Happy Pancake Day My Friends 🥞 ⁣ ⁣ Opted for savoury pancakes instead of sweet ones because I had some sweet at the weekend so I thought it would be a nice change 😋 ⁣ ⁣ For savoury pancakes 🤗⁣ 🌶 Fry 110g red pepper, 80g leek, 20g spring onion & 80g cherry tomatoes for 5 minutes. HAPPY PANCAKE DAY 🥞 I cant believe it’s finally here 🥳🥳🥳pancakes for breakfast, lunch and dinner? I think so. These VEGAN SPICY MANGO PANCAKES are nExT LeVeL ~ ain’t no plain lemon + sugar pancakes round here (I’ll be having those for dinner 😉). ¡¡ RECIPE !! (makes about 10 pancakes) >> Blend 1/2 cup mango purée with 1/2 cup soy milk, 1 tsp vanilla extract and 2 tbsp olive oil until smooth. Then add 3/4 cup self-raising flour, 1 tsp baking powder, 1/4 tsp cayenne pepper (more/less to taste) and pinch salt. Cook approx 3 tbsp of mixture per pancake over a medium heat for 2-3 mins on each side - you know they’re ready to flip when you can see little bubbles all over the top ✌🏻 topped with @alpro soy yoghurt, mango purée, a pinch of cayenne pepper, @sweetfreedomuk fruit syrup and @spooncereals low-sugar granola 🌶🥞🙌

There are SO many ways to enjoy pancakes, so many toppings, so many mixtures and so many combinations… this one is a new winner and it looks rather impressive for how easy it is!! #ad . Chocolate Ombre Pancakes 👆🏻 These pancakes are naturally vegan, gluten-free and low sugar thanks to the @nkdliving natural sugar alternative, Granulated Erythritol. It tastes just like sugar, bakes the same and is tooth-friendly too! 🌿 . serves 3 (makes 15-18 mini pancakes) ⭐︎make the batter: blend up 100g oats, 1 tbsp NKD Living Granulated Erythritol, 1 tsp baking powder, 1 ripe banana, 240ml oat or almond milk and 1 tbsp lemon juice. Leave to rest for 10 mins. ⭐︎heat a non-stick pan and use 1 tbsp of batter to form each pancake. Cook for 3 minutes until bubbles form then flip over carefully and cook on the other side. Make 3 pancakes like this. ⭐︎stir in 1/2 tsp cacao powder to the batter, make 3 more pancakes. ⭐︎repeat, adding in 1/2 tsp cacao powder and making 3 pancakes to use up all the batter. ⭐︎serve stacked high from light to dark, topped with coconut yoghurt, chocolate sauce and berries! . Made myself a smoothie bowl after a long time because I had two very ripped bananas and I definitely need to start making smoothie bowls more often (although I need to use less water next time) 🤩🍌 For this smoothie bowl I just blended 2 frozen banana, 20g @myvegan protein, 1tsp @iswariireland_uk maca powder & acid powder and water then I poured it into my coconut bowl and topped wwith chia seeds, @eatnaturalbars granola & @nutblend the perfect nut butter 🥜💖 Who’s ready for summer ??

So every once in a while, it's nice to step it up and create a wholesome meal that is both comforting and nostalgic 💫 The most PERFECT Sunday meal coming up!! 💥 . . #Repost @nourishing.amy with @make_repost ・・・ Poke bowls or buddha bowls, whatever you call them, I’m in love 🥰🌱 They are my favourite way to eat food basically because you can throw lots of different ingredients all together and call it a balanced meal. Here’s a new recipe… . I focus on colour, texture, a balance of carbs, proteins, fats, fresh and cooked veg and top it all off with some crunch, something spicy and something creamy and delicious - like a peanut butter satay 🙌🏻 . Tofu Poke Bowl with Satay Sauce 👆🏻 [Serves 2] ⭐︎make the peanut satay dressing (stir 4 tbsp @pipandnut crunchy peanut butter + 2 tbsp Tamari soy sauce + 2 tbsp lemon juice + 2tbsp syrup + 1-inch piece ginger peeled and grated) 🌿 ⭐︎add 200g cubed extra-firm tofu to a pan with olive oil and fry for 5 mins until golden and crisp. Pour over 2 tbsp satay and coat evenly. Remove from the pan 🥜 ⭐︎heat some more oil and fry off 150g broccoli + 2 handfuls kale for 3-5mins until tender 🥦 ⭐︎cook 140g rice, and divide between two bowls. Top with the kale and broccoli, some @moorishumous asian slaw, 160g thawed edamame beans, the peanut butter tofu, sliced radishes, 1 avocado, fresh coriander, chilli flakes, spring onion, seeds and toasted nuts 🌈 ⭐︎drizzle over the satay dressing! 🤩 . Pancake day is just around the corner so I thought I’d make myself a warm-up batch just to check I’ve still got it before the big day 😉 EaSy VeGaN pAnCaKe ReCiPe >> 1. Blend 1 ripe banana with 1/2 cup soy milk, 1 tsp vanilla extract and 2 tbsp olive oil until smooth. 2. Use a whisk to combine with 3/4 cup self-raising flour, 1 tsp baking powder, 1/2 tsp cinnamon and pinch salt. 3. Cook about 3 tbsp mixture per pancake over a medium heat for 2-3 mins on each side ✌🏻 I topped these with @coconutcollab coconut yoghurt, mango purée, fresh mango and granolaaaaa

