Which one speaks to you: 1 or 2? I couldn't decide 😝 Had so many errands to run this morning that I ended up eating really late lunch. Thankfully I had roasted sweet potatoes over the weekend waiting for me in the fridge and just needed to add the toppings. I was starving and my boy was fussy so I ended up cutting corners, which might not look too pretty but this is real life quick lunch right here! Chickpea spinach: can of chickpeas drained. Add to a hot skillet, add a little avocado oil and cumin, shake well to distribute, add spinach and a clove of minced garlic. Cook for a min until spinach wilts. Top with tahini. Mexican Fiesta: add frozen corn to a hot skillet and a little avocado oil. Cook for a min. Add a can of black beans drained, season with garlic and onion powder. Top with cilantro, avocado(not pictured) and tahini. Tip: find natural tahini that is liquid in consistency. Uzený tempeh s bramborem⁣ ✅ 1 cibule⁣ ✅ 1 červená paprika⁣ ✅ 1 uzený tempeh⁣ ✅ 1 plechovka cirzny⁣ ✅ mletá červená paprika⁣ ✅ sůl⁣ ✅ rostlinná náhrada smetany⁣ ✅ zeleninový vývar⁣ ⁣ 👉 Cibulku nakrájenou nadrobno osmahněte na oleji. Přidejte tempeh nakrájený na kousky, červenou papriku nakrájenou na proužku. Chvíli smažte, a pak ochuťte solí a mletou červenou paprikou. ⁣ 👉 Směs podlijte zeleninovým vývarem. Přidejte cirznu a povařte všechno ještě zhruba 10 minut. ⁣ 👉 Během toho si uvařte brambory v celku a ve slupce. Vegan lasagne⁣ ⁣ ✅ 1 balení lasagní⁣ ✅ 2 hrnky marinara omáčky ⁣ ✅ 1 hrnek červené čočky⁣ ✅ 400 g tofu⁣ ✅ 1/2 hrnku lahůdkového droždí ⁣ ✅ 3 lžíce citronové šťávy⁣ ✅ 1 lžička soli⁣ ✅ 1 lžička oregana⁣ ✅ 1/2 lžičky sušeného česneku ⁣ ✅ 1 balení kešu⁣ ⁣ 👉 Uvařte si červenou čočku. ⁣ 👉 Předehřejte si troubu na 180 stupňů Celsia.⁣ 👉 Udělejte si ricottu z tofu. Rozmixujte tofu s kešu oříšky droždím, citronovou šťávou a kořením. ⁣ 👉 Smíchejte marinara omáčku s čočkou. ⁣ 👉 Skládejte lasagne následovně: lasagne, marinara omáčka, lasagne, tofu ricotta, lasagne a marinara omáčka. Večeře⁣ ⁣ ✅ 1 plechovka fazolí⁣ ✅ 1 stroužek česneku⁣ ✅ 1 cibule, nakrájená nadrobno⁣ ✅ 1 lžička sušeného oregana⁣ ✅ 1 lžička sušené bazalky⁣ ✅ 1 lžička sojové omáčky⁣ ✅ 1 lžíce rajčatového protlaku⁣ ✅ 1/2 hrnku ovesných vloček⁣ ✅ 1/2 hrnku slunečnicových semínek⁣ ✅ 2 velké celozrnné bagety⁣ ✅ trochu rozmixovaných arašídů, nebo kešu oříšků⁣ ✅ sůl a pepř podle chuti⁣ ⁣ 👉 Fazole opláchněte a dejte je do misky. V misce je vidličkou rozmačkejte. ⁣ 👉 Rozehřejte si pánev a na osmahněte cibuli. Přidejte k ní potom nastrouhaný česnek, chvíli orestujte. ⁣ 👉 Cibuli s česnekem