Change your perspective and give it a try. 1 cup cashews 1/2 cup water 4 ounce can diced green chiles (or less, to taste) 1 teaspoon taco seasoning (I make my own) All you have to do is dump these 4 ingredients into a blender and then serve! As I mentioned yesterday here are these epic & easy homemade Samoas! (V & Gf)🥥 Which are apparently called Caramel Delights now?? But I’ll post a more decadent and caramel loaded version of these in a few days;) for now we will stick with the basics! (Which is already pretty epic🙌) For these you will need... •2 cups coconut clusters (or granola, we had sweetened coconut and seed clusters from Costco that needed to be used up as well as coconut granola clusters so I used a mix of those but any will do!) •1/4 cup nut or seed butter (I used @btequator ) •2 pitted medjool dates •1-3 tablespoons of plant milk (just to help it blend) 💫add everything to a food processor and blend until all combined. Press evenly into a donut pan or a parchment lined bread pan and freeze over night, once frozen you can melt chocolate chips and dip the bottoms in the chocolate and then drizzle some over top too (if you used a bread pan, then slice the bars first) place in the fridge to let the chocolate set, then enjoy!😋🍫 I made double this recipe and stored them in the freezer to defrost a couple whenever! What was your favorite Girl Scout cookie (and were you a Girl Scout??) haha I was! And my favorite was the chocolate peanut butter one, surprising right!?😂🙈 Wishing you guys a lovely Friday!☀️

CREAMY PASTA ALERT!! 🤩👅🍝 Roasted Tomatoes & Pepper with a protein kick 💪 By @amelietahiti 💚 - Sauce: 2 big ripe tomatoes 1 bell pepper half zucchini 100g tofu handful cashews salt shallot powder or onion olive oil (optional) - Topping: Pine nuts Basil 100g tofu scrambled - Around 200g raw pasta - Method: 1. cut in half tomatoes & pepper (remove seed and white part) 2. sprinkle salt & powder & a little olive oil (optional), ensure it’s well coated 3. Roast 25min on the grill or 20min at 200C. Veg should be brown! Meanwhile cook your pasta then drain. Wait a little cool down from the veg. 4. Add all remaining sauce ingredients to the blender - taste and adjust salt 5. 🌸 Pot au feu 🌸 Avec la météo à chier ces derniers temps, et les exams, un plat reconfortant s'imposait : le pot au feu (vegan bien évidemment) Je me suis amusée à prendre des légumes colorés pour faire sensations dans l'assiette mais aussi pour les valeurs nutritionnelles comme pour le navet boule d'or qui est une bonne source de minéraux. Pour ce pot au feu vegan j'ai fait le seitan de @la_cuisine_de_jean_philippe que j'ai coupé grossièrement. Vegan and glutenfree pizza 🍕 For the pizza crust you just need three ingredients: 🔸150g buckwheat flour 🔸80ml water 🔸1tbsp oliveoil 🔸salt and dry herbs as you want Blend everything together an bake the crust for 10min at 200°C. I put on some tomato paste but you can also use a green pesto. Put on your favorite veggies and bake for 10min one more time. ⏩Ready to eat The Makros are just for the pizza crust! JALAPEÑO PICKLED RED ONIONS I’m always looking for fun toppings to spice up my meals and this is one of my favorites! They’re perfect on top of any Mexican-inspired dish like tacos, burrito bowls, quesadillas, even huevos rancheros! You can also add them onto a burger for a little kick 🍔 They’re super fast to put together and pickle pretty quickly - I suggest making them the day before you plan on eating them to allow the onions to soften and the flavors to infuse. Tip: You just may want to make some extra if you’re feeding a vinegar-lover like my boyfriend, who likes to eat these on their own, then drink the brine! Ingredients: • 1 red onion, sliced thinly • 1 jalapeño, seeded and diced • ½ cup apple cider vinegar • 1 cup water • 1 tbsp honey • ½ tsp salt Directions: 1. Add the vinegar, water, honey, and salt to a big jar or bowl. Whisk to combine until the honey is dissolved 2. Add the onions and jalapeños to the brine and stir. Make sure the onions are submerged in the brine (add more liquid if you’re using a big onion) 3. RATATOUILLE 💙🤍❤️ healthy & tasty! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m slowly and quietly transitioning to a real Frenchie .. haha😅 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ratatouille is a stewed vegetable dish, originating in Nice (French Provence) and is simply delicious and easy to make! It’s - healthy - gluten-free - low in kcal - low in carb - keto - vegan - flavorful - comforting - easy to make - a delicious main or side - cooked in one pot ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Every time I have a veggie overload in my fridge, I throw them in a pan and create a tasty RAT! 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You can eat it as a main dish with rice, bread (or quinoa), or use it as a nice side dish with a fish or whatever your heart desires! 💛 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🔸RECIPE - 1 eggplant - 1 zucchini - 3-4 tomatoes - 1 bell pepper - 1 onion - 3 garlic cloves (I don’t like garlic - so I skip this) - 1 tbsp Olive oil - 100 ml vegetable broth - 1 tsp paprika - Sea salt (to taste) - 1 tsp dried oregano - 1 tsp basilic - 1/4 tsp ground ginger - or freshly grated - 2 tbsp tomato paste - 1 tbsp balsamic vinegar - Black pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🔹COOKING: 1. Chop all veggies into small pieces 2. Heat oil in skillet and sauté onion for about 4 minutes. 3. Add garlic and eggplant and cook for 3-4 minutes, add broth and all spices. Let simmer on low-medium heat for another 5-6 minutes. 4. Add all remaining ingredients (except tomato paste and balsamic vinegar) and cook for 10 minutes or until veggies are soft. Add more broth if you want it more “saucy” 5. Finally, add tomato paste and balsamic vinegar. 6. Taste and adjust seasoning. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ET VOILA! 🇫🇷 Hope you’ll enjoy this easy recipe.

