Tonight I made creamy garlic pasta with a side of cucumber and tomato salad. Simple and delicious 😋 • Ingredients 1/2 tbsp olive oil 4 cloves garlic minced 1 shallot finely chopped 2 cups low-sodium vegetable broth (see notes) 1 and 1/2 cups plain, unsweetened non-dairy milk (see notes) 1 tsp salt plus more to taste (reduce if using a salty broth - mine is low-sodium) 8 oz dry fettuccine black pepper, dried oregano and red pepper flakes to taste chopped fresh basil or parsley for serving • Instructions Heat the olive oil in a large skillet over medium heat. If possible, choose a skillet that is wide enough to completely fit the fettuccine. Smaller pans will work, but require a bit more fuss to stir and submerge the pasta as it cooks. Add the garlic and shallot to the pan along with a sprinkle of salt, and stir. Cook for about 2 minutes, stirring occasionally, or until the garlic is softened and the shallot is turning translucent; avoid browning. Add the vegetable broth, nondairy milk, and salt, and stir. Add the dry pasta and gently prod it around to submerge it under the liquid. If not all of it fits now, you will need to gently push it into the pan after the submerged portion has softened later. Bring to a boil, then reduce to a simmer. Stir occasionally, gently separating any pasta that starts to stick together. Cook for about 20 minutes, or until the sauce has thickened onto the pasta and the texture is to your liking. I know......its a terrible picture! But I never claimed to be a photographer, so that's ok!!! I was rushed because it was family painting night!!!! More to come on that later! . . I only had a few minutes to make a quick dinner, so salad it was! Don't be fooled though! It might be very basic, but rather delicious. . . I caramelized some red onion, added in some chopped kale, pinch of salt, juice from one lemon and some EVOO. Cooked until it was wilted and still tender. Topped it with some cucumber, grape tomatoes and avocado. Honestly took about 5 minutes and it was delicious! With a little more time I would have added some tofu and roasted some nuts! Next time. . .

Roasted masala chickpeas with puff bread! These chickpeas took me 5 minutes to make! Flavoursome and kickass. Ingredients - 2 Can chickpeas 2tbsp pomegranate powder 2 tsp chili powder 1 tsp cumin seeds Half tsp Carom seeds (optional) 1 tbsp Chana masala ( if you don't have this use garam masala instead) Method - 1. Heat some oil and put in the cumin and carom seeds, followed by the pomogranate powder. 2. Saute it on low medium for a minute . It will turn blackish but don't worry, that's how it's supposed to be. 3. Add in the chili powder and Chana masala followed by the chickpeas. 4. Roast chickpeas on medium heat for 5-6 mins. 5. This was going to be a completely different thing, but that’s okay. 🙃 Sometimes meals turn out that way. But this plate was definitely a happy accident. Sautéed Miso Cabbage and Tofu...pretty much all the veggies. 😂 Super yum flavor, lots of nice peppery notes as well as ginger and garlic. 😌This went perfect with a little @lotusfoods brown Jasmine rice. 🥕 . Sautéed Miso Cabbage and Tofu 1/4 of a medium cabbage, shredded 1 small onion 1 block extra firm tofu, pressed and drained 1 stalk celery 1 small carrot, sliced into coins 1 inch ginger minced 3 cloves garlic minced 2 tbsp low sodium soy sauce 2 tsp garlic chili sauce 2 tsp maple syrup 1 tsp miso paste 2 tbsp water 1/4 tsp black pepper Extra Veggies of choice: I use bell pepper, collards and parsley . Cube tofu and place to the side. In a small bowl, whisk together miso and water then set aside. In a sauté pan, add onions and celery and sauté until onions are softened. Add in carrots, cabbage, garlic and ginger and sauté until fragrant. Add in soy sauce, garlic chili sauce and maple syrup and stir to coat. Add in remaining veggies and miso mixture. Stir and cook for a minute or until miso absorbs into the stir fry. Serve and enjoy. 🍚

