ʙʀᴀɴᴅ ɴᴇᴡ ᴠᴇɢᴀɴ ᴀɴᴅ ɢʟᴜᴛᴇɴ ғʀᴇᴇ ʀᴇᴄɪᴘᴇ This is one of my favorite meals and it came together accidentally one afternoon when I was clearing out the pantry and refrigerator. The only part I dislike is prepping the squash so I don’t make it often. I’ve tried frozen butternut squash and it’s just too mushy. You can purchase prepared squash in most produce sections you’ll just need two packages and they can be pretty pricy. It’s so creamy and flavorful, I hope you love this as much as I do. Roasted Butternut Squash Rice Bowls Ingredients: 1 large butternut squash (1-2lbs) 4 cups kale 1 15oz can Chick Peas 4 cups cooked brown rice 1 medium onion 1 large clove of garlic Sea Salt Fresh Ground Pepper Olive Oil Directions: Preheat oven to 400F While the oven is preheating prep your squash by peeling, removing seeds and pulp. Cut into 1 inch cubes. On a baking sheet or in a cast iron skillet toss the squash with 1-3 TBS olive oil, sea salt and pepper to your taste. If you’re unsure start lightly. You can always add more seasonings, but you can never take It out. Roast for 40 minutes tossing halfway through so the squash doesn’t burn from the natural sugars. While the butternut squash is roasting cook your brown rice according to your package directions. Next peel and dice your onion. Sauté the onions in a large skillet over medium heat in 1 TBS olive oil until translucent (about 3-5 minutes). While the onions are cooking rip the kale leaves away from the stem and roughly chop. Peel and dice your garlic. Add in the garlic when the onions are translucent and cook for 60 seconds before adding in the kale. Drain and rinse your chick peas. Don’t forget to toss the squash around in the oven. When the kale has started to wilt lower the heat slightly. Add in the chick peas. Cook until the chick peas through and remove from heat. Toss the roasted squash, rice and kale mixture together. Taste, adjust your seasonings. Serve up and enjoy!! XO, Kathleen

Hoy hice tacos de almuerzo con veganesa Ya tenía las tortillas que había comprado hace una semana y no había usado si no hasta hoy, lo primero es saltear en una sartén: garbanzos, cebolla, tomate y champiñones con aceite de oliva, albahaca y salsa Lizano. Good morning everyone :) I decided to start my day with a smoothie. Such an easy breakfast. This one is an orange sweet potato delight ! Banana Bread Chocolate Chip Cookies (Vegan/Paleo) 🍪😋 Recipe: 2 1/2 cups grain free flour blend (I used Bob’s Red Mills Paleo flour / can sub GF flour or AP flour of choice) 3/4 tsp baking soda 1/2 tsp baking powder (*If paleo can increase baking soda by 1/4 tsp and sub 1/2 tsp cream of tartar + 1/8 tsp arrow root powder instead of baking powder) 1/2 tsp salt 3/4 cup mashed banana 1/2 cup dairy free sour cream (I made my own by blending 1/3 c soaked cashews, 3 tbsp water, 1.5 tsp lemon juice and 1/2 tsp acv but can use store bought) 1/2 cup coconut oil (melted and cooled) 1 cup coconut sugar 1 flax egg (1 tbsp ground flax + 2 1/2 tbsp water, let sit for 5-10 mins) 2 tsp pure vanilla extract 1/2 cup+ dairy free/naturally sweetened chocolate chips and/or nuts Instructions: In a medium sized bowl combine coconut oil, coconut sugar, flax “egg”, vanilla, banana, and “sour cream”. In a separate bowl whisk together flour, baking soda, baking powder (or paleo alternative) and salt. Fold into the banana mixture. Then add in chocolate chips and or nuts if you want. I crave pasta. Always. There's nothing better than just curling up on the couch watching a good movie with cozy socks and a large bowl of pasta. This one is lemony, buttery, garlicky deliciousness with my favorite vegetable, Brussels sprouts! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Brussels sprouts are super underrated in my opinion. When cooked properly (pretty much any way but boiling, which not only removes all the flavour but pretty much all the nutrients), they are fantastic. In this case, I sauteed them with garlic. For the last week of #veganuary I am going to veganize some of your favourite recipes starting with the perfect treat for a grey wet Monday evening. 