Last night I finaaaally got my appetite back properly after a few days of feeling shit 🤒 And how best to celebrate than with a big bad burger?? 🍔 Stuffed full of pulled @eat_oumph , it was our first time trying this & we were SO impressed 🙌🏼 The texture & taste was just spot on to actual meat 🍗 We drizzled extra bbq into the roll & added a few leaves then served up with some sweet potato chips & my all time fave little guys - peas 💚

Tartufini cocco&ciocco. Chiamati così fanno gola vero? Infatti sono spaziali! I fanatici del fitness le chiamano "energy balls" perché sono senza zucchero, senza olii e burri e senza farina ma ricchi di energia. Io però detesto che il cibo venga inquadrato solo tramite la tabella dei nutrienti...a quel punto tanto vale bersi beveroni e polverine, ma il cibo è molto di più di carboidrati e proteine. Infatti questi tartufini sono una piccola coccola, perfetti da mangiare al volo prima di uscire di casa e correre al lavoro, ottimi come dolcetto dopo pranzo o come merenda, belli da servire insieme al caffè per fare una versione vegana del café gourmand. Insomma...è sempre l'ora dei tartufini! Sono facilissimi, senza cottura e si fanno con 4 ingredienti: 100 gr datteri denocciolati e ammollati 10 min in acqua tiepida 50 gr mandorle 50 gr farina di cocco 2 cucchiai cacao amaro 4-5 cucchiai di acqua (se necessario) Farina di cocco per decorare Frullare nel mixer mandorle+cacao+cocco, aggiungere i datteri e l'acqua se necessario, frullare ancora. Formare delle palline con le mani, passarle nel cocco e sono pronte! Durano qualche giorno in un contenitore ermetico, tenendoli in frigo si compattano ma sono sempre buonissimi. VEGAN BOLOGNESE! ⁣ ⁣ Perfectly creamy and flavoursome, and ‘meaty’ enough to fool any carnivore! Served with tagliatelle, steamed broccoli and romaine heart lettuce.⁣ ⁣ Recipe (serves 4):⁣ - 2 red onions, diced⁣ - 2 medium carrots, sliced⁣ - 2 stalks of celery, sliced⁣ - 320g mushrooms, sliced⁣ - 1 tsp garlic powder⁣ - 1 tsp oregano⁣ - 1 tsp parsley⁣ - 2 tsp basil⁣ - 120g dehydrated soya mince/textured vegetable protein*⁣ - 400ml veggie stock/bouillon⁣ - 2 cans chopped tomatoes⁣ - 2 tsp maple syrup⁣ - 4 tbsp runny tahini⁣ ⁣ Sauté the veg over a medium heat until softened. Add in the garlic, herbs, soya mince/TVP and stock, stir and reduce the heat. Add in the chopped tomatoes and maple syrup, and allow to simmer for at least 30 minutes. Finally, stir through the tahini, and serve with your favourite pasta!⁣ ⁣ *I use dehydrated soya mince (TVP) as it’s super cheap, but this can be subbed for pre-prepared soya mince (just omit the veggie stock as it will have already been rehydrated).

