Healthy vegan recipe 😋🌱⬇️ by @vegansthenics⁠ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ Ingredients for 2-3 servings⁠ ➖➖➖➖➖➖➖➖➖➖⁠ - 250g (whole grain) pasta⁠ - 500g frozen broccoli - 250ml / 1 soy milk⁠ - 3 tbsp nutritional yeast⁠ - 1/2 garlic clove (optional)⁠ - 1 can chickpeas - some walnuts⁠ - some cherry tomatoes - salt & pepper to taste⁠ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ Instruction:⁠ ➖➖➖➖➖⁠ 1.) Put chickpeas on a baking sheet, spice them up with some paprika and then bake them for about 20 minutes at 180°C / 356°F ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ 2.) While the chickpeas are baking cook (whole grain) pasta and steam or boil the broccoli. I prefer steaming to preserve more vitamins and minerals. ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ 3.) When the broccoli is ready, blend it with a handmixer or in a blender together with the soy milk, salt, pepper, garlic and nutritional yeast⁠ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ 4.) Add the sauce to the ready cooked pasta and stir it. ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ 5.) Add the broccoli pasta and the chickpeas to a plate and then add some walnuts and tomatoes (as much as you like).⁠ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⁠ It makes about 2-3 servings, depending on how much you eat. I recommend using whole grain pasta instead of white pasta, but if you're not used to that amount of fiber or you like white pasta more then go for it. Taj padł, Taj wstał, na pad thaia przepis dał. Ale nie skorzystałam,  bo lepszy pomysł miałam. Makaron ryżowy kupiłam i po swojemu go przyrządziłam. Domowy sos słodko-kwaśny  sprawił, że smak miał całkiem przaśny. Do tego jeszcze tofu pieczone, a na nim bazylia, curry i chili mielone. Przypraw znacznie więcej było, tylko orzeszków mi nie starczyło 🙁 PIECZONE TOFU: Naturalne tofu odcisnęłam z wody i pokroiłam w kostkę. Przełożyłam do miseczki, dodałam trochę oliwy i 2 łyżki sosu tetiyaki, sól, pieprz, bazylię, paprykę wędzoną, chili i curry. Wymieszałam, przełożyłam na blachę wyłożoną papierem do pieczenia i piekłam około 20 minut w 190-200 stopniach :) SOS: SKŁADNIKI: ✔️1 kg pomidorów ✔️3 średnie cebule ✔️1/2 czerwonej papryki ✔️1/2 żółtej papryki ✔️150 g kukurydzy konserwowej ✔️200 g ananasa z puszki ✔️2 ząbki czosnku ✔️1 łyżka musztardy ✔️1 łyżeczka słodkiej papryki ✔️1 łyżeczka soli ✔️1 łyżeczka mieszanki curry ✔️Szczypta pieprzu i papryki chilli ✔️1/2 szklanki cukru ✔️100 ml octu ✔️1 płaska łyżka mąki ziemniaczanej Pomidory obieramy ze skórki (wcześniej najlepiej je sparzyć). Wszystkie warzywa kroimy w dość drobną kostkę i przekładamy do dużego garnka. Gotujemy na małym ogniu przez około godzinę. Następnie dodajemy pokrojonego ananasa, kukurydzę, ocet, cukier i przyprawy i wszystko gotujemy jeszcze 30 minut. Na koniec, żeby zagęścić sos, dodajemy mąkę ziemniaczaną rozrobioną w niewielkiej ilości wody :) Można zrobić więcej i zawekować na zapas! Tofu nuggets with aioli; tomatoes and olives; avo; spinach, red cabbage and edible flowers with balsamic😋😋 - Tofu nuggets 400g pack firm tofu pressed Tear the tofu into nugget size pieces - Batter mixture 1/4 cup gluten-free flour 1/2 cup Soy Milk 1 tsp Dijon mustard - Crumb mixture 4 tbsp gluten free breadcrumbs 2 heaped tbsp nutritional yeast 2 tsp dried Italian herbs 1/2 tsp pink Himalayan salt - Dip the tofu pieces in the batter and then roll the them in the crumb mixture. Place the pieces in a hot pan with a little oil and fry until golden on both sides. Remove pieces from the pan and drain them on absorbent paper and then sprinkle the nuggets with black salt ( kala namak). If you don’t have black salt (which by the way is pink) you can use sea salt but black salt really makes this amazing. Simple dinner for me tonight .. salad with butter bean hummus , seed crackers and marinated mushrooms . Raw at its best :) 🥗 — salad greens — chopped green beans — green onion — Lebanese cucumber —pumpkin seeds —sunflower seeds I make a dressing with a squeeze of lemon,turmeric and cracked pepper . The hummus I blended up tahini , butter beans, grated sweet potato, garlic powder , salt , pepper and cumin, I added a dash of coconut water to thin it :) 🍄 mushrooms I soaked in coconut liquid aminos . Seed crackers I’ll do a post with recipe :) my favourite cracker and so Seleucid is. Add the dry fruits and puffed quinoa into the mix. Combine the mixture with your hand until they stick together. 5. Line a baking tray (18cm x 30cm) with parchment paper. 6. Press the mixture onto the tray. 7. Next, melt your dark chocolate and then pour it over the nutty mixture. 