VEGAN CHRISTMAS by @n.vegan.h Try making this simple seven ingredient peppermint bark recipe this holiday season. Smooth dark chocolate, a peppermint coconut butter layer, and crushed candy canes is the perfect combination for a healthy Christmas candy. ✅Ingredients - 1 cup dark chocolate chips - 1/2 cup coconut oil softened - 1/2 cup coconut butter softened - 1 Tablespoon pure maple syrup - 1/2 teaspoon peppermint extract - 1 teaspoon vanilla extract - 2-3 candy canes or crushed peppermint candies ✅Instructions By: @n.vegan.h 1- Place chocolate chips in a double boiler or a glass bowl over a boiling pot of water and melt until the chocolate is a smooth consistency. 2- Pour melted chocolate into an 8x8 inch pan lined with parchment paper. 3- Place pan in the freezer for 10 minutes to let chocolate solidify. 4- Slightly melt the coconut oil and coconut butter until it's a thick icing consistency. Add remaining ingredients and whisk together. 5- Take pan out of the freezer and spread coconut mixture over the chocolate using a rubber spatula. 6- Top with crushed candy canes or peppermint candies. Place in the freezer to set completely (about 1-2 hours) 7- Once set, remove from the freezer and break into pieces. 8- Store in freezer. Enjoy!!! . 👉Notes - If you do not have a double boiler, you can create one by placing a small pot into a slightly larger pot that is filled with a small amount of water. - Use refined coconut oil if you don't want a strong coconut flavor. - If you are concerned about artificial colors and flavors in candy canes, I suggest buying a brand that fits those needs! White bean soup 🍲 ⠀ INGREDIENTS: •2 tbsp olive oil •1 onion •2 garlic cloves •1 tsp thyme •1 tsp rosemary •1 potato •1 carrot •3 cups of broth •Salt & pepper to taste •1 can of cooked beans •1 cup of kale leaves •1 tsp white pepper •1 tsp garlic powder ⠀ 1. Lentilles du Puy, the French green lentils from the Auvergne, are ‘the caviar of lentils.’ Is there really a difference between ordinary green French lentils and Lentilles du Puy???” The answer a resounding "YES." Lentils from Puy are delish and the most amazing lentils in the world; and I’m one of their biggest fans. They are actually a 'pulse.' They have an absolutely unique, nutty flavor which is attributed to the volcanic soil they’re grown in, which gives them their fine, mineral-rich taste. The climate in the Auvergne also contributes to their unique texture, which is characterized by the lack of humidity and abundant sunshine. As well as the environmental surroundings of mountains and volcanic deposits, which ensures that the lentils dry on the plant all by themselves. Consequently, lentilles du Puy have less starch (excellent staple for loCarb) than other green lentils, so they do not get mushy and muddy when cooked. Look for the AOC seal of approval, which will say du Puy as well- DO not be tempted to buy the less-expensive, ordinary French green lentils which cost about a third of the price. Because, believe you me there’s no comparison. They make a great accompaniment to everything, alongside baked butternut squash or pile of caramelized roasted root vegetables like parsnips, celery root, and carrots. Its usage, very versatile and it stand on it's own. I prepared this lentil salad as a meal in itself by mixing in chunks of fresh raw vegetables which adds more depths of flavors, texture and inviting aromas along with a handful of Love then finished it with a fragrant drizzle of unrefined organic Avocado oil. Ps. The only thing missing here was my beautiful Fennel, but alas here it is. These Chipotle Potato Balls filled with #vegan cheese 🧀 are everything I ever want! 🧡 Recipe ⬇️⬇️⬇️ Checkout @thetastyk for more lovely recipes 🌱❤️ Melted cheesy goodness covered in soft potato dough and a crispy outside - does it get any better? —•—Ingredients—•— 7 medium Yukon potatoes, peeled and diced 1 Tbsp vegan butter (or olive oil) 3 Tbsp vegan chipotle sauce 1/4 cup whole wheat flour 1 Tbsp parsley 1/2 tsp paprika powder salt & pepper, to taste 1/2 cup vegan shredded cheese 1/2 cup breadcrumbs —•—Method—•— 1. Bring a pot of water to a boil. Add in the potatoes and cook them until soft. Then drain the water, place them into a large bowl and mash together until smooth. 2. Add in the butter, chipotle sauce, parsley, paprika powder and salt and pepper, and combine everything with a spatula. Add in the flour and mix again. 3. Take a Tbsp of potato dough at a time, roll into a ball with your hands and form a small whole in the middle. Fill in vegan cheese, bring up the sides and shape into a ball again. Repeat until the dough is gone. 4. Preheat the oven to 175°C/350°F and line a baking tray with parchment paper. 5. Roll each potato ball in breadcrumbs until covered, then place them onto the baking tray (at this point you can spray them with oil to make them extra crispy) 6. Place in the oven and bake for 20-30 minutes, until crispy. Alternatively you can pan-fry them. 7. Let cool down a little and enjoy!

