Meal planning is something I've started doing each week, I find it quite hard but it really helps me during the week. If the plan says overnight oats, that means I have to make it the night before. If my breakfast is already made by the time I get downstairs in the morning, that means I'm not sticking 7 hash browns in the oven, and eating blocks of cheese whilst waiting for them to cook. Life changing shit! I'm trying to lose a bit of chubb and I'm hoping that a meal plan will stop me from ordering Father John's all the time, or just eating loads of pastry. It means I use what is in my fridge and what I have fresh, and it is also very soothing in an OCD capacity. I don't always manage to stick to the plan, but it definitely helps, and it's also nice to kind of book time with myself to cook and create (plus I get a bunch of uninterrupted time to listen to my murder stories). #Vegan #Veganuary #VeganMealPlan #VeganMealPrep #GoVegan #ForTheAnimals #MealPlanning

This lunch and snacks includes: 🦎 Salad of rice, quinoa, grated zucchini, carrot, capsicum, spring onion, snow pea sprouts and homegrown tomatoes with salsa. 🦎 Chia pudding with coffee granola and berries. 🦎 Cucumber, almonds and a nectarine. 🦎 3 pancake muffins (recipe from @nikkivegan ) It's been awhile since I've made chia puddings. But they are SO easy to prep ahead for breakfast or a lunchbox snack. My trick is to use coconut yogurt, then they are fool proof! To make: Combine 1 tbsp chia seeds, 2 tbsp plant based milk, 2 tbsp coconut yogurt, 2 tsp shredded coconut and 1 tsp maple syrup. 😋 I used unsweetened almond milk and natural coconut yogurt - that way I control the sweetness. Making some sweet potato and black bean breakfast burritos for the freezer. Was going to chuck some scrambled tofu in there too but I’ve never cooked tofu before and didn’t want to fuck up my burritos and give myself loads of stress before work. I’m basically sautéing sweet potatoe, garlic, white onion and sweet red pepper. Ill top with kale and a tomato and avocado salsa before wrapping in wrap, parchment paper and then putting in the freezer. I can grab one each morning and pop in the microwave for 2 minutes; giving me something warm & tasty for the walk to the office. Vegan Avocado, tomato and basic pasta 🍝 . This is a super quick and easy —> less than 30 minute meal... lots of fresh veggies perfect for a quick ‘throw it all together’ lunch 🍴 . INGREDIENTS (2 portions) - 160g chickpea fusilli from @aldiuk - 1 avocado 🥑 (chopped) - 4 salad tomatoes 🍅 - a bunch of fresh basil 🌿 - 1 tbsp olive oil - 1 tsp garlic granules 🧄 - chilli flakes, salt and pepper . 1) Boil the pasta untill soft (chickpea pasta is fast to cook - mine only took 10-12 mins) 2) drain the pasta 3) in a frying pan, add the olive oil and toss in the pasta. 4) add the remaining of the ingredients and stir well 5) the avocado and tomato with soften to create a saucy texture. 6) serve with a dash of lime . Kcals per serving - 360 (15g protein, 19g fat,31g carbs) . Give chickpea pasta a go if you are looking for a higher protein alternative to pasta... edamame, beetroot or soy are also good sources of protein pasta! @aldiuk do have a fab range at the moment!👏🏼 . Recipe below ✨1/2 cup almond meal ✨8 medjool dates ✨1/2 cup oats ✨1/4 cup cacao powder ✨ 4 tbsp coconut oil Soak the dates in hot water for a couple of minutes, then drain. What you see: meal prep inspo (as long as you like tofu and quinoa and spinach). What you don't see, besides the dirty dishes: my messy brain that works best when it gets healthy food, prepared so that it's ready to be shoveled down my gullet when needed. Shopping, cooking, and arranging took work, but damn, is it important for my mental health. Four months without a kitchen, during which I let my diet default to whatever could be warmed in a microwave or grabbed from a drive-thru window, gave me a painful reminder me how much food affects my mood. Anxiety can be managed, for me at least, when I set the table with tools to help me function. That includes exercise, sure, but almost as critical is the right brain fuel.

Bring back an oldie but goodie! Check out this Vegan Sweet Potato and Black Bean Breakfast Burrito recipe 👇 INGREDIENTS 1 sweet potato, cubed 2 Tablespoons olive oil 1 teaspoon chili powder 1/2 teaspoon garlic powder 1/2 teaspoon paprika 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon cumin 1/4 teaspoon cayenne, optional 1 can black beans, drained and rinsed 1 cup salsa, divided 6 tortillas, soft taco size INSTRUCTIONS Preheat the oven to 400 degrees. In a medium bowl mix together the sweet potato cubes, olive oil, chili powder, garlic powder, paprika, salt, pepper, cumin, and cayenne. Spread out the sweet potato mixture in an even layer onto a baking sheet. Bake for 25 minutes. When the sweet potatoes are done, throw the black beans onto the hot baking sheet and mix them together. Assemble the burrito by pouring 1/2 cup sweet potato and black bean filling into the middle of a tortilla. Evenly pour 1 Tablespoon of salsa on top of the sweet potato mixture, and roll the tortilla into a burrito. Once all of the burritos are assemble, heat a large skillet up over medium high heat. When the pan is hot place each burrito into the skillet seam down. Brown for around 2 minutes then flip the burritos over and brown for another 2 minutes. If you promise not to tell anyone, I’ll share the secret spot for the best Vegan Banh Mi in Southern California. @thiendangvegetarian is in Garden Grove. I discovered it by accident. Its very unassuming from the outside but man oh man the Banh Mi is outrageously good. If you’re unfamiliar with Banh Mi, its a traditional Vietnamese sandwich made with Vietnamese style French Bread. I believe the bread contains rice. Inside you will traditionally find meat with mayo, cilantro, jalapeño slices, and cabbage/carrots with a nice oil drizzled over. This great vegan restaurant uses some delicious meat substitutes for pork, chicken, and steak. Some people have a hard time transitioning to a plant based diet because they miss the textures of meat.