💚✨💚✨💗✨💗 AQUAFABA CHOC MOUSSE.... Vegan/Glutenfree/Refined sugar free. Serves 4) //// Aquafaba is a vegans best friend and used in a mousse it creates an ultra light and fluffy texture and can be whipped up in 10 minutes!! // INGREDIENTS: Aquafaba water (from 1 x 400g can chickpeas) 140g dark (70%) vegan chocolate 1 tbsp coconut sugar (optional) 1 tsp lemon juice or vinegar (optional) 1 tbsp vanilla extract 1 tsp beetroot powder. (Optional) / / To serve: Chocolate shavings Cacao nibs Mint leaves Melt the chocolate in a glass bowl over a pot of simmering water and set aside to cool. Drain a can of chickpeas and reserve the aquafaba chickpea water. Use a grease free glass bowl to attain stiff peaks. Whisk the chickpea water until creamy and fluffy. A tsp of vinegar or lemon juice can speed up the process. Invert the bowl to see if you have whipped enough. The aquafaba should not slide down the bowl. Don’t be afraid of overwhipping-aquafaba is different to egg whites. (Around 7 mins) Once you have a firm mixture add the sugar and vanilla in bit by bit whilst still mixing. (Further 2 mins) Carefully fold in the melted cooled dark chocolate. The mouse will become more runny again but don’t worry. Add a pinch of chilli or beetroot powder. Spoon in to ramekins and chill for 2 hours or until set. Serve with cacao nibs, shaved chocolate and mint sprigs. All of our snacks are organic and peanut-free, and this year they are also vegan/vegetarian. The students are offered the special snack of the day and can choose whether or not they’d like to try it. Many of them try new foods this way! During a recent class the parent volunteer shared some tasty balsamic marinated beets, served with sprouted hummus and crackers. Many thanks to her for sharing the recipe here so you can try it too! 🍽 TO MAKE: 1️⃣ Put whole beets into a large pot and cover with water. 2️⃣ Bring to a boil and reduce to a heavy simmering until you can pierce them with a fork easily (about 45 minutes). 3️⃣ Drain and rinse with cold water - the skins will peel right off. 4️⃣ Dice them up and place in a bowl. 5️⃣ Cover with balsamic vinegar and let marinate in the fridge over night or until cold. 6️⃣ Serve with hummus and crackers on the side. Let us know if you try it out!

Japanese Gyoza or potstickers. One of my favorite asian foods! They can be filled with whatever you want and if course I made a vegan version🌱 I followed an ecceptional tutorial on how to make the wrappers on @justonecookbook youtube channel, she give a perfect tutorial and I highly recommend it❤️ Here’s the recipe for the wrappers: 240 gr flour 120 gr hot water 1/2 tsp salt . Sift flour and pour it in the bowl of a stand up mixer. Bring water to a boil then add salt and dissolve. Slowly pour water in the mixer and knead for about ten minutes until a dough is formed. Divide dough into two logs, wrap them in film paper and let rest for thirty minutes. After thirty minutes divide each log into 12 little balls (about 15 gr each) and flatten them with a rolling pin on a work surface dusted with cornstarch. Cut each disk with an 8cm diameter dough cutter to make them perfectly round. Place one disk in the palm of your hand and place one tbsp of filling at the centre if it. Dip one finger in a glass of water and quickly pass it round the borders of the dough and close it. Cook them in a hot pan lighly greased with veg oil until the bottom turns noce and brow then add 1/4 cup of water and cover with a lid. Steam for three minutes. At the end add 1 tsp of sesame oil, remove lid and let cook another minute. They will ve nice and crispy on the bottom and soft on top. SUPER PROTEIN VEGAN PASTA 🌱🍝 ⁣ ⁣ This is recipe is not like any other pasta recipe because the type of pasta that I use is a SUPER PASTA (did I say pasta too many times? 