Roasted masala chickpeas with puff bread! These chickpeas took me 5 minutes to make! Flavoursome and kickass. Ingredients - 2 Can chickpeas 2tbsp pomegranate powder 2 tsp chili powder 1 tsp cumin seeds Half tsp Carom seeds (optional) 1 tbsp Chana masala ( if you don't have this use garam masala instead) Method - 1. Heat some oil and put in the cumin and carom seeds, followed by the pomogranate powder. 2. Saute it on low medium for a minute . It will turn blackish but don't worry, that's how it's supposed to be. 3. Add in the chili powder and Chana masala followed by the chickpeas. 4. Roast chickpeas on medium heat for 5-6 mins. 5. LINK IN BIO.⠀ ⠀ ⠀ INGREDIENTS:⠀ ½ cup cashews⠀ 1 medium carrot, sliced⠀ 3 tbsp nutritional yeast in Vegancuts Pantry Box⠀ 2 tbsp tapioca starch⠀ 1 tsp lemon juice⠀ 1 tsp salt⠀ ¼ tsp garlic powder⠀ ⅛ tsp turmeric⠀ vegan butter, to taste⠀ 8 slices of bread⠀ ⠀ INSTRUCTIONS:⠀ 1. In a medium pot, bring 4 cups of water to a boil. Add cashews and carrot and boil for 10 minutes.⠀ 2. Use a slotted spoon to transfer cashews and carrot to a high-speed blender. Save the cooking water.⠀ 3. Blend nutritional yeast, tapioca starch, lemon juice, salt, garlic powder, turmeric, and 1 cup plus 2 tablespoons of reserved cooking water. Blend for 2-3 minutes.⠀ 4. Pour the “cheese” sauce back into the pot and stir with a spatula over low heat for 2-4 minutes, or until the sauce is thickened and stretchy. Set aside.⠀ 5. Butter each slice of bread on 1 side. Add to a medium nonstick skillet, using a spatula to spread cheese sauce on top. When we can’t get out of the house, and I’m craving this smoothie, I like to make my own version. I make it using ✨ half sweet/half unsweet vanilla almond milk ✨ 2 dates ✨pinch of pink himalayan sea salt ✨cocao powder (about 2 tbsp, add more or less as you like) ✨Sometimes I add a little handful of spinach. Blend it up and enjoy.

