Today’s #WorldHealthDay ‼️ Here’s an example of the simplest healthy lifestyle that I’ve been able to sustain as #wholefoodplantbased #vegan as possible. It’s taken me years in the making and much wasted money to find some of my favorite vegan brands that I show. They are a great source of antioxidants, can be good for blood-sugar balance, and have a low glycemic impact. ⠀ ⠀ ⠀ Recipe Details (also at http://eatrefolo.com/blog and the link in bio)⠀ 1. WHAT?! Another smoothie bowl?! With all my time at home in quarantine, I have been practicing intuitive eating, which is an eating style that promotes a healthy attitude towards food and body image. The idea is that you eat when you’re hungry and stop when you’re full. Time of day is irrelevant. Listening to your body is everything!!! Lately, I have been letting myself sleep in. The first thing I do when I wake up is drink a glass of Kangen water 9.5 and stretch. This sets my mood for the entire day! I’ve been allowing myself to drink coffee. I am more productive throughout the day when I start it with coffee. I sip my Caribou with a splash of Oatly as I make a to-do list for the day. I also write down what I eat and drink on the list so I can keep track of my meals/snacks NOT my calories. This is also a great way to track food allergies. After coffee, I do full body stretches followed by a 10 to 30 minute at-home workout from the Nike Training App. Then I make a smoothie bowl usually around the time people have brunch! After that, I make hot matcha tea which can usually hold me over until 2-3pm, when I decide to have my second meal of the day, which lately has been avocado toast, rice or potatoes with tofu and veggies, or chiliquiles. If I do snack, I snack on fruits! I try to only snack if I am feeling truly hungry. If I am feeling bored, I will have jasmine tea or more matcha. After that, I go outside to move my body for at least 30 minutes, whether that be walking or running or both! Then I have something small, literally whatever I am craving–French toast, vegan nachos, coconut yogurt—before 7pm (because I have noticed if I eat past 7pm I can’t fall asleep right away). If I am craving something in the evenings, I have some herbal tea to help with digestion! This is what has been working for me! I am still practicing not eating based on the time on the clock, rather, by listening to my body. Making a plan and eating when I am truly hungry is helping me. What’s working for you?! Okay... just tried a new flavor combo of my favorite cauliflower rice bowl (recipe on the blog under ‘current favorite lunch bowl’) and it is 💥💥💥so good! I sautéed about 1 c of frozen cauli rice, a handful of frozen peas, 1/2 can of chickpeas, With about 2 T shredded coconut 1 t curry powder and a handful of golden raisins!! Topped it off with a drizzle of homemade yogurt and some chopped cilantro! You’re welcome!!! Also thankful it’s a gorgeous afternoon to enjoy this outside! ☀️ 🌸 💕

This is made with whole, plant-based ingredients and provides nutrients and antioxidants to refuel your body after exercise. Plus, it is hydrating and refreshing. ⁣ ⁣ Strawberry Banana Smoothie: ⁣ ⁣ 1 frozen banana ⁣ 1 cup strawberries (fresh or frozen)⁣ 1/4 cup frozen raspberries ⁣ Handful fresh baby kale⁣ 1.25 cup organic soy milk ⁣ 1/4 cup water ⁣ 2 Tb hemp seeds ⁣ ⁣ Blend together. Add a sprinkle of hemp seeds and walnuts on top. Summer dreaming ☀️ I hope this all ends soon and we have some kind of a summer together returning to work, visits with friends and our families. This is a leftover grain, bean and greens salad. Totally vegan. Black rice & red quinoa, soaked & pressure cooked chickpeas & white beans dressed in lemon juice olive oil + grainy mustard + sea salt. This is a simple recipe that can be adapted for many types of bread. Here, it was not possible to find some bagel so we used English muffins instead. We cook the Portobello mushrooms with a drizzle of oil and some soya sauce in a pan or in the oven. After this step, you can make a burger with some vegan cheese or just a toast with some pesto. For this sandwich today, we added a substantial layer of houmous and some salad. Une recette toute simple qui s’adapte à tout type de pain. Best Bolognese 😍 Fry 2 onions, 2 cloves of garlic and smoked tofu. Mix 250g fresh tomatoes, 250ml mashed tomatoes, 1/2 cup of white wine, 1 teaspoon of olive oil and a bunch of parsley in the mixer. Day 5- This is super exciting for me as well.. In the list of recipes from Ritu we had shreddable cheese so today thought of giving that a try... After Ghee, Dairy Cheese is the most concentrated source of pus and blood cells that come from the cow because of over extraction of milk by machines and it is not destroyed by boiling or any process. So when you have a cube or slice of dairy cheese, you are actually ingesting all the infection along with a host of other ingredients like urea, antibiotics, pesticides, sanitary napkin waste, sewage and plastic. Now you can't picturise the Laughing Cow anymore can you!! Its totally a sad and tortured cow for a slice/cube of cheese. In the past I have tried a couple of recipes but though they set well they never shred well and most of it got wasted sticking to the grater but this recipe came out very well and for first time made it by myself and not some recipe so feeling doubly prpud SHREDDABLE CHEESE Ingredients 1/2 cup cashews, soaked for 6-8 hrs 1 tbsp cashew butter 2 cloves garlic 1/2 tsp black pepper 2 heaped tbsp arrowroot powder 1 tsp unrefined salt 1 tsp agar agar powder 1 cup water + 1/4 cup 1/2 tsp basil powder for garnish Method In a blender add cashews, cashew butter, garlic, pepper, salt, arrowroot powder with 1/4 cup water and blend in a smooth paste. In a saucepan add 1 cup water and agar agar powder, mix well and bring it to a boil stirring continously to avoid lumps. Cook for 3-4 minutes on medium to low flame. Add the cashew paste to agar agar water and mix well to avoid lumps. Cook the cashew agar mixture for 3-4 minutes on low flames it thickens and becomes stretchy. Remove this mixture in a ceramic bowl and cool it to room temperature. Then place it in the freezer to cool it down rapidly for one hour. Remove and turn the bowl upside down to demould. Garnish with basil powder. Cut this cheese into cubes or shred on your pizza.. The cheese shreds perfectly and tastes super yum too.. Secondly, they are PACKED full of fiber, protein, chocolate and...of course...tequila! #yourewelcome Bookmark this recipe ➡️ for later and try it out or tag a friend below who might enjoy these boozy goodies. I personally didn’t feel like rolling them into traditional “truffle” shape so I put them in paper liners in a mini-muffin tin and it worked just as well! ENJOY BABES! 💋🍫 . INGREDIENTS: ▫️ 1/4th + 1/8th cup almond milk ▫️1/4 cup coconut milk (I used the lite, not full fat) ▫️1 scoop chocolate veggie superfood powder ▫️3/4 cups vegan dark chocolate chips (Lilly’s brand is what I found this time!) ▫️1 1/2 Tablespoons unsweetened cocoa powder (and extra to dust the top) ▫️3 Tablespoons Tequila ▫️ 1/2 teaspoon salt ▫️1/2 teaspoon vanilla extract ▫️1/4-1/2 teaspoon chili powder or cayenne pepper DIRECTIONS: 1️⃣ In a small sauce pot, stir both almond and coconut milk over low-medium heat until warm. Add Chocolate veggie superfood powder and cocoa powder and whisk until combined. 2️⃣ Slowly add the chocolate chips a little at a time and stir until melted and smooth. (Be cAreful that your pot isn’t too hot, otherwise it will burn the chocolate and won’t get smooth.) Remove from heat. 3️⃣ Add the tequila, vanilla extract, cayenne/chili powder and salt. If you want it to be spicier or more salty, adjust according to your preference. (Do NOT do this when the ganache is too hot because the heat will cook away all the alcohol in the tequila and vanilla) 4️⃣ Line a mini-muffin tin with paper liners and decide the ganache evenly between them. Tap the tray gently on the countertop so that you can bring all the air bubbles to the surface. Dust the top with unsweetened cocoa powder and place in freezer. 5️⃣ Freeze for a minimum of 2 hours before eating. They are best straight out of the freezer.

