Turkish Style Shortbread Cookies 🌟 A delicious way to use my remaining four - I should have more coming in the next few days 🤞 RECIPE ⬇️ (makes 20-30) . Ingredients: 400g plain flour, 1 tsp baking powder, 80g caster sugar, 1 tsp vanilla essence, 100g almond meal, 250g melted buttery nuttelex, 200ml almond milk, icing sugar . Combine flour, baking powder, sugar, vanilla essence, almond meal and melted butter in a bowl and mix well together. Add the milk and work into a ball of dough. . Leave dough to rest for half an hour. Preheat oven to 180C. . After dough has rested, flour your work surface and knead it for a couple minutes. Remove small pieces of dough and shape into balls. Flatten slightly and place on a lined baking tray. Bake for 25 minutes. . Gluten-free vegan bread machine recipe (Dough made in the bread machine, then baked in a bread pan in the oven) It's not too shabby. This is what I used: 1 1/2 cups warm water 2 tsp xanthan gum 1/2 tsp salt 3 Tbsp sugar 2 tsp olive oil 1 1/2 cups Bob's Red Mill flour 1 1/2 cups Bulk Barn all purpose gluten free flour mix 1 tsp breadmachine/quick yeast (put the rest of the packet in the fridge to store) Place the ingredients in the bread machine, in the order listed. Choose the dough setting and press start. When the dough setting is complete, scrape the dough out into a well-greased loaf pan. For dinner tonight, I was inspired by Puerto Rico for International Thursday. I made arroz con gandules, rice with green pigeon peas. It all started with onions and garlic in a pan with filtered water. When they cooked down, I poured in more water along with green, red, and orange bell peppers. I seasoned with pink salt, pepper, cilantro, and turmeric. Then I stirred in tomato paste, green pigeon peas, and brown rice. The flavors were astounding, savory with a mild spice. For dessert, I made tembleque, a coconut pudding. I used coconut milk, agave, salt, and corn starch. Once it thickened on the stove, I put it in the fridge for a few hours to set. Then I transferred it to a plate, sprinkled cinnamon on top, and garnished with coconut flakes. It was sweet, creamy deliciousness melting in my mouth. This Thursday meal was definitely Muy Bueno! Vegan Mushroom Stroganoff . Follow us @veganrecipe.ig By @elavegan . Recipe below: . Ingredients 1 onion diced 2-3 garlic cloves minced 1 tbsp vegetable oil 11 oz fresh mushrooms sliced (*see notes) 4 tbsp white wine (optional) (*see notes) 1 tbsp tamari or soy sauce 3/4 cup vegetable broth or water 3/4 cup plant-based milk or cream (*see notes) 2 tbsp cornstarch 1 tsp onion powder 1/2 tsp garlic powder 1/2 tsp smoked paprika A pinch of red pepper flakes Salt & black pepper to taste 1 tbsp nutritional yeast flakes (optional) Fresh thyme leaves and/or parsley (and/or tarragon) chopped Serve with brown rice or pasta of choice US Customary - Metric Instructions Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute. Now add the mushrooms and fry over medium heat for about 5 minutes. Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. I love adding nutritional yeast flakes as well but that's optional! Bring to a boil. Add cornstarch to the plant-based milk or cream (I used canned coconut milk, however, almond milk, oat milk/cream or soy milk/cream is fine too) and stir to dissolve. Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference. Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice! This creamy mushroom sauce also tastes great over mashed potatoes! .

