Some cooler weather, much needed rain and an idea for some nourishing soup resulted in this delicious Roasted Vegetable & Sesame Soup....kale, carrots, sweet potatoes, ginger, turmeric, tahini & fragrant spices....#yum #vegetables #tahini #coconut #vegansoup #vegansofig #vegansofinsta #turmeric #plantbased #veganfoodporn #soup Roasted Vegetable & Sesame Soup 4 medium organic carrots cut into 0.5cm rounds 3 small sweet potatoes cut into 1cm rounds 1 large red onion cut into wedges 5 peeled garlic cloves cut in half 10 Tuscan kale leaves stripped off their stems and cut into 1inch pieces For the roast vegetable seasoning: paprika, cardamom, celery salt, sage, all spice, onion powder, salt, pepper & olive oil 6 cups vegetable stock 1 can coconut cream 1 tspn turmeric 3 vine-ripened tomatoes deseeded & cut into small chunks 1 inch ginger knob finely sliced 1 tbspn vegan dashi concentrated broth (or a tspn of kelp flakes) 1/2 tbspn maple syrup 1/2 tspn light soy sauce 2 bay leaves 1/4 cup hulled tahini Salt & white pepper Garnish with garlic croutons and a sprinkle of your favourite spice seasonings (I used @pickldit Toasted Sesame Gourmet Blend to tie in with the tahini & other spices in the soup) Preheat the oven to 190•C. Lay the carrots, sweet potatoes, red onions, kale and garlic on a couple of oven trays and season with a light sprinkle of all the roast vegetable seasoning spices. Coat with EVOO and bake in the oven for 15 to 20 minutes or until the kale is nice and crispy and the vegetables are slightly caramelised. While they are baking heat 2 tbspns of EVOO in a deep large saucepan. Add the ginger, tomatoes, turmeric and a little salt & pepper. Fry over medium to high heat until the ginger becomes a little crispy. Add the roasted vegetables & bay leaves and stir to combine. Season with a little salt and white pepper. Then pour in the stock, dashi, light soy sauce and maple syrup. Once it comes to a gentle boil add the coconut cream and tahini. Cover with a lid and simmer for 30 to 40 minutes. Remove the bay leaves. Using a handheld blender, purée the soup. Check the seasoning. Serve garnished with toasted sesame seasoning and garlic croutons.

messiest lil quick breakfast for the first day back at uni! Heated porridge oats with some @lidlgb unsweetened almond milk and a few squares of the orange Bournville melted and swirled through. I had a glass of orange juice as well. Recipe below: Recipe: 8 oz container vegan chive and onion cream cheese 1/4 cup scallions, sliced thinly 1/2 tsp garlic powder Package of vegan wonton wrappers Sweet and Sour Sauce for dipping 1) Scoop the cream cheese out of the container and into a bowl. Allow it to come to room temp a bit and mix in the garlic powder. Grab a small bowl and fill with water. you will use this water to seal the edges of the wonton wrappers. 2) Lay out 6 wonton wrappers at a time and cover the rest with a towel so they don't dry out. Take approx 1.5 tsp of the cream cheese filling and put it right in the center of each wrapper. Dip your finger in the water and trace the outermost edge of each wrapper, getting it wet. Then seal the edge by taking the two opposite sides together. then take the longest straight edge and overlapped the corners, getting more water on those edges to seal. Continue until you've used up all your cheese filling. 3) Heat up your choice of oil and once hot, depending on your pan size drop as many as your pan will allow. Each wonton takes 45-60 seconds. Great start to the day. @morrisons avocado smash on toast with pumpkin seeds ( I really enjoy the Morrisons guac and its the only store brought one I've found that doesn't contain milk oddly enough so I thought I'd try their avo smash whilst I was at it). @richmond_foods meat free sausages which are actually the best I've tried, the taste, the texture, the flavours it was just the absolute best. Pan mix of fresh mushrooms, yellow pepper, red onion, red chilli, spinach and cherry tomatoes. 