8. Pop the tray into the fridge to set it overnight. . Voila! What a day... I spent this morning filming my workout, taking some photos, editing, googling, & downloading apps until I finally posted my workout. After uploading and getting some likes and comments, I couldn’t stand the lighting, the editing, the poor quality, the angles, and so forth. So, I deleted it. Why? Cuz I knew it wasn’t my best that I could put forth. It’s hard being a perfectionist when I’m not where I want to be. I vented about it, had a mood about it, and then decided to eff those thoughts away. Cuz they were causing me to feel V insecure about myself. After how far I’ve come, I can’t go back to that. Hot take 🥵: as much as I love Dr. Seuss, instead of green eggs and ham we should have green gnocchis and veggies 🥬 I saw @plantiful_foodie posted about these @traderjoes kale gnocchis and just can’t wait to get my hands on them! Absolutely beautiful delicious made with a mix of potato flour and chickpea flour, makes a quick bowl of weekday dinner! I sautéed them in a sage + butter 🧈 sauce using @miyokoscreamery European butter. To add even more veggies, I added a handful of spinach and chopped up some mushrooms. SO YUM 😋 oh! And don’t forget to sprinkle those nutritional yeast on top for an additional cheesy umami + garnish!

After 5 min, add in the spices and fry until fragrant -- about 5 more min. Add in sweet potatoes and tomatoes with 1 cup water. Cover the pot and simmer for 10 min, then add in chickpeas. Once the sweet potatoes are tender, stir in peanut butter. Tag someone who'd love this simple but delicious bowl!⠀ ​⠀ ​Stewed Beans⠀ 2 can pinto beans, rinsed and drained⠀ 1 tsp sazon (find a vegetable based one either in the international aisle or by the company @eatloisa)⠀ 1/2 tsp smoked paprika⠀ 1/2 tsp garlic powder⠀ 1 tsp dried oregano⠀ 1 red onion, diced⠀ 1 can rotel (or store brand diced tomatoes with green chili peppers)⠀ 2 tsp capers (optional)⠀ 2 cups veggie broth 👏🏽⠀ ​⠀ Add onion to a pot and stir until fragrant. Add in seasonings and a splash of water and sauté until fragrance developed, about 2 minutes. Add in beans, tomatoes and capers. Stir to incorporate well and add in veggie broth. Bring mixture to a simmer and reduce heat to low. Stir every few minutes to avoid sticking to the bottom of the pan and allow to cook for 15-20 minutes. No bake almond butter slice 🤎 . These are super quick and easy to make and are a delicious snack straight out of the freezer! Almonds are not only the only alkaline nut (the human body operates at a slightly alkaline level) but also full of protein, helping you stay fuller for longer. . Combine 1/2 cup almond butter (or peanut butter), 1/2 cup almond meal, 1tbs coconut oil, 1tsp cinnamon, 1/4 cup cacao nibs. Creamy WALNUT curry🤤🤤🤤 I think curry’s gonna be my new favorite food (after oatmeal of course) especially wonderful if you can’t tolerate COCONUTS 🥥 I couldn’t find a single curry recipe that didn’t include them so I decided to make my own recipe!!!! Please please please go try this out guys!!!!🥰🥰🥰 ~ ~ Recipe: 1 small head broccoli 1 tsp ginger, minced 1 tsp garlic, minced 1 small onion, diced 1/2 can beans 3 large mushrooms Handful of spinach 1 Tbsp curry powder 1 tsp chili powder 1 tsp paprika 1 tsp black pepper 1/2 tsp salt 1/4 cup walnuts 1/4 cup veggie broth Soak walnuts overnight. Drain them, then blend them with the veggie broth. Sauté onion, garlic, and ginger in a pot on high heat. Add spices, beans, broccoli, and mushrooms. Cool for about 3 minutes. Add walnut sauce and spinach and stir. 🤤 Veggie stirfry with tofu 📷 by @plantbasedrd 🌿🌿 I'm sooo hungry after seeing this!! It is perfect 🤤 . 👏Follow @goveganmeal for the best vegan recipe every day👏 . Recipe: Baked Tofu: 1 block tofu (drained and pressed then cut into cubes), 2 tsp garlic chili sauce, 1 tbsp tamari, and 1 tbsp nutritional yeast. Add tofu cubes to a container and add in remaining ingredients. Seal container and give container some gentle shakes to completely coat tofu. Once coated add to a lined baking sheet and bake in the oven for 20-25 minutes at 400F. . For veggie stir fry, in a pan add sliced mushrooms and onion and sauté until onions are translucent. Add in hearty veggies like broccoli, add a splash of tamari and 2 tbsp water. Cover pan and let cook until broccoli has turned bright green, about 4-5 minutes. Add less hearty veggies like bell pepper and add another splash of tamari and a splash of sweet chili sauce (I used about 1 tbsp). Sauté until veggies are fully coated and most of the liquid cooks off, 3 minutes. Add in tofu and coat before removing from heat.