Stir cacao, coconut flour, baking soda, and salt together in a mug. Next add sweet potato, vanilla, maple syrup, and almond butter. Stir well. Next stir in chocolate chips. Microwave for 1-2 minutes depending on your microwave (mine took about 1:30). MUSHROOM AND LEEK RISOTTO🤤 Recipe inspired by @vegetarbloggen🌱 (makes 2 portions) 1 tbsp olive oil 2 Garlic cloves 1 Leek 200g Mushrooms Pepper (to taste) 600ml Plant milk 1 Cube vegetable stock 100g Brown rice 100g Green peas 2 tbsp Fresh Parsley 30g Chopped almonds 1. Heat the oil in a pan, add the garlic and leeks and sauté for 5 minutes until the leeks start to wilt down. 2. Add the mushrooms, salt and pepper, stir well then pour over the stock and add in the buckwheat. Cook for 15 minutes with the lid on. 3. Then add the green peas and cook until most of the liquid has gone. 4. We got a minuscule amount of snow in Portland last night so this Crockpot Vegan Chili is in order! It's a different take on an old recipe of mine and the magic of the slow cooker makes this SO EASY. Vegan Berry Cheesecake that is both nut + refined sugar-free! 🍰 ⇣ —•—Ingredients—•— Crust: 200g vegan cookies ¼ cup coconut oil, melted 
Blueberry Layer: 300g silken tofu ¼ cup maple syrup 200g blueberries 1 15oz (400ml) can full fat coconut milk 1 tsp agar agar 
Blackberry Jam Layer: 200g blackberries 1 tsp cornstarch (dissolved in 2 Tbsp water) 1 tsp lime/lemon juice 1 Tbsp maple syrup (optional) 
Toppings: berries lime slices + zest —•—Method—•— 1. Line your cake pan with parchment paper and grease the sides. 2. Place the cookies in a food processor and pulse a few times until crumbly. Transfer to a bowl and add in the coconut oil. Combine with a spoon until all crumbles are moist, then transfer to the cake pan. Use your fingers and the backside of a cup to press down evenly, then place in the freezer for 10 minutes. 3. Pour the coconut milk into a pot and place over medium heat until melted. Add in the agar agar and whisk together. Reduce to low heat and let simmer for 30-60 seconds, then take off the heat. 4. Immediately place your tofu, maple syrup, and blueberries in the blender and add the coconut mixture. You have to work quick or else it will set. Blend everything together for 30-60 seconds, then pour over the cake crust. If it already set a bit and you have some lumpy parts, use a whisk to dissolve, then place into the fridge. 5. Place your blackberries in the blender, together with lime/lemon juice and maple syrup and blend a few seconds until smooth. Place a strainer over a pot and mash the blackberry mixture through the strainer to remove the seeds. Turn up the heat to medium and add in the corn starch. Whisk together and let simmer for 10-20 seconds, then immediately pour over the cake and even out with a spatula. Place back into the fridge for minimum 4-6 hours or overnight. 6. Decorate with more berries, lime slices, zest and whatever you feel like.

