I call this cheese veggie chowder...it tastes so good,I cannot believe it. Bulgur and pita go so well with it. It does require a blender to make the 'cheese' sauce from cashew and nutritional yeast though...great week night dinner. WOW!!!! This cake is a game changer!! This photo doesn’t do it justice, but trust me when I tell you that @dreenaburton has created some magic with her “Sweet Potato Chocolate Cake with Chocolate Sweets Frosting” (google it. Seriously. Right now!). Yes, you read that right - sweet potatoes are doing some heavy lifting here, and it’s genius! This was a spur-of-the-moment creation so I did a lot of subbing (eg, date sugar and whole wheat pastry flour), but it turned out moist, rich, decadent, and delicious! Recipe CHICKPEA SALAD SANDWICH Inspired by Angela Liddon Oh She Glows Prep time 15min Serves 4-6 Ingredients 1 540 ml/19 oz can chickpeas 2 dill pickles, diced ½ red onion, diced 1 red pepper, diced 1 garlic clove diced or garlic powder 1 ½ yellow mustard – more if only using mustard 3 Tbsp vegan mayonnaise (omit if weight loss is your goal and just use mustard) 2 tsp dill weed 2 tsp fresh lemon juice ¼ tsp salt 1/2 tsp black pepper Place chickpeas in a colander, drain and rinse. Transfer to bowl and use potato masher to mash chickpeas until a “flaked”or “chunky” texture is achieved. Add all diced veggies. Add mustard and mayonnaise, if using both, or just mustard. Add spices and lemon juice. Mix well. Serve as a sandwich filling on a high-quality whole grain bread, in a wrap, on romaine lettuce boat, or as a salad on its own.

We all know that fruits and vegetables are healthy foods, but what if you have diabetes?⁣ ⁣ Many people have been told to limit fruit 🍉 consumption for better glucose control… but does the research support this?⁣ ⁣ A 2017 randomized control trial in 19 individuals with Type 2 Diabetes 💊 (T2D) assessed blood glucose levels following a meal low in fiber or high in dietary fiber coming from either whole fruit (papaya and orange 🍊) or a powdered fiber supplement. There was an 18% decrease in blood glucose levels measured over 3 hours following both of the meals with high dietary fiber compared to the low fiber meal.⁣ ⁣ In this study, the improvements in glucose levels were accompanied by similar levels of insulin 💉⁣ ⁣ While this is not a direct measure of insulin sensitivity, this data suggests that the insulin present was more efficient at lowering blood glucose after consuming the same amount of carbohydrates (with the same glycemic index and load). This study overall suggests that consuming more fiber, despite the often-demonized “sugar” in fruit, may actually increase insulin sensitivity.⁣ ⁣ Additionally, in the most recent and largest meta-analysis we found to date, 11 out of 13 prospective studies found fruit was protective for T2D. Pooling the data from all 13 studies, high fruit consumption was associated with a 9% decrease in T2D risk. When I entered the world of endurance athletics - there were SO many mixed signals about how to fuel, when to fuel, and what to fuel with. My own self experiments have proved that nutrition confusion in athletics NEEDS to be addressed. Once a week I whip up a batch of overnight oats to keep in the fridge and grab each morning to fuel up for the day. Complex carbs, nuts, seeds, Omega-3, and a special sump'n-sump'n to sweeten the deal! This week's recipe uses dried