Green pea pesto + gluten-free cauliflower gnocchi by @cookingforpeanuts😋 Share this with someone who loves gnocchi! ​ Recipe pesto: Toast 1/3 cup pine nuts in saucepan until lightly browned. Add to food processor: toasted pine nuts, 2 cups defrosted green peas, 2 tbsp nutritional yeast, 3 finely minced garlic cloves, 2 cups fresh basil leaves, zest and juice 1 lemon. Add 1-2 tbsp water or olive oil and pulse again until smooth. Salt+ black pepper to taste. ​ ​Recipe gnocchi: Chop florets from 1 head cauliflower. Steam until fork tender. Squeeze cooked cauliflower in clean kitchen towel to remove excess water. Place in food processor and pulse until smooth purée. Salt to taste. In separate bowl mix: 1-1/4 cups oat flour, 4 tbsp tapioca starch, 1/2 tsp salt (or to taste). Add 1 cup cauliflower purée to flour mixture and knead with hands until forms a dough. Add more cauliflower purée if too dry. Transfer dough to floured surface and cut into 4 equal parts. Roll each part into strands about 1/2-inch thick. Use pastry cutter or knife to cut strands into desired gnocchi-sized pieces. (Optional: roll gnocchi over fork tines to form imprint.) Cook in boiling water until gnocchi rises to surface. Stuffed capcicums. So delicious Ingredients 2 cups of boiled rice 1 can of chickpeas (rinsed and drained) 1 medium zucchini grated 1 carrot grated 2 garlic cloves 1 tablespoon of parsley 1/2 a red onion diced 3 large capsicums cut in half 1 tablespoons olive oil Extra olive oil to drizzle 1/3 cup of crushed tomatoes 2 cups of bread crumbs 1 1/2 teaspoon of Salt Pepper 1/3 cup of vegetable stock Method In fry pan add the oil, 1 teaspoon of salt, pepper, zucchini, carrot, onion, garlic, chickpeas, and sauté for 10 minutes. Then add the tomato sauce and simmer for 10 minutes. Set aside to cool. In a bowl add the rice, breadcrumbs, 1/2 teaspoon of salt, parsley, cooled mixture and combine. Cut the capsicums in half and fill with the prepared mixture. Place the stuffed capsicums on a tray then add the stock and drizzle some olive oil on top. Kimchi Sriracha fried rice with Asian Garlic Tofu by 🔥 A flavourful recipe to try out . . Recipe Fried rice 1 1/2 tablespoons vegetable oil 1 small diced onions 3 cloves garlic, minced 1 tablespoon minced ginger 1 cup kimchi, roughly chopped 2 1/2 cups cooked rice (day-old) 2 tbsp tamari soy sauce @ceresorganics 1 1/2 tbsp sriracha @ceresorganics 1 teaspoon sesame oil @ceresorganics Salt and pepper to taste In a large pan, heat oil over medium-high. Add the onions, ginger, garlic and cook until they start to turn translucent, about 2 to 3 mins. Add the chopped kimchi and stir until heated through, about a minute. Add the rice, soy sauce, sriracha and sesame oil, and stir until all the rice has been well coated with all the sauces. . 1 batch baked tofu 1/4 cup soy sauce 2 tbsp maple syrup 2 tsp cornstarch 2 tsp pepper 1 small red onion, finely minced 1 tbsp ground ginger 6 garlic cloves, finely minced . Prepare baked tofu. Drain 1 block (about 14 ounces) extra-firm tofu. Slice your block of tofu into 2 or 3 even slabs. Coat the tofu with 1 tbsp olive oil, a tsp garlic powder, 2 tbsp cornstarch, 1 tsp salt and 1/4 tsp pepper. Bake at 400f for 25 mins. While tofu is baking, in a small bowl, whisk together soy sauce, maple syrup, pepper, cornstarch and ground ginger until combined. Set aside. In a large pan, heat the 2 tbsp oil over medium-high heat. Add the red onion, garlic and sauté for 2 mins. Slowly pour in the soy sauce mixture, and stir until combined. Continue cooking until thicken. Remove pan from heat. Add in the baked tofu, and toss until it is evenly coated in the sauce. Serve the #rice with the #tofu. The batter should be on the thicker side.⠀ ✔️Dip cauliflower florets in batter, shake off excess & fry until golden brown. Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Roasted Mushroom Risotto! This is the ultimate comfort food. It is rich, creamy and full of flavour, yet dairy free! 👌 It makes the perfect weeknight meal when you need something satisfying in a hurry, and it is also impressive to serve at dinner parties. Here is the recipe (serves 4)👇🏻 .
INGREDIENTS RISOTTO
1 large yellow onion
2 cloves garlic
2 tbsp olive oil Pinch of salt 1 cup arborio rice 4 cups stock
1/4 cup nutritional yeast

ROASTED BALSAMIC AND SOY MUSHROOMS 4 cups cremini mushrooms 2 tbsp olive oil 1 tbsp balsamic vinegar 1 tbsp soy sauce 1 tsp coconut sugar
1 tbsp fresh thyme leaves Pinch of sea salt . PARSLEY DRESSING 1 cup chopped parsley 3 tbsp olive oil Pinch of salt