Hey guys! Long time no post! The semester started up a few weeks ago and I’ve been busy but doing good! Tonight I made one of my favorite dinners. Veggie curry with grilled pineapple _____________________ Precious time: 45 mins _____________________ What’s in it: Chickpeas Green peas Carrots Curry sauce: curry powder, coconut milk, tomato paste, onion, lime Roasted kale & caulifower (with lemon, cayenne and salt) Roasted pink-purple potatoes (@freshharvest), not to be confused with Kielbasa 😂 _____________________ Sauté onions in oil, add chickpeas and curry powder, add curry paste and coat chickpeas. Add lime juice to avoid burning. Add coconut milk, carrots & peas. Bring to a boil and then simmer for 20-30 mins on low heat. Roast veggies with lime, salt and cayenne pepper for a kick. (Held the cayenne on the kids portions) Broil pineapple. Serve it up all together! _____________________ My two cents: Keep the sweet and salty vibes going by adding fruit toppings to savory dishes. I can’t even deal with life if it wasn’t for easy meals like this 😂 - I’ll leave the recipe down below for you guys if you fancy this?! Happy Wednesday!! 💚⁣ ⁣ ⁣ Creamy Curry Pasta:⁣ Serves 1-2:⁣ - 2 servings of dried pasta of choice (I used wholewheat penne) ⁣ - 1/2 medium/large onion, diced⁣ - 1 clove garlic, minced or 1tsp garlic granules ⁣ - a few closed cup mushrooms, sliced⁣ - 1/2 a 400g can red kidney beans, drained & rinsed⁣ - 1/2 can coconut milk ⁣ - 1/2 tsp ground cumin⁣ - 2 tsp medium curry powder⁣ - a handful fresh organic spinach⁣ - juice of 1/2 a lime⁣ - salt & pepper to taste!⁣ ⁣ 1. Cook the pasta according to packet instructions, then also add the red kidney beans to the same pan as the pasta to cook together until al dante. ⁣ 2. Meanwhile, sauté the onion, garlic & mushrooms in a frying pan with a little water/oil for 5-10 mins until the mushrooms are soft. ⁣ 3. Turn the heat down to low, then add in the cumin & curry powder. Stir for 1 min until fragrant.⁣ 4. Pour in the canned coconut milk & squeeze of 1/2 a lime. ⁣ 5. One the pasta is cooked, drain the pasta and kidney beans from the pan through a colander, then stir them into the pan with the curry. ⁣ 6. Bring the heat up to a medium setting, add a handful of spinach and stir frequently for 5 mins until the spinach has wilted. ⁣ 6. Season with salt and pepper. Serve once piping hot and enjoy! ⁣

Almond filled croissant For the syrup: Boil 1/2 cup water, put 50g powdered sugar, 1 tbsp almond meal until totally dissolves. Let it cool, then add 1 orange zest and 1/2 tbsp vanilla aroma For the filling: 70g almond butter 15g powdered sugar 1 tbsp almond meal 3 tbsp apple sauce Pinch of salt 1/3 tbsp vanilla aroma Combine together in a food processor or mixer until smooth. Instructions: Cut the croissant half, and dip the inside of them in the syrup. It has to be moist, but not dripping. Spread the almond filling generously. Put the croissant halves together, and spread almond filling on the top. Throw sliced almonds on top. Did somebody say do you want chips with your vinegar, seriously I need so much it burns my eyes haha, my family think I have a vinegar problem and need vinegar rehab😂!! So tonight we had a mix of chicken style burgers from @frysfamily and @birdseyeuk green cuisine pea protein burgers, we have these because too much soya upsets my little guys stomach we had these topped off with lettuce, tomatoes and cucumber, I had @followyourheart veganaise with mine and the family had ketchup, now I love buns and we eat them with all kinds of things but tonight we had @lovebakerstreet buns and they were incredible, so light and fluffy, they were truly the most delicious I’ve ever had and I’ve had a few, we got them from @thefoodwarehouseuk if you want to find some. We had these with Maris piper chunky chips from @icelandfoods and I am a HUGE fan of wok fried greens from @wagamama_uk so I made my own with just broccoli because I saw @studentlifevegan post today and there broccoli looked lush! I must say I am now stuffed but still have room for a few glasses of Prosecco because it is Friday after all. Vegan Enchilada Soup INGREDIENTS 2 tbsp of avocado oil 3/4 cup chopped onions 1 bell pepper 4 cloves garlic, minced 2 cups enchilada sauce (mild) 2 Tsp Paprika 2 tsp of cumin 2 tsp garlic powder 2 cups vegetable broth 2 15 oz black beans 1 cup peeled corn 1 cup restaurant style cup corn chips. (Stale are good too) salt, pepper to taste 1 jalapeño Vegan shredded cheese Avocado for garnish Method: In a deep sauce pan over a medium heat, sauté chopped onions in 2 tbsp avocado oil. Add garlic and sauté for about 4 min. Next add enchilada sauce and seasoning, black beans, corn, vegetable broth. Cook for 15 min over a medium heat. Add the corn chips. Serve the soup In the bowls. Aubergine for the third day in a row? Yes, really! This was my lunch today, although it was Tupperware chic. I love aubergine at the best of times but since I’ve not gone down the tofu/seitan/meat alternative route this month, it’s really been one of my best food friends! This time it’s roasted aubergine and carrot couscous. I decided to try out @iamsurvivingvegan Pepper Steak recipe and served it along with steamed veggies and a brown rice quinoa mix.
