𝐄𝐀𝐒𝐘 𝐏𝐄𝐀𝐒𝐘 𝐒𝐓𝐈𝐑 𝐅𝐑𝐈𝐄𝐃 𝐍𝐎𝐎𝐃𝐋𝐄𝐒 🥡🥢⁣ ⁣ You can make a bomb ass stir fry with literally anything you can find in your fridge and pantry as long as you have soy sauce. Honestly. If you don’t have any plain noodles but have a pack of migoreng, use that! It’s soo easy to pack in heaps of veg but also use up whatever is left in the fridge.⁣ ⁣ My basic stir fry consists of me pan frying some onion and garlic (throw in some ginger or spring onions if you have some), tossing in any vegetable I have on hand, sometimes I’ll add some pan fried tofu and all I do is season with soy sauce, sweet soy sauce (or vegetable stir fry sauce), sriracha, pepper and sesame oil (only soy sauce is still delishh the rest are just fluff). ⁣ ⁣ Cook noodles following the packet instructions and toss directly in if you’re lazy. If you want to take it up a step for a less soggy texture then spread noodles out on a plate and microwave for a minute. Pan fry seperately in oil with a dash of soy sauce and then add to the vegies. ⁣ ⁣ No noodles? Eat it by itself or with rice! Iso food has never been so deliciously easy. 😋

RECIPE 2 cups oats 2 cups roasted hazelnuts (or nuts of choice) 1/2 cup cacao/cocoa powder 1 tbsp baking powder 1/2 tsp salt 1 cup nondairy yogurt 3/4 cup brewed coffee 1/2 cup maple syrup 2 flax eggs (2 tbsp ground flax + 4 tbsp water) 1 tsp vanilla extract 1/2 cup dark chocolate chips (or better yet Hu Gems!) 〰️ Preheat the oven to 350ºF. Mix the flax and water, and set aside to gel. Whisk together the yogurt, coffee, maple syrup, flax eggs, and vanilla. Grind the oats and hazelnuts in a blender to a fine flour. Add the oat/hazelnut flour, cacao, baking powder, and salt. Stir to combine. Fold in the chocolate chips. Scoop into a lined muffin pan filling each 3/4 of the way and adding a few extra chocolate chips on top. Bake for 30-35 minutes at 350ºF. Cool for 10-15 minutes before removing from the pan. Roasted tomato spaghetti sauce 🍝 Ingredients: 5 roma tomatoes 1/2 cup fresh basil 3 large garlic cloves 1 tsp dried oregano Avocado oil Salt Dried rosemary Cooked spaghetti Steps: Roast tomatoes and garlic cloves (cover with oil, salt and dried rosemary) on a baking sheet at 400 F for 15 min. Remove skins. Add tomatoes and garlic to a blender, along with basil and oregano. Blend! Recipe makes a 6” tart 1 1/4 cups muesli 1/3 cup almonds, chopped 3 tbsp coconut oil 1/4 cup rice malt syrup 1 tsp vanilla bean extract . Filling of choice (chia pudding, yogurt, Panna Cotta, cashew cream) . Preheat oven to 180 celsius. Grease a 6inch tart Pan. Set aside. In a large mixing bowl, toss together muesli until evenly combined. Add in the maple syrup, coconut oil and toss until the dry ingredients are evenly coated.
Transfer granola mixture into tart pan, pressing the mixture firmly into bottom and up the sides of the tart pan. Then place the pan on a baking tray. 