🐳 Vegan Cheesecake Brownies! 🍫🍰😏 No further description needed. 😳 Full 📸recipe on @thetastyk blog (link in bio) —•—Ingredients—•— Brownies layer: 💐1 cup (125g) all purpose flour 🌸⅓ cup (28g) cacao powder 💮⅓ cup (65g) coconut sugar 🏵½ tsp baking powder 🌹pinch of salt 🌺4oz (120g) dark vegan chocolate, melted 🌻⅓ cup (60ml) vegan butter/coconut oil, melted 🌼½ tsp vanilla extract 🌷⅓ cup almond butter ⚘½ cup (80ml) soy/almond milk Cheesecake layer: 🌱1 cup (240ml) vegan yogurt 🌲½ cup cashews, soaked 🌳1 Tbsp cornstarch Toppings: 🌾½ cup (85g) vegan chocolate chips —•—Method—•— 1. Place the flour, cacao powder, coconut sugar, baking powder and salt in a medium size bowl and whisk together. 2. Melt the chocolate and add the butter, vanilla extract, almond butter and milk to it. Whisk together until you have a smooth mixture, then add to the dry ingredients. Combine with a spatula and set aside. 3. Place the cashews, vegan yogurt and cornstarch into a high-speed blender and blend for 30 seconds until smooth. 4. Line a 8" (20cm) brownie tin with parchment paper, grease the sides preheat the oven to 175°C/350°F. 5. Scoop ½ of the brownie batter into the tin and spread evenly. Add the cheesecake mixture on top and even out carefully. Add the remaining ½ of the batter on top and use a toothpick or fork to create swirls. 6. Sprinkle chocolate chips on top and place in the oven for 35-40 minutes (depending on how gooey you want them). Let cool down for 5-10 minutes before cutting and serving.

ONE-POT PASTA ALLA NORMA 🍝. There are probably a lot of words we can use to describe this simple bowl of pasta. It’s comforting...it’s satisfying...it’s flavoursome...seriously, we could go on. INGREDIENTS -3 pounds ripe plum tomatoes, cut in half lengthwise -1/4 cup extra virgin olive oil + 2 tbsp -2 tsp salt -1 teaspoon black pepper -1 large onion, chopped -6 garlic cloves, minced -1/4 teaspoon crushed red pepper flakes -1 (28-ounce) canned plum tomatoes, with their juice -1 ½ cups fresh basil leaves, packed -1 sprig rosemary -1 quart vegetable broth . INSTRUCTIONS 1. Preheat the oven to 425°F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 35-40 minutes. . 2. Heat 2 tablespoons of olive oil in a large stockpot over medium heat. Add onions and red pepper flakes, and cook, stirring occasionally until the onions are translucent, about 10 minutes. Add the garlic and saute for 1 more minute. Add the canned tomatoes, basil, rosemary and vegetable broth. . 3. Transfer the oven-roasted tomatoes (and their liquid) into the stockpot. Bring the mixture to a boil and simmer uncovered for 40 minutes. TOFU KATSU CURRY😍👇🏽RECIPE BELOW👇🏽⠀ ⠀ RECIPE by @sovegan⠀ For the Tofu:⠀ 300g extra firm tofu⠀ Flour mix⠀ 1/4 cup plant-based milk ⠀ 80g vegan cornflakes⠀ ⠀ Method:⠀ Cut the tofu and dip them in the flour mix, plant-based milk and the vegan cornflakes. Fry each side for 2-3 minutes. ⠀ Bake them at 180°C for 15 minutes (fan).⠀ .⠀ For the sauce: ⠀ 1/2 onion⠀ 2 medium carrots ⠀ 2 cloves garlic ⠀ 1/2 tbsp curry powder ⠀ 1/2 tsp garam masala⠀ 1 tbsp plain flour ⠀ 300ml vegetable stock ⠀ 2 tbsp coconut cream ⠀ Salt and pepper season to taste⠀ .⠀ Method:⠀ Add the onion and carrots in a pan and fry for 7 minutes. Add the garlic and fry for 2 minutes. Add the curry powder, garam masala and plain flower and fry for 1 minute. Add the vegetable stock and let it simmer for 10-15 minutes. Creamy stuffed baked potatoes! 🥔 🍅🌽🌶 Vegan recipe by @netocraves He always does such a great job Ingredients: Russet potatoes . Cashew Sauce: Cashews (soak them in water for a few minutes) Juice of 1 lime 1 tbsp Nutritional yeast Water (~1/4 cup) Spices: salt, pepper, oregano, garlic powder . Mixed veggies: Mashed potatoes from the filling Roasted Corn Carrots (raw) Red Bell Pepper (raw) Cilantro Jalapeno Tomatoes (raw) Topping: avocado / guacamole and green onions . Directions: Cook the potato for ~1 hour at 450F. Cut out a rectangular top and open it up by scooping out the inside so it becomes “boat” shaped. . Prepare the sauce by mixing all the ingredients listed above in a blender. . Sage butternut squash pasta 🌱 Ingredients: 1 (2 pound) butternut squash (a little more than 3 cups once diced) 