😜)⁣ ⁣ In fact, this is a perfect recipe also for people who are gluten free and people who do sports, because of my not-so-secret ingredient: RED LENTIL PASTA 🧡⁣ ⁣ If you want to spice it up, you can also add some chilli flakes 🌶 otherwise it will be just as tasty without 😋⁣ ⁣ INGREDIENTS:⁣ 🌱250gr red lentil pasta⁣ 🌱2 tbsp EVOO⁣ 🌱4 garlic cloves⁣ 🌱1 1/2 tbsp cornstarch⁣ 🌱2 cups plant milk⁣ 🌱6 sun dried tomatoes⁣ 🌱3tbsp nutritional yeast⁣ 🌱1 onion⁣ 🌱1tsp chilli flakes (optional)⁣ 🌱pinch of oregano⁣ 🌱salt and pepper to taste⁣ ⁣ INSTRUCTIONS:⁣ 🌟Cook your pasta according to the package instructions, but leave slightly undercooked. ⁣ 🌟Add 1 tbsp EVOO in a large pan over medium heat. Add garlic and cook for 2 minutes or until lightly browned. Mix in cornflour and cook for another minute. Add 1 cup of milk, making sure that the mixture is smooth besides the garlic. When it has thickened, add the rest of the milk. When it has thickened slightly, pour this into a blender.⁣ 🌟Add 4 sun dried tomatoes, nutritional yeast and 1/3 cup of pasta water and blend until smooth. ⁣ 🌟Rinse out the frying pan and heat up 11tbsp of EVOO. Sauté the diced onion and add the sun dried tomatoes cut in smaller pieces. Add the oregano and cook for two minutes. ⁣ 🌟Pour the blended sauce in the pan, and keep on low heat. After a minute, add in the pasta. Add salt&pepper to taste. When the pasta is heated through, serve with a sprinkle of chilli flakes.⁣ ⁣ ENJOY AND LET ME KNOW IF YOU LIKED IT 💚

ENERGY BALLS🙌✨⁣ Here’s a super simple & quick recipe for some delicious energy balls! These make the perfect snack! Also these ones don’t require a food processor so basically anyone can make them and requires very little equipment, basically all you need is a bowl, a spoon, your ingredients & about 10 mins👍 ⁣ ⁣ Ingredients:⁣ ⁣ - 1 cup almond butter⁣ - 1 cup rolled oats—I think quick oats would work too⁣ - 1/4 cup maple syrup ⁣ - 1 tsp vanilla extract⁣ - 1/4 cup hemp seeds⁣ - 1 tbsp chia seeds⁣ - 1/4 cup coconut shreds⁣ - 1/4 cup mini non dairy chocolate chips ⁣ - Pinch of sea salt⁣ ⁣ Method:⁣ 1️⃣ Combine all ingredients in a bowl, and mix until fully combined! 2️⃣ Roll into balls and place in the fridge for 20 mins to firm up a little more⁣ 3️⃣ Store in an airtight container in the fridge and eat within a week

Date night last night a trip to spoons, I tried their gourmet vegan burger and the quorn nuggets with the sweet chilli sauce. Salchichas con queso, rebozadas crunchy! Tengo que motivaros a participar por la cesta, así que os dejo esto 😁😁😁😁👌👌👌👌👌. 2 lonchas de pan de molde (sin corteza). 1 beyond sausage (cortarlas en dos, no caben en el pan enteras😅😅😅). Queso violife en lonchas. Copos de maíz. Leche vegetal sin azúcar. Machacar los copos de maíz , no muy finos. Aplastar el pan con un rodillo. Poner queso en el medio de la loncha de pan. Enrollar la salchicha en el pan. (si no se pega bien, poner un poco de leche para sellarlo). Remojar en leche vegetal. Rebozar con copos de maíz. Volver a remojar en la leche. Volver a rebozar con copos de maíz . Do you guys prefer savory or sweet breakfasts?⁣ I personally am more the sweet kinda person haha. I always need my bowl of oats with fresh fruit in the morning.⁣ In this bowl we have some peanut protein oatmeal with #chiapudding, homemade granola, plum, blueberries, pomegranate seeds and some super cute star cereal 🌟🥣⁣ ⁣ Here's a little recipe, just in case you wanna try this:⁣ 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀⁣ ⅔ cup rolled oats⁣ 2 tbsp vegan peanut protein powder⁣ 1 cup plant milk ⁣ 2 chopped dates⁣ ⁣ Now just throw all the ingredients into a small sauce pan and let it cook until the consistency you prefer is reached (maybe add a little more plant milk if needed). You also can prepare this as overnight oats in case you're in a rush.