I used to make these gnocchi for @allthethings_au when we had a stall at @barossafarmersmarket , and then when I ran out of time (remember how we used to do that?!) I ended up scribbling the recipe on the back of a piece of paper for those asking. CHEESY HASH BROWNS Ingredients⠀ 800 g potatoes (peeled)⠀ 2 carrots (grated)⠀ 1 onion (finely chopped)⠀ 3 garlic cloves (minced)⠀ handful of fresh parsley (finely chopped)⠀ 100 g vegan cheese (grated)⠀ 1 tbsp flax seeds⠀ 1 tbsp chickpea flour⠀ 1/4 tsp salt⠀ 1/4 tsp pepper⠀ ⠀ Method⠀ 1. Preheat the oven to 180°C.⠀ 2. Make a flax egg by combining the flax seeds with 2 tbsp of water in a small bowl. Leave to one side so the mixture thickens.⠀ 3. Meanwhile, grate the potatoes, then use a tea towel to remove as much moisture as possible by folding the towel around the grated potato and squeezing the excess water into a bowl.⠀ 4. Add the potato to a mixing bowl, along with the carrot, onion, garlic, parsley, cheese, flax egg, chickpea flour, salt and pepper.⠀ 5. Use a wooden spoon to combine all the ingredients together. Then take a small handful of the mixture and place it on a tray lined with baking paper. Shape the mixture into a small rectangle roughly one cm thick, then repeat until all of the mixture is used up.⠀ 6. 🌟🌟🌟 Leftover Makeover 🌟🌟🌟 Stuffed Chipotle Black Bean Sweet Potatoes 🌶🍠🌶 ••••••• Preheat oven to 425° Scrub, rinse, dry then prick with a fork 3 medium size Sweet potatoes 🍠 🍠🍠 place on baking sheet, rub each potato with Olive oil then sprinkle all sides with Sea salt bake 40 to 50 minutes. Switch oven to a high broil setting after removing Sweet potatoes from the oven. Meanwhile Heat up 3 cups of the leftover Black bean chili and shred about a cup of vegan 🌱 Mozzarella cheese or a good melting cheese of your choice. Split potatoes down the middle fluff with a fork, spoon 1 cup of chili mix into each potato then top with shredded cheese place under broiler in a oven safe dish. Keep an eye out this step takes just a minute or two for cheese to brown. Top with Avocado 🥑 mash (1 avocado mashed with a fork and a sprinkle of Sea salt with a little squeeze of lime) and Vegan sour cream and minced Cilantro. Place beets in foil and roast them at 400F for 1 hr 2. Once beets are soft, chop into small cubes for tartare. 3. Mix the EVOO, onion, celery, vinegar and capers into half with your chopped beets. (Anyone else? 🙋🏼‍♀️) So please enjoy this junk-free junk recipe that tastes like heaven 🙌🏼 Also egg-free, grain-free, refined sugar-free & vegan 🌱 . ✨DOUBLE-DIPPED EDIBLE COOKIE DOUGH BITES W/SEA SALT✨ . Dough ingredients: -1 cup almond flour -1.5 Tbsp coconut flour -3 Tbsp coconut oil, melted -3 Tbsp coconut palm sugar -1 tsp pure vanilla extract -3 Tbsp unsweetened nondairy milk -1/4 tsp fine grain sea salt -1/2 cup stevia or monk fruit sweetened chocolate chips (I used @lakanto) . Dipped ingredients: -Creamy almond butter, as needed -1/2 cup stevia or monk fruit sweetened chocolate chips, melted (add a few splashes of unsweetened non-dairy milk and stir to get creamier consistency) -Sea salt flakes, to your liking . . Instructions: 1. Mix all dough ingredients well and stir in chocolate chips last. Chill in fridge for a few hours. 2. Use a cookie dough scooper to form even sized half domes and press the dome together if needed. 3. Spread creamy almond butter on half of the dough bite evenly, then glob some of the melted chocolate on top of the almond butter & spread evenly. 