~ How to juggle it all when you have a lot on your plate ~ . Life is pretty hectic at home at the moment. I haven't been able to shake this prolonged period of 'tired', alongside finalising Jeff's retirement and reassessing our lifestyle needs, plus all that needs to be done to get that swimming hole in the backyard progressed, and ensuring family get the helping hand they need, add - keeping the pets happy........ . So much to juggle day to day without sacrificing our wellbeing. Self-care is even more important on my low-energy days, when I'm not feeling as creative or constructive as I'd like to be. Ive got to be honest, it's so easy to fall into a state of overwhelm when I'm feeling tired. . "What do you want for breakfast today?" was the question I asked Jeff as we rounded the last bend on our morning walk. "Whatever you'd like to make for Me", was his reply. A little or a lot, and empty or a full plate... the choice was mine (worse case scenario -> serving-up jam on toast) . Caramelised banana, pineapple and pear with fresh grated ginger, fresh berries, coconut yoghurt, granola, dates and walnut. A lovely mix of warm and cold, smooth and crunchy, sweet and spicy. Vegan Lasagna Roll Ups by @elavegan 🤤 A delicious and unique take on the classic! Follow us @vegspirationfeed for Daily vegan recipes🌱 Recipe: 🥣1/2 tbsp oil 🥣1 onion diced 🥣3 garlic cloves minced 🥣One small can mushrooms sliced 🥣1/2 tbsp soy sauce (gluten-free if needed) 🥣100 g (3.5 oz) fresh spinach 🥣360 g (1 1/2 cups) marinara sauce 🥣6-8 lasagna noodles (regular or gluten-free) 🥣400 g (1 2/3 cups) hummus 🥣1/2 tsp cumin (optional) 🥣1/2 tsp paprika (optional) 🥣A few tbsp lemon juice (optional) 🥣Salt and black pepper to taste 🥣200 g (7 oz) vegan cheese Instructions 🥣Cook the lasagna noodles in a large pot (filled with boiling water and salt) according to package directions or until al dente. 🥣Ladle about 1/2 cup marinara sauce (or your favorite tomato sauce) in the bottom of a 9×6 (23x15 cm) baking dish (you can use a larger pan). Set aside. 🥣While the lasagna noodles cook, heat oil in a pan over medium heat and add the diced onion, garlic, and mushrooms. Saute for about 4 minutes. Then add soy sauce and spinach. Cook for a further 30-60 seconds, then turn off the heat. 🥣Add the hummus and stir with a spoon. Depending on the brand of your store-bought hummus, you might need to add more flavor. I added cumin, paprika, salt, black pepper, and lemon juice to taste. 🥣Carefully drain the lasagna noodles and preheat your oven to 360 degrees Fahrenheit (180 degrees Celsius). 🥣Lay cooked noodles on a clean surface and place about 1/4 cup of the hummus-mixture on each noodle and spread it evenly. Roll up each lasagna noodle and place it seam-side down in the baking dish. 🥣Ladle the remaining 1 cup marinara sauce over the lasagna noodles. 🥣Add vegan cheese on top. ✨ Getting back into routine ✨ How do you start getting back into a routine?⁣ ⁣ After spending the last month and a half travelling, it’s been hard to get back into a regular routine. But today felt like a start! I’m gonna be honest. Some classic meals can be hard to recreate as a vegan. It’s getting easier. But this meal makes me forget all of the breakfast foods that I choose not to eat!!! It’s the yummiest. Ugh. 🤤 I need someone to prepare this for me every morning. Now taking applications. . dEATails: •chop up red onion, red pepper and broccoli (and any other veggies). •sauté veggies, throwing in frozen spinach at the end! • @minimalistbaker seasoning: • 1/4 tsp salt •1/2 tsp garlic powder •1/2 tsp ground cumin •1/4 tsp chili powder •1/4 tsp turmeric •combine with water to make sauce. •add tofu to one side of the frying pan, sautée for a few minutes and add sauce. Stir tofu together with veggies and let cook for about five minutes. •top with green onion, nutritional yeast, cherry tomatoes, avocado and @cholulahotsauce (or whatever else makes you happy!) 💁🏻‍♀️ . This is a great lazy weekend brunch of breakfast option. It’s packed with protein and lots of veggies and tastes sooo SO good. Let me know if you try it! I am forever craving it. 🤗✌🏻🤍

👯‍♀️ VEGAN BRUNCH CLUB 👯‍♀️⁣ ⁣ My dream would be to open up a vegan brunch café one day. Obviously we would have an offer on for unlimited hash browns and ofc we’d be a dog friendly café 🤪 ⁣ ⁣ But until that day I’m happy with my home cooked brunches with hash browns, Linda’s sausages, toast, garlicky mushrooms with onion and spinach, tomatoes and today I also tried it with the @bonsanvegan scrambled tofu. ⁣ ⁣ Obviously we were missing the baked beans but we did make up for it with the hummus and sweet chilli sauce and ketchup. My friend also added the @leonresturants garlic aioli which she is now obsessed with 😍 ⁣ ⁣ 🔥 What’s your dream job? Obviously if I can’t open a vegan brunch café a professional hash brown tester wouldn’t be so bad either 😉⁣