🍋😍 Vegan lemon poppyseed cake! • • • • • • 🥁Featuring : @foodie.yuki 🙏Thanks for creating this vegan deliciousness ❤️ Show some love and drop the creator of this awesomeness a like and a follow! • • • • • • 👉Recipe: Dry 250g | 2 cups spelt or all purpose flour, sifted 50g | 1/3 cup unrefined brown sugar or coconut sugar 120g | 1/2 cup + 1 tbsp light brown sugar 5g | 2 teaspoons baking powder 1/2 teaspoon pink salt 20g | 2 tablespoons poppy seeds Zest of 1/2 organic lemon Wet 240ml |1 cup plant milk 65g |1/3 cup coconut oil, melted 40ml | 2 tbsp lemon juice Frosting 100g cashews, soaked overnight 1 tsp vanilla bean paste 70g coconut cream 20g | 1 tbsp coconut oil, melted Zest of 1/2 orange or lemon 1 tsp lemon juice Instructions Preheat the oven to 175C| 350F ° Lightly grease and line with parchment paper a 22x10cm loaf pan. In a large bowl, combine the dry ingredients and whisk well. In another bowl, combine lemon juice and soy milk, stir and set aside to curdle for 5 minutes. Add the melted coconut oil and vanilla and stir to combine. Make sure that all your ingredients are at room temperature. Pour the wet mixture over the dry ingredients and gently mix to combine. Don't over mix. Pour into the prepared loaf pan. Bake at 175C| 350F for 55 minutes or until a toothpick inserted near the center comes out clean. Let cool in the pan for 10 minutes then turn out on a cooling rack to cool completely. Frosting: rinse and drain the cashews and place them into a food processor together with the other ingredients. Blend until smooth. Frost the cooled cake and let set for a couple of hours (in the fridge if it's warm). 💞FLAN DE CHOCOLATE VEGANO,💞 . Este flan es ideal para cuando tienes un antojo de dulce y de chocolate, pero no quieres renunciar a la comida sana, ya que no lleva azúcar, huevo, aceite de palma, conservantes, leche.... . Es ideal para la merienda de los mas peques pq si sabor a chocolate es tremendo.... además tiene una textura q se deshace en la boca pq no habrá riesgo de atragantamiento. . Se puede acompañar de un poco de caramelo, fruta, mermelada casera, yogurt... . Para este flan he usado: . 🌱 400ml de leche de avena (con calcio) 🌱 450ml de leche de almendras (o avellanas) 🌱 90gr de chocolate negro 90% 🌱 4 gr de cacao puro 🌱 Un chorrito de sirope de arce (agave, stevia, xilotol....) 🌱 4 gr de agar agar . En un vaso poner un dedo de leche de avena y disolver el agar agar, reservar. El resto de ingredientes los pondremos en un cazo a fuego medio hasta q se disuelva por completo el chocolate. Añadir el agar agar sin parar de remover y llevar a ebullición. Dejar hervir unos 2 minutos y retirar del fuego. Verter en las flaneras y dejar templar a temperatura ambiente. Meter a la nevera unas 2-4h y listo. . Como podéis ver son muy pocos ingredientes y es muy fácil de hacer, así que no hay excusa para no probar esta delicia. . RePosted @repost4ig • Who wants to share this bowl with me? Basmati rice, mushrooms cooked in tamari, avocado, asparagus and tofu. The tofu is super simple - I first of all cooked it in the air fryer at 200 decrees C/390 F for around 5 minutes. I then added it to a non-stick frying pan together with 2 tbsp tamari, 2 tbsp rice vinegar, 3 tbsp water, and 1 tsp corn starch, and cooked that on a low-medium heat for around 2-3 minutes to allow the sauce to thicken. Such a yummy and flavourful dinner that’s practically effortless! Vegan and alcohol-free lasagne! My first time cooking with non-alcoholic wine, I was a bit skeptical given that to drink it tastes like gone-off ribena (which is still a notable improvement on the flavour of regular red wine, just sayin'). It turned out great! Couldn't tell the difference at all! Plus, non-alcoholic wine is so cheap. We got this vegan-friendly Cabernet Sauvignon from @obrienswine for a meagre €5.95! Ingredients * 2 cups uncooked brown rice (370 g) washed & drained * 1/2 tbsp oil or use water if oil-free * 1 small/medium onion diced * 4 cloves garlic minced * 1 tbsp fresh ginger minced * 1 tbsp fresh turmeric minced (optional) * 1 stalk of leeks chopped (65 g) * 1 tsp ground turmeric use 1 1/2 tsp if you don't use fresh * 1/4 tsp black pepper or more to taste * Sea salt to taste, (I used 1 1/2 tsp) * 1 tsp ground paprika * 3/4 tsp ground cumin * Cayenne pepper to taste optional * 1 medium carrot diced * 1 cup coconut milk canned (240 ml) * 2 3/4 cups vegetable broth (660 ml) * Fresh herbs for garnish Instructions * Add brown rice to a bowl and cover with water. Let sit for about 10-15 minutes or until you have chopped the veggies. Then drain. * Heat oil (or use water if oil-free) in a large pot. Add onion and fry over medium heat for about 3-4 minutes. * Add fresh ginger, garlic, leek, fresh turmeric, and all spices. Fry for a further minute. * Add carrot. coconut milk, vegetable broth, and drained rice. Cover and bring to a boil. * Cook on a low simmer for 45 minutes, then turn off the heat. Let sit for a further 5-10 minutes, then fluff with a fork. * Taste and adjust seasoning. I’ve been a bit MIA this weekend because I was at DRAGCON 🥳 But here’s some foodie highlights from my weekend 🥘 . . . . . The only thing this rainy weather is good for is a day of baking, so I made up a loaf of my pesto and cheese bread. Y U M ! . I made up some bread dough, as well as some pesto in my @vitamix_aunz, and then filled the dough with the pesto and @buteislandfoods cheddar cheeze before braiding it. It's sooo good. It was barley out of the oven 30 minutes before half the loaf disappeared...oops. 