Using this down time to make @thehealthyavo's almond milk & almond pulp granola 🤤 Both recipes below 👇⁠ *Cashew Almond Milk*⁠ Ingredients:⁠ •1 cup raw almonds⁠ •1 cup raw cashews⁠ •5 cups filtered water⁠ •3 dates (depending on how sweet you would like it)⁠ •1/2 tbs cinnamon⁠ •1 tsp vanilla extract⁠ Directions:⁠ 1. Simply soak almonds and cashews overnight in water.⁠ 2. The next morning drain and rinse them, then place in a high speed blender. ⁠ 3. Add water, dates, cinnamon, and vanilla to blender. Blend until nice and creamy looking. ⁠ 4. Strain through your Bigger Better Nut Milk Bag. ⁠ Once strained, let chill in fridge and enjoy within 5-7 days.⁠ *No Waste Granola*⁠ •leftover cashew almond pulp⁠ •1/2 cup walnuts⁠ •1/2 cup pecans⁠ •4 dates⁠ •sprinkle of cinnamon⁠ Directions:⁠ 1. Place walnuts, pecans, and dates in a food processor and pulse a few times. Pour into a bowl and add in almond pulp with cinnamon. ⁠ 2. Give it a nice stir then pour onto a baking sheet, press flat onto sheet making sure the middle isn’t too thick. This granola will make big chunks! ⁠ 3. Bake at 350 for 20-25 min, once done let cool completely before breaking up into smaller pieces. ⁠ (This recipe is very minimal and clean, so add anything you want to spruce it up! Nut butter, coconut oil, or maple syrup would be great additions.)

Well look no further! @katiescraftykitch's cashew vodka sauce with bowtie pasta 🍝 Recipe below 👇⁠ Ingredients:⁠ •2 cups of your favorite marinara OR alternatively, make it from scratch, in which case, you will need: 1 15oz can of crushed tomatoes, 1 clove minced garlic, 1/2 cup diced onion, 1 tbsp olive oil, 1 tsp dried oregano, and salt and pepper to taste⁠ •1/2 cup of cashews, soaked in hot water for a couple of hours, drained, and dried⁠ •1/2 cup of water⁠ •2 shots of vodka (We prefer Tito's, plus it's gluten free)⁠ •Couple leaves of fresh basil⁠ Directions:⁠ 1. If using pre-made marinara sauce, add the 2 cups to a sauté pan, and heat over medium heat. If starting from scratch, heat olive oil over medium heat, then add in garlic and onion, and sauté until onions become translucent. Add in crushed tomatoes, oregano, salt, and pepper, and mix through.⁠ 2. Add in vodka and stir through.⁠ 3. Cook for 5-10 minutes on low heat to cook out the alcohol, stirring often.⁠ 4. Meanwhile, take the 1/2 cup of soaked, drained, and dried cashews, along with the 1/2 cup of water, and blend together in the food processor until creamy.⁠ 5. Add the cashew cream to the marinara + vodka mixture, and mix through.⁠ 6. Add in basil leaves.⁠ 7. Cook for another 2-3 minutes, so flavors blend together.⁠ 8. Add salt and pepper, if necessary. ⁠ 9. Toss with pasta and serve hot!⁠ *Recipe makes 4-6 servings, and it will keep in an air tight container in the fridge for up to a week*