Did somebody say vegan haggis? 👌🏼 This is a little #throwbackthursday because I completely forgot about to this photo until I was scrolling through my camera rolls today 😂⁣ ⁣ I kept looking at this vegetarian Haggis in Sainsbury’s for so long so a few weeks I finally decided to give it a go and it was super nice!! 🌸😋 I love that it’s made from good ingredients too such as oats & beans (unlikely normal haggis 🤢). PEANUT YOGHURT TOAST 🥜 I discovered this week that mixing peanut powder into soy yoghurt makes the most DELICIOUS peanutty-yoghurt and I have been putting it on EVERYthing (including roasted sweet potatoes 💣💣) RECIPE > stir 1 tsp @hipronutrition peanut powder into 1/4 cup soy yoghurt (I used @alpro unsweetened), lather on top of toasted sourdough and sprinkle with granola 🥳 u are welcome 👍

I can confirm that I had lots of delicious food over the weekend! 🥘 ⁣ ⁣ On Sunday I was kindly invited to @thesalisburyarms to try out their new Vegan wellness menu and it didn’t disappoint 👏🏼 ⁣ ⁣ As a starter I had a pan fried oyster mushrooms and wow!! If you love mushrooms you will certainly love this dish. Full of amazing flavours and I could easily eat two bowls of this dish! ⁣ ⁣ My main was spiced coconut curry 🍛 Yet again, it was a lovely dish full of amazing flavours and vegetables such as broccoli or aubergine 🍆 🥦 ⁣ ⁣ I had apple, plum & damson crumble with vanilla soya custard as a dessert and again W O W 😍 So comforting and delicious! Warm fruit & crumble always takes me back to my childhood so if I say this dish get 11/10 from me I’m not exaggerating 😌🌟⁣ ⁣ Overall, it was a lovely visit! The Salisbury Arms also welcomed us with a couple of goodies bags filled with Fever Tree Tonic & non alcoholic spirit which was a nice gesture too 💖

SWIRLY YELLOW PROTEIN PORRIDGE ☀️💪 I am so here for these colours this morning (if it ain’t gunna be sunny outside I’m sure as hell gunna make it sunny in my BELLY 🤪) RECIPE >> 1/2 cup @rudehealth spouted oats, 1 scoop @myvegan soy protein, 1 tsp chia seeds, 1 tsp cinnamon + 1 cup soy milk ~ cook over a medium-low heat, stirring regularly and adding more milk if necessary, until creamy 🙌 topped with soy yoghurt, @hann.dmade banana peanut butter, mango purée + granola 💛🥰

Salads will forever be my number 1 ✨🌈 Who agrees? It makes me so sad to see such limp salads on menus when there are so many wonderful things you can do with vegetables, grains and dressings to make really amazing and inspiring salad or grain bowls, as I like to say! [#ad] . This one is a new favourite, packed with paprika-cumin roasted squash and crunchy chickpeas, cooked quinoa, crunchy hazelnuts, fresh pomegranate and lots of garlicky kale thanks to @sacla_uk ‘s new Vegan Aioli! It’s deliciously garlicky and egg/dairy/gluten-free making it a perfectly creamy and flavoursome salad dresser and grain bowl topper… . Here’s how to make it for yourself… all in 40 mins with minimal effort ✨ . Roasted Squash, Garlic Kale and Quinoa Grain Bowl 👆🏻 [Serves 2] ⭐︎peel and shop 1/2 butternut squash (300g peeled weight) into bit-size cubes and add to a large tray with 1 tin drained chickpeas, 1 tsp smoked paprika, 1 tsp ground cumin and some olive oil. Roast at 160Fan/180*C for 30-40 minutes until tender. ⭐︎cook 100g quinoa. ⭐︎add 60g kale to a bowl and tear the leaves. Pour over 40g (4 tbsp) Sacla Vegan Aioli and massage with your hands. Stir in 50g raisins. ⭐︎plate up: divide the kale between two bowls, top with the quinoa, roasted squash and chickpeas. Sprinkle over 40g chopped hazelnuts, some fresh herbs, pomegranate, lime wedges and more Vegan Aioli! . SESAME TOFU SANDWICHES 🤪🥪 idk about you but I used to really struggle with vegan sandwich fillings because for some reason I thought the only thing you could put in between two pieces of bread was ham and cheese 🤷‍♀️ no no NO.
