I couldn’t resist sharing this tasty toast with you all, with some delicious “scrambled tofu” on top of avocado 🤤 so good, soft and filling 😋 recipe below 👇🏻 you don’t have to add the Indian black salt but I find that gives the best “eggy” flavour Serves 2; 4 slices of whole meal bread (or gf) 1 avocado mashed 1/2 block silken tofu 1/4cup veggie stock 1/4tsp rounded of turmeric Good Pinch of Indian black salt Good pinch of black pepper Splash of milk (no more than 1tbs) Break up the tofu into large chunks using your hands into a frying pan fry off for a few minutes over medium heat then add in the turmeric and coat tofu in it. Add in veggie stock and let it soak/fry off into the tofu, when there’s no stock left add in pepper and black salt to taste. Then right at the end add in milk and give it a good coat/stir round for a few minutes. Roast veg and couscous bowl (vegan) 🍲🌱 _ This a super wholesome meal packed full of essential nutrients and high in protein. Perfect for athletes looking for high-quality nutrients for the optimal recovery or just anyone looking for a helathy and tasty meal. This “bowl” tastes amazing, honestly my favourite meal right now and relatively easy to prepare, especially if you’re cooking large portions and meal prepping. Macro-nutrient content and calories per portion can be seen in the last slide of this post aswell as ingridient list. This was a VERY big bowl of food. For anyone looking for a smaller meal, simply adjust to your needs 😊 _ Recipe: _ _ 1. Roast all the root veg (butternut, sweet potato and carrots) for 40 mins @ 200°C. After 40 mins, add the rest of the veg (onion, peppers, courgettes, garlic) +½Tbsp oil and cook for 1 hour, turning veg every 30 mins. Set aside when done. _ 2. Drain and rinse your chickpeas. Best to dry them with a tea towel to get them as dry as possible, this will help them roast well and get crispy. Add chickpeas to a roasting tray with ½ Tbspoil and a large pinch of salt. Roast @ 200°C for 20-30 mins, turning halfway through. Set aside when done and add 1 tsp of paprika and ¼ tsp red chilli flakes and mix well. _ 3. Cook couscous as per the instructions on the box and rest for 5 mins. After 5 mins loosen with a fork and stir well. When done, set aside. _ 4. Once veg, couscous and chickpeas are ready, you can construct your bowl. Add the veg, couscous, roast chickpeas, hummus, pesto, rocket and nutritional yeast to your bowl and mix well. Add salt and pepper to taste and ENJOY 💚

Green Coconut Curry with Tofu by Alex @plantbased.traveler ♥️ . Ingredients: (2 servings) Any veggies of choice 2 tbsp of vegan friendly green curry paste 1 cup coconut milk (canned) 1 cup coconut water * 1/2 tbsp coconut (or brown) sugar 1 tbsp coconut aminos Juice of half a lime 1 handful Thai basil Plus: Pan fried tofu (see below) Brown rice Method: Start by preparing the rice. I used organic quick cook brown rice, 8 minutes manual setting in the instant pot. Curry: Wash/peel and cut all of your veggies into bite size pieces. (I used sugar snap peas, bell pepper, spring onion, corn and peas here) Heat up coconut milk and coconut water in a large wok/skillet. Stir in curry paste, coconut sugar and coconut aminos and bring to a boil. Lower the heat and add veggies to the wok. If you have a couple of kaffir lime leaves and lemongrass (~ a crushed finger sized piece) add them now as well. Let everything simmer for a few minutes until the veggies are slightly soft but not overcooked. Add lime juice and Thai basil at the end. Taste and adjust saltiness if needed. Tofu: ** For 2 servings I use half a block extra firm sprouted tofu. Press out excess liquid and cut it into large pieces. Pumpkin, zucchini and green bean curry with coconut rice 🍚 one of the those feel good meals, it’s our family winter classic but it’s come around earlier this year. Majority of the time I’ll make it with eggplant too. Here are the ingredients! 1/2 pumpkin diced in to 3cm squares 1 cup of green beans cut up 1 whole zucchini diced in for 3cms 1 onion chopped finely 1/2 cup coconut cream 1 tbsp garlic paste 1 tsp authentic curry powder 1 tsp ginger 1 tsp cumin 1 tsp salt 1 tsp pepper Start by sautéing onion and garlic in oil for 3-5 minutes until onion is soft and caramelised. Then add your green beans, pumpkin and zucchini to fry off for a few minutes, then add your coconut cream and all the remaining ingredients, mix and let it simmer for 15 minutes. Serve on a bed or coconut rice 🌱

