This cold weather calls for some potato soup. 🍜😋 Made by my kiddo. ✔ 3/4 cup soy milk ✔1 tbs vegan butter ✔ A splash of veggie oil ✔1 yellow onion ✔ 4 cloves of minced garlic ✔ 5 russet potatoes ✔1 tsp of paprika ✔ 1 tsp of thyme ✔ 5 cups of veggie broth ✔ 1 bay leaf ✔ 2 tbsp of nutritional yeast ✔ 1/2 tsp of liquid smoke ✔ 1 tbsp lemon juice. ✔ sea salt and cracked pepper to taste. I topped mine with home made cashew based sour cream, earth grown vegan cheese, and fried onions. 😍 saute chopped onion in the oil and butter on med heat until translucent. Add garlic and saute another 1- 2 min. Add potatoes, paprika, thyme, salt, and pepper. Saute another 3-4 min. Pour in veggie broth and add bay leaf. Stir in liquid smoke and nutritional yeast then allow it to come to a boil. Simmer 15-20 min until potatoes are tinder. Remove from heat and add soy milk and lemon juice. Blend and add toppings. We picked up some #LightLife Smart Dogs , some pillsbury crescent rolls, and plant based cheese from our local grocery store, and rolled up some vegan #PigsInABlanket ! Start by cutting your smart dogs in half. On a baking sheet, roll out a triangle of dough and place your smart dog half & a pinch of PB Cheese right in the center. Roll dough over to create a croissant , and in to the oven for about 10 minutes at 350. Even your carnivore friends will love these. Sometimes I find that at the end of the week, I haven’t used up all the produce I bought the week before. Usually it’s just because I end up eating less than I anticipated! One of my favourite ways to use up what I have left before it goes bad is to make soup, especially in the wintertime. It’s such an easy and delicious comfort food (and it’s so hard to mess up) that is perfect for eliminating food waste. I used vegetable broth and some spices as the base for this one and added red bell peppers, baby spinach, celery, and some TVP for a bit of added protein. . What’s your favourite kind of soup? Enjoying a little late night snack from some leftover meal prepping. I used to make this vegetable medley long before going vegan and eat it as a single meal on it's own.... perhaps my inner self was trying to tell me something ;) It's still a favorite for me. Best part I decided to make it this morning and this afternoon I called my grandmother to do a little grocery shopping chit chat. And she asked me if I was still eating my yummy vegetables in oil and vinegar. 😍 I loved that she remembers me making it when I last visited and was so funny and coincidental she brought it up as I was strolling along with all the ingredients in my cart. Yesterday’s butter tofu 🤩 It’s amazing to me that you can veganize just about any dish. Butter chicken was one of my favourite things to eat pre plant-based diet and this nearly hit the spot! I was missing fenugreek and didn’t have any cashews to make a cashew cream so I used coconut milk instead. Definitely would be a 10/10 dish if I had those ingredients! Hope you're having a great start to your weekend 💕 - 1/2 cup of cooked quinoa - 1/2 cup of oats (I used quick oats) - 2 flax eggs - 1/2 cup of dried cranberries - 1/4 cup of walnuts (chopped) - 1/4 cup fresh parsley (chopped) - 1/2 red onion (chopped) - stalk of celery (chopped) - 1 small zucchini (shredded) - large clove of garlic (minced) - 2 tbsp of oat flour - 1 tsp of dried rosemary - 1 tsp of dried thyme - 1 tsp of garlic powder - 1 tsp of onion powder - 1/2 tsp of dried oregano - 1/2 tsp of pepper - 1/2 tsp of salt Method: prepare flax eggs - mix two tbsp of ground flax seeds with five tbsp of water and let sit for 15 mins. Shred zucchini and let sit in a colander in the sink with a little salt, this draws out the moisture. Prepare the rest of your veggies and grind the spices with a mortar and pestle. Place the zucchini in a paper towel or dish cloth and ring out water and place in a large mixing bowl with the rest of the ingredients and mix well. Form mixture into balls then flatten with your hand or the bottom of a glass to make into patties. Fry in alittle coconut oil for 4-5 mins on each side. Enjoy🌿

Sun-Dried Tomato Tahini Pasta • Ingredients: 16 oz chickpea pasta 3 Tbsp sun dried tomatoes 1/4 cup tahini 1/2 cup hummus 1.5 Tbsp lemon juice 2 Tbsp water 1/3 cup pasta water 3/4 cup sun dried tomatoes Cook pasta according to package instructions. Blend 3 Tbsp sun dried tomatoes, tahini, hummus, 2 Tbsp water, and lemon juice until combined. Sauté the cooked pasta with 1/3 cup pasta water and 3/4 cup sun dried tomatoes. •|| EGGPLANT CHICKPEA STEW WITH MINT CHUTNEY ||• I don’t know about you but when I start reading words like “chutney” I start thinking this recipe is WAY out of my league. I’m promising you that this is dish is actually much simpler than it sounds with a taste that is drool worthy 🤤! Thanks @kayladurante