dejte do misky s fazolemi. Přidejte rajčatový protlak, koření, sójovou omáčku a ovesné vločky. ⁣ 👉 Slunečnicová semínka si rozmixujte v mixéru, a potom je přidejte do směsi. ⁣ 👉 Dochuťte těsto solí a pepřem. ⁣ 👉 Vytvořte si zhruba 12 „masových“ kuliček. ⁣ 👉 Předehřejte si troubu na 200 °C. Oběd z jedné pánve ⁣⁣⁣⁣ ⁣⁣⁣⁣ ✅ 1 plechovka červených fazolí ⁣⁣⁣⁣ ✅ 50 g neuvařené quinoi ⁣⁣⁣⁣ ✅ 2 lžičky rajčatového protlaku ⁣⁣⁣⁣ ✅ 2 lžičky sójové omáčky ⁣⁣⁣⁣ ✅ 2 lžíce oleje ⁣⁣⁣⁣ ✅ 1 mrkev ⁣⁣⁣⁣ ✅ 1/2 cibule nakrájené nadrobno ⁣⁣⁣⁣ ✅ 3 stroužky česneku ⁣⁣⁣⁣ ✅ kousek uzeného tofu ⁣⁣⁣⁣ ✅ pepř a sůl na dochucení ⁣⁣⁣⁣ ⁣⁣⁣⁣ 👉 Osmahněte na oleji cibuli a prolisovaný česnek s trochou soli. ⁣⁣⁣⁣ 👉 Tofu a mrkev nakrájejte na kostky a přidejte je na pánev. Day 2 lunch was this very tasty veg chilli bowl made from ... everything! All clean, all tasty, all gone 🤣 . 🌶 Recipe: butternut squash (cooked) carrots, onion, peppers, green beans, spinach, mangetout, asparagus, garlic, edamame beans and butter beans. Chuck them all in to a pan with some coconut oil, add 1tbsp of paprika and 1 tsp of chilli flakes (alter to suit your taste) and add passata. Job done. Let sit 10 minutes to "marinate". Spread the cauliflower on a baking sheet. Broil in the oven for 3-5 minutes, until the cauliflower is beginning to char on the edges. Heat the olive oil in a large skillet over medium heat. Add the onion, cook 5 minutes. Add the remaining garlic and ginger, cooking another 5 minutes. Stir in the spices, cook 1 minute. ⠀⠀ Add the tomato paste and remaining 2 cups coconut milk. Stir to combine, bring the sauce to a boil, cook 5 minutes or until the sauce thickens slightly. Stir in coconut oil. Add the cauliflower and any juices on the pan. Cook 5 minutes, until the sauce coats the cauliflower. Stir a handful of cilantro. BROCCOLI TOFU STIR FRY Recipe: 1 bag fettuccine style @miraclenoodle 1/2 block tofu Arrowroot starch Salt and pepper Broccoli @sanjtamari GF soy sauce Nutritional yeast -Preheat airfryer to 400° for about 3 min. -Chop tofu into cubes and toss in 1-2 TBSP arrowroot flour, salt, and pepper. -Throw tofu and broccoli (as much or as little as you want) into the air fryer and cook for about 10 min. or until nice and crispy. -While the tofu and broccoli cook, strain your miracle noodles and rinse with cold water. -Place the noodles into a dry pan and cook for about 2 min. -Combine noodles, tofu, and broccoli. Drizzle with GF soy sauce and sprinkle nutritional yeast on top (optional). There you have a super quick and easy, Gluten Free lunch or dinner idea!

