Thai red curry!! Sooo yum!! Recipe bellow 👇🏽 ingredients 3 tablespoons canola or coconut oil 1 medium onion, halved and thinly sliced 1 medium red bell pepper, seeds and membranes removed, thinly sliced 8 baby Yukon Gold potatoes, sliced 2 cups vegetable broth 2 cans (15-ounce) coconut milk 1 can (15-ounce) diced fire-roasted tomatoes 2 tablespoons red curry paste (or to taste and tolerance) 4 cloves garlic, minced 2 tablespoon minced ginger 1 small head of cauliflower, cut into florets 1 cup julienned carrots or 2 medium carrots, coarsely grated 1 container (5-ounce) baby spinach 1 large lime, juiced Thai basil leaves, for garnish 3 cups cooked jasmine rice 1/2 cup bamboo shoots instructions Heat canola or coconut oil over medium-high heat in a large skillet or saute pan. Add the onion and cook 5-8 minutes or until beginning to soften. Add the red bell pepper and potatoes and cook 2-3 minutes. Add the vegetable broth, coconut milk, tomatoes, red curry paste, garlic and ginger. Bring to a boil. Add the cauliflower florets. Reduce heat to medium-low and simmer 8-10 minutes. Add the carrots. Cook another 5 minutes. Add the baby spinach and stir until wilted. Add lime juice. Garnish with fresh Thai basil leaves. The humble grains of semolina are widely used in Indian cooking. And I'm always fascinated by how dynamic semolina / rawa / sooji can be! When added salt it becomes a savoury and when added sugar it becomes a sweet dish. Sooji upma is a breakfast dish that's as delicious as it is good for you. Upma is welcoming of all sorts of flavors and vegetables. In this preparation I have added winter special green chana / fresh green chick peas, peanuts, along with loads of grated ginger. Good for digestion, awesome for throat and filled with proteins. A little bit of green chillies, Rai and curry leaves tadka / tempering and the morning breakfast is ready. We finally checked out Ceres Environment Park today. 🌱 I actually can't believe it took about 4 years of living so close to it before actually going! 🌱 It was such a lovely place to visit! From the café, the community garden and the friendly chickens, to the scenery, the free bike repair workshop and the walking track there was honestly something here for everyone! 🌱 Will be back soon for sure! They even had a grocery shop with heaps of yummy fresh veg!

Dattelporridge 🌱 ⏩ Normalerweise mache ich meinen Porridge ja immer mit Bananen, Himbeeren oder Schokolade.. diesmal habe ich meine Vielfalt um die Variante mit den Datteln erweitert.. Außerdem habe ich das erstmals Kiwis verwendet 🥝 Kiwis sind super für die Haut und sehr reichhaltig an Vitaminen, vor allem Vitamin C und hat wenig Kalorien - also perfekt geeignet für eine Bowl 🤩 Zudem erstmals mit dabei sind Maulbeeren - auch diese sprießen nur so von Vitaminen und Nährstoffen. « Saigon » Bo Bun salad with mung bean vermicelli, carrot and cucumber with mint and imperial roll Recipe: Sauce: 1/4 cup tamari soy sauce 1/2 cup seasoned rice vinegar 1/2 tsp garlic chili oil 1 tsp crushed cashew or peanuts Homemade Vietnamese imperial roll: Rice paper 1 cup black wood ear mushroom/ kikurage 1/4 cup shredded carrot 1/4 cup shredded cabbage 1/4 cup shredded broccoli stalk 1 tsp garlic crushed 1 tsp grated ginger Coconut oil Salt and pepper In pan, add a 1/4 tsp coconut oil, add ginger, garlic. When aromas develop, add all vegetables and wood ear mushrooms and stir fry for around 10 mns on medium high in order to let moisture evaporate. Set aside to cool. To prepare roll, take 2 disks of rice paper and dip them carefully in very hot water for a few seconds . Rice paper should soften. Place both rice paper disks on top of one another. Put filling and roll, folding the sides then finish rolling to form imperial roll. In a frying pan, heat 1 tbs coconut oil then fry rolls, allowing them to brown before turning on other sides ( imperial rolls are normally deep fried) Bo bun salad: Home made or store bought Vietnamese imperial rolls 1 bundle of bean thread or rice vermicelli 1 carrot cut in very thin and longs strips 1/3 cucumber cut in very thin and long strips Mung bean sprouts About 4 lettuce leaves torn in pieces Handful of fresh coriander Handful of fresh mint 1 tbs crushed Cashews or peanuts In bowl, arrange lettuce with vermicelli, carrot