It’s day 25 in to Veganuary and in the plant based challenge and it’s WEEKEEEEND!! Wow can’t believe this month is almost over, just 1 more week and it’s February already 😱 Today I’ve got a super quick lunch or dinner idea for you. If you’re in a hurry and don’t have much time to cook, you can make this pita pizza in just about 10 mins. All you need is some pita bread, pizza sauce, some veggies and if you like some cheese on the top. I used chickpeas and spinach on one of the pita pizza and mushrooms, sweetcorn, cherry tomatoes and cheese on the other one. Last night I finaaaally got my appetite back properly after a few days of feeling shit 🤒 And how best to celebrate than with a big bad burger?? 🍔 Stuffed full of pulled @eat_oumph , it was our first time trying this & we were SO impressed 🙌🏼 The texture & taste was just spot on to actual meat 🍗 We drizzled extra bbq into the roll & added a few leaves then served up with some sweet potato chips & my all time fave little guys - peas 💚

This is the perfect comfort food for the weekend!😋🌱💚 Recipe: *about 100ml rice (add more if u have more or bigger peppers) *1 Tbsp red or white quinoa *1 Tbsp chia seeds *1/3 onion (chopped) *1 grated or sliced carrot *1 Tbsp yellow lentils * a handful of dried tomatoes or 1 fresh cut up tomato *pinch of turmeric and salt *1 Tbsp olive oil *100 ml water (or slightly more - u want the rice to soften a bit) *2 - 3 large yellow or red bell peppers Put all of these ingredients in a pot and cook them until all of the water is absorbed and they soften a bit. In the meantime, wash your peppers, cut the tops off and take out the middle with the seeds. Then turn the stove off and stuff the peppers with the rice. and veg. concoction. Place the peppers back into the pot and put the pepper "lids" (tops) back on. Fill the pot with water (to about 1/2 the height of the peppers), add some lemon juice, 1/2 tsp sugar and 1/2 tsp salt. Boil/cook until everything is soft (cca 25-30min.). *I usually add a whole bunch of seasoning to them when on my plate (pepper, flakes, oregano, mint, sumac etc.), but cook them rather plain for the children (as seen in the photo). *I took the top off for the photo so that u can see the inside. *I like them with vegan mayonnaise. Sauce: about 3 cups roasted butternut squash + 13.5oz coconut milk + half of an onion + 2 tblsp coconut aminos + 3 tblsp maple syrup + juice of 1/2 a lemon + a dash or two of cayenne, salt & thyme Blend all ingredients until smooth then add to sauce pan until hot then toss with pasta or whatever you like. Paired with roasted brussels sprouts + fresh red bell pepper Would pair well with any vegetable. Broccoli n cheez twice baked (vegan) potatoes :) Recipe: • 6-7 medium sized potatoes washed and baked on 400 degrees for 1 hour. •while baking wash and steam about 2 cups of small chopped broccoli and place in a bowl with: -3 Tb of vegan butter 1/2 cup of cashew cream (recipe below) 1/3 cup of plant milk 1/4 tsp salt 1/2 tsp black pepper 1 tsp chives 3/4 tsp garlic powder or sauté a 1-2 minced garlic cloves 1/2 tsp onion powder 1/2 tsp dill 1/4-1/2 cup of vegan cheez (I used @followyourheart Smoked Gouda) Optional: parsley or paprika. •when potatoes are done let them cook (keeping the oven on 400) and cut them in half. Scoop out the center of each half leaving some around the sides like a bowl. Try to keep the skin perfectly intact. Add the scooped centers in the bowl and mix with a spoon extremely well. Lightly add olive oil to the pan and rub the skins so every one is coated. Fill each so they are loaded up until all the filling is gone. Top with cheez if you prefer or bacun bits. bit of a thrown together dinner tonight - used some leftover fusilli, with one of the Mae’s Kitchen Spicy Bean Quarter Pounders from @aldiuk on top. Also grated some of the @violife_foods mozzarella block on top, with some rocket leaves and some pickled red onion made using the recipe from @earthyandy, also drizzled a little garlic olive oil on top. Then tried one of the @marksandspencerfoodpr Plant Kitchen chocolate and cherry dessert pots. This dessert may look small but is honestly the perfect size - it was so so rich and a bigger portion would’ve been too much🌱💚