Adobo Chickpeas 1 can chickpeas, rinsed and drained 1-2 tsp adobo (I used @eatloisa) 1/2 tsp smoked paprika 1 tsp soy sauce . Set oven to 400F. Add chickpeas to a bowl and pat dry with a clean towel. Add seasonings and soy sauce and toss to fully coat chickpeas. Add chickpeas to a baking sheet and place in oven for 25-30 minutes, making sure to turn chickpeas half way (at the 15 min mark). You know what I have realized this week? I struggle to take overhead shots.⠀ ⠀ To me, they are way harder to style and they rarely feel just right… ⠀ ⠀ On the other hand, I noticed that I am the most comfortable taking straight on or 3/4 angle shots. They allow me to really play with the depth of field - I very rarely shoot with a f-stop above f/3.5 💡⠀ ⠀ By sticking to a more shallow depth of field, I highlight the details and textures of a dish and I keep the viewer’s attention focused on that rather than on all the elements around. ⠀ ⠀ One of my goals in March is therefore to practice my overhead shots and get more comfortable with them. ⠀ ⠀ Do you guys have angle you struggle with in food photography? Classic Estonian dessert - rye bread pudding🇪🇪😍. Made better! I think the history of this dessert is that it was made when we didn't have much and then our moms or grandmothers made desserts up😉. For This pudding I removed the crust of a 500g of rye bread and put it in a pot. Then add 500ml of water, raisins 2 apples (small pieces), purunes and some dates. I also added a bit of rum too. Cook until bread and apples are soft (15-20min). ~Vegan Truffle Parmesan~ I often joke that I show love by feeding people. The more I make you, the more I love you. And if you get Truffle Parmesan, then I’m really trying to impress! WHAT I EAT IN A DAY: VEGAN TRACK & FIELD ATHLETE ~ ~ Back with another FDOE post since I haven’t done one of these in a while!! I’m glad to be able to eat pretty much any food now that my mouth is mostly healed from surgery!! Keep in mind that every day of eating is different for me and you should never compare yourself to others!! This is the type of meal I love to cook ➝ easy, yet so delicious, satisfying and nourishing. • INGREDIENTS: 2 onions 4 cloves of garlic 1 tbsp coconut oil 2 sweet potatoes 2 bell peppers 1 can of chickpeas 1/2 broccoli 1 can of tomato chunks 2/3 cup of amaranth 1 tsp of oregano 1 tsp of basil salt + pepper 1 tbsp of smoked paprika 1/2 cup fresh parsley • 1. Place onion, coconut oil and a pinch of salt in a large pot and sauté for about 3 minutes. 2. Add garlic and sauté for another minute. 3. Add the rest of ingredients (except parsley) and cover with water. 4. Cook on medium heat for 30-40 minutes. 5. At the end add chopped parsley. I served the stew with rice and greens on the side. I also sprinkled some hemp and pumpkin seeds on top, because #healthyfats 🌿❤️🙌🏻.

Kokosianka 🥥 Mnie zauroczyła 🥰 Jak jesteś fanem kokosa to też dasz się ponieść 😉 Ugotowałam płatki owsiane na mleku kokosowym razem w wórkami kokosowymi. Banana przecięłam wzdłuż na pół i podsmażyłam z obu stron na oleju kokosowym do momentu aż się zaczął karmelizować. Wyłożyłam owsiankę na miskę. R O S T I de Z A P A L L O ! Receta vegana para chuparrrrrse los dedos. Facil facil: > 1 taza calabaza rallada en crudo > 1 tallo puerro > 1 cda aceite de coco > sal rosada y pimienta 🔛 Pica el puerro y mezcla con la calabaza rallada. Con la ayuda de un repasador limpio o bolsa vegetal escurri y desecha el liquido. Suma condimentos y aceite. Aceita una sarten y volca la mezcla. Cocina a fuego bajo y tapado, una vez cocida abajo dá vuelta y termina de cocinar. Overripe bananas? I don’t call that a problem, I call that a challenge. Though I don’t know that my creative juices were really flowing with this one. Banana nut muffin? Eh, about as basic as me holding my starbucks cup in an oversized sweater and leggings right now. But hey at least you know you can’t go wrong with a classic 🤪 And yes this is my new phone wallpaper so I stay drooling over these. Here’s a lower calorie, healthier version perfect for a snack or pre-workout, or grab a couple and have a filling breakfast! Oh and can’t forget for those of you that care they’re #VEGAN . . 🍌Vegan Banana Nut Muffins🍌 -2 to 3 overripe bananas -1/4 cup maple syrup -1 flax egg (2 tbsp water + 1 tbsp ground flax seed) -1/4 cup monk fruit sweetener or 1/3 cup granulated sugar -1/3 cup unsweetened apple sauce -2 tsp vanilla -1.5 cups whole wheat flour -1 tsp baking soda -1 tsp cinnamon -1/4 tsp salt -1/4 to 1/3 cup walnuts Directions: Whisk together wet ingredients in one bowl and dry in another. Slowly incorporate the two together until batter formed, but don’t over mix. Fold in walnuts. Pour into greased muffin pan or muffin tins, top with more walnuts, bake for 20 mins @350.