and cucumber and mung beans sprouts. Add coriander and mint. B-E-Auuuuutiful lunch yesterday! Vegan buffet at Oma Jamu, Canggu. Your choice of 5 dishes for £2 which is a bloody bargain if you ask me. There was loads of variety too. I chose steamed broccoli, tangy red cabbage with carrot and raisins (i think, was delicious anyway), curried pumpkin, barbecued potatoes and tempe for dat protein hit. So this was absolutely delicious but texture on the “schnitzel burgers” was a bit crumbly, used lupin flour as the “glue” plus some white chia seeds but not enough. Flavour was awesome though, used a vegan “chicken” stock powder plus other ingredients I had in my head: “fu” which is a puffed seitan product that I soaked and put in food processor along with some soaked tofu sticks, salt, lemon juice, the stock powder, pepper, Hungarian paprika plus the lupin flour and chia seeds and water to moisten more. Think as a lot of these ingredients kinda “swell” it needs something a but heavier to make it more solid. Still have a lot left over so will think about what to add for a trial tomorrow 😃. . Oh! Hi I’m back 👋🏻 Another smoothie morning and today I want to share with you my green smoothie recipe that totaly has different veggies. I was running out of bok choy so I improvised with swisschard and watercress. Boy did I wrong. I’ve never tasted any swisschard in my life and I never thought beet could camouflage as leaves! Anyway, I did better today by adding some lemons and more strawberries to hide the dirt taste. Still not my fav tho. Back to bok choy it is. . Vegan coffee cake ☕️🍰 I have the most sensitive stomach in the world I swear, and usually can expect a stomach ache after eating a dessert like this. BUT GUESS WHAT? NO STOMACH ACHE. I didn’t feel heavy or sick full at all. This is actually a really healthy coffee cake recipe! I’d definitely eat a slice for breakfast, or dessert...just whenever because i feel good and it’s what I want. 💁🏼‍♀️ Ingredients: Cake: 1 3/4 cup oat flour 1/2 cup sugar 1/2 cup non dairy milk 1/2 cup unsweetened apple sauce 2 tsp baking powder 1 tsp baking soda 2 tsp lemon juice 1 tsp vanilla extract Pinch of salt Streusel: 1 cup almond flour (I used all purpose and it was still good) 3 tbsp maple syrup 1 tsp cinnamon Glaze: 1/4 cup cashew butter 2 tbsp maple syrup 3 tbsp non dairy milk Instructions: In a blender/food processor, mix all cake ingredients. In a bowl, combine the streusel ingredients and mix with your hands or fork until crumbly. Line a 8”x5” glass dish (or standard loaf dish) with parchment paper or lightly oil. Spread half of the cake batter into the pan (it will be a very thin layer). Cover with half the streusel mixture. Top with the remaining cake batter and then the rest of the streusel. Bake for 40-45 minutes at 350 F. For the glaze, whisk together ingredients until it has a smooth, glaze like texture that you can pour. Let cake cook for 30 minutes before you glaze and slice. Garlicky burst cherry tomatoes, sautéed soy mushrooms and roasted spiced chickpeas with pasta by @cookingforpeanuts 🌱 Recipe: Toss 1-15oz can chickpeas (rinsed and drained) with a little olive oil (to coat) + 1-1/2 tsp paprika + 1-1/2 tsp chili powder + 3/4 tsp garlic powder and salt to taste. Rub chickpeas in spices and olive oil so evenly coated. Roast at 400F until just crispy. Meanwhile, sauté 8oz thickly sliced cremini or white mushrooms in a little olive oil in non-stick skillet. Let mushrooms brown on one side before moving them. Sauté until both sides are browned. Reduce heat and add a generous splash of soy sauce. Cook another 15 seconds before removing mushrooms from skillet. Wipe skillet clean. Add a little more olive oil and sauté 1 lb cherry tomatoes until they release their juices, stirring regularly. Once they have started to burst, add 5 sliced garlic cloves and sauté another minute while mixing and gently pressing down on the tomatoes. Add the roasted chickpeas and sautéed mushrooms and cook on medium-low until juice released by tomatoes has thickened (about 5 minutes), adding more olive oil as needed. Once sauce has thicker consistency, stir in 2 tsp apple cider vinegar, 1 tsp hot sauce, 1-2 tsp maple syrup. Mix and cook another few minutes. Adjust vinegar, maple syrup and hot sauce as desired.