⁣ ⁣ You maybe noticed that I haven't been very active lately. This is because I have a lot to do at school and I also don't have that much inspiration lately which is why I'm slowly posting pictures from a few weeks ago until I have time to shoot some new ones. #Repost @veggie_fooodz • • • • • • VEGGIE FRIED RICE 🥕🥦🥡 you can never go wrong with fried rice! between this and sesame tofu, i can’t decide which is my number one! i guess i’ll just have to keep trying and comparing them until i figure it out 😉 FRIED RICE SAUCE : - 1/4 cup soy sauce (i used low sodium) - 2 tablespoons peanut butter - 2 tablespoons brown sugar (or maple syrup) - 2 cloves of garlic, minced - 1 tsp fresh garlic (peeled & minced) - 2 tsp sweet chili sauce - 1 tsp sesame oil mix together and set aside DIRECTIONS : - preheat oven to 375, press and dice 8oz of extra firm tofu into one inch cubes - set them on a baking sheet w parchment paper and in the oven for 25-30 minutes or until they get golden around the edges - while they’re in the oven, cook your rice! (i used jasmine) bring 1 3/4 cups of salted water to a boil, add 1 cup of rice and lower to a simmer. cover your pot and let cook for about 15 minutes, remove from heat and let sit for another five then fluff with a fork! - when your tofu is done in the oven, take it out and add it directly to your sauce mixture and marinate for a few minutes - bring your wok to medium heat and add your tofu, stirring until browned on all sides (3-4 minutes), then remove - add 1 tablespoon of sesame oil and 5 cloves of minced garlic, stirring until fragrant. then add 1/2 cup of the following: carrots, green onions, broccoli and peas - add 1 tablespoon of soy sauce and toss with veggies for about 5 minutes then remove - shake your bottle of #JUSTegg and add 1/2 cup to the wok, constantly stirring until it’s firm and “egg like” make sure it’s scrambled! - then add the veggies, rice, tofu and the rest of your sauce! mix thoroughly and enjoy! on top i added sriracha (as usual), sesame seeds and cilantro! it would also benefit from some crushed peanuts as well! 😋 let me know if you try this yummy recipe for yourself ♥️ • • #plantbased #plantbasedrecipes #vegan #vegana #vegano #veganismo #vegancommunity #veganfood #veganfriedrice #govegan #veganuary #veganfoodporn #crueltyfree #easyvegan #instavegan #vegansofinstagram #veganrecipes #veganrecipeshare #plantbasedfood #veganfoodie #bestofvegan #veganmeal #vegan

А также иногда я готовлю тёртый картофель на завтрак (hash browns) Мне и моей семье очень понравился результат. ½ упаковки тофу (200 грамм) 1 картофель ½ луковицы 1/4 болгарского перца, порезать полосками ½ ч.л. куркумы Специи по вкусу: чёрная соль, сухой чеснок, чёрный перец, ½ ч.л. пищевых дрожжей. . Тщательно разомните тофу вилкой. Картофель натрите на крупную терку, а лук нарежьте соломкой. Нагрейте сковороду до средней температуры, добавьте капельку масла, выложите картофель и лук, готовьте до золотистого цвета 5-10 мин. После чего добавьте тофу, болгарский перец и все специи. Подавайте сразу к столу. MUSHROOM POTATO PIE 🌱 • فطيرة المشروم بالبطاطا 🌱 • To all of you who keeps asking me for easy and delicious recipes. Cook an onion with mushrooms and season with salt and black pepper only, also add flour in the end to thicken the mixture. In the same time, boil some potatoes and mash them into mashed potatoes. For seasoning I only added salt, oregano and red dried pepper. Hi 👋 guys! Hope everyone is in good spirits this morning. After the sad news the world received yesterday I know many of us are still very sad. Try your best to get through the day 😞. Today starts my 1 st Day of liquid/ juice 🥤 fasting for 14 days to cleanse and detoxify my body. It’s important to drink lots of water during liquid fasting and detoxing. What normally works for me is making my water to have throughout the day. Today I am home so I made a berry flavor water with spring water & key limes. Just added lots of berry such as blueberries, blackberries, strawberries, & raspberries, juice of 6 key limes and key lime slices to the water. Nicecream cake anyone? 