cranberries, last week was dried cherries. I also love to use fresh or frozen blueberries and strawberries (always organic! Stay away from pesticides, PLEASE!) . Each Jar: 3/4 cup steel cut oats 1 tbs. Sunflower seeds 1 tbs. Chia seeds 1 tbs. I’ve taken this whole #socialisolation thing as a challenge. I didn’t plan it this way, but it’s been almost 2 weeks since I’ve gone to the store for groceries. I keep saying “one more day” and it’s become a game trying to cook from what’s left in my fridge/freezer. This meal used the very last fresh produce I had on hand (if you call garlic and ginger produce). . Sauté garlic and ginger. Add a knob of grated fresh turmeric, tsp onion powder, and a heaping tbsp curry paste. Sizzle for a minute. Add coconut milk, about a cup of broth or water, and a bag of frozen cauliflower and bring to simmer. Once cauli is cooked through add a can of lentils (or add dried lentils when adding cauliflower), spinach, and frozen peas. BLOOD ORANGE MEZCAL SOUR 😍 Today I am thankful for mezcal & garbanzo beans for helping me spiritually through these weird days. Sounds ridiculous but I mean it! There’s something about mezcal that you don’t get with any other spirit. It’s made in small batches usually in Oaxaca and created in ceremony. It’s the only alcohol (when used in moderation) that brings you back to spirit. Lifts you up. Tingles your senses. It’s my go-to. Not only that, but it’s 👌🏼 in a cocktail as the smoky flavor is the perfect base. Check out our go-to sour recipe using aquafaba from a can of garbanzo beans. 👇🏼 MAKES 2 -3 oz @400conejosmx mezcal -1 1/2 oz lemon juice -3/4 oz @bigtreefarmsbali coconut nectar -1 oz aquafaba Add ingredients and ice last to shaker. Cover and shake for 45 seconds - the more vigorous the better to make it frothy. Strain into a cocktail glass with no ice and top with @angostura_uk bitters & blood orange slice. Cheers!!

Rabokki(tteokbokki with instant noodles) and deep fried seaweed rolls filled with glass noodles from a local cooperative shop⠀ ⠀ 게시물 하루씩 밀렸다. 일 정상적으로 할땐 한 끼 제대로 만들어 먹고 남은 거 먹거나 간단하게 먹었는데 집에 있는 시간이 많으니 요리도 두 차례. 아직까진 지치지 않고 재밌기만 하다. 두레 생협에서 산 성분 비건 김말이. 김말이 좋아하는데 쓸데없이 논비건 성분 많아서 어처구니가 없었는데...드디어 찾은 소중한 냉동 김말이. 이삼일 밀가루 잘 안 먹다가 다시 밀가루 파티했다. 예전에 반만 끓이도 남은 채황면을 넣었다. 무가 좀 남아서 무랑 다시마, 마늘과 양파로 채수를 좀 만들어 떡볶이 국물 만들었더니 감칠맛이 너무 좋다. 귀찮을때를 위해 연두 살까 하다가 직접 끓여내는 채수맛이 소중해 그냥 무나 더 사기로 했다. 채수 내고 남은 야채는 나중에 볶음밥에 넣어버림. ⠀ ⠀ ⠀ ⠀ 🌱Ingredients⠀ ⠀ -For the broth: 3 cups of water, one dried kelp piece, a bit of Korean radish, 1/2 of onion, 2 cloves of garlic⠀ ⠀ ⠀ - 1 and 1/2 tbsp of soy sauce, 1 tbsp of gochujang, 2 tbsp of chili powder, 2 tbsp of orgnaic sugar, instant noodles, soaked glass noodles(optional/soak in cold water for 10 minutes in advance), 1 cup of sliced cabbage, 1 chopped spring onion stem, 1 tsp of minced garlic⠀ ⠀ 🌱Recipe⠀ ⠀ - Add water in a sauce pan or a pot. And put the ingredients for the broth and boil it for at least 10-15 minutes. You can skip this process and just use water instead if you don't want to put much effort. And I put the leftover ingredients for fried rice later. ⠀ - Pull out kelp, radish and onion. Add other ingredients except instant noodles and glass noodles. Boil it for 7 minutes. Adjust flavour. ⠀ - Add glass noodles. Boil for 3 minutes. Then put instant noodles and cook until the noodles is done. Add a bit more water if there isn't enough.⠀ - Serve and enjoy it.