Recipe - Ingredients - Half a cup oats, approx 1 cup milk, vegan butter or oil, cheese (optional) , Italian seasoning, chopped onion and garlic. Method - 1. Cook onions till translucent and add garlic. 2. Cook for a few seconds and add mushrooms with the seasoning and salt. 3. Cook till the water from the mushrooms evaporates. Keep two tablespoons of this.aside for presentation. 4. Add oats and mix. Cook for a minute. 5. Add milk and stir. Cook for 4-5 minutes on medium low heat. If it gets too thick, add a little bit of water. 6. Add cheese if you like. Check season and salt. By @thetastyk . . —•—Ingredients—•— Crust: 1 cup all purpose flour 1/8 cup coconut sugar 1 Tbsp baking powder 1/3 cup vegan butter, softened at room temperature 2 Tbsp plant milk Filling: 800g soy yogurt (skyr-style) 80g vanilla custard powder 1/3 cup sugar 1 tsp vanilla powder or vanilla sugar 3 tsp lemon juice 1 cup soft cherries, pitted —•—Method—•— 1. Place the flour, sugar, and baking powder in a mixing bowl and whisk together. Add in the softened butter and combine with a hand mixer (with dough kneads) until you have crumbles. Slowly add in the milk and keep beating until you have a sticky dough. 2. Line a 8” (20cm) cake tin with baking paper and grease the sides. Preheat your oven to 355°F (180°C). 3. Place the dough in the cake tin and use your fingers to press down evenly and up the sides (about 1”/3cm). Chill in the fridge while you prepare your filling. 4. Place all filling ingredients in a large mixing bowl and use a hand whisk to combine until all custard powder climbs have dissolved. 5. Pour the filling over the crust (at this point also add in your cherries) and even out the top. 6. Place in the oven for 45-50 minutes until a toothpick inserted comes out clean. (LINK BIO @thetastyk ) —•—Ingredients—•— Vanilla Sponge Cake: 1 cup all-purpose flour (or gf all-purpose flour) 1/4 cup almond flour 1/4 cup coconut sugar 1/2 tsp baking powder pinch of salt 1/2 cup non-dairy milk 3 Tbsp maple syrup 1 tsp vanilla extract 3 Tbsp oil (neutral tasting) 1 Tbsp apple cider vinegar Whipped Cream: 1 15oz can full fat coconut cream, chilled (the firm part only) 1 Tbsp maple syrup 1/2 tsp vanilla extract Strawberry Jelly: 500g strawberries, halved 300ml natural berry juice 1 Tbsp plant-based thickener (carrageenan or agar agar powder) —•—Method—•— 1. Combine the dry cake ingredients in a large bowl and the wet ingredients in another small bowl. Pour the wet into the dry ingredients and combine with a spatula. 2. Preheat the oven to 175°C (350°F) and line a square baking dish with parchment paper. Pour the batter into the baking dish and spread evenly. Place into the oven and bake for 18-20 minutes until a toothpick inserted comes out clean, then remove from the oven and let cool down. 3. Take your coconut cream out of the fridge and scoop the firm part into a medium-sized bowl. Add the maple syrup and vanilla extract and use a hand mixer to whisk everything together until fluffy, then place back into the fridge. 4. Once the cake has cooled down completely, spread the whipped cream in an even layer on top and place into the fridge. Wash, de-stem and halve your strawberries and arrange them on top of the cream, pressing down slightly. 5. Place all jelly ingredients into a small saucepan or pot and whisk together. Bring to a boil over high heat, then reduce the heat and let simmer for 1 minute, then take off the heat. Let the jelly mixture cool down a bit, whisking constantly so it doesn’t firm up. Aromatic linguine 🍝 ⠀ INGREDIENTS: 3 tbsp olive oil 2 cloves of garlic 2 tbsp dry tomatoes 1 tbsp rosemary 1 zucchini 1 tsp salt 1 tsp pepper 1 tsp garlic powder 1 tsp dry parsley 80g precooked peas 2 tbsp vegan bacon bits (I get it from iherb.com) Chili oil 150g linguine (1/2 cup of water from cooking pasta) ⠀ ⠀ METHOD: 1. Let garlic, tomatoes and rosemary release aroma on olive oil for 1 minute 2. Then add chopped zucchini and peas and stir fry them for 3-5minutes 3. Add bacon bits and seasonings and stir well 4. Add zucchini noodles and don’t cook them for longer than 2 minutes. Drizzle everything with a bit of chili oil 5. Add linguine with a bit of remaining water from cooking and stir well and serve ⠀ ⠀ ⠀

Heat the olive oil in a small skillet over medium-high heat. Add diced onion and garlic and sauté until golden and fragrant, 2-3 minutes.�⁣⁠ 2. While onions are sautéing, crumble the tofu in a small bowl with your fingers. Stir in the lemon juice and spices of your choice (pepper and nutritional yeast is recommended). Add tofu mixture to onions and cook for 2-3 more minutes, until tofu is heated all the way through. Taste and adjust seasonings.�⁣⁠ 3. Couscous vegetable soup 🍲 ⠀ Perfect to warm yourself up and eat healthy before all that holidays food🎄😉 ⠀ INGREDIENTS: •2 tbsp olive oil •1 onion •2 cloves of garlic •5-6 smaller mushrooms •3-4 fresh sage leaves (or 1 tsp dry) •1 tsp of thyme •1 liter of water •1 large carrot •1 medium potato •1-2 tsp salt •1 tsp black pepper •1/2 tsp white pepper •1 tsp garlic powder •1 cup of soy milk •1 medium broccoli bunch •1 cup of cooked peas •1/3 cup of couscous ⠀ METHOD: 1. Sauté onion, garlic and mushrooms (seasoned with thyme and sage) on olive oil for 5minutes 2. Add water, chopped carrot and potato. Season with salt and pepper and cook for 15minutes. 3. Take out 4-5 ladles of the soup, blend it and pour back into the pot 4. Add broccoli, season with white pepper and garlic powder. Add soy milk and cook for 5minutes. 5. Now add cooked peas, try the soup and add more seasoning if needed. 6. Turn the fire off, add cous cous, stir, cover and let sit for 10minutes before serving. 7. Optionally serve with croutons and some fresh parsley ⠀ ⠀ ⠀

A simple and convenient lunch today. A yummy Tempeh Ranchero squarito burrito by @engine2diet and a side salad with zero dressing, just 1/4 of an avocado squished around in there. Have you guys ever tried that? Avocado in place of dressing. It’s my favorite! Today I only used a small amount because I eat low fat and the burrito has some fat in it as well as the avo. ... So how about it, do you ever use avocado in place of salad dressing? ... If you haven’t tried the Engine 2 burritos, they are well worth it. I always grab these when I need convenient, healthy, low fat, plant based foods. Today was one of those days.

