WOW!!!! This cake is a game changer!! This photo doesn’t do it justice, but trust me when I tell you that @dreenaburton has created some magic with her “Sweet Potato Chocolate Cake with Chocolate Sweets Frosting” (google it. Seriously. Right now!). Yes, you read that right - sweet potatoes are doing some heavy lifting here, and it’s genius! This was a spur-of-the-moment creation so I did a lot of subbing (eg, date sugar and whole wheat pastry flour), but it turned out moist, rich, decadent, and delicious! HOW CAN YOU BE PLANT BASED AND HAVE A YUMMY & FULFILLING BREAKFAST??! This is a very valid question and many of my clients ask me! In the past, I’ve often used tofu and I still do.... BUUUTTT @eatjust HAS created an actual egg replacement 😭😭😭😭😭😭😭🙏🏼🙌🏼 @eatjust has a chickenLess egg substitute that makes Vegan and plant based eating fun and creative. It takes about the same time to cook, it looks and feels like it, and it’s pretty dang close in taste. I start by sautéing whatever veggies I use to love in an omlette or scramble and then when they’re about 5 minutes away from being fully cooked, I add the vegan egg to cook and scramble it 😍😍 try an omelette if you know how to do those! As of now, we are all looking for options that last and stay in the fridge or pantry.... @eatjust stays in the fridge for some time, check them out and get ready to cook with me online in the next few weeks. Apparently it’s Friday (I’ve lost track) so I thought I would set up shop and create my own wee pizzeria in our kitchen 😂👏🏻Taste: 10/10, Dough rolling skills: 1/10 😅 I hope I’m never in a life or death situation hinging on my ability to roll out an even pizza dough 🍕 I use the @annabellangbein pizza dough recipe and it’s so good. Topped with fresh veg, pineapple (don’t judge me 🙃), coconut bacon and sunflower seed cheesy sauce. I had to improvise on the last one as we had no cashews but it worked! Anyone else having homemade takeaways tonight?

Tonight I made creamy garlic pasta with a side of cucumber and tomato salad. Simple and delicious 😋 • Ingredients 1/2 tbsp olive oil 4 cloves garlic minced 1 shallot finely chopped 2 cups low-sodium vegetable broth (see notes) 1 and 1/2 cups plain, unsweetened non-dairy milk (see notes) 1 tsp salt plus more to taste (reduce if using a salty broth - mine is low-sodium) 8 oz dry fettuccine black pepper, dried oregano and red pepper flakes to taste chopped fresh basil or parsley for serving • Instructions Heat the olive oil in a large skillet over medium heat. If possible, choose a skillet that is wide enough to completely fit the fettuccine. Smaller pans will work, but require a bit more fuss to stir and submerge the pasta as it cooks. Add the garlic and shallot to the pan along with a sprinkle of salt, and stir. Cook for about 2 minutes, stirring occasionally, or until the garlic is softened and the shallot is turning translucent; avoid browning. Add the vegetable broth, nondairy milk, and salt, and stir. Add the dry pasta and gently prod it around to submerge it under the liquid. If not all of it fits now, you will need to gently push it into the pan after the submerged portion has softened later. Bring to a boil, then reduce to a simmer. Stir occasionally, gently separating any pasta that starts to stick together. Cook for about 20 minutes, or until the sauce has thickened onto the pasta and the texture is to your liking.