Bake for 20 minutes, until the tart is toasted. Transfer tart pan to a wire rack, and cool until they reach room temperature. Tart will dry out and crisp up while it cools. Recipe: 1 medium onion, chopped 1 clove garlic, minced 1 medium carrot, chopped 1 cup (76g) mushrooms, chopped 1 red bell pepper, chopped 1 tsp basil 1 tsp turmeric 1 tsp paprika 1 tsp salt 1 cup (100g) red lentils 1 can (400g) chopped tomatoes 2 cups (200g) gluten-free pasta ½ can (120ml) coconut milk 1 cup water 2 tbsp tamari 2 cups (134g) kale Add the onion and the garlic to a large saucepan or frying pan, and sauté for 2-3 minutes, until softened. Add the carrot, mushrooms and bell pepper. Sauté for a further 2-3 minutes, before stirring in the basil, turmeric, paprika and salt. Stir to coat the vegetables, then add the red lentils, chopped tomatoes, pasta, coconut milk, water and tamari. 𝐕𝐞𝐠𝐞𝐭𝐚𝐛𝐥𝐞𝐬:. → 2 cups Potatoes, chopped. → 1 cup Carrot, chopped. → 1⁄2 cup Onion, red, chopped. 𝐂𝐡𝐞𝐞𝐬𝐞 𝐟𝐥𝐚𝐯𝐨𝐫 𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:. → ½ cup Cashews, raw. → ½ cup Milk, plant. → 2 tbsp Nutritional yeast, flakes. → 1 tsp Garlic, powder. → ½ tsp Pepper, black, ground. → ½ tsp Curry, powder. → 1 tsp Paprika, powder. → 1 tsp Salt. 𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍:. ① Bring several cups of water with previously prepared veggies to boil in a medium pot. ② Cook for 15 minutes, or until veggies are soft enough to blend. Cooking time depends on how small you have chopped your veggies. ③ Remove cooked veggies from the cooking water and place them in the blender. ④ Add ½ cup of the cooking water, along with cheese flavor ingredients to the veggies in the blender. ⑤ Blend until smooth. ⑥ Use the sauce as a dip, spread, or pour them over the cooked pasta, spaghetti, or however you prefer. ⑦ Enjoy!. INGREDIENTS: •1 block of healthier or vegan white chocolate 100g •1 tsp of coconut oil FILLING: •1 scoop 40g of plant based vanilla/peanut butter protein •2 tbs natural almond butter •1/4 cup of sugar free maple syrup •1tsp vanilla extract •2 biscoff biscuits broken up (or alternative biscuit) METHOD: 1) in a pot/ or microwave melt choc with oil, ice fully melted distribute half the mix into 6-7 cupcake cases (preferably silicone, found in spotlight/ wheel & barrow etc) , refrigerate until solid. 2) in a small bowl mix protein, almond butter, maple and vanilla together until smooth. 3) distribute evenly into the cups 4) press in crushed biscoff biscuits. 5) cover with remaining white choc & optionally decorate with an extra crushed biscuit. 6) place in the freezer to set for an hour! I absolutely love this, it is so easy to make and it taste brilliant but the best part is that you can adapt ingredients easily, replace or omitte what you don't have, add more veg, have it as it is or add your favourite carbs🥰 Ingredients 🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱 1 tbs of rapeseed oil 1 med chopped onion 8 curry leaves 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp fenugreek 1 tsp curry powder 1 sliced green chilli 200 ml of water 500 gr of cooked beetroots cut into wedges 1 can of coconut milk 1/3 tsp of sea salt Coriander leaves ( optional) Method 🥰🥰🥰🥰🥰🥰🥰🥰🥰🥰🥰 Heat the oil in a medium/low heat add the curry leaves, mustard seeds, cumin seeds, half of the chilli, onion and fry them stirring constantly for 5 minutes. Add the fenugreek and curry powder mixed well and add water. Add beetroots, coconut milk, salt and let it simmer for 10 minutes in medium heat. Check the seasoning. Ich habe für die Falafel das Kichererbsenmehl von @veggiespecials verwendet, welches es aktuell in deren Shop gibt. Ihr findet dort richtig günstig vegane Produkte, die kurz vor MHD stehen oder überproduzuert wurden. Somit bekämpft ihr mit jeder Bestellung auch die Lebensmittelverschwendung. ________________________________________ Hier das Rezept: 300g Kichererbsenmehl 1 Teel. Kreuzkümmel gemahlen 1 Teel. Salz 1/2 Teel. Kurkuma 1 kleine rote Zwiebel 2 Knoblauchzehen 1 Eßl. Olivenöl 1/2 Bund frische Petersilie gehackt 1 Teel. Zitronensaft 260ml heißes Wasser Zubereitung: Alle trockenen Zutaten in einer Schüssel miteinander vermengen. Die Zwiebel und den Knoblauch in feine Würfel schneiden und mit den restlichen Zutaten zu einem kompakten Teig kneten. Mit feuchten Händen 24 Bällchen Rollen. No processador, triture o grão de bico, a beterraba, o alho e os temperos. Acrescente a aveia e bata até obter uma massa homogênea. Se necessário, acrescente mais aveia. Acrescente os temperos, a cebola e a cebolinha. Mexa bem e acerte no sal. Unte as mãos com água e molde os hambúrgueres e leve a frigideira com azeite ou óleo de coco. Vc tb pode congela-los. . Purple Sweet Potato Gnocchi and Green Pea + Avocado Pesto by @cookingforpeanuts. . INGREDIENTS (Servings 4): GNOCCHI: • Peel and chop 2 medium/large purple sweet potatoes into about 1-inch pieces. • ½ cup almond milk. • 2 tbsp nutritional yeast. • 1 tsp salt to taste. • ½ tsp black pepper. • 1/2 cups all purpose flour. PESTO: • 1 minced garlic clove. • 1 very ripe avocado. • 2 tbsp fresh lemon juice. • ¼ cup pinenuts. • Handful basil leaves. • 1 cup defrosted green peas. • 1/3 cup vegan parmesan (or 3 tbsp nutritional yeast). • ¼ cup | 2 tbsp water. • Salt/black pepper to taste. . INSTRUCTIONS: MAKE GNOCCHI 1. Add sweet potatoes to saucepan and cover with cold water. 