2 garlic cloves, minced 1 bundle of fresh sage (+ additional leaves for garnish) 1 small yellow onion, chopped 1/2 tbsp dried rosemary 1/4 tsp salt 2 cups vegetable broth 1 tbsp nooch Pepper to taste 2 cups rigatoni (or other pasta) Steps: Peel and deseed the butternut squash, then chop into cubes. In a medium pot over medium heat, add the oil, sage bundle, and garlic. Cook for 30 seconds, then add the onion, salt and rosemary. Cook while stirring until translucent. Add the squash and vegetable broth. Make sure all squash pieces are submerged. Bring to a boil and then immediately reduce to a strong simmer. Cook 15 min until the squash is soft. Remove the bundle of sage. Purée with an immersion blender or transfer to a blender to blend. Add pepper to taste and the nutritional yeast. Add the cooked rigatoni and mix together. In a pan, fry fresh sage leaves in oil for 15 seconds. Use as a garnish when serving the pasta. Do you like tomato soup? . . . #Repost @plantbased.recipes • • • • • • Easy Roasted Tomato & Bell Pepper Soup by @mimlanie 🥣 Recipe: 5 roma tomatoes 1 orange bell pepper 1/2 cup fresh basil 2-3 garlic cloves 1 tbsp avocado oil 1/2 tsp salt 1/4 tsp oregano (optional) Steps: 1. Mix the tomatoes, bell pepper and garlic with oil and salt so that they are coated. 2. Roast on a baking sheet for 18 minutes at 400 F. 3. Remove the skins of the tomatoes and bell pepper. (This creates a creamier texture and removes the bitterness of the skins. If you want to leave the skins on, that’s fine but the flavor will be slightly more bitter and the texture less smooth.) 4. Add the tomatoes, bell pepper and garlic to a blender with the basil and oregano. Blend until creamy and serve! If there are bubbles, just gently mix the soup with a spoon to blend them out. 🥣 Serving: Makes 16 oz. You can easily double up the recipe if you’d like 4 servings instead. So here’s how I piped a Cotton flower and a little star ⭐️ flower with my Cashewbuttercream ✨...they are both super easy and not as spectacular as peonies for example but a flower bouquet is always a combination of a few glamorous flowers and some more simpler and less spectacular ones 😊✨... I used a round tip 12 for the white fluffy Cotton leaves and a leaf tip 352 plus a round tip 0 for the brown part. We got a minuscule amount of snow in Portland last night so this Crockpot Vegan Chili is in order! It's a different take on an old recipe of mine and the magic of the slow cooker makes this SO EASY. I'm in love. Plantbased meal prep! Tempeh with pineapple salsa 🍍 Ingredients: For the tempeh - 1 (8 oz) tempeh package, sliced 1/4 cup coconut aminos 1 tbsp rice vinegar 1/2 tsp chili garlic sauce For the pineapple salsa (makes 16 oz) - 4 cups fresh pineapple 1/2 red bell pepper 1/2 jalapeño, deseeded Handful cilantro Zest and juice from 1 lime For the meal prep - Cooked forbidden rice Cooked or canned chickpeas Avocado Broccoli sprouts Spinach Cherry tomatoes Steps: 1) Mix the coconut aminos, rice vinegar and chili garlic together. Let the tempeh marinate. (You can also marinate the tempeh in just coconut aminos). 2) Place all salsa ingredients in a food processor and process for 10 seconds or until desired consistency. Place in food prep containers. 3) In a nonstick pan over medium heat, cook the tempeh on both sides for 4-5 minutes or until crispy. 4) Place the forbidden rice and tempeh in two food storage containers. Add the rest of the meal prep ingredients. Recipe: 1 piece ginger (about the size of your finger), plus more if desired 500 ml filtered water 1 stick cinnamon 1 tbsp apple cider vinegar pinch cayenne, to taste . . Directions: 1. Slice your ginger into thin slices and add to water jug. Pour in filtered water and add cinnamon stick. Place in fridge to steep overnight. 