Hello my quarantined friends! I haven’t posted here in a long time and that has a lot to do with the fact that I was avoiding the gym to protect myself and others but in doing that I got really sad about not being able to lift anymore and just didn’t even want to think about it. More details below 😍 🍃 Follow @recipesforvegan for more! 🌱⠀ .⠀ 🥟😍 Amazing Curry Puff! 📷 ⠀ by @woon.heng 🚨🚨 Recipe: (makes 24 puff pastry)⁣⠀ Ingredients:⁣⠀ ~ 2 packs puff pastry of your choice (Start with 1 box first if unsure of the filling volume)⁣⠀ ~ 2 medium-large potatoes, cubed & soak in water to remove starch, drain well⁣⠀ ~ 3/4 cup frozen mixed carrots & peas⁣⠀ ~ 1 medium onion, 4 cloves garlic, 2 shallots, knob of ginger - all chopped⁣⠀ ~ 1.5 tablespoons red chili paste 🍃Spices (adjust to your preference): 1/2 tablespoon cumin seed, 3 tablespoons coriander powder, 3 tablespoons curry powder, 1 teaspoon turmeric powder⁣⠀ ~ veggie stock/water⁣⠀ ~ oil, salt to taste, melted vegan butter⁣, pandan leaves, tie to a knot (optional)⁣⠀ ⁣⠀ ✔️In a heated non-stick pan, sauté onion until soft. LINK IN BIO.⠀ ⠀ ⠀ INGREDIENTS:⠀ ½ cup cashews⠀ 1 medium carrot, sliced⠀ 3 tbsp nutritional yeast in Vegancuts Pantry Box⠀ 2 tbsp tapioca starch⠀ 1 tsp lemon juice⠀ 1 tsp salt⠀ ¼ tsp garlic powder⠀ ⅛ tsp turmeric⠀ vegan butter, to taste⠀ 8 slices of bread⠀ ⠀ INSTRUCTIONS:⠀ 1. In a medium pot, bring 4 cups of water to a boil. Add cashews and carrot and boil for 10 minutes.⠀ 2. Use a slotted spoon to transfer cashews and carrot to a high-speed blender. Save the cooking water.⠀ 3. Blend nutritional yeast, tapioca starch, lemon juice, salt, garlic powder, turmeric, and 1 cup plus 2 tablespoons of reserved cooking water. Blend for 2-3 minutes.⠀ 4. Vegan "Fish" and Chips 🍟🐟 from @mymeatlessmeals Ingredients: • 300 g aubergine, peeled and halved • A bowl of water and and slices of lemon • 1 cup all purpose flour (+1/4 cup for dusting) • 3 tsp baking powder • 1/2 tsp Himalayan salt • 1 tbs nori powder • 1/8 tsp turmeric • 300 ml vegan lager beer, cold • coconut oil/ grape seed oil for frying 🌱 🐟 Instructions: 1. Peel your eggplant/ aubergine, cut in half, and soak in water with lemon slices for about 10 minutes. 2. Combine 1 cup of plain flour, salt, turmeric powder, nori powder in a bowl before adding cold lager and mix well. 3. Remove aubergine from water, transfer to a Ziploc bag and add plain flour and shake until fully coated. 4. Spoon the cold batter over your flour-coated aubergine on all sides. 5. Heat coconut oil in a nonstick pan until the temperature reaches 375 and gently drop aubergine and fry on both sides on medium- medium low heat until golden brown. Drain the excess oil for a few minutes on a cooling rack before plating. 6. Serve with mushy peas, a lemon slice, and chips. 7. Topped these fresh Buddha bowls with @cremedelacrumb1 oil-free dijon dressing — guys.. it’s made from CANNELLINI BEANS !!! Like r u serious 🤯🤯 I bet you have some in your cabinet!! The author made a note that a touch of oil would make it a little creamier, but I think because I have a high-speed blender mine was perfectly creamy and delicious. No oil needed!! I personally subbed the honey/agave for maple syrup but then the mustard flavor was a lil too strong (like shoot up the nose to the forehead wasabi kinda strong lol), so I’d use a little less dijon if you’re using maple syrup :)

