This was going to be a completely different thing, but that’s okay. 🙃 Sometimes meals turn out that way. But this plate was definitely a happy accident. Sautéed Miso Cabbage and Tofu...pretty much all the veggies. 😂 Super yum flavor, lots of nice peppery notes as well as ginger and garlic. 😌This went perfect with a little @lotusfoods brown Jasmine rice. 🥕 . Sautéed Miso Cabbage and Tofu 1/4 of a medium cabbage, shredded 1 small onion 1 block extra firm tofu, pressed and drained 1 stalk celery 1 small carrot, sliced into coins 1 inch ginger minced 3 cloves garlic minced 2 tbsp low sodium soy sauce 2 tsp garlic chili sauce 2 tsp maple syrup 1 tsp miso paste 2 tbsp water 1/4 tsp black pepper Extra Veggies of choice: I use bell pepper, collards and parsley . Cube tofu and place to the side. In a small bowl, whisk together miso and water then set aside. In a sauté pan, add onions and celery and sauté until onions are softened. Add in carrots, cabbage, garlic and ginger and sauté until fragrant. Add in soy sauce, garlic chili sauce and maple syrup and stir to coat. Add in remaining veggies and miso mixture. Stir and cook for a minute or until miso absorbs into the stir fry. Serve and enjoy. 🍚

The other day, my dad said something I never thought I’d live to hear: “I’m bored of the same old way of Indian cauliflower.” 😲 . . I was FLOORED! I usually reach the bored threshold after three days of eating the same food... but my dad? He loves eating traditional Indian food every day. So for him to say something like that just woke me up to the monotony that so many of us are facing during this quarantine.. . . We’re not eating out, except for maybe the occasional take out or delivery from our favorite haunts. ~One Pot Creamy Garlic Brussel Sprouts Pasta~ • Ingredients: 1 Tbsp of olive oil 8 cloves of garlic, chopped or minced 1lb of brussel sprouts, halved or quartered 2 Tbsp of lemon juice, plus more for serving 1/4 cup of butter (vegan if preferred) 1/4 cup of all-purpose flour (gluten free if preferred) 3.5-4 cups of vegetable broth 2 cups of non dairy milk 16oz of spaghetti salt and pepper to taste 3/4 cup of Parmesan cheese (optional) • Directions: 1. Heat the olive oil on medium in a large pot. Add the garlic and brussel sprouts. Sauté for about 5 minutes, reducing the heat as needed. 2. Season with a pinch of salt and pepper, add 1 tablespoon of lemon juice & toss to coat. Reduce heat to medium low. Cover the pot with a lid, let the brussel sprouts cook for 10 minutes more. 3. Remove the brussel sprouts & garlic from the pot. Place in a bowl, set aside. 4. In the same pot, heat the butter on medium. Once melted, add the flour, whisk & let it simmer for 2 mins. 5. Add the vegetable broth, milk and a few pinches of salt & pepper. Whisk to combine, make sure there are no lumps. 6. Bring the liquid to a boil. Then add the spaghetti. Stir and press the spaghetti down into the liquid. 7. Cover and reduce the heat to medium, so liquid is at a small bubble. Let simmer for 8-10 minutes. Stir every few minutes, as the liquid starts to reduce, press the spaghetti down into the liquid as much as possible. 8. Once the spaghetti is done, the liquid should be a nice, thick sauce. 9. Then add remaining 1 tablespoon of lemon juice. Taste and adjust seasoning. 10. Now add the brussel sprouts and garlic back into the pot and toss to combine everything. Heat for another 2 minutes. 11. Serve with extra lemon juice and parmesan cheese if desired. Try it out:⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✨FULL RECIPE✨ [Serves: 6] ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Preheat the oven to 200°C conventional or 180°C fan forced. To a large bowl add 750g diced pumpkin, 1 red onion (cut into wedges), 1 can chickpeas (drained & rinsed), 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp coriander, 1 tsp mixed herbs & salt + pepper. Vegan "Fish" and Chips 🍟🐟 from @mymeatlessmeals Ingredients: • 300 g aubergine, peeled and halved • A bowl of water and and slices of lemon • 1 cup all purpose flour (+1/4 cup for dusting) • 3 tsp baking powder • 1/2 tsp Himalayan salt • 1 tbs nori powder • 1/8 tsp turmeric • 300 ml vegan lager beer, cold • coconut oil/ grape seed oil for frying 🌱 🐟 Instructions: 1. Peel your eggplant/ aubergine, cut in half, and soak in water with lemon slices for about 10 minutes. 