Rutabaga with Peppers and Potato 🥔🌶🥗⁣ ⁣ To be honest I burnt the rutabaga and potatoes a little bit. This is because I left the kitchen to something else and then smelt something burning. I think I saved them tho, it was still edible haha. ⁣ This was my first time trying rutabaga. It was interesting, it has a slight beet taste and it cooks fater than a beet. When I cut into it, I was taken back by its vibrant yellow color. ⁣ I am happy that this combination of veggies turned out to be great despite some mishaps and unfamiliar vegetables 😏⁣ ⁣ Veggies:⁣ - Red skinned potatoes ⁣ - Rutabaga ⁣ - Green bell pepper⁣ - Orange bell pepper ⁣ - Swiss chard leaves and stems ⁣ ⁣ Seasonings:⁣ - Salt⁣ - Pepper ⁣ - Cayenne pepper⁣ - Cinnamon ⁣

Quick lunch today: leftover whole wheat fusilli pasta with some Pan Fried Marinated Tempeh. Tempeh is an excellent source of protein: 16g per 3oz serving (!) Plus 6g of dietary fiber, it is also a great source of nutritious prebiotic. Sounds amazing, right? Well, personally I hesitated making tempeh for the longest time. Not sure why. Looks unappetizing maybe? At least it was to me... I marinated it the night before to save time next day. When it came to lunch time, I simply threw it on a pan and fried for a few minutes on each side until golden brown. That's it. And let me tell you, it was DELICIOUS! Tempeh by itself doesn't really have much flavor but it surely does have quite a unique texture that I apparently like! Now, the marinade, exactly what's going to give tempeh flavor: ✓ 3 tbsp of peanut butter (or less of you are not the biggest fan of it) ✓ a pinch of salt if using unsalted peanut butter ✓ 3 tsp of chili garlic sauce or Sriracha ✓ 4 tsp of sesame oil ✓ juice of half a lime ✓ 1 tbsp of freshly grated ginger (or sub with 1/2 tsp of ground ginger ✓ 1 tsp of maple syrup ✓ 3 tbsp of water Cut tempeh into slices or cubes and add into a bowl with marinade. Stir to cover all sides of tempeh with marinade. This is great news for anyone that doesn't like gluten free bread or just craves a good old fashioned slice of no nonsense toast. 🍞 Today's recipe features spicy quinoa, meaty black beans, crispy sourdough croutons and tons of flavour, all at FODMAP safe servings. It's delicious hot or cold so it's a great make ahead option to take to work or school. I served mine Mexican style with avocado and homemade sour cream on the side. The sour cream takes 30 seconds and 3 ingredients to whip up so there's no excuse not to dollop it all over. Vegan Shepard’s Pie 🥧 🌱⁣⁣ ⁣⁣ I have been craving this delicious comforting meal for so long I decided to re-create with a vegetable twist 🍆🍅🌿 Now I love traditional Shepard’s pie 🥧 but I’ve been vegetarian for about 7 years and I needed to revamp this recipe 😛✨🎉⁣⁣ ⁣⁣ This dish is loaded with fiber, protein, vitamin C, potassium and iron❤️ Not to mention it’s soooo flavorful, filling and packed antioxidants!! 🙌🏼💕⁣⁣ ⁣⁣ Vegan Shepard’s Pie 🥧 🌱 ⁣⁣ ⁣⁣ Ingredients:⁣⁣ ⁣⁣ - 1 large head cauliflower cut into florets ⁣⁣ ⁣⁣ - 2 tbsp. @kitehillfoods cream cheese ⁣⁣ ⁣⁣ -1 eggplant, diced ⁣⁣ ⁣⁣ -1 16oz can low sodium canned chickpeas⁣⁣ ⁣⁣ -2 tbsp. Tomato paste ⁣⁣ ⁣⁣ -1/2 cup dry red wine⁣⁣ ⁣⁣ -1/3 cup low sodium tomato sauce ⁣⁣ ⁣⁣ -2 medium zucchini, diced ⁣⁣ ⁣⁣ -1 cup baby bella mushrooms, diced ⁣⁣ ⁣⁣ - 2 large carrots, diced⁣⁣ ⁣⁣ -1/2 yellow onion, diced⁣⁣ ⁣⁣ - 2 garlic cloves ⁣⁣ ⁣⁣ - 2 tsp Italian seasoning ⁣⁣ ⁣⁣ - Salt & Pepper⁣⁣ ⁣⁣ - 2 tsp extra virgin olive oil⁣⁣ ⁣⁣ - 1 tsp garlic powder ⁣⁣ ⁣⁣ - 1 tsp red pepper flakes⁣⁣ ⁣⁣ Directions:⁣⁣ ⁣⁣ 1. When skillet is heated add onion and carrots and sauté for 3 minutes until tender⁣⁣ ⁣⁣ 6. Add spices, salt & pepper and add zucchini, eggplant and mushrooms to skillet⁣⁣ ⁣⁣ 7. Sauté vegetables until tender about 3-5 minutes⁣⁣ ⁣⁣ 8. Add tomato paste, sauce and wine 🍷 then cook for another 5 minutes and let some liquid evaporate. ⁣⁣ ⁣⁣ 9. Add canned chickpeas after they are drained and rinsed with cold water and cook until warmed through⁣⁣ ⁣⁣ 10. Add vegetable mixture to 13 x 9 baking dish that has been sprayed with olive oil.