Recipe below: ⁣Ingredients:⁣⠀ 1 small head cauliflower, wash & cut into florets⁣⠀ 1 small green bell pepper, cubed⁣⠀ 1/2 small red onion, cubed & 2 cloves garlic - sliced⁣⠀ 1/4 cup dry roasted cashews⁣⠀ 4 dried Thai chilis/red chilis⁣⠀ oil for frying and cooking⁣⠀ ⁣⠀ Batter ingredients: Mix 3/4 cup all-purpose flour, 1/4 teaspoon salt, a few shakes of white pepper in a bowl with 1 cup of cold water until well combined. The batter should be on the thicker side.⠀ Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Bake at 485F until light golden brown for about 20-25 mins, be sure to flip halfway & brush a florets with oil, if needed. For the last few minutes, you may broil to get a crispier texture) ⁣Sauce ingredients: Mix together 1/2 tablespoon dark soy sauce, 1/2 tablespoon sugar, 2 tablespoons soy sauce & 1 tablespoon Chinese cooking wine/sherry in a bowl & set aside.⁣⠀ ⁣⠀ In a heated nonstick pan with 1 teaspoon oil, sauté onion, garlic, bell pepper, dried chilis until fragrant. Agregar el aji amarillo (o cúrcuma), agregar el arroz previamente lavado y las 2 tazas de agua. Dejar cocinar hasta que el arroz esté suave (aprox 20 min). Consideren que la textura siempre es caldosa....Agregar los garbanzos y dejar que termine de cocinar pero no debe secar por completo. INGREDIENTS: 1/2 lb. pasta of your choice 1 T oil 1/4 red onion finely chopped 2-3 cloves minced garlic 1 pint cherry or grape tomatoes sliced 3/4 cup white wine or veggie broth 1 T dried basil 3/4 tsp kosher salt 1/2 tsp pepper 1/2 medium bunch kale removed from stem and chopped in 1 inch pieces and gently massaged for a few seconds with touch of oil 1 cup marinated artichokes, drained 3 T capers (optional) Juice of 1/2 lemon Garnish: Red chili flakes (optional) DIRECTIONS: 1. Put pot of water on to boil for pasta. 2. Meanwhile, add oil to large pan over medium heat and once hot, add onion, stir frequently adding bit of water if pan is too dry along the way. 3. Cook 5 min, add garlic and tomatoes and cook another 3 min, careful not to burn garlic. 4. Add wine, basil, salt and pepper, stir, and raise heat if needed, to get bubbly. Then lower heat a bit to cook at a low simmer (just bubbly) for several min until liquid is reduced by half. 5. Add kale and artichokes, stir, put cover on pan, and cook another 1 min. Uncover and stir. Kale should be bright green and slightly. 6. Add sauce to cooked pasta and gently stir, adding capers and lemon juice. 7. Taste and add more salt/pepper if desired. 8. Serve and top with optional red chili flakes for some spicy heat! 🍅🌿🍃

Get the recipe: Recipe: 4 russet potatoes 1 tbsp coconut oil 2 cloves garlic , finely chopped 4 cups (250g) cremini mushrooms pinch salt 1 tbsp almond butter 1 tbsp balsamic vinaigrette 1 tbsp lemon juice 4 cups baby spinach (approx. 2 handfuls) . . 1. Preheat oven to 425F/215C. Poke holes around each potato using a fork (this will help the heat to escape while baking). Wrap each in tin foil and bake in the oven for 40-50, or until you can easily poke through the cooked potatoes with a toothpick. 2. In a skillet add coconut oil, garlic, sliced mushrooms and pinch salt. Cook on medium heat for 5-10 minutes. 3. Whisk together almond butter, balsamic and lemon juice and pour over mushrooms. Continue cooking until mushrooms are browned and ready to eat, then toss in baby spinach and cook until wilted (2-3 minutes). Slice open baked potatoes and fill with mushroom and spinach medley. Optional to drizzle with vegan gravy. .

