How does your meal prep look like? Mine consists on fresh home made granola, a bunch of hummus, baked sweet potatoes and veggies, a quinoa batch and teriyaki tofu or tempeh. But my absolutely favourite part of meal prep is baking granola! There are so many combo options and one of my top picks is this Pumpkin Pie Granola! So yum for any breakfast bowl or snack attack ⚡️✌🏻⠀ Pumpkin Pie Granola:⠀ 1 cup Buckwheat ⠀⠀ 1/2 Oats⠀⠀ 4 Tbsp maple syrup⠀⠀ 1/2 cup pumpkin purée ⠀⠀ 2 tsp pumpkin spice ⠀⠀ 1/3 cup pumpkin seeds⠀⠀ 1 cup coconut flakes⠀⠀ 2 tbsp coconut oil, melted⠀⠀ 1/3 cup pecans⠀⠀ 1/2 tsp salt⠀⠀ * Preheat oven to 325oF/160oC. Line 1 or 2 baking sheets with baking paper.Add all ingredients to a bowland combine with a spatula.Spread a thin layer of the mix to the baking sheet and gently press down with a spatula. Bake for 28 minutes mixing half way or until slightly golden.⠀⠀ Remove from heat and let it cool down for 10 minutes. RECIPE by @bosh.tv 1 tbsp olive oil 1 chopped white onion 60g tomato purée 1 tsp chilli flakes 1 tsp ground cardamom 1 tsp smoked paprika powder 1 tsp black pepper 3 chopped medium carrots 1 liter vegetable stock 160g red lentils 2 g cornflour dissolved in 1 tsp water 1 tsp salt lime juice from 1 lime 1 tsp sumac 140g fresh kale In a pan, add olive oils and onion, sauté until soft. Add tomato purée, chilli flakes, cardamom, smoked paprika powder and black pepper and combine. Add carrots and combine. Then add the vegetable stock and bring to a boil. Add the lentils. Add the cornflour, stir and let simmer for 30 minutes. Add salt, lime juice and sumac and stir before adding in the kale. Cook until soft and serve in a bowl topped with more chilli flakes. Spaghetti with Homemade Sauce - Spaghetti is a staple in our house. Easy, tasty meal made in 30 minutes between client calls. ⏰My biggest tip for making a quick meal is to rely on as few ingredients as possible and focus more on things that cook quick. 👏🏽 If you can help yourself by chopping a few veggies in advance or buying things that are pre-chopped you’ll also save a ton of time. I cooked some lentils, added some left over crushed tomatoes, a spoonful of tahini, spoonful of white balsamic vinegar and thyme to flavor and so yummy. For the veggies, I sautéed with garlic, thyme and salt to keep the flavors similar. 👌🏽Think I might make this again for lunch. . Thyme Infused Balsamic Lentils 1/2 cup dry lentils (I used black lentils) 2 cups water 1/3 cup crushed tomatoes 1 tbsp tahini 2 tbsp white balsamic vinegar 1/2 tsp garlic powder 1/2 tsp thyme Salt to taste . Add lentils and water to a pan and bring up to a boil. Reduce lentils to a simmer and allow to cook for about 15 minutes or until a majority of the water cooks off. Add tomatoes, thyme, garlic and 1 tbsp balsamic to the lentils and stir together. Allow to cook until fragrant, about 2-3 minutes. Add in tahini and extra tbsp of balsamic. Stir to combine and cook for about 5 minutes on low and remove from heat once thickened. Serve and enjoy. 🤤 Paired with pink rice from @lotusfoods.

