ( from #hollandandbarrett ) * 1 tsp baking powder * 1tbsp coconut oil for frying Optional toppings: fresh berries, chocolate sauce, shredded coconut Method : 1. Preheat frying pan over a medium heat. Once hot, use a splash of oil. 2. Using a hand mixer, beat the egg. 3. Mix the dry ingredients: flour, protein, baking powder and cocoa powder. 4. Add milk, egg and the mashed banana. Mix well. 5. Slowly pour the mix into the pan and swirl around to coat the base. Cook each pancake over medium-high heat, then flip and cook the other side. 6. FRUITY AVOCADO OAT BITES (swipe for recipe)⁣ ⁣ One of the benefits of living in LA is that we live next to a neighbor with an avocado tree so we get big batches of these delicious California avocados!⁣ ⁣ I decided to do some baking experiments and these turned out delicious! I’ll be packing these in Wolfs lunchboxes throughout the week and freezing some for future snacks!⁣ ⁣ They are also:⁣ ⭐️ Gluten Free⁣ ⭐️ Dairy Free ⁣ ⭐️ Nut Free ⁣ ⭐️ Refined sugar free (and can easily be just fruit sweetened!)⁣ ⁣ Aka... all delicious and good for you ingredients 😉 plus, Wolf helped make these! I added everything to small bowls and he poured and mixed everything together. He had a very hard time parting with the blueberries though 🙈

Hands down best muffins I have made to date. So light and fluffy and #glutenfree #dairyfree and #refinedsugarfree . . . 2x large organic eggs 1/4 cup extra virgin olive oil 2x tbsp maple syrup Rind of one small 🍋 1x tsp vanilla extract 1/2 cup of nut milk 1x cup self raising gluten free flour 1/2 cup almond flour 1/2 cup porridge oats (the smaller ones) 1x tsp baking powder Pinch of salt 1x tsp ground cinnamon Frozen raspberries . . Preheat oven to 170 degrees. Whisk eggs in a large mixing bowl. Grate in the lemon rind and add all the rest of the ingredients. Whisk together until well combined. Line a cup cake baking tray with 6 cup cake cases and scoop in a couple of tablespoons of the mixture into each. Put in around 4 frozen raspberries and then top with the rest of the mixture. Add another 4-5 frozen raspberries on top and then bake in the middle shelf of the oven for 30mins. Have not made these in a while... glad I did though. Added a sprinkle of yeast flakes to the puff pastry which gave it a yummy cheesy flavour. It takes a couple of go’s until you get the hang of how to twist them up but once you do so you’re done in no time! They’re fun. They’re yum! Make 😁

COCONUT CASHEW BUTTER COOKIE DOUGH BITES Dipped in DARK 🍫🍫! Hope and I THOROUGHLY enjoyed these on our lil “treat picnic!!!” 😋 SO FUN & YUM!🙌🏼🙃🍪🍫 DeAts👇🏼 1 bag of drained organic chickpeas @figfoodco (or can) 1/2 cup cashew butter @artisanaorganics 2 heaping tablespoons coconut butter @artisanaorganics 2-3 pitted dates (we used 2) @jooliesdates 1/2 teaspoon cocoa powder @sunfood Dash vanilla powder @nielsenmassey Process in food processor. Stir in dark chocolate chips. I use 💯% cocoa @paschachocolate Use cookie scoop and place bites on parchment paper. Set in fridge a few hours to harden. Melt dark chocolate on low on stove. I used @eschocolate 72%! Dip bits halfway into melted chocolate and set back on parchment paper. Replace in fridge for chocolate to harden. Take out and enjoy! 🥰

Check her out! 💋 1 cup @spreadthelove almond butter 1/2 cup organic brown sugar @wholesomesweet 2-3 pitted dates @jooliesdates 1/2 teaspoon almond extract @primalpalate 1/2 teaspoon vanilla extract @primalpalate 1/2 teaspoon vanilla paste @taylorandcolledgeusa 1 organic egg Pinch sea salt Process in food processor. Pour batter in baking pan lined w parchment paper. Bake at 350 35-40 min. Until toothpick comes out clean. Mine had some oil from almond butter boiling on top still. But when I took it out it all settled into the bar and added the best moisture! Let cool!