2. Bring to a boil and cook about 15-20 minutes until fork tender. 3. Drain and transfer to mixing bowl with almond mild. 4. Use potato masher to mash until very smooth. 5. Mix nutritional yeast + salt + black pepper. 6. Add all purpose flour, use hands to incorporate flour until dough forms. If too sticky, add a little more flour. Let dough rest about 10-15 minutes. 7. Transfer dough to floured surface and cut into 4 equal parts using pastry cutter or sharp knife. 8. Roll each part into strands about ½-inch thick. 9. Cut strands into desired gnocchi-sized pieces. 10. Cook in boiling water and remove with slotted spoon once gnocchi rises to surface. 11. Brush gnocchi with a little olive oil and bake on lined sheet at 400F until crispy, about 15 minutes. MAKE PESTO: 1. Meanwhile, blend on all ingredients, then enjoy when gnocchi is complete. . Aromatic linguine 🍝 ⠀ INGREDIENTS: 3 tbsp olive oil 2 cloves of garlic 2 tbsp dry tomatoes 1 tbsp rosemary 1 zucchini 1 tsp salt 1 tsp pepper 1 tsp garlic powder 1 tsp dry parsley 80g precooked peas 2 tbsp vegan bacon bits (I get it from iherb.com) Chili oil 150g linguine (1/2 cup of water from cooking pasta) ⠀ ⠀ METHOD: 1. Let garlic, tomatoes and rosemary release aroma on olive oil for 1 minute 2. Then add chopped zucchini and peas and stir fry them for 3-5minutes 3. Add bacon bits and seasonings and stir well 4. Add zucchini noodles and don’t cook them for longer than 2 minutes. Drizzle everything with a bit of chili oil 5. Add linguine with a bit of remaining water from cooking and stir well and serve ⠀ ⠀ ⠀

Drain and set aside (add some olive oil so the shells won't stick together) For the filling: 1. Meanwhile, heat a few tbsp of water in a pan over medium heat
Add onion and garlic and cook for about 3 minutes
Add more water if the pan looks dry
Add miso paste and stir well. Remove pan from heat
Chop cauliflower florets into small pieces
Add Cauliflower, onion and garlic from the pan and spinach to a food processor or high speed blender along with oat milk and blend until smooth and creamy
If your blender or food processor is not that big, split everything in 3 to 4 loads and blend seperately or simply combine ingredients in a bowl and blend with a hand held blender
Transfer filling to a big bowl and add starch, salt, pepper and dried basil. Mix well For the tomato sauce: Heat a few tbsp. of water in a pan over medium heat
Add onion and cook for about 2 minutes
Add garlic and cook for another minute
Mix in all the remaining ingredients and cook for about 3-4 minutes or until sauce is hot

3 ingredient fudge! 😍This is an even more simplified version of the 4 ingredient fudge in my latest cookbook. 📔I love the version in the book with maple syrup since it adds a bit of caramel flavour, but unlike tahini, dates and coconut oil it’s not an ingredient I always have at hand, and the result without it is still amazing. ☀️ It’s super simple and you can make different versions with other but butters too! 👌🏻 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Here’s the recipe: 24 dates, pitted + 2 dl tahini (salted, or add a pinch of salt) + 1 dl coconut oil. Mix all ingredients in a food processor to a sticky mixture, transfer to a tray lined with foil and freeze until solid. I sprinkled some sesame seeds on top before placing in the freezer but it’s optional. Préchauffer le four à 180°. Dans un cul de poule, verser compote, huile, levure et sucre. Mélanger. Ajouter le chocolat et les cramberry. Mélanger de nouveau. Incorporer la farine. Sono fuori tema e in ritardo amiche del fornetto @incucinacolfornetto sono perdonata? . . . 🥣ingredienti: farina di riso integrale 150gr/ 50gr mandorle/ scorza di 1 limone/ 60gr olio di semi di girasole spremuto a freddo/ 1/2 cucchiaino bicarbonato/ 90gr yogurt di soya/ 70gr acqua/ 50gr zucchero di cocco/ zenzero fresco Ridurre le mandorle in farina,aggiungere tutti gli ingredienti secchi, la scorza del limone, lo zenzero. Unire gli ingredienti liquidi e mescolare bene. Una volta pronto l’impasto, mettere nel fornetto, e cuocere per circa 45/50minuti. 🇬🇧 glutenfree cake flavored with almonds and lemon. 🥣 Ingredients: 150gr brown rice flour / 50gr almonds / 1 lemon zest / 60gr cold-pressed sunflower oil / 1/2 teaspoon baking soda / 90gr soy yogurt / 70gr water / 50gr coconut sugar / fresh ginger Reduce the almonds in flour, add all the dry ingredients, the lemon zest, the ginger. Combine the liquid ingredients and mix well. Once the dough is ready, put in the oven and cook for about 45/50minutes.