⁣⁣ ⁣⁣ 11. Top with cauliflower mash and bake for 10-15min until golden. ⁣⁣ ⁣⁣ 12. A whole grain roll generously covered with curry hummus from @masmasmaza, sliced tomato, avocado, a big splash of yesterday's leftover carrot salad and a slice of @violife_foods vegan cheese. 🌱Nacho bowl goodness!🌱 . #Repost @tessbegg • • • • • Nacho bowl with coconut sour cream by @tessbegg . Coconut Sour Cream Ingredients: 1/3 cup natural coconut yoghurt 1 tbsp lime or lemon juice 1/4 tsp apple cider vinegar 1/4 tsp salt . Method: 1. Combine ingredients in a bowl until smooth. . Bean Mix Ingredients: 1/2 brown onion, diced 1 garlic clove, crushed 1/4 cup tomato paste 2 tsp ground cumin 1 tsp ground coriander 1/2 tsp paprika 1/4 tsp chilli 2 tsp parsley flakes 15oz can of black beans, drained and rinsed 1/2 lemon, juiced 1/2 lime, juiced Salt and pepper to taste . Other ingredients: 2-3 handfuls corn chips 2 cups shredded lettuce 5 cherry tomatoes, halved 1/3 cup shredded cabbage 1/3 cup corn kernels 1 chilli, diced 1/2 bell pepper, diced Vegan cheese (optional) . Method: 1. In a pan on medium heat cook the onion and garlic in a splash of water until translucent. Stir through the tomato paste and spices cooking until fragrant. 2. Add in the black beans, lemon, lime, salt/pepper and cook for 5 minutes on high heat, if needed add a splash of water. 3. Add the corn chips to a bowl and top with the bean mix and other ingredients. 4. 🌱Quick, easy, delicious and filling!🌱 . #Repost @lifestylesofavegan • • • • • Greek-style tomato stew by @vegansrecipe . Tomato Stew: Ingredients (for 1 person): 1 medium russet potato, peeled & chopped 1 large tomato, chopped finely or pureed (I used fresh, but canned works also) 1 garlic clove 1/4 cup kalamata olives 1 tsp oregano & salt . Steps: In a pot, heat up 1 tbsp olive oil. Add potatoes and salt. Saute them for ~3-5 minutes. Add garlic and saute for a minute. Add olives and give it another minute. Add tomatoes (chop them finely with hand or food processor) and oregano. Lower heat, cover and simmer for 30 min until tomatoes can be easily pierced with a fork. . Eat with some greens on the side. Salad below: . Simple roast chickpea & cauliflower salad recipe 🌱 I made this yesterday to eat while I’m at uni this week! Only a few ingredients, very easy to make and also super yummy! Ingredients - 1/8 cup extra virgin olive oil - juice of 1 lemon - 2 tbsp garlic powder - 1 head of cauliflower - 2 cans chickpeas - baby cos lettuce - tahini Method 1. Preheat oven to 200 degrees fan forced and line a large baking tray with baking paper 2. Cut the cauliflower head into small/medium sized chunks and place in a large bowl 3. Drain and rinse 2 cans of chickpeas and place in the bowl with the cauliflower 4. In a smaller bowl combine olive oil, lemon juice and garlic powder 5. Pour the olive oil mixture into the bowl with the cauliflower & chickpeas while mixing well 6. Pour cauliflower and chickpeas onto the baking tray and place in the oven for 30-40 minutes (tbh I forget how long I cooked them for so check after 30 mins and see how they’re looking) 7. While the chickpeas & cauliflower are roasting, cut the lettuce and place into your food prep containers 8. Once cooked, divide the chickpeas and cauliflower between containers 9. Drizzle with tahini and they’re good to go! Note: you can add any other herbs and spices to the cauliflower & chickpeas and also change up the leafy greens! This is just a super simple idea that you can obviously manipulate many different ways to suit you! ❤️❤️😊😊