for the inspiration, made for such a delicious, warm meal on a cold night! ❄️ Recipe: a) Stew: 2 long, thin eggplants, cut into 1/4” thick coins 1 can chickpeas, drained and rinsed 2 large beefsteak tomatoes, chopped 1 white onion, thinly sliced 2 cloves of garlic, finely minced 1 1/2 tsp Garam masala 1/8 tsp cayenne pepper 1 tsp curry powder 1/2 tsp cumin 1 tbsp paprika 1/4 tsp black pepper b) Chutney: 1 cup fresh mint leaves 1 cup fresh cilantro 2 stalks of scallion, cut into 1 inch pieces 1 1/2 tbsp lemon juice 2 tbsp olive oil 1/2 tsp sea salt Directions: 1) Preheat oven to 400. Place eggplant coins in one layer on a large baking sheet. Drizzle with olive oil and top with sea salt to taste 2) Roast in oven for ~10-12 mins until soft/ tender. Set aside 3) In a large sauce pan, heat 1 tbsp olive oil over medium heat. Add onion and cook for 4 mins until soft and translucent 4) Add garlic and cook for 2 additional mins, stirring often 5) Add spice mix and cook for 30 secs 6) Add chickpeas, tomatoes, 1/2 tsp of olive oil and 2 tbsp of water; cover partly and reduce heat to low. Simmer for 15 mins until tomatoes cook down 7) Add eggplant, cover completely and cook for an additional 10 mins. Stir every 2-3 mins 8) For chutney, place all ingredients in a blender and pulse until the liquid chutney forms. Add additional lemon juice or oil as required Enjoy this tasty dish with 1.5 tsp of chutney and a dollop of plain Greek yogurt! S'MORE CHOCOLATE BROWNIES by @klaraslife 🔥 Recipe: INGREDIENTS⠀ 2 tbsp of flaxseed eggs, (2 tbsp of ground flaxseed + 5 tbsp of water)⠀ 112 g of vegan butter, melted⠀ 100 g vegan sugar⠀ 100 ml almond or oat milk⠀ 1 tsp Baking powder⠀ Pinch of sea salt⠀ 50 g unsweetened cocoa powder⠀ 130 g wheat flour⠀ 30 g of ground hazelnuts⠀ 100 g * wholegrain biscuits/cookies⠀ 100 g vegan chocolate drops⠀ 200g vegan mini marshmallows⠀ ⠀ Preheat the oven to 170 degrees C/350F.⠀ Line a brownie shape with parchment paper and cover with biscuits.⠀ Mix flaxseed with water, stir and set aside.⠀ Mix melted butter, sugar and milk.⠀ Add flaxseedegg.⠀ Mix the flour, ground hazelnuts, baking powder, sea salt and cocoa powder well.⠀ Add the liquid ingredients and stir.⠀ Finally, add a portion of the chocolate drops.⠀ Put the dough into the prepared baking tin and smooth it out.⠀ Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle mini marshmallow evenly over the top. Return to the oven and continue to bake for an additional 2 minutes. Marshmallows will warm and puff up. If the marshmallows aren’t toasted enough, turn on your broiler for 1 minute, being careful not to overbake. Remove from oven and allow the brownies to cool completely in the pan set on a wire rack. Recipe below: Recipe: 1 cauliflower 1,5 dl (2/3 cups) gluten-free flour 1,5 dl (2/3 cups) water 1 tsp salt 1 tsp garlic powder 1/2 tsp white pepper 1 dl (1/2 cup) teriyaki sauce 1 tsp sriracha Dip: Oat fraiche + 1 tbsp almond milk + cilantro Preheat oven to 225c (435F). Wash and cut cauliflower head into bite-sized pieces. Mix the water, flour and spices in a medium mixing bowl. Mix until the batter is thick and is able to coat the cauliflower. Dip the cauliflower florets in the batter. Lay the cauliflower single layer on lined baking sheet. Bake for 20 minutes until golden brown, flip the florets over halfway through to get all sides golden brown and crispy. Thanks so much to @earthyandy for the inspiration!! We have dubbed this meal “hot salad”. We have a large pile of mixed greens, topped with baked broccoli, cauliflower, potatoes, sweet potatoes and homemade plant based cheese sauce. Im absolutely loving this take on a creamy #veganized #chickenpiccata. Not only was this quick and simple to make, but it was also super rich in flavor. Although thick and hearty, the briney capers paired with light and refreshing lemon flavors allow this versatile dish to be served anytime of the year. 2 tbsp of plantbased butter 2 cloves of chopped garlic 1 tbsp of ap flour 1 1/2 cup of vegan chicken broth (@betterthanbouillon ) 1/2 lemon; juiced 1/4 c of cashew cream 10 oz of @gardein meatless crispy chicken strips Capers Fresh cracked black pepper Cashew cream: 1 c of raw cashews; soaked overnight 1 c of water Blend until smooth (For this recipe, I wanted a thick cream. Add more milk to the remaining cream to make cashew milk) In an airfryer or oven, cook 10oz of meatless strips until crispy. Set aside Using a large skillet, heat 2 tbsp of butter. Add both cloves of chopped garlic and cook 2-3 min. Add 1 c of broth. Mix the remaining 1/2 c of broth and whisk it with 1 tbsp of flour to remove all clumps. Add the mixture to the pan, along with the cashew cream and cook until thickened. Squeeze 1/2 lemon and add black pepper to taste. Dip the cooked tenders in the sauce and top with capers and fresh parsley.
