Vegan taco lasagna 🌯🌮 Anyone? With a cheesy sauce based on cashews. The cheese sauce is perfect to have with pasta too, or how about topping a taco salad bowl, or nacho plate? So make sure to save the recipe 😉 For this recipe I used bean lasagna plates but that’s optional! . . For the taco black bean filling🌮 230g black beans (already cooked) 1 tbsp tomato paste 120g red bell pepper 390g crushed tomatoes 70g corn 70g red onion 50g kale 1 tbsp taco spice mix . . For the cheese sauce🧀 170g cauliflower & carrots (cooked) 100g cashews 1.5 cup gluten-free oat milk 1/2 tsp onion powder 1 tbsp olive oil 1/2 tsp mustard 1 tsp applecider vinegar 3 tbsp nutritional yeast Salt & pepper to taste . . For serving Guacamole Coconut yogurt . . 1. Start with making the taco bean filling. Preheat the oven to 175 degrees Celsius. 2. Cut the onion, bell pepper and rinse the black beans. 3. Heat up the olive oil in a pan. Add the onion, bell pepper, black beans, corn, taco spice, salt and pepper. Cook until soft. 4. Add the crushed tomatoes and let it simmer for 5 minutes. Set to side while making the cheese sauce. 5. Start making the cheese sauce by cooking the cauliflower/carrot and cashews separately. Cook the cashews for 15 minutes on full heat and the cauliflower/carrots until soft. 6. Add all of the ingredients for the cheese sauce in a high speed blender and mix until smooth. 7. Now put together the lasagna and heat in the oven for 40 minutes (175 degrees Celsius) 8. Start by cooking the soba noodles (or ramen noodles) according to the package 2. In a saucepan, add minced ginger, garlic powder, red curry paste with a splash of water and let cook on high heat for about 2 minutes 3. Reduce the heat to medium, add another splash of water and the peanut butter, stir to combine into it all into a paste 4. Now add the water, coconut milk, tamari, and let simmer for 5 minutes 5. In meanwhile wash the mushrooms and slice them very thinly, place the slices into the bowl you are going to eat from 6. Preheat the oven to 175°C/350°F and grease a 8” (20cm) tart tin. 2. For the crust, place all ingredients into a food processor until you have a sticky and crumbly dough. Transfer to the tart tin and press down evenly to the bottom and up the sides. Fill with baking beans, place in the oven and bake for 15-20 minutes until golden brown. 3. Add the coconut cream, maple syrup, and lime juice to a medium pot over high heat. Bring to a boil, add in the agar agar and let simmer for 1 minute until it has dissolved. Use a whisk to mix everything together. 4. Pour into a heat-resistant high speed blender, add the cashews and ocean blend and blend on high until smooth. 5. Ingredients 1 frozen puff pastry sheet 1 large carrot peeled and chopped 1 large celery stalk chopped 2 tsp vegan butter or oil or 1/4 cup veg stock 2/3 cup dry lentils green or brown 2 cups water 2 tsp vegan Worcestershire sauce see notes 1.5 tsp vegetable or “no beef” bouillon see notes 1.5 tsp garlic powder 1 tsp onion powder 1/2 tsp paprika 1/2 tsp sage 1/2 tsp thyme 1/4 tsp black pepper soy sauce or salt to taste 2 cups chopped kale loosely packed 1/2 cup roasted unsalted sunflower seeds coarsely chopped 1/4 cup panko breadcrumbs 2 tbsp non-dairy milk Instructions Set the puff pastry out to thaw. In a medium-sized pot, saute the carrots and celery in the vegan butter/oil or vegetable stock until tender. Add in the lentils, water, bouillon, onion powder, garlic powder, vegan Worcestershire sauce, paprika, sage, thyme, and pepper. Bring to a boil then reduce to a simmer for 15-20 minutes, or until the lentils are tender and have absorbed the liquid. Add some salt or soy sauce if needed. Turn off the heat, but leave the pot on the burner. Stir in the kale and sunflower seeds. Cover the pot for about 5 minutes, or until the kale has wilted. Mix in the breadcrumbs. Let the lentil mixture cool until just warm, no longer hot. Pre-heat the oven to 400F degrees. Once the puff pastry is thawed and pliable, you can start assembling your vegan wellington. Scoop the lentil mixture in the center third of the puff pastry in the shape of a log. Leave an inch of room on the edges. Make sure it’s packed tightly. Fold the sides of the puff pastry over the top of the lentil mixture, tightly. There should be about a half an inch of overlap. Pinch, seal and tuck the edges. Use water to help create a more secure seal. Cover a baking sheet with parchment paper or a silicone baking mat. Place the wellington on it, seam-side down. In a bowl combine chia seeds and almond milk. Whisk together with a fork, then wait a couple minutes and whisk again (this will stop the chia seeds from clumping). - 100g. Mushrooms ​
- Handful of Thyme leaves ​- 3 tablespoons of Olive Oil ​ ​Steps ​Cook the pasta. Wash and chop the cabbage in long, thin slices. The last 2 minutes cook the cabbage together with the pasta. 
