Heat oil in a thick-based pot for 2 minutes. Thereafter add the Strip and fry until golden brown. 2. Remove the Strips from the pan and keep aside. Reuse the oil and add ginger, garlic and onion to the pan. Cook for 3 minutes. 3. Add the cumin powder, coriander powder, chili powder, salt, mayo and apricotjam, and cook for a few minutes. 4. Add the Strips and allow to simmer for 8-10 minutes on a medium to low heat. 5. Serve with rice or chapattis and garnish with rice. This Mushroom Chickpea Ragout 🍄🔥 by @cookingforpeanuts is bursting with flavour! Recipe Cook 3 finely minced (small) onions in enough vegetable broth to moisten (or olive oil) until softened and starts to brown a little (about 10 minutes). Add 3 minced garlic cloves, 1-1/2 tsp dried rosemary, 1-1/2 tsp dried thyme and 1/4 tsp ground sage and cook another 30 seconds until fragrant. Add 1 lb (16oz) thickly sliced mushrooms (cremini or white button) and cook on high until mushrooms have released their liquid and start to soften. Add 1/2 cup vegetable broth, 1/2 cup coconut milk, 1 tbsp balsamic vinegar, several turns black pepper and 1-1/2 cups cooked chickpeas. Simmer until liquid has thickened. (You can add more broth or coconut milk depending on desired consistency.) Remove from heat and stir in 2 cups spinach and about 2-3 tsp fresh lime juice. Salt to taste.

BBQ Cauliflower Tacos by 🌱: @thewhitechestnut INGREDIENTS: cauliflower sauce: 2 medium size cauliflower or a big size cauliflower 3 tbsp miso paste 2 tbsp ketchup-style sauce 1 cup water 4 tbsp maple syrup 1/3 cup apple cider vinegar 2 tbsp olive oil cheese sauce: 1/2 cup cashews 1/4 cup water 3 tbsp nutritional yeast a tsp lemon a pinch of salt a pinch of pepper some chopped chives or the tacos: 100g lettuce leaves 8 taco shells a sliced avocado red and orange sweet mini peppers chopped some chopped red onion some chives preparation time: 15 minutes total time: 50 minutes serving size: 4 serves METHOD: Start by chopping the cauliflower and clean it well. Pour the ingredients for the cauliflower sauce into a food processor and blend them until smooth. Incorporate the cauliflower to the baking tray and pour the sauce over the cauliflower, give it a good stir and bake it at 200ºC/400F for around 30 minutes. Basically, you want to cook slow and really well the cauliflower to make sure that it gets all the flavors from the sauce and also the texture should be soft but not crunchy. To make the cheese sauce, simply blend all the ingredients listed for the vegan cheese sauce and make sure that the texture is even, adjust salt and pepper if needed, then mix it with some chopped chives. To serve the cauliflower BBQ tacos, warm up the taco shells, then add to each taco: lettuce leaves, around 3 tablespoons of BBQ cauliflower, some red onion, some avocado, a tablespoon of vegan cheese and top it all with chives and sweet pepper. You’ll get 8 BBQ cauliflower tacos. Enjoy!

Sunday dinner idea. Bookmark this recipe and give it a try! . . Cheesy Vegan Pasta with Cannellini Beans & Greens 📸: @cookingforpeanuts 🌱 Easy and delicious! . . Recipe  Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum!

TOMATO TOFU This is a Vietnamese dish, I had it for the first time when I visited the country last year and fell in love. Such a simple dish but so delicious! I haven’t been able to replicate the exact dish I had, but I feel like I’ve come pretty close and it’s now a regular on our weekly menu. Tofu is one of those things I had never really eaten before becoming vegan but now something I eat daily, even if you aren’t vegan, I can assure you, you’ll love this one. Most people would know that alone, tofu has no flavour, so incorporating it into flavourful dishes or marinating it is essential. Be sure to let me know if you are going to try this one and don’t forget to save it! Ingredients 1 x 450g block perfectly firm tofu from @woolworths_au 1 x can organic diced tomatoes 1/2 cup Italian Passata 1 x medium brown onion diced 1 tbsp olive oil 1 heaped tbsp minced garlic 1 tbsp tamari (or chosen soy sauce) 1 tsp sugar (I used coconut sugar) Salt and pepper to taste (I use 1 tsp salt and 10 turns of cracked pepper) Method 1. Cut tofu into your desired shapes, I usually just cube it. You want them to be about 2 cm thick so that when you fry them, there’s still some tender tofu to bite into. Heat the olive oil in a pan. Pat each slice of tofu as dry as you can before slipping them into the oil. Fry until a nice, uniform, golden crust is formed and let drain on some paper towel. Once all tofu is fried, set aside. 2. In the same pan fry onion on medium heat until softened and translucent. Add garlic and cook until fragrant. 3. Add the canned tomatoes and passata to the pan with the tamari and sugar. Lower to a steady simmer and cook for about 15 minutes until the tomatoes have broken down a bit and excess water has evaporated. Mix the tofu in or serve the sauce drizzled over the top, whatever you’d prefer. (I usually stir it in) 4. Taste your sauce, add the salt and pepper as required and stir. 5. Serve with your choice of sides! My go to is rice and veges. Enjoy! Makes 4 serves at 219cals per serve with 21.4g protein.