4. Place the dough bite onto a plate and sprinkle with sea salt. 5. I know you’ve been waiting for this lemon bar recipe and it is finally here! 🍋 🍋 ⁣ ⁣ I have missed lemon bars so much, and knew at some point I wanted to tackle a gluten-free vegan version of this classic dessert. Well, having all the lemons that needed to be used the time had come! My first batch was really good, but I knew I had to make some tweaks and after a few tries I have found THE perfect recipe.⁣ ⁣ These lemon bars have a shortbread crust (I know, right?! 🙀) and a completely vegan filling that still gives that perfect little jiggle 😂 so what are you waiting for? ⁣ The #dEats 👇🏼⁣ ⁣ Crust:⁣ • 1 1/2 cup gf flour⁣ (@bobsredmill ) • 1/3 cup sugar⁣ • 1/2 cup vegan butter (I used @earthbalance sticks)⁣ ⁣ Filling:⁣ • 3/4 cup lemon juice⁣ • 1 1/3 cup oat milk ⁣(@oatly ) • 1 1/2 cup sugar⁣ (@zulkasugar ) • 1/4 cup corn starch • 1 1/2 tsp lemon extract⁣ • Zest from one lemon⁣ ⁣ Directions:⁣ 1. Preheat oven to 350’.⁣ ⁣ 2. Start with the crust. Combine flour and sugar. Add butter and work until a dough is formed.⁣ ⁣ 3. Press dough into an 8x8 pan over parchment paper and bake for about 20 minutes, or until golden brown. (Tip: if you like a thinner crust, add half of the dough into the pan and add accordingly until desired thickness is reached)⁣ ⁣ 4. Place all filling ingredients EXCEPT cornstarch into pot and whisk over medium heat. ⁣ ⁣ 5. Sprinkle cornstarch into pot over whisk to avoid clumps. Bring to a boil until it starts to thicken. You want it to get to a jelly consistency!⁣ ⁣ 6. Pour mixture over crust and let cool at room temp. Put in fridge for about an hour or overnight to chill! Ok so these are not definitely not culturally correct... however we’re under quarantine people. I was trying to think of something fun to make for dinner with what I had in the house since we can’t go out. I had wonton wrappers, potatoes, onions and sausages. Mexican Tortilla Casserole🤤 A recipe packed with some much flavour! . Follow us for daily inspiration🌱: 👉@vegansnacksrecipes👈 . ​Ingredients: 2 tsp olive oil 1 red onion minced 1 garlic clove minced 1 red bell pepper diced 1 green bell pepper diced 1 tsp cumin 1 tsp red pepper powder or chili powder 1 14 oz can black beans drained & rinsed 2/3 can sweet corn (190g) drained & rinsed 1 1/2 cup tomato sauce (360ml) or enchilada sauce 2/3 tsp salt or to taste 6 corn tortillas 8/9-inch (20/22cm) 1/3 cup vegan Mayonnaise or aioli, sour cream 1 chipotle pepper in adobo sauce or sub chili sauce 1 1/2 cups non-dairy cheese (170g) guacamole for topping Instructions . Prepare the Veggies . Preheat the oven to 400°F (200°C). Lightly grease a 9x9 inch (21x21cm) baking dish (or a similar sized pan). Heat the oil in a large skillet and add the onion, garlic, bell peppers, cumin, and red pepper powder. Stir for a few minutes until the veggies are nicely browned on the outside and the spices are fragrant, about 3-5 minutes. Add the beans and corn. Stir to combine, season with salt to taste and set aside to cool a bit. Cut tortillas into strips. Mix the chipotle pepper with the vegan Mayonnaise. Assemble the Casserole (see step-by-step pics in the text above) . Spread a little bit of the tomato sauce on the bottom. Then add half of the tortilla strips, allow them to overlap. Next, add half of the veggies, spreading out evenly. Drizzle over the vegan chipotle aioli and half of the remaining tomato sauce, smoothing out evenly. Then sprinkle over half of the non-dairy cheese. Repeat adding another layer of remaining tortilla strips, veggies, tomato sauce, and finished with the rest of the cheese. Cover the baking dish with aluminum foil or baking paper and bake for 15 minutes. Remove the foil and bake for approx. 