Dream Pie that says L.O.V.E. 💞 Prefering food over material this Valentines. Recipe below. ⤵︎ ✨ BLUEBERRY FIG DREAM PIE WITH LAVENDER ✨ (vegan, gluten free) ✨ Filling: 2 cups cashews, soaked for at least 1 hour 1 cup oat milk, or other vegan milk 7 tbsp coconut syrup (or organic raw honey, if not vegan) 5 tbsp lemon juice 1 tsp vanilla powder 1 cup coconut oil, melted 3 fresh figs 3 tbsp blueberries 1 tsp dried lavender ✨ Crust: 1 ⅔ cup almonds ⅓ cup coconut flakes 6-7 fresh dates, pitted tiny pinch salt ✨ Tin size: 18-20 cm / 7-8 inches ✨ Prepare the crust first. place the almonds and coconut flakes into a blender or food processor and blend until fine crust. Add the dates and blend until moldable dough. Take about 4-5 tbsp dough and set aside. Press the remaining dough into a cake or pie tin so that you cover also the sides. Take the dough you set aside and press it to a 0,5 cm / 0,2 inch thick plate for example on top of a parchment paper. Cut with a small cookie cutter to get about 6 small cookie dough pieces, for example flower shaped. Prepare now the filling. Place all the filling ingredients into a blender or food processor and blend until smooth mass with no crumbs. If needed, add just a little bit more liquid to get it smooth, but keep the mixture as thick as possible. taste and add some of the spices or more sweetness, if needed. Pour the mixture into a cake tin on top of the crust. Place the cookie dough pieces on top and place into a freezer for about 2 hours or until solid. Take out of the freezer and let thaw for about 30 minutes. Top with some fresh blueberries and lavender, if you like. Serve and enjoy!

Mix flour blend, almond flour, baking powder, baking soda, salt and coconut sugar. Melt the coconut oil and peanut butter until liquid. Stir in the oat milk, apple cider vinegar and vanilla. Mix with dry ingredients. Pour into muffin molds and cook for 15 minutes.⠀ ✨ ⠀ Frosting:⠀ 2 cans full-fat coconut milk, kept in the fridge⠀ 2-4 tbsp maple syrup⠀ 1 tsp vanilla extract⠀ 1 tsp pink pittaya powder or beet powder⠀ 1 tsp blueberry powder ⠀ ⠀ + fresh raspberries or peanut butter to be hidden inside of frosting. ⠀ ⠀ Open the coconut milk cans & scoop out the white thick paste into a bowl. Add syrup, vanilla, blueberry powder and beet powder. Whip until fluffy. When the muffins are cooled place the coconut whipped cream in a piping bag. Place one raspberry or 1 tsp peanut butter on top of the muffin. Frost the muffins with the coconut whipped cream. Store in the fridge until served. ⠀ Dip in chocolate for extra deliciousness.

Sundays are for relaxation, pleasure & joy, right? So is this Dream Cake, baby. 💞Recipe below! Wishing you a heart full of lightness & gratitude, because that is where all the magic begins. And eating should be done as blithely & joyous as you would celebrate life with each bite. True wellness cannot be found through restrictions, but through throwing oneself deep into delight. ✨🥄 I am light ✨🥄 I am joy ✨🥄 I am life ENJOY! ✨ VANELJA’S STRAWBERRY DREAM CAKE Crust: 1 cup almonds ½ cup pecan nuts 4 tbsp raw cocoa powder 5 tbsp coconut oil, melted 1 tbsp almond butter 1 dropperful liquid stevia (or 2 tbsp organic honey or maple syrup) pinch sea salt Filling: 3 cups raw cashew nuts, soaked for 1-5 hours, then rinsed 1 cup strawberries (fresh or frozen & thawed) ½ cup coconut oil, melted ½ cup full-fat coconut milk 3 tbsp juice from a lemon 2 dropperfuls liquid stevia (or 4 tbsp organic honey or maple syrup) ½ tsp vanilla powder Can tin: approx. 23 x 23 cm / 9 x 9 inches Cover a cake tin with a baking paper. Place the almonds and pecans into a high-speed blender or food processor. Blend until fine crust. Add the rest of the crust ingredients and blend until well combined. Press firmly into the cake tin. Place all the filling ingredients into a high-speed blender or food processor and blend until smooth. Add a bit more liquid, if needed, so that you get the mixture super smooth, still keeping it as thick as possible. You may have to scrape down the sides occasionally. Taste and add some sweetness, if desired. Pour on top of the crust and smooth out the surface with a spoon. Freeze for 2 hours or until solid. Let thaw for 30 mins before serving. Top with LOADS of fresh berries, the more the merrier.