You guyyyyysss this is like the most delicious quick and simple pasta recipe ever!!! Its a staple in my household bc its just TOO good 🤤 and takes almost zero time and effort to make! grab the recipe below 🤗 ••• 1/2 package spaghetti 4 cloves garlic, minced 1 package cherry tomatoes 1/2 lb mushrooms, sliced 1 pinch thyme 3 tbsp olive oil Dash garlic powder Salt and pepper ••• Preheat oven to 400°. Toss tomatoes in 1 tbsp olive oil, salt, and pepper and roast for 10-12 minutes. While thats going, cook spaghetti according to directions. In a small saucepan, sautee the mushrooms in a little olive oil, salt and pepper, and garlic powder. While all thats going, mince the garlic and place in a large saucepan with the other tbsp olive oil and thyme. Sautee until fragrant, being careful not to burn it. When the pasta is done, rinse it and add it, along with the mushrooms, to the saucepan and mix well. When the tomatoes are done, add them to the plated pasta. Soul warming butternut squash soup😁 Sweet and a little spicy is exactly what you need on a cold winter night. Butternut squash is an excellent source of vitamin A and will help you to keep healthy during the cold season. This recipe is super easy and I hope you are able to make it! What you will need is 2 butternut squashes 4 onions ( 2 red and 2 sweet) 1 red apple 2 cups of vegetable broth Curry powder Grated ginger or ginger powder Nutmeg powder Full fat coconut milk 6 leaves of kale Directions Bake the squash in an oven at 375 degrees Fahrenheit until soft - about an hour and a half. Sauté the 2 sweet onions in a pot with some olive oil. Add in all the spices and the vegetable broth. Cube the apple and mix it in, scoop out the squash (minus the seeds - save those for roasting) and mix it in as well. Let the apples get soft while keeping the soup at a simmer. In a pan, sauté the red onions in olive oil and add in the kale, ripping the leaves with your hands. Keep a lid on the pan as the steam will decrease the size of the kale. When the apple cubes are soft, use an immersion blender to mix everything together until there are no lumps, add in the coconut milk along with salt and pepper to taste and your soup is done! Top it with kale and onion, serve. Let us know what you think if you try the recipe! A new #MealPrepMonday recipe for you! We tried @uptonsnaturals jackfruit over a year ago and loved it and then it seemed to disappear. Well last week I stumbled upon it again in the freezer section at Walmart. I keep seeing it in my freezer but don't feel like a bbq jackfruit sandwich so I found a recipe for Vegan Potato Jackfruit Stew on Pinterest from http://www.veggiesociety.com and decided to modify it a bit, like I do! . . I am a crockpot lover, especially for stews and soups. I added 1 box of Upton's Naturals BBQ Jackfruit, 1 carton vegetable stock, a handful of small yellow potatoes diced into cubes, 10 baby carrots cut into thirds, half of a red onion, 1 tsp diced garlic and a handful of cherry tomatoes (chopped). I then added some paprika, thyme, dry oregano, onion powder and chili powder to taste for a smoky flavor. I set it on high for 4 hours. . . What is your favorite jackfruit recipe?