5-8 minutes longer until the casserole has cooked through and the cheese is perfectly melted. Allow to cool for 3-5 minutes before cutting into squares. Wet Ingredients ⠀ ⠀ 4 chia “eggs” (4 Tbsp chia seeds (preferably ground, but can use them whole)+ 180mL water, mixed and set aside until thickened) 1/2 cup vegan butter⠀ 1 1/2 cup coconut sugar⠀ 1 cup plant milk of choice ⠀ Dry ingredients ⠀ ⠀ 2 cup (250g) white spelt flour⠀ 2 tsp baking powder⠀ 1 cup cacao powder⠀ 2 tsp pure vanilla extract⠀ 1/2 tsp good-quality salt 1 tsp ground cinnamon⠀ Topping ingredients 3-4 beurré Bosc pears, peeled, halved and cored. ⠀ 2 Tbsp vegan butter⠀ 2 Tbsp coconut sugar ⠀ ⠀ Method⠀ ⠀ 1. Preheat oven to 170C/340F⠀ 2. Add the 2 Tbsp vegan butter and 2 Tbsp coconut sugar to a fry pan and brown over a low heat (be careful not to burn- cook until just fragrant). Pour this caramel into the base of an 8 inch round cake tin, then Place pears cut-down on top. set aside. ⠀ 3. Add all the wet ingredients to a saucepan, and melt over a low heat, whisking throughout. Once melted, remove from heat and set aside.⠀ 4. Sift dry ingredients into a large mixing bowl. Combine, then add the cooled wet ingredients. Mix to combine, then Pour batter over pear base and smooth with a wet spoon.⠀ 5. Bake for 30-35 mins, or until an inserted skewer is removed with only a few crumbs intact. ⠀ Allow cake to cool for 10 mins in the tin, before carefully flipping onto a plate and serving immediately with ice cream or yoghurt. Note- this cake is best served warm, after baking. Due to the fruit in the cake, it will not keep well (the fruit juices will cause the cake to become soggy on standing) but, if you do have leftovers, refrigerated to help it keep/stop the fruit juice leaking into the cake.

Hey everyone! So a lot of you said you would like that basic #dairyfree pasta sauce recipe I posted, so here it is: ✨✨✨✨✨✨✨✨✨ This will make enough sauce for 4 people (one pound of pasta) with leftovers! ✨✨✨✨✨✨✨✨✨ 1 medium onion, diced 1 8oz package of mushrooms, sliced 3 cloves of garlic, minced 1 cup of any veggie or combination of, cut into bite sized pieces (here I used broccoli stalks, but you could use asparagus, zucchini, cauliflower, etc.) 1/2 cup salted pasta water 3/4 cup mylk of choice1 cup fresh leafy green (spinach, kale. Here I used mixed greens), finely chopped 1/2 cup sun-dried tomatoes, thinly sliced 1/3 cup nutritional yeast or parmesan Optional... 1/4 cup vegan cream cheese or other soft "cheese" Salt, red pepper flakes ✨✨✨✨✨✨✨✨✨ Heat a frying pan and add 1/2 T olive oil, onions, mushrooms, 1/4 teaspoon salt and a pinch of red pepper flakes. Saute over medium heat stirring occasionally for about 10 minutes or until onions are translucent. Then add garlic and stir until you smell the garlic strongly. Next, add all your assorted veggies (except for the sun-dried tomatoes and the leafy greens), the pasta water and the mylk. Reduce heat to medium-low, cover, and let simmer for 5-7 minutes. Then stir in the chopped leafy greens, nutritional yeast, tomatoes, and cream cheese (if using). Stir until it all comes together into a creamy sauce and salt to taste. If it is too thick, add a little more water, too thin, more nutritional yeast!