🌈So, apparently, today is the ‘Bluest’ day of the year🌈 Here are all of the colours in the spectrum to negate those ‘bluesy’ feelings, if you’re experiencing any! • My belief is that in any one day, week, moment in time, we can experience the whole gambit of human emotion and we don’t need to attribute our feelings to a particular day of the year • We can feel full of sunshine, radiating pure light to a little bit bleugh (and everything in between) and this is what being a human is all about. Life is made up of light and shade and without darkness there’d be no light. It’s how we cope with the moments that challenge us that’s important • I believe that it is counter-productive to try to swerve emotion. From experience, it’s only by facing something head-on and dealing with the pain, anxiety or grief I’m presented with that I’ve found my way through • With life being so busy and the demands on our time quite great sometimes, it’s essential that we make time for ourselves to nurture our wellbeing. If we water ground upon which we stand, we can flourish and bloom and create strong foundations 🌟 • With this in mind, I wanted to share this post as a shout-out to all of the wonderful humans I admire and look-up to (tap for tags). ✨Morning oats ✨ • Ater a bad effort from my part over the last couple of days, I woke up motivated to really challenge myself today. • I decided to try grating half a courgette into my oats and it worked an absolute dreammmmm!! Its an amazing way to get some veggies into your diet in the morning, and adds a subtle crunch! I also tried adding a teaspoon of tahini for the first time. I accidentally added a bit too much and I found it a little too earthy to begin with, but after adding maple syrup and a shit load of cinnamon (Ofc 🤪) it was delish🥳.

Kids really are no side job. Everyone should know that. But you might think you'd be able to squeeze in some other activity here and there, like doing some postpartum exercises, having a quick snack or even making lunch. But it seems that I'm incredibly unlucky with my kids sleeping behaviours. My 6 weeks old slept only an hour from waking up in the morning until now - 12 hours!!!... I didn't have more coffee than usual and haven't done anything different today - besides writing a list of things I wanted to do while baby is napping.... That might just be law of attraction in action.. Worrying that he might not sleep keeps him awake... Very peculiar..... He only let me sit down for lunch 25 minutes. I am very tired now.... and hungry. Breastfed him so many times today to send him off to sleep which only left me hungrier and baby fuzzier... Sometimes you just wanna eat and cry at the same time... 😭 . I use the #veganwraps #tortillaaffair (in the fridge area w/ the hummus) @checkers_sa - these contain #nopalmoil 4 fillings: spinach and cream (white sauce w/ nutmeg), mashed potatoes, sweet mashed butternut and @urbanvegansa #veganboerewors Layer oven-pan w/ @rhodesquality #mediterraneanstyle tomatoes, aubergine and courgettes. Wrap 'em up: fill all the wraps w/ one filling each and place in pan on top of the tomato 'relish'. Doze them in a creamy garlic cheese sauce. Bake for 10mins and you're done! I make a massive pan full as it freezes really well. Veganism extends far beyond the foods we choose to eat. The byproducts of the animal agriculture industry find their way into so many of our everyday items. In order to ensre we aren't supporting this industry, we need to also ensure we aren't accidentally allowing them profit through the purchase of their byproducs. For example, every time I buy a toothbrush I check if the bristles are made of sterilised animal hair (yep, it's a thing!). When I buy toothpaste I check if it contains Glycerin, and if so, if this is animal or plant derived. I also always always always check if the company is involved in any animal testing before purchasing. It sounds like a lot of work, but soon it becomes second nature to know what you do and don't want to put your money towards. ▪️ ▪️ Happy #Veganuary!