Tiramisu Pancake Stacks. 🥞☕️✨ Quick & easy luxury comfort. Kaupallinen yhteistyö @iittala . Super inspired to start my year as a ambassador for a legendary Finnish design house Iittala, as their roots are deep in our Nordic nature and their design is built to last from generations to generations, which I value highly. These fetro Miranda footed bowls are originally designed 1971 by Heikki Orvola and now they are brought back to production. 🙌🏽 From several different colors this shade linen / pellava is my ultimate favorite. And of course I just had to design a dessert that would be a perfect fit to these bowls. Something classical, yet something easy-going and modern. Go give these stacks a try! ✨ Tiramisu Pancake Stack (serves 2) ✨ Pancakes: ½ cup rolled oats 1 ripe banana ½ cup almond meal ½ cup oat milk 1 tsp baking powder 1 tsp pure vanilla extract Coconut whipped cream filling: 2 cans of full-fat coconut milk (refrigerated overnight) 1 tsp organic local honey or some liquid stevia ½ tsp vanilla powder Other fillings: ¼ cup strong brewed coffee 2 tbsp raw cacao powder If not vegan: ½ cup organic mascarpone Measure all the pancake ingredients, except the filling, in a blender. Blend until smooth. Heat a pancake pan over medium heat. Pour ¼ cup of batter into the hot pan and spread it a little bit. Cook for 1,5 minutes, flip and cook the other side too. Cook the rest of the pancakes. Leave to cool down and prepare the filling. Open the coconut milk cans and scoop the solid coconut cream into a bowl. Mix with beaters until fluffy. Mix in honey or stevia and vanilla. If the mixture gets too runny, place it in the fridge for a while. Place a pancake on a serving bowl or plate, brush some brewed coffee on top. Add a layer of mascarpone, if using, and then some coconut whipped cream. Otherwise add only a layer of coconut whipped cream. Sprinkle on some cocoa powder and add another pancake over the top. Add again the brewed coffee and the fillings. Place a third pancake on top and top with coconut whipped cream and cocoa powder. Serve & Enjoy right away. Tip! Cinnamon Oat French Toasts. 💫Easy like Sunday morning. Kaupallinen yhteistyö @vaasan_leipomot . Tried out something different today with my favorite thin oat breads (100% oat & totally wheat-free 👌🏽) Vaasan Ohut Kaura 100%. First toasted them all nice n crispy in a toaster, then diped them in oat milk with cinnamon bun spices and finally roasted them on a pan & served with coconut whipped cream & jam. Fully inspired by a dessert classic Poor Knights. So goood. ✨ Cinnamon French Toasts with Apple Jam 4 oat breads (I used Vaasan Ohut Kaura 100) ⅓ cup oat milk 1 ½ tsp ceylon cinnamon ½ tsp cardamom ½ tsp vanilla 2 tbsp erythritol or xylitol + 1 tsp coconut oil for frying On top: Whipped coconut cream Apple Chia Jam Toast the oat breads in a toaster to get them really dry and crusty. Heat a lightly oiled skillet over medium heat. Pour the oat milk into a small bowl and stir in the spices and sweetener. Dunk each bread slice in oat milk mixture for a few seconds. Don’t over-soak them so that they don’t become soft. Place in pan and cook on both sides until golden. Serve with whipped coconut cream and apple chia jam. Apple Chia Jam: 2 apples ¼ cup water 4 tbsp chia seeds ½ tsp vanilla powder ½ tsp ceylon cinnamon Blend one and half apple in a blender and blend until smooth puree. Cut the one apple halve into tiny cubes. Place water into a small pot and add in the apple cubes. Cook on a low-medium heat for a few minutes until apple cubes soften a bit. Take off the heat and pour in the apple puree, spices and chia seeds. Leave to cool down and thicken. Store in a sealed jar in a fridge and use within 5 days. #collab #vaasan #ilmanvehnää