2. Combine 1 cup of plain flour, salt, turmeric powder, nori powder in a bowl before adding cold lager and mix well. 3. Remove aubergine from water, transfer to a Ziploc bag and add plain flour and shake until fully coated. 4. Spoon the cold batter over your flour-coated aubergine on all sides. 5. Heat coconut oil in a nonstick pan until the temperature reaches 375 and gently drop aubergine and fry on both sides on medium- medium low heat until golden brown. Drain the excess oil for a few minutes on a cooling rack before plating. 6. Serve with mushy peas, a lemon slice, and chips. 7. Cleanses did NOT teach me how to eat healthy ❌⬇️ . Sure quick results, but what do you do after you finish your cleanse, fast, or fad diet? . Almost always you end up binging because you deprived yourself for long period of time, then revert back to old habits 😩 . Pantry Eggplant & chickpea curry 👇🏼 . INGREDIENTS: For the spice mix (alternatively, you can use your favorite curry blend or paste):1 tsp salt (or to taste), 3/4 tsp ground coriander, 3/4 tsp ground cumin, 1/2 tsp turmeric, 1/2 tsp red pepper flakes (optional),1/4 tsp cinnamon, 1/8 tsp black pepper, 1/8 tsp ground cardamom. . For the chickpea curry: 1 large eggplant, peeled and diced (about 5 cups diced), 2 tbsp olive oil, 3 cloves of garlic, minced, 1” piece of ginger, grated, 1 medium onion, chopped, 1/4 cup tomato paste, 2-15.5 oz cans of chickpeas, rinsed and drained, 2 cups water or vegetable broth, 1 bunch of fresh cilantro, chopped ( about 1 cup chopped). . Combine all the spices of the spice mix and salt in a small bowl and mix well. Set aside. Heat a 12-inch deep skillet with a lid over medium heat. Add half of the diced eggplant and cook for about 7 minutes stirring occasionally. Transfer to a bowl and set aside. Repeat the process with the rest of the eggplant and transfer it to the bowl. Using the same skillet, heat the olive oil. Add the garlic and ginger, and cook over medium high heat for about 2 minutes. Add the onion and spice mix, and cook for 5-6minutes or until translucent. Add the tomato paste and cook for 3-4 minutes stirring frequently. Add the drained chickpeas, stir gently and continue cooking for 2 to 3 minutes. Add the cooked eggplant and broth or water, bring to a boil, cover the pan and reduce the heat to simmer for 40 minutes Add the cilantro in the last 10 minutes of cooking, saving some for garnish. Roasted tomato spaghetti sauce 🍝 Ingredients: 5 roma tomatoes 1/2 cup fresh basil 3 large garlic cloves 1 tsp dried oregano Avocado oil Salt Dried rosemary Cooked spaghetti Steps: Roast tomatoes and garlic cloves (cover with oil, salt and dried rosemary) on a baking sheet at 400 F for 15 min. Remove skins. Add tomatoes and garlic to a blender, along with basil and oregano. Blend! More details below 😍 🍃 Follow @recipesforvegan for more! 🌱⠀ .⠀ Scalloped Potatoes in a Creamy Lemon Dill Sauce 🍋 this recipe sounds pretty fancy but it’s actually so simple and SO GOOD!⠀ .⠀ By @thefoodietakesflight .⠀ RECIPE⠀ What you’ll need: ⠀ 9x6” baking dish (or any baking dish you have!)⠀ 3 raw yukon gold potatoes (600g), peeled and sliced*⠀ Chopped dill, for garnishing⠀ ⠀ For the Lemon Dill Sauce:⠀ 1 tbsp olive oil⠀ 1 shallot, diced⠀ 1 cup room temperature coconut cream ⠀ 1/4 cup room temp. water⠀ 1 tbsp all-purpose flour ⠀ 2 tbsp lemon juice⠀ 1 tbsp chopped dill⠀ 2 tbsp nutritional yeast (optional but highly recommended)⠀ 1 tsp salt, or to taste⠀ ⠀ Steps⠀ 1. Heat an oven to 350F.⠀ 2. Wash the potatoes and then peel. Slice into 1/4-1/3 inch thick slices. Arrange half of the slices on the baking dish. Set aside the rest of the pieces. ⠀ 3. In a pan, heat 1 tbsp olive oil. Add in the shallots. Cook until tender and aromatic, around 4 minutes. Add in the coconut cream and water. While stirring in a circular motion, add in the flour.⠀ 4.