Wash and chop the mushrooms. Add olive oil on a pan, and cook together with fresh thyme. Drizzle with salt and pepper.

A little video I made last week when I was trying to use everything up that was in my fridge. I hate food waste so I used lots of vegetables, some pizza sauces and half a tub of tomato pesto. Lemon Basil Tagliatelle by @veganfoodiecooks 🍝 Recipe: 2 tbsp vegan butter 2 cloves of garlic 1 tsp thyme or oregano 1 whole corn 1 lemon (juice and zest) 2 tbsp flour 1 cup or soy milk 1 tsp salt and pepper Handful of basil 1-2 cups of water from tagliatelle 250g (8oz) tagliatelle (linguini pasta) cooked Method: Cut the corn off the cob. Melt butter in the pan and add garlic, thyme and corn and stir fry for about 5mins. Add flour and mix well till it completely dissolves, then add soy milk, season it and stir until it thickens. Recipe below by @thetastyk RECIPE Crust: 1/2 cup (70g) hazelnuts 10 (90g) dates, pitted 2 Tbsp (15g) cacao powder . Cream layer: 1/2 cup (70g) cashews, soaked in warm water for min. 6 hours 1/4 cup (65g) coconut cream 2 Tbsp (30ml) coconut oil, melted 1 Tbsp (20g) maple syrup . Praline layer: 1/3 cup (85g) hazelnut butter 5 Tbsp (100g) maple syrup . Chocolate layer: 120g vegan nut chocolate 1/8 cup (32g) coconut cream . METHOD 1. Place the crust ingredients into a food processor and pulse until you have a sticky dough. 2. Line a cupcake tin with baking paper stripes for easier removal and divide the crust dough into 6 equal pieces. Press them into the bottom of the cupcake mould and even out before placing them into the freezer. 3. For the cream layer, place all ingredients into a high speed blender and blend for 1-2 minutes until smooth. Divide the cream among the 6 cake moulds and freeze for 30-40 minutes or until firm. 4. For the praline layer, simply whisk the hazelnut butter and maple syrup together until smooth, then divide among the 6 cake moulds and even out. Place in the freezer until firm. 5. Melt the chocolate in a water bath and add the coconut cream. Whisk together until smooth and divide equally among the 6 cake moulds. At this point you can add any decoration you’d like - chocolate pieces, crushed hazelnuts etc. 6. Place in the freezer for a minimum of 5 hours and carefully remove them from the tin. Who’d want a slice of this delicious vegan Chocolate Zucchini Cake? 🥒🍫It’s so incredibly moist and rich on the inside with the perfect decadent chocolate coating! 😍🔥 Possibly my new favorite quick and easy chocolate cake! —•—Ingredients—•— 2 cups spelt flour 1/2 cup brown sugar 1/3 cup cacao powder 1.5 Tbsp espresso powder (or 1 tsp cinnamon) 1 Tbsp baking powder 1 tsp baking soda 0.7oz (20g) dark chocolate, chopped 1 cup zucchini, finely shredded 1 cup vegan yogurt 1/2 cup vegetable oil 1 Tbsp apple cider vinegar Coating: 3.5oz (100g) dark chocolate —•—Method—•— 1. Place the 7 dry ingredients in a mixing bowl and combine. Place the wet ingredients in a separate bowl and whisk together. Combine wet with dry ingredients with a spatula until you have a smooth mixture (don’t over mix). 2. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper. 3. Scoop the batter into the pan and carefully even out with a spoon. 4. Place in the oven for 50-55 minutes until a toothpick inserted comes out clean. 5. Place on a cooling rack and let cool down completely. 