😍😍😍😍😍😍😍😍😍😍 Reposted from @thetastyk (@get_regrann) - I scream, you scream... 😱 for this #vegan Snickers Ice Cream Cake! 🥜🍯🍫 Are you drooling yet? —•—Ingredients—•— Base: 1 cup oat flour 1/3 cup peanut butter 2 Tbsp maple syrup Cream filling: 1 cup raw cashews, soaked for 4-6 hours 1/2 cup full-fat coconut milk (canned) 4 Tbsp coconut butter/oil, melted 3 Tbsp maple syrup 1/2 tsp vanilla extract Salted caramel: 3/4 cup full fat coconut milk 1/2 cup peanut butter 5 Tbsp coconut sugar pinch of salt 3/4 cup peanut halves (unsalted) Chocolate ganache: 7oz (200g) 70% cacao vegan dark chocolate 1/2 cup coconut milk —•—Method—•— 1. Line a 8” (20cm) round cake tin with parchment paper on the bottom and sides. 2. For the base, place the oats into a food processor/blender and pulse until floury. Add in the peanut butter and maple syrup and blend until you have a crumbly-sticky dough. Place the dough into the cake tin and press down evenly, then place in the freezer. 3. Place all cream filling ingredients into a high-speed blender and blend until smooth. Pour the mixture over the base and even out, then immediately place back into the freezer for 30 minutes. 4. For the caramel, place the coconut milk in a small pot over medium heat. Add in the peanut butter, coconut sugar and salt and stir together. Bring to a boil, let simmer for 30 seconds, stirring continuously, then take off the heat. 5. Sprinkle half of the peanut halves over the cream layer, then pour the caramel on top and sprinkle the remaining peanuts on top. Even out the layer and place back into the freezer. 6. Place the dark chocolate in a water bath to melt. Add in the coconut milk and stir continuously until shiny. Pour the chocolate ganache over the caramel layer and place back in the freezer to set for 4-6 hours (or overnight).

Mediterranean spaghetti 🍝 ⠀ INGREDIENTS: *200g cherry tomatoes *Pinch of salt and pepper *Few branches of rosemary *2-3 cloves of garlic *Splash of olive oil *100ml olive oil *1 garlic clove *Handful of rosemary and basil *Pinch of salt and pepper *1 chili pepper (optional) *50ml white wine *250g spaghetti ⠀ ⠀ METHOD: *Season the tomatoes and bake them at 180C for 20mins *Heat up 100ml of olive oil and add garlic, rosemary and basil *Let it release the aroma shortly and then add the tomatoes and the rest of the ingredients *Simmer for 5 minutes and serve with spaghetti .

Spinach tempeh curry 🍛 ⠀ INGREDIENTS: •4 tbsp of olive oil •100g of tempeh •Tempeh seasoning (1/2 tsp salt, 1/2 tsp, •pepper, 1/3 tsp crushed chili pepper) •1/2 of a bigger size onion •2 cloves of garlic •1 tsp curry powder •1/2 tsp garam masala •1/2 tsp ginger •3 tbsp of water + 1/3 cup of water •200g spinach (fresh or frozen) •1 tsp salt, 1 tsp pepper, pinch of chili •1 cup of coconut milk ⠀ METHOD: 1. On olive oil season and stir fry tempeh cut in cubes for about 5-7 minutes. Put aside 2. Add another 2 tbsp of oil to the same pan, sauté onion and garlic. 3. Add curry powder, garam masala and ginger and stir fry for a minute 4. Add 3 tbsp of water to it and stir 5. Now add spinach, season it and cook with 1/3 cup of water for 5 minutes. 6. Add coconut milk, blend half of the spinach and stir back in. 7. Cook for another 2 minutes, stir in the tempeh and serve with rice or naan. ⠀