Hey my lovies!!! Sorry ive been pretty MIA lately; finals week was crazy and i had to work a lot AND get ready to go on a three week vacation! 😅 but finals are done and i did really well and i dont have to work again until i get back and we are at brandon's inlaws for the weekend until we fly out to michigan tomorrow for christmas! Yay! ❤🌲i havent been home for christmas in three years and brandon has never spent a christmas with my midwest fam so im super excited about this trip 😌💖 but im getting lu to sleep right now and i finally have a moment to share a meal with you guys 😁 ••• this was a super quick throw together meal i partly picked up from the store the night before we left. Vegan Christmas Wreath 💥 This recipe is vegan with spinach, pine nuts and tofu as a centrepiece for a meat-free Christmas Day. 🔸 250g spinach 🔸 250g silken tofu 🔸 2 tbsp extra virgin olive oil 🔸 50g pine nuts, toasted 🔸 Nutmeg 🔸 2 garlic cloves, crushed 🔸 2 lemons, zested 🔸 1 small pack dill 🔸 1 tbsp sour cherries 🔸 ½ tbsp dried cranberries 🔸 Flour, for rolling 🔸 500g block shortcrust pastry 🔸 Almond milk 1️⃣ Put the spinach in a colander, then pour over a kettle of boiling water and leave to wilt. Once cool, wring out the excess moisture using a clean tea towel, then chop the spinach and put in a large bowl. Stir in the tofu, oil, pine nuts, nutmeg, garlic, lemon zest, chopped dill and fruit until well combined, season generously and set aside. 2️⃣ On a floured surface, roll the pastry out into a rectangle. Leaving a 1cm border, spoon the spinach mixture on the pastry. Create a wreath shape and stick together with almond milk. Transfer the wreath to a baking tray lined with baking parchment, let chill for 20 mins. 3️⃣ Heat oven to 200C/180C. Cut slashes across the top of the wreath with a sharp knife. Mix almond milk with olive oil and brush over the wreath. Bake for 40-45 mins until golden brown. Pro-tip: when you make my fettucine alfredo, add some sliced mushrooms and spinach to the pan after you sautee the garlic and onion (and put them in the blender), sprinkle with salt and pepper, sautee and add to your finished pasta dish. Its a game changer, i promise 😉 alfredo recipe below 😁 ••• 2/3 c raw cashews (soaked for at least a few hours) 1/2 c nutmylk of choice (does not have to be unsweetened; use what you have) 1/2 yellow onion (chopped) 3 cloves garlic (minced) 2 tbsp olive oil 2 tbsp nutritional yeast 1 tsp salt Juice of half a lemon ••• In a small saucpan, sautee the olive oil, onions, and garlic together until fragrant and the onions are translucent. While thats going, rinse and drain your cashews and place them in a blender or food processor. Follow with the rest of the ingredients, including the onions and garlic once they are finished. Blend until completely smooth. You can transfer it to a saucepan to heat if youd like but honestly i just microwave mine once ive plated it hahaha. Great idea for people looking for vegan Xmas meal ideas? 💡 Method- Wilt spinach in a bit of garlic and nutmeg, put to one side. Caramelise onions and put to one side. You guyyyyyys!📣 This is one of my favorite easy meals to whip up when im pressed for time. It really only takes as long to put together as your quinoa does to cook! Simple, delicious, and perfect for leftovers (or parties) too bc the recipe makes a bunch! I added simple baked tofu to mine but its delish on its own or in a wrap/bowl with hummus 🤤 Get the recipe below 💚🌱 ••• 1 cup (uncooked) quinoa 1 jar sliced green olives 1 jar sliced kalamata olives (keep the juice!) 1 can hearts of palm (sliced) 1/2 jar sundried tomatoes 1/2 medium red onion (diced small) 1 tbsp balsamic vinegrette 4 tbsp kalamata olive juice ••• Place your quinoa in a saucepan with 2 cups of water and bring to a boil, reduce to a simmer, cover, and cook 15 minutes (until all water is absorbed). In the meantime, place all your other ingredients in a large (non-plastic) bowl (setting kalamata juice aside) and mix them together (i like to halve or quarter my sundried tomatoes but you dont really have to). When the quinoa is done cooking, add it to the bowl and mix everything until well combined. LENTIL SALAD WITH CHICKPEA PANCAKES This meal really surprised me, it sounded delicious but it tasted even better. Don’t forget to double tap and save this one for later. 🤤 Ingredients 1 1/3 cups chickpea flour 1 1/3 cups water 3 tablespoons olive oil 1 1/2 teaspoons salt 1 medium sweet potato peeled and diced 1 packed cup fresh basil 1 tsp minced garlic 1 orange - juiced 1 tsp white wine vinegar 1/2 medium red onion diced 1 can brown lentils drained and rinsed 1 apple thinly sliced 120g cherry tomatos halved 50 grams spinach Method 1. Combine the chickpea flour, water, 2 Tbsp of the oil and 1 tsp of the salt in a bowl and whisk well. Let sit to hydrate while you prepare the salad, the longer you let it sit the better to allow the flour to hydrate. Give it a good final whisking just before frying to remove all the lumps. 2. Steam the diced sweet potato in the microwave . 3. In a small food processor (I used my small NutriBullet cup), blend the basil, orange juice, 1 Tbsp of the oil, 1/2 tsp of the salt, garlic and vinegar until smooth. 