6. I topped my sliders with caramelized onions, @wholefoods Smoked Gouda Plant based cheese. It’s Soy Free and sooo good. I added some Dijon Mustard from @traderjoes, vegan mayo and fresh arugula. ⬇️ FULL RECIPE BELOW - Tag a friend • • INGREDIENTS 2 cups of cooked wild rice 2 cups of cooked lentils 1/2 cup of quick oats 1/2 cup of chickpea flour 1 medium size onion 3 large garlic cloves 1 tsp of poultry seasoning 2 tsp of mustard powder The leaves of 2-3 thyme sprigs Dash of liquid smoke 1 tsp of pink Himalayan salt Pepper to taste • • First add the onion to a food processor and pulse until broken down. Next add in the remaining ingredients and pulse until it resembles ground meat. Now you can form your desired size patties. • • Place a non stick skillet over medium heat and add in a small amount of oil. Roasted Veggie Quinoa Salad 🥗 Full recipe below, send it to a friend who’d love this!⁣ - Follow @veggie_flavour Follow @veggie_flavour - By: Tasty, Betsy Carter & Alexander Roberts Ingredients (for 4 servings) ½ cup zucchini (75 g), cubed ½ cup sweet potato (100 g), cubed 1 cup cherry tomato (200 g), halved ½ red onion, diced ½ cup corn (85 g), fresh or canned ½ lemon, for juice 4 tablespoons olive oil, divided 1 teaspoon garlic salt, to taste pepper, to taste 4 cups quinoa (680 g), cooked 1 tablespoon apple cider vinegar ¼ cup fresh parsley (10 g), chopped Preparation Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper. Add the zucchini, sweet potato, tomatoes, onion, and corn to the baking sheet. Drizzle with the lemon juice and 2 tablespoons of olive oil, then season with garlic salt and pepper. Toss to coat evenly, keeping the vegetables separate on the pan. Roast for 15-20 minutes, or until fork tender. Transfer the roasted vegetables to a large bowl, and add the quinoa. Toss well. In a small bowl, mix together the remaining 2 tablespoons of olive oil and apple cider vinegar. Pour over the veggies and quinoa, and toss to coat. Garnish with parsley. Enjoy!

Watermelon pizza is the perfect healthy dessert! By @tastyvegetarian. Ingredients: 1 watermelon 8 oz coconut cream, whipped 4 strawberries 3 kiwis 3 apricots blueberry coconut flakes granola fresh mint Cut a ripe watermelon into round discs about 1-2 inches (2-5 cm) thick. Scoop the coconut cream into a bowl. Use a mixer to whip the cream until it reaches a soft consistency. Cut 3-4 strawberries into thin slices. Set aside. Peel and cut 2-3 kiwis into thin slices. Set aside. Remove pit and cut 2-3 apricot into thin slices. Set aside. Spread the mixed coconut cream around the top of the watermelon disc. Place the cut strawberries, kiwis and apricot slices on top of the coconut cream. Add in blueberries, coconut flakes and granola. Sprinkle a few sprigs of mint across the top the dessert. One Pot Coconut Curry Pasta by @foodpassionical 💚 This is perfect for an easy weekday meal! ​ ​Recipe: 250g uncooked pasta 1 cup zucchini 1/2 cup edamame 1 chilli, chopped 1/4 cup purple cabbage Handful coriander 200ml coconut milk 500ml water 1 tbsp red chilli powder 2 tbsp curry powder Salt for seasoning Method: ​✅Heat oil in a large pot, saute the onion and garlic about 2 minutes. ✅Add in the red chilli powder and curry powder. ✅200ml coconut milk and 500 ml water are added in and cook with very low heat (keep stirring) ✅Next add in the uncooked pasta and the all the veggies. I hope everyone's having a great day 🌞 Sauce - 1/2 cup coconut milk - 2 tbsp soy sauce - 2 tbsp maple syrup - 1 tbsp lime juice - 1 tsp curry powder - 1/4 tsp turmeric powder - 1 block of sprouted tofu (400 grams) (cut into cubes) - 1 package of whole grain ramen noodles - 1 carrot (sliced) - 1/2 a bell pepper (sliced) - 1 cup of broccoli florets Method: 1) prepare the sauce and set aside. 