oven baked potatoes and airfried veggies for lunch today 😋 I also made a tofu garlic aioli sauce the other day that I had to use up so I mixed it with some ketchup and mustard to make a yummy dipping sauce for all the veggies. the tofu aioli sounds kind of strange but it's is probably my new favorite sauce! Seems like everyone has been baking their own bread or banana bread and we are no different. Made a refined sugar free banana bread this past weekend. Used the standard flax eggs, plant based milk, and gluten free flour. (Also folded in some dairy free chocolate chips). Topped with walnuts and banana “chips” we crisped up in the oven. I’ve been posting some of my meals on my stories and getting lots of recipe requests. Many of my meals are made by instinct, so it’s hard to tell you the recipe. It’s usually really simple too! I use whole foods, basic seasoning, healthy fats, and simple cooking. I also usually make enough for a few days and eat the same thing every day. Boring? 🤷🏽‍♀️ Maybe, but it works for me. I’ve gotten used to eating simple, portion control and makes it time & money efficient too. So, for the recipe: Black wild rice: I use garlic and sea salt, 4 cups of filtered water to 1 cup of rice. Read the instructions on the bag. I love this rice and it has 7g of protein per 1/3c. Black beans: I rinse them first. Then soak over night with filtered water. I cook with garlic, salt and a little bit of avocado oil. I also use the pressure cooker which cooks it in less than 30 min. I steamed the broccoli and plated 1/2 cup of rice, 1/2 cup of beans and 1cup of broccoli. So easy even a caveman can do it! 😋 tasty and about 15g of #plantbased protein. The second picture, I made a soup a few days ago and I just added some beans to the last bowl I had. Soup I usually start with sautéing the chopped onion and a few garlic pieces over med hear in the pressure cooker, I add the onion salt pepper and some vegan seasoning salt. Then I add the chopped carrots, celery and stir for a few minutes, add whatever other vegetables I have, in this case I added broccoli, then I added filtered water - the water needs to cover the vegetables entirely but not go over the mark inside the pan. You can close the cooker and cook with pressure for like 10 min. Or add farro and let it cook according to the package. Very important: add love! Zucchini Tumeric Breakfast Muffin Mix the following in blender or food processor: 1 medium zucchini 1/2 orange 150gm apple purées 1 tbsp chia seeds 1 egg (optional if vegan) 1/4 cup almond milk 3 tbsp honey Then mix in following: 1 cup buckwheat flour 1 tsp baking powder 1 tsp tumeric chai powder 1 tsp cinnamon 1/4tsp nutmeg Preheat oven to 180 degrees, Pour batter mixture into muffin lined tins. Top with walnuts and bake for approx 25 min or until tested as done. Nice eaten fresh or topped with coconut yogurt. .

It can get depressing reading and watching the news, so cutting down on news consumption and instead taking time to appreciate and be grateful for the simple things that bring me happiness: All of us cousins across different countries and time zones actually getting together on to a group video chat this week - so precious! Having more time to read before I go to bed. My stack of books arrived last week, and I'm really savouring reading books that I have wanted to for a long time but didn't have time for (cliched but true!) Having more time for heartfelt chats with my mum instead of trying to squeeze 10 minutes for her in-between everything else that I need to finish for the day. Hearing birdsong in my neighbourhood, I dont remember the last time that happened! Going for long walks late mornings around familiar, everyday paths which keep me tied to a sense of normalcy in these surreal times. On a side note, in response to the #coronavirus I completed a four day water fast to stop my sugar and crap food addiction and decided to go one hundred percent vegan! Veganism does not have to be boring! This is a "tuna" sandwich (base is chickpeas!!!) With a side of hummus and carrots!!! Also veganism does not have to be expensive. Tonight’s dinner was a yummy Shepard’s pie😍 1-in a large pot over medium heat combine a tablespoon of olive oil,3 garlic cloves and one onion. 2- add two sticks of celery,two carrots and stir. 3-add a handful of mushrooms, corn,garden peas, a tablespoon of tomato paste,thyme,sage and a pinch of salt and pepper. 4-add in vegetable stock(a bit at a time)while stirring and then allow the mixture to simmer. 5-add in some vegetable gravy a little at a time and stir until the mixture thickens up and then pour into a pie dish. 6-add on top of the mixture some pre boiled potatoes that have been mashed with some almond milk and non dairy butter and smoothen out with a fork. 7- place into a pre heated oven until the potatoes on top become crispy& enjoy ❤️#vegan #veganrecipes #veganfood #veganlife #vegandinner #vegandinnerideas #plantbased #plantbasedfoodforeveryone #veganshepardspie #healthyfood #healthyliving #healthyeating #dinner #dinnerideas #dinnerrecipes #yummyfood