Started the day with nourishing comfort.🧡 Loaded Breakfast Sweet Potatoes. Recipe below! 💫 Another wholesome & delish dish I created for #AtTheHeartOfDiabetes campaign, that is at the moment spreading important information about Type 2 Diabetes strong connections to cardiovascular diseases. Not many people know that T2D relates with heart disease, and also that you can reduce the risk on T2D & heart disease by eating well. Meaning following a regular meal pattern, eating wholesome food, lots of vegetables and good fibers and skipping excess sugar and processed foods. You can read more in Finnish through the link in my bio. Though fast food biz is promoting itself as a cool, carefree option, eating junk is actually far away from sexy. But you know what is sexy? Sweet potato is sexy. Even in the morning, as a brekkie, with her just-woke-up-like-this face smelling all cinnamon & almond butter. 💋 ✨ Loaded Breakfast Sweet Potatoes Serves 2 ✨ 2 medium sweet potatoes, scrubbed clean On top: coconut yogurt, unsweetened pecan nuts hemp seeds almond butter a few slices of banana, or for example apple + a good dash of ceylon cinnamon Preheat the oven to 425 F / 220 C degrees. Place the sweet potatoes on a baking tray covered with a baking paper. Prick the sweet potatoes all over with a fork (around 8 times.) Bake for 40-45 mins, until soft. Let cool. Taste and add seasoning or sweetness, if desired. Mold into balls. Freeze for 30 mins. Prepare the glaze. Measure the erythritol, cinnamon and water into a small bowl and combine. When the truffles have hardened & cooled a bit, spread about ½ tsp of the glaze on top of each truffle. Sprinkle on some cinnamon. Store in the fridge. *You can make powdered erythritol in a blender by blending erythritol full speed for 10 seconds in a high-speed blender.

Looking for a Christmas Spirit? Jump with me into a forest bath. 🌲🛁🌲This is where the true calm originates. My father has had this Christmas tradition for nearly all of his life which brilliancy I have only recently deeply understood. When I was growing up I remember him leaving to the forest every Christmas Eve. Heading there early in the morning and spending the whole day alone warming up an old lodge my grandfather had built in the middle of the wilderness in the Northern Finland. He always said he went there to find the Christmas Peace and to appease the forest spirits. And when the evening came he returned home from his solitude and joined us to the Christmas dinner table. I remember that my mother wasn’t too pleased with his tradition as he was always gone for the whole day. And my friends thought it was weird that my father spent the Christmas Eve’s day alone in the forest, while other fathers were preparing ham or doing other christmassy things with their families. I still thought there was something mystical and some super cool independency with his forest excursions. And still do. Something I could now see myself also doing. Because there is no greater healer or a better place to find the calm than the forest. I’ve shared a lot of posts about “forest bathing” on my Stories. Basically meaning walking in the forest, being present and connecting with the calm energy of the woods. Taking deep breaths, smelling the fresh forest air, touching the trees, leaves and soil and listening to the sounds of the forest. This kind of forest bathing, spending time mindfully in the forest has been scientifically proven to improve health. It lowers the heart rate & blood pressure, reduces stress hormone production, boosts immune system, raises creativity and builds happiness. So if you’re feeling stressed, anxious, nervous, overwhelmed or lacking creativity, or if you want to find the Christmas Spirit: Go to the forest. ✨🌲💫