I haven’t been to the grocery store in weeks! 🙈 I’ve been cooking everything from scratch, and I’m starting to run out of food. 😅 It’s quite scary here in New York so I’m putting it off as long as possible and basically cooking one big meal per day. Thankfully I’m used to creative cooking through both personal finances and long term vegetarianism (now veganism 💚) My family is so happy with this lush meal! I’ve made this before and it’s very tasty. This recipe is a bit time consuming but totally worth the effort. On tonight’s menu: vegan meatballs from @medicalmedium and roasted veggies🥦 The meatballs consist of black beans, gluten free oats, onions, tomato paste, and a handful of spices. All you have to do is throw everything into a food prosessor, roll the mixture into balls, and then pop them in the oven for 20 minutes. So today’s #homemenu recipe is an easy breezy #eggplantpotato stirfry made with frozen eggplants saved from last year’s crop from @milkandhoneyfarms To make this simple recipe, dice #eggplants #potatoes and #tomatoes Pound 1 inch #ginger and 4 #garlic cloves. Heat some #evoo from @1938evoo in a pan and add ginger and garlic into the oil. Once they start browning, add eggplants and potatoes, cover & cook on slow heat, when potatoes start getting half way done, add tomatoes, 2tsp. of curry powder & salt. We also added some frozen #dill from our freezer. Cover again and this time increase the heat to medium. Add salt & juice from half a lemon. I’m swamped with work and it’s cold and dreary outside— therapeutic baking is the only thing getting me through it all. And therapeutic eating. Anyway! These Apple cinnamon breakfast scones are THE BOMB. They’ve got all the lovely flavors of apple crisp combined with the soft, buttery texture of a scone. I adapted the recipe from @sallysbakeblog. I veganized it by replacing the egg and cream with 1 flax egg (1 tbs flax + 2.5 tbs water) and vegan “buttermilk” (1/2 cup almond milk + 1 tbs Apple cider vinegar) and I subbed regular butter for my favorite @miyokoscreamery butter. I added 2 tsp of cinnamon and 1 medium apple cut into little cubes because I miss those warm fall flavors. So so so delicious! 🍏🍏🍏🍏🍏🍏🍏🍏

I'm back! ❤️ I've only been gone for a few days, but it feels like forever...So whilst I've not been posting, I've been focusing a bit more on my fitness & lunches.. I signed up for Chris Hemsworth 6 week HIIT training sessions and I've just completed day 2 and I've also started having 'Buddha bowls!' I've never really understood the concept of one and I think it can mean different things to different people but from what I understand it is a one-dish meal consisting of rice or whole grains, roasted veggies, a dressing and protein.. ✅ . This was my second attempt at a buddha bowl, my first was pretty shocking you might have seen it on my story about a week ago.. 👀 This one was a mix of tofu, broccoli, hummus, cherry tomatoes & quinoa.. I put paprika, garlic salt, turmeric & chilli on the tofu before heating in the pan! 〰️ cauliflower fried rice 〰️ . ::ingredients:: . • 2 Tbsp cooking oil . • 1.5 Tbsp minced garlic . • 1 Tbsp grated ginger . • Bowl full of frozen peas, lima beans & corn . • Bowl full of raw cubed carrots & sliced asparagus . • 12 oz of cauliflower rice (I used @viaemiliafoods frozen cauliflower from @costco) . • 1-2 Tbsp of soy sauce . • salt & pepper to taste . 〰️ . :: directions :: . • heat wok with oil at medium-high . • throw ginger & garlic until fragrant . • place frozen vegetables for 5 minutes . • stir in raw vegetables . • let sit for 3-5 minutes. stir occasionally . • add in cauliflower rice. Let sit for 5 minutes. stir occasionally. • add in soy sauce and let sit for another 3 minutes. stir occasionally . • add salt & pepper to taste . 〰️ . ▶Chai Latte Chronicles n°14 So the most amazing thing happened a few days ago ... My mom texts me on whatsapp and asks what kinda tea this is ... She showed me an old box of chai tea I left at their place. So I have finally infiltrated my family with my chai latte obsession! #missionaccomplished . It's her birthday on Tuesday and with us all being in quarantine, I thought I'd send her something small via post. Spring flowers and avocado brownies are kinda my thing 🌼🥑💕 these little gems are vegan, gluten free, oil free, and refined sugar free 🙌 I promise you can’t taste the avocado!