Lentil meatloaf!!! Whenever I have this meal I feel like I’m in that 70’s show and I love it. ~ Instead of mashed potatoes I did mashed cauliflower. How much the world has changed. While I’m filled with gratitude that my local grocery store is fully stocked with all of the produce I want/need, I would have never imagined that a time would come when I would be washing each and every piece with soap for 20 seconds each. I made this snack platter for my family and I to enjoy! This is such a great way to get in veggies into your daily eats, and it’s such a fun snack for anywhere, anytime! This oil free hummus recipe is down below. HUMMUS RECIPE 1 can of chickpeas (regular 15oz can) Juice of 1/2 large lemon 1/4 cup tahini 2 garlic cloves 1/2 tsp ground cumin 1/2 tsp paprika Pinch of salt 1/4 cup water METHOD Add everything to a food processor (or blender if you don’t have a processor) and blend until smooth! - Ps: If you have a strong blender, try not adding in all the water at once to make sure your hummus doesn’t get too liquid-y. Just keep on adding more of the 1/4 cup water until the hummus reaches your desired consistency.

MOUSSE DE TOFU Y PLÁTANO. . ¿Ya tenéis pensado el desayuno de mañana? Yo sí!!! Esta mousse proteica de tofu😍. . ¿Tofu dulce? Si, si, a mi también me extrañó la primera vez que lo vi pero os aseguro que está buenísima, sabe como a requeson. . Ingredientes: 250gr de tofu, 1 plátano maduro, 3 cucharadas de mantequilla de cacahuete, 1 cucharada de dulce de datil (sirope de agave o el endulzante que quieras). . Es tan sencillo como trirurar todos los ingredientes hasta conseguir una textura cremosa, si no lo quieres espeso puedes añadir un chorrito de bebida vegetal pero sin pasarte porque quedará tipo yogur en vez de mousse. . Repartir en recipientes individuales y dejar en la nevera mínimo un par de horas. . Servir con mermelada al gusto, yo he usado mermelada casera de arándanos

Deswegen war es mal wieder an der Zeit, für Nachschub zu sorgen und ein neues auszuprobieren 😊 ▪️ ▪️ 🆉🆄🆃🅰🆃🅴🅽 (ingredients) ▪️ 🥥 150 ml Ahornsirup (maple syrup) 🥥 30 g Kokonussöl (coconut oil). 🥥 200 g Haferflocken (oats) 🥥 100 g Mandeln (almonds) 🥥 40 g Cranberries 🥥 40 g geraspelte Kokosflocken (coconut flakes) ▪️ ▪️ 1️⃣ Ahornsirup zusammen mit dem Kokosnussöl in einem Topf schmelzen. ———————————————————————— 2️⃣ Haferflocken dazu geben und solange verrühren bis die Flüssigkeit komplett aufgenommen wurde. Ggf noch Haferflocken hinzufügen. ———————————————————————— 3️⃣ Die Cranberries und Mandeln grob zerhacken und zusammen mit den Kokosflocken im Topf unterrühren. ———————————————————————— 4️⃣ Das Granola auf einem mit Backpapier ausgelegtem Blech verteilen und bei 180 Grad ca. 20 Minuten goldbraun backen. Zwischendurch das Granola auf dem Blech vermischen, um eine gleichmäßige Backfarbe zu erhalten. ▪️ ▪️ 💡 Granola komplett auskühlen lassen und erst dann in ein Behälter umfüllen. 🇬🇧 (eng) For anyone who doesn’t know - I’m obsessed with breakfast 🤫 So, before #coronavirus got to our country, me and my best friend went out for breakfast at @vinyl.gastrocafe The first thing I want to mention is the style of the interior. This cafe is full of vintage stuff and absolutely atmospheric. The neon sign, vinyl records, the lamps!!! 🤩 My friend ordered Avocado toast (10 azn) which she said was hot and big enough, I ordered Benedict Eggs with salmon (12 azn) which was also good (although not as big as the toast), also we ordered my all time favorite Syrniki (11 azn) served with spicy cherry and pistachio ice cream 🤤 which were incredibly delicious, but quite small and overpriced P.S. we were the only ones in the cafe, but the server was so slow and wasn’t familiar with the menu. Maybe it was his first day working there, who knows 🤷🏻‍♀️ Overall, I really liked the food, but the place has few mishaps so I’ll give it a 7/10 for now. If I had to choose today, 5 items that I would HAVE to eat every day for the rest of my life... I actually think brussels sprouts would be one on of them! Anyone else feel me on that? . I’ve luckily had more time to cook since I’ve been at home. It’s been really nice to spend time in the kitchen , which is like therapy to me. Although, I have noticed I’ve been keeping it really simple lately. Simplicity does not equate bland food though! What’s on my plate? Balsamic brussels sprouts with hand-picked (by yours truly!!) PINE NUTS! . Swipe right to see how my brussels sprouts started 👉🏽 Check out below to see a quick recap on how to make this awesome side dish is under 30min 👇🏽 . 1. Peep image number 3 to see the first steps. Simply cut off the stem then slice in half. Toss in oil and minced garlic, then salt and pepper to taste. 2. Image two will show you what I got after I roasted them for approximately 20min at 425 degrees F (broil for 5 min extra for an added crunch!) 3. The first image is your end product! If you don’t have balsamic glaze you can make it from balsamic vinegar. Simply reduce the mixture in a pot while your brussels sprouts are roasting until it’s about 1/4 of the amount you put in. Remove it from heat and allow it to cool and thicken. Use this to drizzle on your crunchy sprouts and sprinkle on nuts of your choice. . Ok so here are the #SweetPotatoBrownies I made on Friday 🍠🍫 Please remember that I do eyeball everything so this is a very rough guestimation of what exactly went into these !! —————————————— 2 sweet potatoes 1 banana 1 cup of oat flour 3/4 cup plain flour 3/4 cup non-dairy milk 3 Tbsp of cacao powders 2 Tbsp of Chia Seeds 7 pitted dates soaked in water 2 Tbsp of coconut sugar Handful of raspberries Chopped dark chocolate or chocolate chips Pinch of cracked salt Goji berries or raspberries to top ——————————————- You will need to pop the sweet potatoes in the oven for about 30-40 minutes and while they are cooking you can get the rest of the ingredients together. Mash the banana, add the milk and chia seeds and let sit. Blitz the dates that have been soaking in water in a blender or food processor (you may need to scrape this a bit) Add 2/3 of this to the mixture and leave the rest to top. Then add all the dry ingredients and when the sweet potatoes are cooked, peel off the skin and add the potatoes to the mixture. Once this is all looking sticky. If it’s too dry add more milk, if it’s too wet add more oat or regular flour (what do I know 😂) Add the raspberries and chopped chocolate and fold until it’s all mixed then pop in a lined baking tray. Too it off by mixing the leftover dates through the top of the mixture then add with some goji berries, raspberries and a sprinkle of coconut sugar. 🌺🌙🤎