Curried mini pot pies 🥧 by: @n.vegan.h ⠀ INGREDIENTS: •2 tbsp olive oil •1 onion •2 garlic cloves •1 cup of frozen peas, corn and carrot (or similar) •1 can of white beans •1 cup of water •1 tsp salt, 1 tsp pepper •1 tsp (smoked) paprika, 1/2 tsp onion powder •1 tsp curry powder, 1/2 tsp chili powder •Puff pastry (they’re usually ‘accidentally vegan’ and made with margarine instead of butter) ⠀ METHOD: 1. Sauté onion on olive oil for 3-4mins. Add garlic and let it release the aroma for a minute 2. Add the frozen veggies and the beans that you have previously washed and roughly mashed with a fork (leaving about half of it not mashed) 3. Add water and seasonings, stir well and cook for 5minutes 4. Cut the puff sheets so that they can fit into muffin pan (or make this a one big pie). Tuck them in the pan, fill with veggies and cook at 180C for about 15minutes (until it browns a bit) ⠀ ⠀

Crunchy Tripple Chocolate bowls 🤤⁣⁣ SAVE IT for later🤩 👇🏽RECIPE (2 servings)⁣⁣ ✨ 6 frozen bananas ⁣⁣ ✨ 1/4 cup plant milk of choice⁣⁣ ✨ 1 tbsp cacao powder⁣⁣ ✨ 1/4 cup raw cashew nuts⁣⁣ ✨ 2 tbsp cacao nibs⁣⁣ For the chocolate sauce⁣⁣ ✨ 3 tbsp agave syrup (or coconut nectar/maple syrup/date syrup)⁣⁣ ✨ 3 tbsp cacao powder⁣⁣ ⁣⁣ HOW⁣⁣ 1. Make the chocolate sauce in a small bowl by combining syrup with cacao powder and set aside⁣⁣ 2. Roughly chop the cashew nuts and set aside⁣⁣ 3. Add the chopped frozen bananas, cacao powder and plant milk to a high speed blender or a food processor and blend until completely smooth (have patience, you may have to stop a few times to scrape the sides of the blender/food processor or let air bubbles out from the bottom)⁣⁣ 4. Now add the chopped cashew nuts and cacao nibs, fold them down into the nice cream⁣⁣ 5. Lastly add the chocolate sauce (save little for topping) and roughly fold it in⁣⁣ 6. Serve in coconut bowls and top with rest of the chocolate sauce and maybe some more cashes and cacao nibs. In a deeper pan, sauté the onion and garlic until translucent 2. Then add all of the spices, coconut milk, water, peanut butter and crushed tomatoes. Bring to a simmer and then add the chopped sweet potato. Let simmer for about 10 minutes or until the sweet potato is almost done 3. Now add the canned lentils, bell pepper, soy sauce and lime juice. Let it simmer for another 3 minutes 4. INGREDIENTS AND METHOD🥣 In a blender add the soaked cashews (1cup to 1½ cups), garlic powder, 1 lemon, 1/4 onion, 1/2 cup white corn, about 1/4 cup nutritional yeast, salt and pepper to taste, soy milk to adjust desired consistency! Add chopped roasted poblano pepper and to your cooked noodles and sauté for 1-2 min then add white sauce! Healthy Peanut Butter “Milkshake”... cause who doesn’t love everything peanut butter !? 😝 this isn’t your normal milkshake though — it’s made with frozen bananas instead of ice cream, so it’s light and healthy but still has that amazingly creamy texture. General Tso’s Tofu by @the_buddhist_chef. ⁣ .⁣ Ingredients:⁣ 1 block (450 g) firm tofu, diced⁣ 1/4 cup (35 g) cornstarch⁣ 3 tablespoons (45 ml) vegetable oil⁣ 2 cloves garlic, minced⁣ 1 tablespoon (15 ml) minced fresh ginger⁣ 3/4 cup (180 ml) vegetable broth⁣ 3 green onions, minced⁣ 2 tablespoons (30 ml) maple syrup⁣ 2 tablespoons (30 ml) soy sauce⁣ 2 tablespoons (30 ml) ketchup⁣ 1 teaspoon (5 ml) sriracha sauce, or chili paste⁣ Sliced green onion, to garnish⁣ Sesame seeds, to garnish⁣ Method⁣ 1. In a bowl, combine the tofu with the cornstarch and shake to coat.⁣ 2. In a large skillet, heat the vegetable oil over medium-high heat. Add half of the tofu cubes⁣ and fry, turning from time to time, until they’re golden brown and crisp. Transfer the tofu⁣ cubes to a plate lined with paper towels to drain excess oil. Repeat the steps to fry the⁣ remaining tofu cubes, adding more oil as needed.⁣ 3. In the same skillet, cook the garlic and ginger together for 1 minute. Add more oil, if⁣ needed.⁣ 4. (Recipe makes 6 bars): 1 cup unsalted natural peanut butter 1/4 cup + 2 tbsp maple syrup 1 1/4 cup gluten free rolled oats Topping: 70g dark vegan chocolate 1. Line a bread tin with parchment paper or wax paper. Set aside. 2. In a medium, microwave-safe bowl (large enough to add oats later), add peanut butter and maple syrup. Whisk together until well-mixed. Heat for 20-second increments in the microwave until warm, fragrant and thickened. Whisk in between heating increments. 3. Add oats. Stir and fold until thoroughly combined. Pour this mixture into the prepared baking pan. Set aside. 4. Melt the Vegan dark Chocolate and pour it over the bars. 5. Freeze for 30-40 minutes, or until firm. Soft pear cake 🍐 ⠀ INGREDIENTS: Batter: •100ml vegetable oil •100g sugar of choice •1 tbsp vanilla extract •270ml soy milk •2cups of flour •2 tsp baking powder •1 tsp baking soda •1 tbsp apple vinegar ⠀ More: •1 big pear •Juice of a half lemon •1 tbsp vanilla •Powdered sugar for dusting ⠀ METHOD 1. Slice the pear in thin slices. Leave few of them long and cut the rest in smaller pieces. Mix it with lemon juice, vanilla and sugar and let sit until you make the batter 2. Mix the sugar with oil and vanilla extract. Add soy milk and give it another stir. Then add flour, baking powder, soda and apple juice and a bit more milk if it’s too thick. 3. Mix the chopped pear pieces in the batter and pour into an oiled cake pan and put long slices on top. 4. Bake at 180C for 25-30mins. Let cool a bit and then dust with powdered sugar. ⠀ ⠀ ⠀