One pot Pasta with kidney beans 🍝 This recipe is as easy as tasty, almost same as Pasta e Ceci but I have to say with beans is even better!! . * 4 tbs olive oil * 4 cloves garlic, peeled and smashed * 6 tbs tomato paste * 1 tbs sea salt, plus more to taste * Freshly ground black pepper or red pepper flakes, to taste * 1 big tin of black beans (400 grs drained and rinsed) * 200 grs uncooked pasta (I used Gobbetti from Barilla) * 1500 ml vegan broth . In a large heavy-bottomed heat olive oil until it shimmers. Smash the cloves of garlic and cook, stirring until it becomes barely browned but very fragrant. Stir in the tomato paste, salt and pepper and cook them with the garlic for 30 seconds or so. Add the beans, pasta, and broth. Simmer until the pasta is cooked and a lot of the liquid has been absorbed, about 15 to 20 minutes. Taste and adjust seasoning. Mango chia pudding 🥭 I was seeing everywhere this Chia puddings but I had never tried them myself. Last week I was craving for something sweet and I had Mango at home so I gave it a try. We all loved it! Including my daughter who’s 3 years old. And as you all know Chia is really healthy so it’s good for kids to give to replace other not so healthy snacks. . *2 Large Fresh Mangos *80 grs chia seeds *480ml any plant based milk (I used almond milk) *4 tbsp maple syrup . Add the flesh of one of the mangos to the blender process into a purée. Chop the other mango into chunks. Add the chia seeds, almond milk, maple syrup and puréed mango to a mixing bowl and whisk together. Then add in the chopped mango and mix it in, saving a few chunks to use for a topping. Place the mixture into the fridge for 15 minutes and then bring it out and give it a stir and then put it back into the fridge for another 15 minutes. Spoon it out into four serving glasses, top with the remaining chunks of chopped mango and serve, I added some basil and syrup for serving. #vegan #veganrecipes #chia #vegano #deutschlandvegan

. A beautiful thought produces beauty 🌷. . Veganuary for the Lazy Cook - Day 21 (2 Serves) . Breakfast - Chop 2 bananas, 2 apples, 2 pears, and 2 oranges. Add 6 tablespoons of raw oats and a couple of handfuls of walnuts. . Lunch - 2 x leftover mashed chickpea patties (see yesterday’s recipe) with wholemeal bread and chilli sauce for lunch. . Dinner for 2 - Wholemeal Couscous With Chickpeas and Roast Vegetables . This quick dish was done with leftover vegetables. Couscous usually takes 5-6 minutes to cook. . Ingredients . A) 1/2 red onion, cubed 1/2 brown onion cubed 4 cup mushrooms, halved 1 small green capsicum, cubed 1/2 broccoli, cut into florets 1 small sweet potato, peeled and cubed A few dashes turmeric A few dashes pepper A few dashes garlic powder A few dashes onion powder 1 tablespoon vegetable broth . B) 3 tablespoons lemon juice 1/4 teaspoon cumin 2 cloves garlic, minced Leaves of 2 parsley sprigs, chopped . C) 200 grams cooked chickpeas, washed and drained 1/3 cucumber, quartered 1 red chilli, deseeded and sliced . D) 1/2 cup wholemeal couscous, cooked according to instructions . Method . Mix A) and transfer to oven for 30 minutes @ 200 C. . Mix B) and set aside dressing. . Mix together A), B), C), and D). .
