The 18th day of quarantine It is 11:05pm right now, I’m in bed, and chillin w my music. I made this for supper lately, it’s gluten-free fusilli (that I bought in Aldi the other day), added w some green onions, mushrooms, vegan sausage ( livin’ a vegan quarantine :), some seasonings, and sauce. 🌱 GOOEY CHEDDAR STYLE VEGAN CHEESE. This cashew and veggie-based cheese is the perfect melty, stretchy texture for a grilled cheese. Recipe below 👇⠀ ⠀ 📢 We are OPEN and providing much-needed Pantry Foods & Toiletries. LINK IN BIO.⠀ ⠀ ⠀ INGREDIENTS:⠀ ½ cup cashews⠀ 1 medium carrot, sliced⠀ 3 tbsp nutritional yeast in Vegancuts Pantry Box⠀ 2 tbsp tapioca starch⠀ 1 tsp lemon juice⠀ 1 tsp salt⠀ ¼ tsp garlic powder⠀ ⅛ tsp turmeric⠀ vegan butter, to taste⠀ 8 slices of bread⠀ ⠀ INSTRUCTIONS:⠀ 1. In a medium pot, bring 4 cups of water to a boil. Add cashews and carrot and boil for 10 minutes.⠀ 2. Use a slotted spoon to transfer cashews and carrot to a high-speed blender. Save the cooking water.⠀ 3. Blend nutritional yeast, tapioca starch, lemon juice, salt, garlic powder, turmeric, and 1 cup plus 2 tablespoons of reserved cooking water. Blend for 2-3 minutes.⠀ 4. Pour the “cheese” sauce back into the pot and stir with a spatula over low heat for 2-4 minutes, or until the sauce is thickened and stretchy. Set aside.⠀ 5. Butter each slice of bread on 1 side. Add to a medium nonstick skillet, using a spatula to spread cheese sauce on top. Choc Mint Mousse Cups (Makes 3) . 400ml coconut cream 90g vegan Mint Chocolate pieces 1 Tbsp cacao powder 1 Tbsp cornflour 1 Tbsp sweetener (xylitol, stevia/erythritol blend, sugar, rice malt, 6 stevia drops) 1/4 tsp vanilla extract Add coconut cream, cacao powder, sweetener and cornflour to a saucepan and whisk until blended Heat over medium, whisking regularly for 3-5mins until smooth and thickened. Remove from heat and add the chocolate and vanilla. Stir until melted and smooth Pour into serving glasses Place in the fridge for 30mins or overnight to chill and set. Eggplant Coconut Curry by @yummyyatra 💛 Follow @vegangotgame for more delicious vegan recipes!💚💚#vegangotgame Recipe: Ingredients ⠀ 1 medium size eggplant, cut into rounds and then halved ⠀ 2 tbsp neutral oil⠀ 1 tsp ground turmeric⠀ 1 tsp coriander powder⠀ 2 tsp cayenne (use more of leas to suit your taste - I like it spicy here)⠀ 1 can unsweetened coconut milk⠀ 1 serrano pepper (optional)⠀ Curry leaves (optional)⠀ 1 tsp garam masala⠀ Juice of 1/2 lime ⠀ Salt, to taste⠀ ⠀ Instructions⠀ Heat oil in a cast iron skillet, add the eggplant, sprinkle salt⠀ Add the ground turmeric, ground coriander, cayenne, 1/4 cup water and stir fry on medium heat until the eggplant slices have wilted and somewhat crisp. I stir fried (stirring occasionally), for 20 minutes. ⠀ Add serrano pepper and curry leaves, if using. ⠀ Remove the pan from the heat and stir in the coconut milk, then return to heat (low heat) and simmer for about 4-5 minutes.⠀ Sprinkle the garam masala, adjust the seasoning, if needed. ⠀ Squeeze fresh lime juice just before serving with rice or any flat bread. Essa receita me rendeu 9 croquetes de tamanho médio/grande. . . 2 berinjelas 1 cebola 3 dentes de alho 1 tomate 1 xícara de farinha de trigo 1 xícara de farinha de rosca 4 colheres de sopa de farelo de aveia (poderia ser mais farinha) Óleo para fritar Sal e temperos a gosto . . Corte as berinjelas, cebola, alho e tomate, e refogue tudo com os temperos, até conseguir esmagar com um garfo e virar uma espécie de purê. Retire do fogo e adicione a farinha de trigo, o farelo de aveia, e metade da farinha de rosca. Enrole as croquetes e empane na outra metade da farinha de rosca. Vegan "Fish" and Chips 🍟🐟 from @mymeatlessmeals Ingredients: • 300 g aubergine, peeled and halved • A bowl of water and and slices of lemon • 1 cup all purpose flour (+1/4 cup for dusting) • 3 tsp baking powder • 1/2 tsp Himalayan salt • 1 tbs nori powder • 1/8 tsp turmeric • 300 ml vegan lager beer, cold • coconut oil/ grape seed oil for frying 🌱 🐟 Instructions: 1. Peel your eggplant/ aubergine, cut in half, and soak in water with lemon slices for about 10 minutes. 2. Combine 1 cup of plain flour, salt, turmeric powder, nori powder in a bowl before adding cold lager and mix well. 3. Remove aubergine from water, transfer to a Ziploc bag and add plain flour and shake until fully coated. 