🌿 Pasta with a creamy mushroom & zucchini tomato sauce 📷 by @beferox 🚨🚨Recipe: Serves 4⠀ (Enough for 500g pasta)⠀ ⠀ Ingredients:⠀ •Olive oil⠀ •1 red onion⠀ •4 cloves of garlic⠀ •1/2 zucchini⠀ •2 carrots, peeled⠀ •250g mushrooms⠀ •2 tomatoes⠀ •2 tbsp. vegan butter / margarine⠀ •1 tbsp. dried basil⠀ •1 tbsp. dried oregano⠀ •salt and pepper⠀ •500ml sieved tomatoes⠀ •2 tbsp. tomato paste⠀ •3/4 cup plant based milk⠀ •1/2 tbsp. flour⠀ ⠀ Directions:⠀ •Add all the veggies (onion, garlic, zucchini, musshrooms, carrots and tomatoes) separately in a food processor to chop them finely⠀ •Heat olive oil in a sauce pan (enough to cover the bottom of the pan) over medium heat⠀ •Add onion and garlic cloves and cook them for about 1-2 minutes or until the onion becomes transclucent⠀ •Add zucchini and carrots and cook for 2 minutes⠀ •Then add the mushrooms and cook them for another 2 minutes before adding tomatoes, tomato paste, dried basil, dried oregano, some salt and pepper, vegan butter and sieved tomatoes⠀ •Stir well, reduce heat to low, cover sauce pan with a lid and cook for about 20 minutes⠀ •Stir sauce regularly⠀ •Whisk together plant based milk and flour and add the mixture to the sauce⠀ •cook for another minute⠀ •Add some more salt and pepper if necessary and serve with pasta⠀ ⠀ Share With A Friend Who Would Love This!⠀ ⠀ .⠀ Via @vegan_veganfood⠀ .⠀ 🥑🍅 FREE 7-day vegan meal plan containing amazing recipes similar to this one. Bowl full of delicious tofu and veggies! Get the recipe: . Press 1-14oz pack extra-firm tofu between kitchen towels to remove excess liquid. Cut into about 1-1/2 inch cubes. Bake at 400F until golden and slightly crispy, about 15 minutes. Cut bite-size florets from 1 head broccoli and steam lightly until just tender Mix sauce: whisk 3 tbsp low-sodium tamari/soy sauce, 3 tbsp hot sauce, 3 tbsp vegan Worcestershire sauce, 2 tbsp toasted sesame oil (or to taste). Sauté 2 tbsp minced ginger, 4 minced garlic cloves and 2 sliced red chili peppers (optional) in sesame (or neutral) oil about 30 seconds until fragrant. Add lightly steamed broccoli florets and cook a couple more minutes, adding more broth or oil as needed. Add baked tofu and mix. Stir in sauce while continuing to heat until sauce is warmed through. 🥥 VEGAN @starbucksuk OPTIONS 🥥 Today we popped into Starbucks while I had new tyres fitted and I had my usual soya latte, my favourite chocolate and raspberry loaf and I wanted something savoury but I don't like their current wrap or salad [etc] options so I tried the vegan chocolate and coconut overnight oats for the first time and I didn't expect it to be as tasty as it was!! It was a little sickly to have alongside a chocolate cake [duh] but it was v yum, I really liked the berry compote or whatever it was on top to stir in. Will definitely get again 😋

Have you seen or tried Taiyaki pastry before? They are Japanese fish shaped waffle, commonly found as street/snack food. What is your favorite soup? . . . ⏹⏹⏹ INGREDIENTS ⏹⏹⏹ . 1 package meatless beef tips 2 chayotes 4 russet potatoes 16 oz green beans 1 onion, chopped 1 large tomato, chopped 1 head cabbage cut into wedges, cut away core 12 baby carrots cut 1 fresh jalapeño 3 ears corn, husked and cut in thirds 6 sprigs fresh cilantro 2 sprigs fresh mint 2 tbs extra virgin olive oil 4 beefless bullion 1 tsp black pepper 1 tsp cumin 1 tsp cayenne pepper 🔥 8 cups . Top off with: Limes, cut into wedges Radishes sliced Jalapeño sliced Corn or flour tortillas . ⏹⏹⏹ METHOD ⏹⏹⏹ . 1️⃣With medium heat, add oil to Dutch oven pot 2️⃣Add meatless beef tips, and sauté 3 minutes. 