The batter should be on the thicker side.⠀ Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Simple Lentil Bolognese 🍝 This recipe is perfect for this period as it is not only easy to make, but is also affordable and nutritious too! 👌🏼 If you want to give it a go then I’ve popped the recipe below! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✨FULL RECIPE✨[Serves: 2] 250g spaghetti (I used a pack of @SanRemoPasta Spaghetti Pulse Pasta that I dug up from my pantry. LOVE it because it’s super nutritious, 1 serve has 26.8g of protein!!) 1 tbsp olive oil 1 yellow onion, diced 2 garlic cloves, minced 1 large carrot, finely diced or grated 1 can lentils, drained & rinsed 1 jar (500g) your favourite pasta sauce 1 can (400g) diced tomatoes 1/2 cup water 1/2 tsp dried basil 1/4 tsp dried rosemary 1/4 tsp dried oregano 1/2 tsp red pepper flakes (optional) Salt & pepper, to taste Vegan parmesan, to serve Fresh basil, to serve ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Bring a pot of water to the boil. Add a generous pinch of salt and cook your pasta according to packet instructions. Drain and set aside. 2. In a pan heat the oil over medium heat. Add in the onion, garlic and carrot and fry for 5 minutes until softened. 3. Add in the lentils, pasta sauce and diced tomatoes. Pour the water into the can and jar to wash out any remaining bits and pour it into the pan. Stir through. 4. Add in the basil, rosemary, oregano, red pepper flakes (if using) and season with salt and pepper to taste. 5. Reduce the heat to low and simmer for 20-25 minutes until sauce has thickened. Taste and season if required. 6. When ready to serve, mix half of the sauce with the pasta, then top with the remaining sauce on top. Pre heat your oven at 200C with your oven dish inside⠀⠀ 2. To a pestle and mortar add the fresh thyme (pull the leaves away from the stalks) crushed garlic clove, 3 tbsp olive oil, pinch of salt and pepper and mix⠀⠀ 3. Slice downwards on the potatoes, I use chopsticks or wooden spoons laid down this helps create and even depth and stops you slicing all the way through the potato⠀⠀ 4. Place the potatoes in the oven dish, then evenly spread the thyme oil over, making sure it gets deep inside the potatoes. Season with a pinch of salt and pepper and place in the oven for 45 minutes at 200C⠀⠀ 5. Baked potato recipe 💥 These oven baked potatoes with mustard sauce are crispy on the outside - and perfectly fluffy and tender on the inside. All you need is some potatoes, olive oil, sea salt, pepper and toppings. . By @micadeli_ . Recipe: Ingredients 3 x medium Baked Potatoes 100g. Zucchini 100g. Mushrooms 100g. Cheese (I used Vegan Cheese) 3 tablespoon of Plant Butter Salt and pepper Sauce: Honey and mustard sauce Instructions: 1. Turn on the oven at 200C (390F) hot air. 2. Cut the potatoes in half pieces and make a cut in the center of the half potatoes. Drizzle with olive oil, salt and pepper. Place on a baking tray and bake the oven in 45 minutes. 3. Wash the zucchini and prepare them shredded. Wash and chop the mushrooms in small slices. 4. Take out the potatoes from the oven. Distribute the butter on top of all potatoes, add the zucchini on top along with mushrooms and cheese. Drizzle with salt and pepper. Put the tray back in the oven ad bake for 10 more minutes or until it gets a golden and crispy color. 5. Serve the baked potatoes directly from the oven. Add a good, warm honey and mustard sauce on top - or choose a favorite sauce/dressing yourself.

This is my delicious vegan lentil and quinoa chilli. I was inspired to make some chilli after I saw the lovely chilli that @twospoons.ca shared a few days ago. I really enjoyed shooting this shot because I don’t really experiment much with flat lays and top down shots so it flexed the creativity muscles a little bit more. Now is the perfect time to experiment and learn something new.

Easy Dairy-free/Sugar-free) Creamy Tomato Soup from scratch! 🍅 INSTRUCTIONS: - Rinse your tomatoes and decide if you want to roast them in the oven, or peel them and simmer in a pot. - If roasting, preheat oven to 400, chop tomatoes and place on a baking sheet lined with parchment paper or tin foil to prevent messy cleanup. - Toss with a small amount of olive oil and seasonings (salt, pepper, garlic, basil, oregano, etc.) - Roast for about 20 mins, or until the tomatoes start to char slightly. - Once done, transfer to a large pot on your stovetop and simmer for several minutes with a big splash of veggie broth. - Next, transfer your tomatoes into a blender, or use a hand blender in the pot. Blend until super smooth. - Transfer back into stovetop pot and continue to simmer. - Add coconut milk (or heavy cream) to taste. I also mixed in some cashew cream. - Add fresh basil and additional seasonings to your liking and you’re done!