2. In the morning, juice 1/2 lemon and pour into a cup. Easy steamed dumplings 🥟 ⠀ INGREDIENTS: ⠀ Dough: 1 1/2 cup of flour 1 tsp of salt 2 tsp of baking powder 1/2 cup of water Filling number 1: 1 tbsp of olive oil 2 cloves of garlic 100g of tofu 1 tsp salt, 1 tsp pepper 1 tsp turmeric 2 cups of spinach Filing number 2: 1 tbsp olive oil 1/2 of onion 1 cup of mushrooms 1 tsp salt, 1 tsp pepper 1 tsp garlic powder More: 1/2 cup of water for cooking Black sesame, green onion for decoration Soy sauce for serving METHOD: Filling number 1: 1. Let garlic release aroma on olive oil, add tofu, mash it and season it. 2. Add spinach, cover and cook for 5-7 mins (until spinach is done) 3. Let it cool Filling number 2: 1. Chop the onion and mushrooms in a food processor or by yourself 2. Stir fry it on olive oil (season it too) for minutes and let it cool Dough: 1. Mix all the ingredients and kneed it smoothly. 2. Cut in 8 pieces, form balls and then roll it to about 1cm thick Filling and cooking: 1. Place the dough between the index finger and thumb, fill with 1 tsp of filling. 2. Pinch close and then twist for a few times. 3. Place the dumplings on parchment paper in a pan. Pour 1/2 cup of water under the paper. Vegan taco lasagna 🌯🌮 Anyone? With a cheesy sauce based on cashews. The cheese sauce is perfect to have with pasta too, or how about topping a taco salad bowl, or nacho plate? So make sure to save the recipe 😉 For this recipe I used bean lasagna plates but that’s optional! . For the taco black bean filling🌮 230g black beans (already cooked) 1 tbsp tomato paste 120g red bell pepper 390g crushed tomatoes 70g corn 70g red onion 50g kale 1 tbsp taco spice mix . For the cheese sauce🧀 170g cauliflower & carrots (cooked) 100g cashews 1.5 cup gluten-free oat milk 1/2 tsp onion powder 1 tbsp olive oil 1/2 tsp mustard 1 tsp applecider vinegar 3 tbsp nutritional yeast Salt & pepper to taste . For serving Guacamole Coconut yogurt . 1. Start with making the taco bean filling. Preheat the oven to 175 degrees Celsius. 2. Cut the onion, bell pepper and rinse the black beans. 3. Heat up the olive oil in a pan. Add the onion, bell pepper, black beans, corn, taco spice, salt and pepper. Cook until soft. 4. Add the crushed tomatoes and let it simmer for 5 minutes. Set to side while making the cheese sauce. 5. Start making the cheese sauce by cooking the cauliflower/carrot and cashews separately. Cook the cashews for 15 minutes on full heat and the cauliflower/carrots until soft. 6. Add all of the ingredients for the cheese sauce in a high speed blender and mix until smooth. 7. Now put together the lasagna and heat in the oven for 40 minutes (175 degrees Celsius) 8. Serve with guacamole and some coconut yogurt! 🌱vegan chorizo and eggs 🌱chorizo con huevo vegano Ingredients: Tofu, soy chorizo, turmeric powder, black salt, garlic powder onion powder, and vegetable oil 🔥 First heat up your vegetable oil because it has to start Cookin (: you can decide how much oil you’d like. Add tofu that’s been crushed into small pieces. Cook for a minute or two then add your seasonings. I used garlic and onion powder. Not to be confused with garlic & onion SALT. To salt my tofu I use black salt (actually looks pink) but has an egg taste/scent to it. Then add your soy chorizo and cook until the consistency you’d like. I like the soy chorizo to be a little crispy. Make this for one day when you want a plant-based breakfast option. It’s so comforting, delicious, and you’re having a meat free meal. Tempeh with pineapple salsa meal prep by @mimlanie🍍 Ingredients: For the tempeh - 1 (8 oz) tempeh package, sliced 1/4 cup coconut aminos 1 tbsp rice vinegar 1/2 tsp chili garlic sauce For the pineapple salsa (makes 16 oz) - 4 cups fresh pineapple 1/2 red bell pepper 1/2 jalapeño, deseeded Handful cilantro Zest and juice from 1 lime For the meal prep - Cooked forbidden rice Cooked or canned chickpeas Avocado Broccoli sprouts Spinach Cherry tomatoes Steps: 1) Mix the coconut aminos, rice vinegar and chili garlic together. Let the tempeh marinate. (You can also marinate the tempeh in just coconut aminos). 2) Place all salsa ingredients in a food processor and process for 10 seconds or until desired consistency. Place in food prep containers. 3) In a nonstick pan over medium heat, cook the tempeh on both sides for 4-5 minutes or until crispy. 4) Place the forbidden rice and tempeh in two food storage containers. Add the rest of the meal prep ingredients. You can add a squeeze of lemon juice to the avocado to prevent browning. 5) When ready to eat, add the salsa to the tempeh and enjoy!