Good Morning Vegan Warriors☘🥇 Raspberries and cream crêpes ❤️🥞These vanilla crêpes are incredibly light thanks to sparkling water, but you can sub with more plant mylk if you don’t have any. Stuffed with whipped coconut cream, raspberry compote, fresh raspberries and pomegranate! ❣️ Are you having pancakes today? Credits📸 @bos.kitchen ❤👈 ❤👇 Vanilla crêpes . 1.5 cup plain flour 2 tbsp coconut sugar 1 tsp baking powder 3 tbsp oil/butter, melted 1 tsp vanilla 1 cup almond mylk 1 cup sparkling water . . Add all dry ingredients to a bowl and mix with a whisk to break up any lumps. Pour in the wet ingredients and mix until smooth. The mixture should be thick, but run easily off a spoon, add a tbsp more milk if you need to. Allow to rest for at least 10 mins. Heat up a non stick frying pan to a medium heat, then pour in a ladle of batter, quickly moving the pan to spread evenly on the bottom. Cook until the edges start to curl and bubbles form, about 45 seconds per side. Flip and repeat. Keep crêpes warm under a clean tea towel or in a low oven until ready to serve. Buckwheat porridge: 🥣1/2 cup of buckwheat grouts. 🥣Soak in 1 cup of water overnight but change the water a few times before setting in the fridge overnight. 🥣Wash thoroughly and add to blender with 1 cup of milk. 🥣Add a handful of macadamia nuts. 🥣A dash of cinnamon. 🥣A tsp of vanilla tsp. 🥣Add monk fruit extract or maple syrup. 1 tsp of the former and 1 T of the latter. 🥣Blend until creamy. . . Raspberry jam: 🥣1 pint of raspberry, heat in a small pan until soften and a bit liquidy. 🥣Remove from heat and add 1-2 tsp of chia seeds and a bit of sweetener. . . . . I like to mix everything in a blender. Wait a few minutes until air bubbles appear in the mass. Put the dough into the hot waffle iron, bake for a few minutes until browning. Get the recipe: For RICE: Basmati rice: 1 1/2 C salt: 2 tsp Olive oil: 1t Water: 8 cups Green cardamon: 2 Cinnamon stick: 1 Method: 1) Wash and rice rice till the water is clear 2) Soak rice in water for 20 minutes 3) Brink 8 cups of water to a rolling boil and add salt, olive oil, spices and rice 4) Cook on a medium heat for 10-12 minutes. (Rice should be 3/4th done when you press a grain between your fingers) 5) Drain and leave to completely cool ​ For TOFU: @tofooco Tofu: 2 blocks pressed and cut in cubes Basmati masala: 1 T Cornflour: 1 T Method: 1) Mix tofu with masala and cornflour 2) Shallow fry in olive oil till golden brown For BIRYANI : Onions: 4 finely sliced Tinned tomato: 1 C Bay leaves: 2 Bombay biryani masala: 2 T Xylitol or sugar: 1/2 T Coconut cream: 1T Frozen Peas: 1 C Olive oil: 1 T+ more for deep frying Butter: 1 T Above ingredients: Method 1) Heat oil in a pan and deep fry 2 onions on medium heat till golden brown 2) Heat 1T olive oil in skillet and add onions and bay leaves. Cook till onions are translucent 3) Add tomatoes, masala, sugar and cook stirring till the raw smell disappears 4) Stir in coconut cream, peas and cooked tofu 5) Layer biryani in baking dish with the tofu mixture, then a layer of rice and topped with fried onions. Repeat twice 6) Break of pea sized chunks of butter and place then evenly on the topmost layer. 7) seal baking dish with tin foil and cook in preheated oven at 180C for 30 minutes ​. ​ ​ Looking for more delicious plant-based recipes?
