Winter's is all about sipping warm soup! How about if we have variety everyday ? Last evening we had Spinach Soup! Honestly, loved it! Spinach being a nutrient rich vegetable - it has great benefits. It comes with vitamin K , A and C in abundance. It's extremely beneficial for hair , nails and bones. It's indeed very good for people who are diabetic. And the best part about spinach is you can use in your recipe the way you want so here you go with it's soup recipe you will love it. Spinach Soup Serves 1 cup 250ML Ingredients 2 cups of Spinach chopped 1/4 cup onion chopped 2-3 Garlic chopped 1/2 tbs besan (gram flour roasted) 1/4 tsp of cumin seeds 1 tej patta (bay leaf) 2 cups of water 1/2 tsp oil black pepper salt to taste Method Wash and rinse spinach and cut chop the leaves heat the oil , add bay leaf cook for about a few seconds add chopped grlic , cook untill golden brown dont let the garlic burn add onions , cook until pink add the chopped spinach add salt to taste and black pepper now add besan / gram flour stir well and add 2 cups of Water bring the mixture to boil and then let it cook on sim add cumin powder, stir well switch the gas off, let it cool. once cool, remove the tej pata, then blend into a puree. can add water if you find the soup thick In a pan, pour the soup and cook it for about 2-3 minutes Btw - This is an amazing meal for #vegan too ! 🌿 Pasta with a creamy mushroom & zucchini tomato sauce 📷 by @beferox 🚨🚨Recipe: Serves 4⠀ (Enough for 500g pasta)⠀ ⠀ Ingredients:⠀ •Olive oil⠀ •1 red onion⠀ •4 cloves of garlic⠀ •1/2 zucchini⠀ •2 carrots, peeled⠀ •250g mushrooms⠀ •2 tomatoes⠀ •2 tbsp. vegan butter / margarine⠀ •1 tbsp. dried basil⠀ •1 tbsp. dried oregano⠀ •salt and pepper⠀ •500ml sieved tomatoes⠀ •2 tbsp. tomato paste⠀ •3/4 cup plant based milk⠀ •1/2 tbsp. flour⠀ ⠀ Directions:⠀ •Add all the veggies (onion, garlic, zucchini, musshrooms, carrots and tomatoes) separately in a food processor to chop them finely⠀ •Heat olive oil in a sauce pan (enough to cover the bottom of the pan) over medium heat⠀ •Add onion and garlic cloves and cook them for about 1-2 minutes or until the onion becomes transclucent⠀ •Add zucchini and carrots and cook for 2 minutes⠀ •Then add the mushrooms and cook them for another 2 minutes before adding tomatoes, tomato paste, dried basil, dried oregano, some salt and pepper, vegan butter and sieved tomatoes⠀ •Stir well, reduce heat to low, cover sauce pan with a lid and cook for about 20 minutes⠀ •Stir sauce regularly⠀ •Whisk together plant based milk and flour and add the mixture to the sauce⠀ •cook for another minute⠀ •Add some more salt and pepper if necessary and serve with pasta⠀ ⠀ Share With A Friend Who Would Love This!⠀ ⠀ .⠀ Via @vegan_veganfood⠀ .⠀ 🥑🍅 FREE 7-day vegan meal plan containing amazing recipes similar to this one. So after doing some research on the vegan diet I have decided to give it a go and share my meal ideas with you all! Vegan lasagna is what we’re having for dinner tonight. This is a family favorite, and it’s easily one of my most protein packed dinners. I used Gardein beefless crumble in the red sauce, I made a tofu ricotta that I added some spinach to, and I used Ragu Simply Chunky Garden Vegetable red sauce, and shredded cashew cheese. I just wing it when layering my lasagna, and I paired this with balsamic honey (we consume honey) roasted brussel sprouts because I loveee brussel sprouts. Do you like mushrooms? When I was growing up, I thought mushrooms were so gross.. I didn’t like the texture, how they smelled or how they tasted. But that all changed when I was introduced to shiitake mushrooms! . When I was younger I was only familiar with one or two types of mushrooms.. but as an adult, I’ve learned there are so many different kinds of mushrooms with tastes & textures to suit every preference. . Now, I love eating mushrooms in lots of different dishes (my favs are shiitake & portobello). They’re especially great for plant-based meals, as they have a very hearty texture and contain a lot of protein, so they’re a good substitute for meat! . My partner stumbled across a delicious looking mushroom sauce online and veganized it for us.. and this has become one of my favorite meals! . Ingredients you’ll need: vegan butter sticks, garlic, onion, rosemary, salt & pepper, a bunch of kale, about 1/2lb of shiitake mushrooms, can of coconut milk, brown/wild rice and avocado (and nutritional yeast). . Start