METHOD Add mushrooms to a roasting pan with all the other ingredients and roast in the oven at 175C for 15 to 20 minutes. . To cook the risotto, heat olive oil in a pot and add the onion and garlic. Cook on a medium-low heat until softened. Add arborio rice and toast grains for a minute. Then add the stock and scrape any bits off the bottom. Cook for approximately 20 minutes stirring often until the liquid is absorbed and the rice is creamy and still a bit chewy. Add more stock if necessary. Turn off the heat, add nutritional yeast and a pinch of salt and pepper, stir, put the lid on and let it rest for 5 minutes. . While risotto is cooking, make your parsley sauce. Add all ingredients to a food processor and blend until smooth. . To serve, divide the risotto in bowls, and top with the roasted mushrooms and parsley sauce. Click the link in bio and get yours today 🌱😍 Tofu Fajita Bowl! 📷 by @nourishingalex Recipe: Serves 1 For the Fajita Sauce: 2 tbsp tomato puree 1 tbsp maple syrup juice of 1/2 lime 1 tsp sriracha mayo/sauce 1/2 tsp smoked paprika 1/2 tsp ground cumin 1/2 tsp dried oregano 1/2 tsp nutritional yeast 1/4 tsp mild chilli powder a pinch of ground cinnamon a pinch of garlic powder For the Tofu: 1/2 395g block extra firm tofu, drained, pressed & dried a sprinkle smoked paprika 1/2 red bell pepper, green pepper & yellow pepper, sliced mushrooms, sliced (optional) red onion, sliced (optional) Method: 1. Preheat the oven to 200c/180c fan/400f/gas mark 6. Line a baking tray with non-stick baking parchment. 2. Slice the dried tofu into bite sized pieces, add the tofu to a small bowl, then sprinkle in some smoked paprika, shake the bowl until the tofu is coated well. 3. Add the tofu to the lined baking tray and bake in the oven for 15 minutes, until slightly crisp on the outside. 4. Meanwhile to make the sauce, mix together all the sauce ingredients into a bowl until everything is fully combined then set aside. 5.Slice your bell peppers and other optional veggies into thin pieces. 6. Once the tofu is slightly crisp and much more firm, take it out the oven. Heat a frying pan with a little water/oil, then add the peppers cooking them on a medium/high heat setting until slightly soft. Add the tofu, then pour in your fajita sauce, stirring frequently, cook for another 3 minutes until the sauce has reduced and the peppers are soft. 7. Serve with rice/Bulgar wheat/quinoa, some lettuce, tomatoes, black beans, avocado or wrap them up into tortilla wraps with some vegan cheese, vegan mayo, lettuce & avocado! ENJOY! . Now, onto the recipe: . . 🍰SUPERFOOD BREAKFAST CUSTARD CAKE🍰 BASE •1/4 cup oats steel-cut oats •1/8 cup almonds, chopped •1/8 cup buckwheat •1/4 cup coconut flakes •1 tbsp chia seeds •1 tbsp ground flaxseed •1 scoop vanilla protein powder •2 tbsp coconut oil •1 tbsp honey/maple syrup •1 tsp @unicornsuperfoods Immunity Blend •1/4 tsp salt TOPPING •200ml coconut milk •1/2 tbsp cornstarch •1/2 tsp agar-agar •1/2 tsp @unicornsuperfoods Beauty Blend •1/2 tbsp honey/maple syrup •Pinch salt 1. Toast oats, almonds and buckwheat in a saucepan. Remove and add coconut, stirring constantly, for 30-60 seconds until toasted and fragrant. 2. Veggie packed and delicious. Served with vegan mayo. Add a bun, sliced tomato and lettuce and your burger is complete. 🌱Recipe: In large bowl combine: 1 red onion (small dice), 1 large carrot (grated), large handful baby spinach (roughly chopped), 1-15oz can chickpeas (rinsed + drained), 2 tbsp nutritional yeast, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2-3/4 tsp chili powder (or to taste), 3/4 tsp chipotle. Mix well. Add 1-1/2 cups cooked quinoa and mix until evenly incorporated. Add salt to taste. 🌱In separate bowl, add 2 cups garbanzo/chickpea flour + 1/4 tsp salt. Gradually add water while mixing until consistency of thick pancake batter. (Should be about 1 cup water.) Add batter to chickpea vegetable quinoa mixture and mix well to combine. Salt to taste. Let sit about 10 minutes. Use hands to form patties of desired size, about 3/4 inch thick. Either pan-fry in a little oil in non-stick skillet or for oil-free bake at 375F on lined sheet until very golden brown (about 25 minutes). For both methods, flip half way.

Heat pan with 1 Tbsp avocado oil and sauté onion, bell pepper, jalapeño, and cilantro for a few minutes. Add in seasonings and garlic and cook until fragrant (2 minutes). Let cool and add veggie mixture to a bowl with buffalo, diced bacon, mix, form into patties, and cook 2-3 minutes each side on a grill pan with 1 Tbsp avocado oil. .