3️⃣Add onions to pot and sauté another 3-5min 4️⃣Remove and set aside meatless beef tips. You will add them at end, since they will get soggy 5️⃣Add bouillon, water, and corn, and stir with onions, let simmer 2-4min 6️⃣Remove corn and place with meatless beef tips. 7️⃣Add all remaining veggies and spices 8. Reduce heat to low, simmer with lid for 10-15 minutes, or until veggies are tender . ⏹⏹⏹ SERVING ⏹⏹⏹ . Add liquid from pot to bottom of bowl, add veggies, and corn w/meatless beef tips . 🟠Vegan Roasted Tomato Soup . . . 🔸🔸🔸INGREDIENTS🔸🔸🔸 . 15 Roma Tomatoes 1 Yellow Onion 2 Whole red bell pepper 4 Cloves Garlic 13.5 Oz Coconut Cream 1 Tbs Dried Basil 1 Tbs Dried Parsley 1 Tbs Dried Oregano 1 Tbs Salt 1 Tbsp Pepper 2 Tbsp Extra Virgin Olive Oil . . . . . 🔸🔸🔸METHOD 🔸🔸🔸 1️⃣Preheat oven to 400 degrees. Line baking sheet with aluminum foil 2️⃣Cut tomatoes in half, slice onions, and keep red bell pepper whole. Toss in olive oil 3️⃣Spread as 1 layer onto baking sheet 4️⃣Roast for 30 - 40 minutes; add garlic towards the last 5 minutes of cooking time 5️⃣Pour coconut cream in blender, along with roasted tomatoes, garlic, onions, bell peppers, and spices. Vegan Potatoe Leek Soup . . . . . . . ••••••Ingredients * 3 large leeks, chopped * 8-10 small russet potatoes, diced * 2 small onions, diced * 3 or 4 cloves of garlic, minced * salt and pepper salt to taste * 1 bay leave * 1-2 sprigs fresh thyme * 1-2 sprigs fresh rosemary * 1 tsp ground coriander * 6 c vegetable broth * 2tbs olive oil * 2 tbs fresh lemon juice * 1 c coconut milk . ••••••Instructions: * Wash leeks well, chop * Heat oil in a large pot, (#gothamsteel my fav @gotham_steel ) over low heat * Add leeks, onions, sauté 4-7 minutes * Add potatoes, sauté for 4-6 minutes * Add garlic, thyme, rosemary, and coriander. Sauté 1-2minutes * Add vegetable broth, bay leaf, salt, pepper * Cook for about 15-20 minutes, or until the potatoes are fork tender. * Turn heat off from heat, remove bay leaves *Stir in the coconut milk & lemon juice * Use immersion blender, blend until smooth. . . . .

Garlic Cauliflower Mashed . . . . INGREDIENTS: 2-3 heads cauliflower 4-6 tbs vegan butter Pinch of salt to taste Pinch of black pepper to taste 1 c plant based milk 4-6 cloves garlic . . . INSTRUCTIONS: 1) Cut cauliflower in pieces, and place in a steamer over a large pot of boiling water. 2) Steam for 10/15 minutes until tender. 3) Remove cauliflower & drain 4) In small pan, sauté garlic in vegan butter over low heat for 2-3 minutes. 4) Place cauliflower to a food processor or immersion blender. 5) Add non-dairy milk, salt, pepper and garlic t o blender. 6) Blend until puréed. 7) Garnish with fresh parsley (and more butter if you like) Enjoy! . . . .

It’s a gloomy rainy day in not so sunny Phoenix, AZ. Thought i would throw some left over veggies from the fridge, and also to start to empty it to make room for Vegan Thanksgiving. . . . . I was in the mood for a hot dish so I put together this yummy spicy hot coconut curry soup. . Simple fast recipe below . . . Ingredients: 24 oz coconut milk 4 red potatoes diced 2 tbsp Thai red curry paste 1 tbsp fresh gingerroot 2 c vegetable broth 3 stalks bok choy chopped 1 onion diced 1 cup green peas 2 cups shiitake mushrooms Top off with Red pepper flakes . . Method: 1. In large pot, add coconut milk, vegetable broth, Thai red curry paste and ginger-root 2. Heat to medium heat. 3. Stir in veggies. 4. Lastly, cook over medium heat 10 minutes or until potatoes are tender. Serve with lime wedges 😊