This Kenyan-inspired spinach dish was simple and delish! 1 medium onion (diced) 3 bags of spinach (chopped - shrinkage is real) 2 pounds of tomatoes (chopped) 1 tablespoon of @betterthanbouillon (vegetable) 1 tablespoon EVOO 1 medium cauliflower In a skillet, heat EVOO and add onion. Cook into translucent. Turn heat to medium heat and add tomatoes. Cook for 10-15 minutes until tomatoes are stewed. Add tablespoon of @betterthanbouillon and chopped spinach. Fold mixture until all spinach is mixed in - spinach looks wilted. Turn heat to low heat and cook for 5-7 minutes. Pour over rice, noodles, cauliflower, etc. Cauliflower rice: Rinse cauliflower and cut into chunks. Pulse in food processor, making sure not to pulse it too much. Dry “rice” between paper towels to remove some of the moisture. Sprinkle with a pinch of garlic salt. In a separate skillet, heat 1 teaspoon of EVOO. Once got, add “rice”. Cook for 3-5 minutes. Remove from heat, as “rice” will continue to cook and become mushy. Cauliflower rice may be cooked in the air fryer. I am trying that next! *Uncooked cauliflower can be frozen for later use. Pour spinach over caulirice and enjoy! Warm red cabbage-chickpea salad dinner with cherry tomatoes, red peppers corn and chickpeas. Sauté using water or olive oil one onion in the pan with half a red cabbage cut in small pieces. Add 10 cherry tomatoes and 2 red peppers in small pieces. Continue stirring until they soften. Add 1tsp smoked paprika, 1tsp curry, 1/2 tsp coriander, 1/2 tsp sweet chilli, 1/2 tsp cinnamon, 1/2 tsp garlic, pepper and salt. Cook for 10 more minutes. Add more water if needed. Add one can of corn and one can of chickpeas.Finally add the sauce: 3 tbsp reduced salt soy sauce, juice from one lime, 1 tbsp honey or marple syrup, 1 tbsp mustard and 3 tbsp olive oil. Sloppy Joes aren’t really a thing here, are they? But I saw this idea and thought it sounded right up my street as a Friday night meal. The main bit of it is green lentils cooked with bbq sauce until sticky, with cheese and mayo in a roll. SWEET POTATO FRIES SALAD🌱When it comes to salads, the dressing is everything. This one is one of my favorite dairy free salad dressings👅 Recipe down below🐨 Potato Fries: 400g sweet potato 1 tsp paprika powder 0.5 tsp pepper Dressing: 1 tbsp tahini 1 tsp maple syrup 1 tbsp lemon juice 2 tbsp plant milk 1 garlic clove 0.5 tsp pepper 0.25 tsp salt Salad: 3 cups Lettuce 0.5 Red pepper 1 cup plum tomatoes 0.5 avocado 1. Set oven to 200C. Cut the sweet potatoes into stripes. 2. Add the stripes to a large mixing bowl, then sprinkle them with black pepper, and paprika powder. 3. Spread out onto a single layer in a large baking tray and bake for 40 minutes, or until golden depending on oven. 4. Meanwhile start preparing the salad by washing and cutting the red pepper, lettuce and tomatoes. 5. Make the dressing by adding tahini, lemon, pepper, salt, garlic, plant milk and maple syrup in a bowl. 6. Top the salad with fries, avocado and dressing. ———— 🇳🇴🇳🇴🇳🇴 NORWEGIAN RECIPE (1 porsjon) Søtpotetfries: 400g 1 ts paprikapulver 0.5 ts pepper Dressing: 1 ss tahini (fås på internasjonal matbutikk) 1 ts lønnesirup 1 ss sitronsaft 2-3 ss plantemelk 1 hvitløksfedd 0.5 ts pepper 0.25 ts salt Salaten: Ca. 6 dl salatblar 0.5 rød paprika ca. 2 dl cherrytomater 0.5 avokado 1. Sett ovnen på 200C. Kutt søtpoteten i strimler. 2. Ha søtpotetfriesene i en bolle og krydre med paprika og pepper. Bruk hendende til å fordele krydderet. 3. Fordel søtpotetfrisene på en stekerist dekket med bakepapir og stek i ca. 40 minutter til friesene blir gyldne. 4. Q u i c k h e a l t h y D i n n e r . This was so yummy and quick to make that I thought I’d share. Gluten free spinach pasta . I n g r e d i a n t s • 1 package brown rice gluten free noodles • 5 cups spinach • 1/2 cup tahini • 1 cup water • 2 tbsp olive oil • 3 cloves garlic • 1 lemon • salt & pep . D i r e c t i o n s • boil noodles in water per instructions on package • sauté spinach in pot with a tbsp of olive oil and half of lemon squeezed • DRESSING: chop garlic super tiny and mix in with tahini, water, other half of lemon, 1 tbsp olive oil, and salt & pep (I used a hand mixer to get it all smooth but you can just use a fork) . Enjoy 😘

I made Kiev’s! I used tofu, edamame beans & kidney beans for the parties, stuffed the middle with garlic, vegan butter, vegan cheese and nutritional yeast, and then I used breadcrumbs and almond milk for the coating. Another day and again a lunch bowl. The star of this one are for sure the roasted spicy chickpeas! Have lovely day everyone 🌈🌍🌻✨💚 Ingredients: 1 tbsp olive oil 1/2 can chickpeas 1/4 tsp ground chili 1/2 tsp ground paprika 1 tsp curry 1/2 tsp salt Pinch of turmeric 1/2 avocado 1/4 cucumber 1 bakes sweet potato 10 roasted cherry tomatoes 1 1/2 cups spinach Method: 1. Mix oil and spices. 2. Spread the chickpeas on a baking tray and cover with the spices and oil mixture. 3. Bake for about 15 minutes at 180c/350f. 4. Combine all the other ingredients in a bowl and finally add chickpeas. 5. Enjoy ✨🌻

💛 Chickpea pasta with Lentil Bolognese💛 🌱I tried this pasta for the first time the other day and I am in love! Last night was #icancookvegan Swedish meatballs, mashed potatoes, and gravy. Sometimes I go into a meal having no idea how long it will take. After sitting in traffic for two hours I was NOT in the mood to cook and this one ended up taking quite a while. Luckily my fiancé started the prep or we would have eaten at midnight. I really enjoyed this meal. The meatballs were good. Super delicate but delicious, and of course nothing beats mashed potatoes and gravy. However, my kids were only lukewarm. Why?! I have no idea. I mean, there is nothing better than all of these things. Kids are crazy. Also, the more time and energy and effort you put into a meal the less kids will appreciate it. MASSIVE food hall given I only nipped into Tesco for a few things TW: eating disorders, restricting, calorie counting As a teenager I had an eating disorder and since then I've had a few relapses. A big worry becoming vegan was that I would slip back into that. I've been worried a lot about not getting enough protein so I started tracking that (and of course calories). When I was sad the other day, I threw out pretty much all the 'bad' food I owned. I'm hoping that I can get back from this eventually, but this food shop is a small start 💪🏻