4. Toss together the spinach, lentils, cooked sweet potato, red onion, apple, tomato’s and the dressing. 5. Fry the pancake mix in a non stick pan with a light spray of oil. Fry one pancake at a time, 1/2 cup of mixture should yield approx 4 large pancakes. 6. Serve the salad on top of 1 pancake per person and ENJOY 🤤. Makes 4 servings. Tonight chickpea pot pie is what's for dinner!! With the colder weather I have been craving some of my favorite comfort foods. With a couple quick swaps I whipped up this up and it is AMAZING!! 1 box of pie crusts from the refrigerator section (this will be 2 crusts) rolled out in 9 inch round pan. . . On the stove combine 2 bags of frozen mixed vegetables, 1 cup of shredded potatoes, 1/2 carton vegetable stock and some pepper! Warm until veggies are soft. Add in 1 tablespoon cornstarch or arrowroot powder and stir until thickened. Stir in 2 cans of chickpeas. Divide the filling between the two pie crusts and bake at 450° for 10 minutes if eating right away or freeze. . . Bonus: 2 dinners for $5!!😍

Homemade Vegan Chinese 🌱 Quorn chicken, Kale and rice noodle stir fry. Served with sesame and maple roasted carrots and courgettes with a veggie spring roll. Method-Basic stir fry recipe with garlic, ginger, chilli, onion, yellow pepper, and coriander stems cooked in sesame oil. Add quorn vegan pieces, soy, lime, rice wine vinegar, a bag of Kale, a splash of water and leave to do its thing, adjusting as you go, add rice noodles a few minutes before serving. In a separate very hot pan cook sliced carrots and courgettes in sesame oil, maple syrup and seasoning. Add sesame seeds until coated and toasted. World vegan day 🌍✌️✌️✌️❤️ Petit feuilleté vite fait avec des légumes et une petite salade d'automne 🍁🍂🍃. . . Pour 4 personnes.. J'ai utilisé une pâte à tarte feuilleté herta. Pour la farce de légumes. 1 patate douce râpé avec 2 carottes râpé que j'ai fait revenir avec 1 échalotes et une gousse d'ail pendantet 1cs d'huile d'olive, 5 mn à feu doux ensuite j'ai ajouté 1cs de sauce soja sucré et 1/2 cc de ras El hanout et du paprika. Quand les légumes deviennent fondant, j'arrête la cuisson et hors du feu j'ajoute une cc de moutarde et 1cs de crème de soja et 1/2 cc d'ail en poudre et 1cs de levure maltée + du persil frais haché . Je remue. Et je laisse refroidir. J'étale ma pâte feuilleté et j'en détail 4 carré. Au centre de chaque carré j'y met de la farce et du bacon végétale de la marque @wheaty_france et je pince les extrémités que je soude avec une olive. Puis je fais cuire dans un four à 220° pendant une vingtaine de minutes plus ou moins selon les four. Et servir avec une salade composée ici de jeunes pousses, des rondelles de radis, tomate cerise, raisin rouge, fèves d'edamame, oignons rouge. Vinaigrette faite avec de l'huile d'olive et de l'huile de colza +vinaigre de pommes+ sel+poivre+ail en poudre+ levure malté. Pumpkin Kale Strudel🎃 (only 4 ingredients!) 🕸 Ingredients: 1 puff pastry sheet 1/2 cup pumpkin puree 1/4 onion chopped Chopped kale 🕸 Directions: Preheat oven to 350°F. Combine all ingredients except the pastry in a bowl and season to taste. Cut pastry sheet in 4 quarters. Put filling in the middle of each quarter, seal the edges close with water and use a fork to close it off. Bake for 30-35 minutes. These black bean burgers were super speedy and very tasty! 1 tin of black beans (drained and rinsed) 1/2 cup of cooked quinoa 2 tbsp tomato paste 1 tsp garlic powder 1/2 tsp basil 1/2 tsp sage 1/2 cup oats Pinch salt and pepper Pop everything into a blender and mix until smooth. Use full mix to make 4 burgers, fry for 5 mins on both sides on a medium heat. Serve as you wish. They were so good! Chick pea and sun dried tomato bites, lemon and dill mayo, spinach and peas. 🌱 Method- Mash a drained tin of chick peas, a clove or garlic, and about 8-10 sun dried tomatoes with a tbsp of lemon juice, salt and pepper. Form into patties, coat in breadcrumbs, refrigerate for a bit, then shallow fry. Mix vegan mayo with loads of chopped dill, lemon juice, salt and pepper. MINESTRONE SOUP Maybe if I make soup it’ll magically bring colder weather to Orange County? Worth a shot cause I am over this 90 degree weather 🥵 Ingredients: - 1 yellow onion - 3 carrots, peeled - 6 cloves of garlic - 3 stalks of celery - 3 tbsp olive oil - 6 cups veggie stock - 1 head Dino kale - 1 can kidney beans - 1 can cannellini beans - 1/2 box pasta - Salt and pepper to taste Method: 1. Peel and roughly chop the onion, carrots, garlic, and celery and put all in a food processor. Pulse until finely chopped (until a paste forms) 2. In a large pot, heat the olive oil over medium heat. Once hot, add the paste and cook for 15 minutes, stirring occasionally. 3. While the paste cooks, remove the stems from the kale and roughly chop and rinse it. Drain and rinse the beans with fresh water. 4. Add the veggie stock to the pot and turn the heat to low. Simmer for 30 minutes. 5. When the soup is almost done simmering, cook the pasta according to the box instructions BUT cook for 4 minutes less. 6. Add the kale, beans, and pasta to the soup and stir. Salt and pepper to taste. Simmer for 5 more minutes and serve with sourdough bread or without!