by melting a stick of vegan butter on low heat in a large frying pan. Chop up 6 cloves of garlic + 1 large onion and add to pan with a sprinkle of salt & pepper and a sprig of fresh rosemary (this is key!!). Sauté on medium-low heat for about 15 min (or until onions are clear). While that’s cooking, chop a bunch of kale into thin ribbons and chop up 15-20 shiitake mushrooms (about 1/2-3/4lb) then add to pan and stir in with a little more salt & pepper. Let cook until mushrooms release most of their moisture (about 10 minutes), then add a can of coconut milk and simmer for 10 more minutes.. and that’s it! We served over brown & wild rice (seasoned with turmeric & garlic) and topped with nutritional yeast & half an avocado each😋 . Bowl full of delicious tofu and veggies! Get the recipe: . Press 1-14oz pack extra-firm tofu between kitchen towels to remove excess liquid. Cut into about 1-1/2 inch cubes. Bake at 400F until golden and slightly crispy, about 15 minutes. Cut bite-size florets from 1 head broccoli and steam lightly until just tender Mix sauce: whisk 3 tbsp low-sodium tamari/soy sauce, 3 tbsp hot sauce, 3 tbsp vegan Worcestershire sauce, 2 tbsp toasted sesame oil (or to taste). Sauté 2 tbsp minced ginger, 4 minced garlic cloves and 2 sliced red chili peppers (optional) in sesame (or neutral) oil about 30 seconds until fragrant. Add lightly steamed broccoli florets and cook a couple more minutes, adding more broth or oil as needed. Add baked tofu and mix. Stir in sauce while continuing to heat until sauce is warmed through. Marinated Mushroom and Kale Salad by @cookingforpeanuts 🥗 Who'd love to try this bowl? Check out the recipe:⠀ ​_⠀ ​Recipe: Bring 3.5 cups water to a boil. Reduce to simmer and add juice 1 lemon and about 15 crimini, baby Bella or white mushrooms (washed and slightly trimmed). Simmer for 3 minutes before draining. Allow to cool.⠀ Prepare salad: 1/2 small cucumber (chopped), about 15 baby tomatoes (halved), 1/2 of 1-15oz can rinsed and drained garbanzo beans (or 1 cup cooked), 1 small bunch kale (chopped), handful fresh watercress (optional).⠀ Dressing: blend on high: 4 tsp apple cider vinegar, 2 tbsp water, juice 1/2 lemon, 2 tbsp tahini, 1 tbsp Dijon mustard, 1 tbsp maple syrup, 2 minced cloves of garlic, about 2 tbsp fresh parsley (optional), salt/pepper to taste. In a large bowl, pour some of the dressing onto the kale and massage until kale has wilted a little. Mix in chopped veggies, marinated mushrooms and remaining dressing. Can I really be as fit, strong and healthy following a vegan diet? It seems the answer is a big YES!! “With good planning and an understanding of what makes up a healthy, balanced vegan diet, you can get all the nutrients your body needs” NHS website Surely I need meat/fish/eggs/dairy to get enough protein? It seems not. The strongest man in the world is vegan!! There are loads of plant based protein sources including quinoa, peas, beans, tempeh, tofu, hemp and chia seeds, sunflower seeds, sesame and poppy seeds, nuts and nut butter, chickpeas and lentils. Vegan protein powders are an easy way to get bang for your protein buck. What about iron? Whilst it’s true that the body absorbs iron from meat sources better than iron from plant sources, there are plenty of vegan foods which provide iron, including lentils, chickpeas, cashews, chia and hemp seeds, kale and spinach, dried apricots and figs, quinoa and fortified breakfast cereals. Where do I get calcium from? There are plenty of plant based sources of calcium which means that you can still hit your RDA for calcium while avoiding dairy. Good sources of calcium for vegans include green, leafy vegetables, fortified unsweetened soya, rice and oat drinks, calcium-set tofu, sesame seeds and tahini, pulses, brown and white bread, dried fruit, such as raisins, prunes, figs and dried apricots. And B vits? It’s Vit B12 that’s the tricky one for vegans as it’s only found naturally in foods from animal sources. Unless you really love marmite, the best bet is to supplement. Ps if you’ve made it to the end of this, I’m not trying convince you to become vegan! Another @frankienbennys feast 😋🤤 Me and @vegan.biz went to Frankie and Bennys for the 3rd time this month...we can't get enough of the vegan menu 🌱 We both went for the Viva la Vegan burger which we've tried before and both loved it 😋 and we went for the garlic bread to share and we added the vegan cheese on top!