4. Spoon the cold batter over your flour-coated aubergine on all sides. 5. Heat coconut oil in a nonstick pan until the temperature reaches 375 and gently drop aubergine and fry on both sides on medium- medium low heat until golden brown. Drain the excess oil for a few minutes on a cooling rack before plating. 6. Serve with mushy peas, a lemon slice, and chips. 7. Vegan Stuffed Shells Recipe by @hold_the_olives 💛 Follow us @vegancanteen for more delicious vegan recipes!🌱🌱#vegancanteen Recipe:⠀ Ingredients:⠀ For Filling:⠀ 15 oz vegan Ricotta Cheese⠀ 1 cup vegan shredded mozzarella chz⠀ 1/2 cup vegan parmesan⠀ 1/4 bunch fresh Italian parsley & basil, chopped⠀ 2 TBS vegan cream cheese⠀ Salt/pepper/garlic powder season ⠀ 1/2 bunch fresh spinach, chopped⠀ Optional: 1 cup meatless meat crumbles, cooked, seasoned & chilled⠀ PROCEDURE: Combine all ingredients in a large mixing bowl, mix together well. Season. If adding meatless crumbles, make sure crumbles are cooled & seasoned. Set in refrigerator to chill until pasta and gravy is finished cooking. ⠀ ⠀ 1 box Extra Large Shells Pasta ⠀ ⠀ For gravy:⠀ Any jarred vegan marinara, two 24oz jars⠀ ⠀ For Homemade gravy:⠀ One 28 oz can San Marzano crushed tomatoes⠀ Two 6oz can tomato paste⠀ Fresh garlic, shallots minced⠀ EVOO⠀ Fresh Basil/Oregano, Garlic powder/S&P⠀ ⠀ Instructions ⠀ Coat bottom of large pot with EVOO & sautée garlic/ shallots until lightly browned, not burnt. Add 1 can tomato paste, fill emptied can w/ water, add to pot, stir. Repeat with second can. ⠀ Add crushed tomatoes, stir. Fill can up twice w/ water and add to pot. Stir. ⠀ Add 6-7 full basil leaves and oregano bunch. ⠀ Bring to a boil, then switch to low heat and simmer uncovered for 3-4 hours until thickened & all water has reduced by at least half. Season. ⠀ ⠀ Pasta Instructions:⠀ Layer a 9x13 in Pyrex w/gravy to cover the bottom of dish. Stuff par-boiled shells w/cheese/spinach mixture & place opened side up. Repeat until entiredish is layered & stuffed. Spread more gravy between the shells but Do not cover the shells. Bake for 25 minutes at 350 degrees covered w/ foil, then turn heat up to 400 and uncover, baking for an additional 10minutes until edges of shells are crispy and all cheese is melted. Serve on a plate and top with optional additional gravy & parm. Enjoy!

These were SO good. Not only do they make for the perfect grab-'n'-go breakfast or lazy desert, they were also super easy, and super quick to make!! Honestly, I was surprised myself. The recipe has no flour and no milk and is based off of chickpeas, so I was eager, but still skeptical. The recipe is up on my highlighted stories, and I heavily recommend giving them a go! The only thing I did differently was about 1tsp more than the suggested vanilla, and used peanut butter instead of almond. Preheat your over to 350 and bake for 20 minutes! I had to cook mine for 30, but the recipe calls for 20. VEGAN LEMON CUPCAKES 😋⁣⁣ Deliciously lemony, moist and simple cupcakes with a velvety frosting.⁣⁣ Recipe below 📝👇🏻⁣⁣ ⁣⁣ INGREDIENTS:⁣⁣ For the Cupcakes:⁣⁣ 🔸1 and 3/4 cups All Purpose Flour⁣⁣ 🔸1 cup Sugar⁣⁣ 🔸1 tsp Baking Soda⁣⁣ 🔸1/2 tsp Salt⁣⁣ 🔸1 cup Soy Milk⁣⁣ 🔸1/3 cup Vegetable Oil⁣⁣ 🔸1 Tbsp White Vinegar⁣⁣ 🔸1 tsp Vanilla Extract⁣⁣ 🔸2 tsp Lemon Extract⁣⁣ 🔸1 Tbsp Lemon Zest⁣⁣ For the Lemon Buttercream Frosting:⁣⁣ 🔸3 cups Powdered Sugar⁣⁣ 🔸1/3 cup Vegan Butter⁣⁣ 🔸2 Tbsp Lemon Juice⁣⁣ 🔸1 tsp Lemon Extract⁣⁣ For Decoration:⁣⁣ 🔸Lemon Zest⁣⁣ ⁣⁣ INSTRUCTIONS⁣⁣ 1. Preheat the oven to 350°F (180°C).⁣⁣ 2. Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the soy milk, vegetable oil, vinegar, vanilla, lemon extract and lemon zest. Whisk briefly with a hand whisk to combine properly and remove any lumps.⁣⁣ 3. Line a cupcake tray with cupcake liners and divide the batter between them.⁣⁣ 4. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.⁣⁣ 5. When baked transfer to a wire cooling rack and allow to cool completely before frosting.⁣⁣ 7. Prepare your frosting by adding the powdered sugar, vegan butter, lemon juice and lemon essence to an electric mixing bowl. Start at slow speed and gradually increase speed until smooth and thick. If it’s too thick, add a little more lemon juice until you reach the right consistency.⁣⁣ 8.