🙌🏼 Two of my daughters actually choose a nicecream cake over a traditional birthday cake! These are just mini versions set in ring moulds. I used Oreos and dried cherries for the base here but for a healthier option then use a nut and date mix. Makes 1 x 20cm cake or several smaller ones Ingredients: For the base: 2 packs Oreos 110g dried Morello cherries 40g vegan butter, melted For the Niccream: 4 frozen bananas 3 tbsp nut butter 3 tbsp agave syrup 3 tbsp cacao powder 120ml plant milk For the topping: 400g frozen cherries and blueberries A dash of water Method: To make the base put the Oreos, cherries and melted butter in a food processor and whizz up until you have fine crumbs. Press into the base of a lined, loose bottomed, 20cm cake tin. You can also use small circular moulds for smaller cakes in which case set them on a baking sheet on a tray. For the nicecream first chop the bananas. Add them to a blender along with the Banana Boost Butter, agave syrup, cacao powder and plant milk. Blend until smooth. You may have to help your machine along by scraping down the sides from time to time. Once smooth spoon on top of the base and smooth the top. Transfer to the freezer and freeze until firm. For the topping place the cherries and blueberries into a small pan with a dash of water and cook on a medium heat until they are all defrosted and tender. Chill in the fridge until needed. PORTABELLA FRENCH DIP This sandwich is scrumptious and will be great for game days! It is sure to satisfy even the pickiest of folks and is easy to prepare. https://www.brandnewvegan.com/recipes/sandwiches/vegan-portabella-french-dip What I did differently: -Used 2 medium onions and 1 very large and 1 very small green pepper -Used 4 small cloves of garlic which was over 2 tsp once chopped -I removed the gills from the portabellas. Next time I will use 5 mushroom caps. -Since the onions and peppers are dry sauteed, it is not important exactly how much broth (or can use water) you use to prevent sticking. What is important is that you only add a TBSP or so at a time so that once the sugars release from the pan the liquid evaporates. You don't want so much liquid that you end up boiling your vegetables. -For the Au Jus I used vegetable stock that was not low sodium -I saw no need to strain the Au Jus that I used for dipping. #vegansandwich #veganrecipeshare #veganyum #wfpbno

Vegan Triple Berry Smoothie INGREDIENTS * 2 medium bananas, sliced and frozen * 1 cup unsweetened almond milk * 1 cup frozen strawberries * 1 cup frozen blueberries * 1 cup frozen raspberries INSTRUCTIONS 1. Add bananas into the blender. Blend until the bananas become crumbly. Add almond milk. Blend until smooth and creamy, scraping down the sides of the blender as needed. 2. Spaghetti with fresh tomato sauce 😋😍 w Recipe below. This is vegan,fresh, simple,easy to make and tasty! I made these using fresh Desi tomatoes 🍅 and fresh basil. I was watching @donalskehan 's Pasta All'Arrabiata when mum bought the veggies,so took inspiration from that. It's always hard as to which picture to select,so always put multiple of them🙈 🌱 RECIPE Ingredients- ☘️200-250gm spaghetti and cook it 90% ☘️ Reserved pasta water-1/4 cup ☘️1 large onion, finely chopped ☘️8-10 cloves of garlic(small in size), finely chopped ☘️2 tbsp of extra virgin olive oil ☘️4 large tomatoes (Desi/local variety) grated or pureed ☘️1 large tomato roughly diced ☘️10-12 fresh basil leaves Salt ,to taste ☘️1/2 tsp crushed black pepper ☘️2-3 black olives sliced(optional) ☘️1- 1.5 tsp Italian seasoning mix ☘️1 tsp red chilli flakes( I used more) ☘️1 bay leaf ☘️1 tbsp tomato ketchup (optional) 🌱Procedure- ➡️In a pan on medium low flame,add 1.5 tbsp olive oil ,bay leaf and onion. Sauté for 2-3 mins. ➡️Add garlic.After 30seconds add italian seasoning,red chilli flakes. ➡️Sauté for 30 more seconds.