2) heat some sesame oil in a pan and cook tofu for about 5 minutes. 3) add veggies and cook for another few minutes, then add the sauce and cook for a few more minutes. 4) add cooked ramen noodles and once sauce has almost evaporated serve. Spicy Thai basil tofu bowl by @woon.heng 😋 A delicious tofu recipe that's perfect enjoyed with rice! Check out the recipe below: ​ ​Recipe (yield 2-3 servings)⁣ Ingredients:⁣ ~ 1 package of firm tofu, drain well & mash⁣ ~ 1/2 cup packed Thai basil leaves⁣ ~ 7-8 Thai chilies, chopped⁣ ~ 5 cloves garlic, finely minced⁣ ~ 3-4 shallots, finely minced⁣ ~ oil & salt to taste⁣ ~ your favorite grain⁣ ~ blanch veggies (used bok choy from garden😍)⁣ ⁣ 🍃Sauce: Whisk together 3 tablespoons coconut amino, 3 tablespoons *sweet & sour sauce (='fish' sauce on my highlight/see below), 1 tablespoon soy sauce, 3 teaspoons coconut sugar & 1 teaspoon salt in a bowl & set aside.⁣ ⁣ ✔️In a nonstick pan with low-medium heat (no oil), pan fry mashed tofu until light brown to get the chewy texture. Then, add 1 teaspoon oil & continue to cook until all tofu absorb the oil, & push tofu to the side of the pan. ✔️Add 3 teaspoons oil, then sauté garlic & shallots until fragrant & slightly crisp & brownish. ✔️Add half the sauce, mix with tofu, stir & let simmer for 2 minutes. Add chilies & the remaining sauce, & cook until the sauce thicken (when sugar caramelized). ✔️Finally, stir in basil & serve warm with your favorite grain & blanched veggies.⁣ ⁣ *Sweet & sour sauce/'fish' sauce: 1 clove finely minced garlic, 1-1.5 tablespoons maple syrup, 1 teaspoon soy sauce, dash of chili flakes/1 chopped Thai chili, 3 tablespoons hot water, 3 teaspoons lime juice, salt to taste. Cauliflower steak slightly charred very flavorsome takes seconds to make, and it is so satisfying. It goes really well with a green dressing which is a bomb on its own. Vegan diets can help you lose weight Vegan Challenge Now! => Link in bio By @the_buddhist_chef . 8 Portobello mushrooms 350 g 2 tbsp olive oil Salt and pepper 450 g white mushrooms 2/3 cup cashews (80 g) 3 tbsp olive oil 2 chopped onions 2 cloves garlic, minced 2 tbsp nutritional yeast Fresh sage, 4 leaves (chopped) 2 tbsp maple syrup 1 tsp dried basil 1 tsp dried oregano 1 tsp salt 1/2 tsp of truffle oil (optional) 140 g baby spinach Pepper to taste Pastry 550 g (1 lb.) Preheat oven to 350˚F (175˚C). Put the portobello mushrooms in a baking tray & cover in a splash of olive oil. Sprinkle the salt & pepper over the top of the mushrooms 
Bake for 15 minutes & once they’re ready, set to one side to cool. Add the mushrooms and the cashews to a food processor and pulse until crumbly. Put the chopped onion in a pan with olive oil & fry until it’s translucent over medium-high heat. Add ground white mushrooms, ground cashews, garlic, nutritional yeast, sage, maple syrup, basil, oregano, salt, truffle oil, spinach and black pepper. Continue cooking over medium-high heat for 12 to 15 minutes, stirring regularly. Remove from the heat and let cool in the fridge for about 30 minutes. On a floured work surface, roll out the pastry to get a 33 x 30 inches (13 x 12 cm) rectangle. Starting at one of the short ends of the puff pastry, arrange the mushroom mixture in the shape of a rectangle. Place the portobello mushrooms down the middle of the rectangle of duxelles. Very carefully roll the pastry over the top of the mushroom mixture until you have a log. Press down to seal the edges. Roll over the log so that the seam is facing the bottom.