Hi Guys, I hope everyone is doing well and safe. Today I’d like to share with you a tasty zucchini stew recipe and also the two secrets to get the traditionally rich and thick gravy without using any meat. Ingredients 4 zucchinis 3 large onions 1 tomato 1 capsicum 2 tsp red paprika ground 1 tsp black pepper ground 3 tsp salt Olive oil; water How to Clean and chop zucchinis, tomato and capsicum into chunky pieces. SECRET (1) cut onions into really FINE PIECES In a large pan sauté the onion until it becomes translucent and just begin to brown. Add capsicum and tomato and cook for a couple of minutes. Add spices and stir them well; add zucchinis and fill up the pan just enough water to cover the zucchinis SECRET (2) cover the pan with lid and bring it to boil; let the steam come out by leaving a small opening; turn the cooktop to low heat and let the stew SIMMER for minimum 40 minutes. Check and stir time to time. Serve with rice, flat bread or couscous. I hope you will try and enjoy this vegan dish. “LOCKDOWN BEET HUMMUS ON AVO TOAST” - Since everyone has swiped all the canned beans from every supermarket shelves, making hummus from scratch is not quite doable 🤪 HOWEVER, there is a bright side/alternative to this dilemma! The trick is buying ready made store bought plain hummus (I got mine from @tescofood ) and blending it with additional ingredients as I’ve done for this beetroot recipe. Potato cakes 🥬 ⠀ Instead of spinach and cream cheese you can get creative what to use as filling: *tomato sauce + vegan cheese *mushrooms *curried lentils *mashed pumpkin etc ⠀ INGREDIENTS: Dough •3 medium size potatoes •pinch of salt •2 tbsp olive oil •1 tbsp fresh or dry parsley •2 cups of flour (more if needed) ⠀ Filling: •about 3 cups of fresh spinach (or half the amount of frozen spinach) •2 cloves of garlic •1 tsp salt, 1tsp pepper, 1 tsp oregano •3 tbsp vegan cream cheese ⠀ More: •1 tbsp olive oil for cooking the cakes ⠀ METHOD: 1. Cook the potatoes in salted water until soft. Mash them with a fork, add salt, olive oil, parsley and flour and need non sticky dough 2. For filling add olive oil to a pan, fry garlic for 30seconds, add spinach, season it and cook covered for 3 mins. When cooled add the cream cheese and mix together 3. Roll out the dough on a flour dusted surface to about 1 cm thick. Cut out round shapes, put about 1 tsp of filling per cake and pinch close with another patty 4. Add 1 tsp of olive oil to a pan and wipe it with a paper towel, add the cakes, cover and cook covered on very low flame for about 5mins. Flip and cook for another 5mins. 5.