Look at this black bean goodness by @sculptedkitchen! A great way to use up some of those tins you've been hoarding! 😉⁠ ⁠ 🍔 To make the tempeh black bean burger:⁠ ⁠ 1/2 half a cup of grated zucchini⁠ 1/2 cup of grated carrot⁠ 1/2 cup of roasted sweet potato⁠ 1/2 an onion, diced⁠ ⁠ Add 1/2 tsp salt to zucchini and leave aside for 10 mins. Then squeeze to drain out excess water. Add everything to a pan with some coconut oil and 2 tsp of garlic paste, a dash of salt and pepper, 1 tsp of coriander paste, 1 tbsp of soy sauce & 1 tsp of onion powder. Let cook for 5 minutes & then cool.⁠ ⁠ In a food processor add 1 cup of black beans, 1/3 cup of bread crumbs, 1 tsp of oregano. You could also add some cayenne powder, a drop of liquid smoke and 1 tsp of cumin powder for extra flavour!⁠ ⁠ Add your cooled zucchini mixture to the food processor, and pulse a few times so that it remains bulky. Couscous vegetable soup 🍲 ⠀ Perfect to warm yourself up and eat healthy before all that holidays food🎄😉 ⠀ INGREDIENTS: •2 tbsp olive oil •1 onion •2 cloves of garlic •5-6 smaller mushrooms •3-4 fresh sage leaves (or 1 tsp dry) •1 tsp of thyme •1 liter of water •1 large carrot •1 medium potato •1-2 tsp salt •1 tsp black pepper •1/2 tsp white pepper •1 tsp garlic powder •1 cup of soy milk •1 medium broccoli bunch •1 cup of cooked peas •1/3 cup of couscous ⠀ METHOD: 1. Sauté onion, garlic and mushrooms (seasoned with thyme and sage) on olive oil for 5minutes 2. Add water, chopped carrot and potato. Season with salt and pepper and cook for 15minutes. 3. Take out 4-5 ladles of the soup, blend it and pour back into the pot 4. Add broccoli, season with white pepper and garlic powder. Add soy milk and cook for 5minutes. 5. Now add cooked peas, try the soup and add more seasoning if needed. 6. Turn the fire off, add cous cous, stir, cover and let sit for 10minutes before serving. 7. Optionally serve with croutons and some fresh parsley ⠀ ⠀ ⠀

Looking for ideas to do with all that stocked up frozen fruit? Smoothie bowls baby!!! As you all probably know by now, smoothie bowls are a main staple in my house, especially when it starts to warm up outside. 🌞 Today, I simply blended frozen blueberries, strawberries, pineapple and a ripe banana. Then topped with what I had on hand: half a yellow mango, a had full of blueberries, coco shreds and a sprinkle of granola. @boonburgerhamilton is the vegan meal kit plug👅 6 home made, whole food burger patties, a package of “bacon”, a package of dairy free cheese, a huge container of “Bermuda sauce” and 2 tubs of dairy free ice cream (maple french toast and chocolate sprinkle flavour) for $39.99💚 I’m freezing half of the patties and leaving three out to eat for the next few days because corona szn = thicc season🤠 Honestly though, my regular vegan grocery hauls come out to less than $50 for over a weeks worth of food so this was a nice, delicious addition to my quarantine kitchen stock and I thought I should share. It’s also easy to customize - you can add mushrooms, bell peppers and/or broccoli depending on what you feel like! Ingredients: 8 roma tomatoes, halved Half an eggplant, cubed Oil with a high smoke point Salt to taste 1 tbsp dried rosemary 1 tsp dried thyme 1 tsp dried oregano 1/4 tsp crushed red pepper flakes 1/4 tsp ground black pepper 4-6 garlic cloves, pressed (depends on how much garlic you want!) 1 tbsp sliced basil leaves 2 cups rigatoni pasta Steps: Toss the eggplant and tomatoes with oil, salt and rosemary. Roast at 400F for 17-20 min. Remove from oven, let cool, and remove all tomato skins. Cook your favorite pasta in heavily salted water. In a pot over medium heat, cook the garlic in oil until fragrant. Add the tomatoes and mash them together using either a potato masher or fork. Add the thyme, oregano, red pepper, black pepper and eggplant. Mix together and cook for a minute. Add the basil and cooked pasta, mix, and serve!