It's cous cous, chopped up red onions, green pepper, red pepper, garlic, coriander, mint, strawberries, raspberries, avo and crushed almonds. Seasoned with this smoked himalayan salt my folks got from Namibia then and drizzled lemon juice. So many colours and so much flavour. A real punch to the tastebuds.

Se nos ha acabado el pan, no queda ni un chusquito en el congelador 😱 y como no quiero salir de casa solo por comprar pan, acabo de preparar unos bollitos. No puedo darte la receta exacta, porque ha sido sobre la marcha. Verás, primero puse 100 gr de harina de trigo en un bol, añadí una pizca de sal y removí. Entibié 90 ml de agua y le añadí 15 gr de levadura fresca y una cdta de azúcar. Dejé reposar hasta que salieron burbujitas. Volqué el líquido sobre la harina y empecé a mezclar... esto se pega, añado más harina ..sigo mezclando...vaya, aún se pega, añado otro poquito de harina...y así hasta que ya no se pegaba. Tapé con un trapo y dejé reposar como una hora más o menos. Esa hora después la masa había doblado su volumen, o más!!! La dividí en dos, volví a amasar un poquito y dejé forma de bola, sobre una bandeja de horno con papel vegetal. 40 minutos más de reposo y otra vez habían aumentado de tamaño, siempre tapadas con un trapo. Metí las bolitas al horno a 180° durante 25 minutos, y.... voilà!!!! Aún no los he probado, pero huelen bien. Los he aplastado un poquito con el dedo para ver la consistencia y, además de quemarme, han crujido. ¡¡¡! HAN CRUJIDO !!!! Creo que van a estar muy ricos 😉

CORAZÓN DE TIRAMISÚ!!! ❤️❤️❤️ Esta es mi propuesta para el reto de hoy en #losmartesvegan capitaneado por @myowncanfyland "Postre internacional", pues no siendo yo muy de postres, el tiramisú era mi preferido si salía a comer a un italiano, antes de ser vegana. Y fíjate, aún no lo había preparado, así que hoy me animé. El bizcocho está hecho con: ❤️ 100 gr harina ❤️ 1/2 cdas bicarbonato ❤️ 1 pizca de sal ❤️ 120 ml leche de soja ❤️1 cda vinagre de manzana ❤️ 20 ml aceite de oliva ❤️ 60 gr panela Mezclas sólidos por una parte, líquidos por otra y luego juntas todo y le das caña con las varillas hasta tener una crema sin grumos. Lo pasas al molde forrado con papel de vegetal y horneas durante unos 25 minutos a 180° Debes dejarlo enfriar antes de cortar. Emborrachas cada capa con café fuerte y reservas. El falso mascarpone está hecho con media taza de anacardos, previamente remojados un par de horas, un chorrito de zumo de limón, una pizca de vainilla, una cda de aceite de coco, dos cdas de sirope de dátil y un chorrito de leche de soja (lo justo para conseguir una crema densa, yo la he echado a ojo). Pones el mascarpone haciendo capas entre las capas de bizcocho y rematas con cacao puro en polvo. Después lo he tenido un par de horas en el frigo para que tomara más cuerpo y lo hemos disfrutado muchísimo. ¿Qué te parece? No es complicado de hacer y resulta delicioso.