Instant Pot Easy Chili with Seitan. Quick and easy for a big family (we have 4 adults and 2 kids in the house now!) Rich and thick, full of protein and fiber. Fiber. It's unbelievable how little the dietary guidelines recommend and how little the Standard American Diet offers. 25g?! I wish people were getting at least that but 50g is what everyone should be aiming for. Anyhow, here is another of my dump meals, 100% vegan, 100% awesome 🤤 Instant Pot Chili with optional Seitan. RECIPE: ✓ 1 large onion ✓ 1 red bell pepper ✓ 1 green bell pepper ✓ 3 cloves of garlic ✓ 8oz seitan or mushrooms (optional, if not using add an additional can of beans) ✓ 2 cups of water ✓ 1/2 tsp garlic powder ✓ 1/2 tsp black pepper ✓ 1 tsp paprika ✓ 1 tsp oregano ✓ 2 tsp ground cumin ✓ 3 tbsp chili powder ✓ 1 15oz can pinto beans ✓ 1 15oz can red kidney beans ✓ 1 8oz can tomato sauce ✓ 1 15oz can fire-roasted diced tomatoes ✓ 1 6oz tomato paste ✓ 2 tbsp flour (or masa tamale if you have it) 1. Chop all vegetables and add to Instant Pot. Cook until soft, add veggie broth, water or aquafaba to avoid sticking and burning. 2. Add seitan or mushrooms, water, spices and beans. Stir well to combine. 3. Pour tomato sauce and diced tomatoes on top. Don't stir. 4. Set Instant Pot to 10 min high pressure, 10 min natural release, then release the pressure manually. 5. Stir in tomato paste and flour. Let rest to thicken. 6. Cauliflower Steak. Yes, it's a thing! I mean it's really hard to ruin cauliflower, it's good in almost any form and shape. However, if you want it to look more presentable (perhaps, for guests) and be nice and crispy, this recipe is for you. Use it with sauce or gravy of your choice. I think it'll be great with some mashed potatoes although I had tomato sauce farfalle on my mind tonight 🤗 RECIPE (serves 4-5): ✓ 1 head of cauliflower ✓ 1 cup of soy milk ✓ 1 tbsp apple cider vinegar ✓ 1 tbsp of soy sauce ✓ 1/2 cup of corn starch ✓ 3/4 cup of all purpose flour ✓ 1 tsp of salt ✓ 1 tsp of black pepper ✓ 1 tsp of garlic powder ✓ 1 1/2 cups of panko bread crumbs ✓ oil for cooking 1. Preheat an oven to 425F. 2. Cut the cauliflower head into 1/2" steaks. 3. In a shallow but deep dish mix milk, soy sauce and apple cider vinegar. 4. In a separate bowl mix corn starch, flour, salt, pepper and garlic. 5. Add the wet mixture into the dry ingredients and stir to make a batter. 6. Place panko bread crumbs in a separate shallow dish. 7. Preheat the frying pan with some oil. Dip both sides of each steak into the batter and then press into the panko bread crumbs on both sides as well. Cook for 3-4 mins on each side to brown. 8. Place the browned steaks to a sheet pan and place into the oven for 5-10 mins depending on thickness of the steaks. 9.
